The optimum proportions of aloe, pumpkin juices,sugar and citric acid were determined by through orthogonal test design and sensory evaluation. The results showed that the best taste was a combination of 30 % of aloe juice, 20 % of pumpkin juice, 10 % of sugar, 0.15 % of citric acid. The finished product had a good sensory and taste.

Abstract:A process of aloe and orange juice compound beverage which used aloe and orange as the main raw materials and took citric acid and sugar forminor materials was studied.The optimum proportions of aloe, orange juices, sugar and citric acid were determined by through orthogonal test design and sensory evaluation.The results showed that the best taste was a combination of 6 percent of particle aloe, 15 percent of particle orange juice,4 percent of sugar,0.16 percent of citric acid.The finished product has a good sensory, taste and the uniform suspension of fruit particles.

Abstract:The main chemical components, physical character and technology of drink products about Aloe vera L. var. Chinensis (Haw.) Berg. were assayed in this study. The results showed there were proteins, amino acids, vitamins, mineral substances and bioactive substances, e.g. aloin and polysaccharide in A. vera L. var. Chinensis. In practice, it was appropriate to extract original aloe juice through heating-crushing method. When the amount of original juice, compound stabilizer, sugar and citric acid were 8.00%,0.08%,6.00% and 0.18% respectively, the flavor of cloudy juice was the best. The particle suspension treated with solution containing 0.05% agar and 0.15% CMC-2Na was stable.

Abstract:Little work is done to develop Aloe vera (AV) using probiotics. To explore the potential benefits, the antioxidant effects and the antibacterial effects on foodborne pathogens of Aloe fermentation supernatant were evaluated in vitro. Our results indicated that the Aloe fermentation supernatant fermented by Lactobacillus plantarum HM218749.1 had very strong scavenging capacities of the DPPH (86%), O2 (•-) (85%), (•)OH (76%), and Fe(2+) chelation (82%) and reducing powers (242.5 mg/L), and the inhibition zones for Salmonella typhimurium, Salmonella enteritidis, Shigella flexneri, Escherichia coli, Listeria monocytogenes, S. dysenteriae 301, Staphylococcus aureus Cowan1, and Propionibacterium acnes were 16, 15, 19, 20, 21, 20, and 27 mm. Moreover, the low concentration of Aloe fermentation supernatant had significantly reduced the production of IL-1β, TNF-α, and IL-6 in both mRNA and protein levels (P < 0.01). Therefore, the Aloe fermentation supernatant can be used as functional beverage or cosmetic ingredients to guard human intestinal health, delaying senescence, and prevent chronic diseases.

Abstract:A process of Aloe and honey compound beverage was studied.The main ingredients are aloe and honey.Citric acid,sugar,sodium iso-VC are used as food additives.Through a scientific study,a health benefits natural beverage was produced.In this paper,the production process and formulation was studied and a reasonable processing parameters were investigated.Orthogonal experimental results showed that the best formula was a combination of 20% of aloe vera juice,12% of honey,3% of sucrose,0.15% of citric acid.The best Stabilizers formula were 0.20% CMC with 0.10% xanthan gum.

Abstract:The process of production of compound health beverage of aloe,peanut and Chinese wolfberry was studied in the paper.The result showed that the best prescription of compound health beverage of aloe,peanut and Chinese wolfberry was: aloe juice 20ml,peanut juice 60ml,Chinese wolfberry juice 20ml,water 100ml,sucrose 6%,and citric acid 0.08%.The compound beverage prepared in the optimal condition exhibited a unique taste,plentiful nutrition components and excellent flavor.

Abstract:Through the choice of two bacteria fermentation methods, fermentation conditions and raw materials limited exploration study to determine the best formula baby milk aloes and crafts. The results showed that when added to fermented milk volume is 30%, 50% of the volume of corn syrup, aloes sap joined by 7%, fermentation temperature of 28.5℃, the total time for 72 hours, alcohol products have reached 2.5%,when the milk production of the best tasting beer beverages.

Abstract:This research selected the rose,the aloe and the goat's milk as a raw material and used the orthogonal testing method to study new complex acids goat's milk drinks and various raw materials processing craft and to determine the drinks best formula proportion and the stability.As shown in the study,(1) The rose aloe duplicate complex acids sheep's milk drinks processing craft was:the fresh sheep's milk → filters,the disinfection → sweetens,the mold mushroom spawn ferments → the refrigeration → increase rose juice,the aloe juice,the pure water and so on → the increase stabilizer,stirs → fills installs → the antiseptic → end product.(2) Rose juice extraction processed for the best use of water 15 times in one hour from 70 ℃.Aloe juice and the water best allocated proportion was 1:4.(3) Rose aloe duplicate complex acids goat's milk drinks best formula was:The sour goat's milk 35%,the rose juice 15%,the aloe juice 10%,the pure water 40%,white granulated sugar 6%,stabilizer CMC-Na 0.5%.

Abstract:Objective: To study the preparation process of anti-aging healthy beverage.Methods: L9 (34) was used to identify, weigh and pretreat raw materials, optimize and make an orthogonal experiment with as reference, screen out the optimal formula of beverage blending in accordance with sensory score.Results: The best formula of anti-aging healthy beverage with compound hawthorn and Astragalus membranaceus: 43% for extraction amount of Chinese herbal medicine such as hawthorn and Astragalus membranaceus, dosage of sweetener for 8.4%, dosage of β-cyclodextrins for 0.5%, dosage of essence for 0.07%, xanthan gum for 0.05%, CMC Na for 0.15%, pectin for 0.06% and carrageenan for 0.04%. In this way, beverage flavor and stability are both the best.Conclusion: Beverage with healthy function with hawthorn and Astragalus membranaceus as the main materials can be controlled to the optimum in stability and homogeneity effect. Beverage flavor can be ensured the best; at the same time, the production stability of the food industry can be ensured.

Abstract:A kind of health GABA enriched soft drink was developed with the whole liquor from L. lactis B fermentation from brown rice juice,germinated soybean juice and hydrolyzed skim milk.The experimental results showed that the optimum ingredients of GABA-enriched soft drink were as follows: 5% fermentation broth,40% medlar juice,40% apple juice,3% compound sweetener,0.10% phosphoric acid.After clarified with 0.25% gelatin and 0.25% tannin clarification,there was no deposition in the beverage after 2 months storage at the room temperature.Fuzzy comprehensive evaluation methodology showed that GABA-enriched soft drink was acceptable to sensory test members.

Abstract:The healthy wine used Lentinus edodes and Hericium erinaceus as the major raw materials,together with wolfberries and honey.All materials were dipped in faint scent flavor liquor made of pure grain sorghum.And its major healthy functions are improving immunity and antifatigue.Full processes,such as extraction,degree reduction,flavor,clarification,were involved in the whole study.The influence of extraction on effective components in the wine was studied and the technology of clarification in the later process was also discussed.According to relative laws and regulations,together with mensuration of polysaccharides,total-saccharides and alcohol degrees,quality standards of the healthy liquor were set up.

Abstract:Abstract: Pomegranate juice is a good source of polyphenols and has good antioxidant potential, whereas, the studies on pomegranate juice have shown that it possesses antiatherogenic, antioxidant, antihypertensive, and anti-inflammatory properties. The literature also reported the major decrease in atherosclerotic lesion region in immune-deficient mice and intima media thickness in cardiac patients on medications, due to consumption of pomegranate juice. Whereas, in patients with type 2 diabetes, a reduction in lipid peroxidation was observed and in hypertensive patients, a systolic blood pressure and serum angiotensin converting enzyme activity was determined. Therefore, the study showed the potential cardioprotective advantages of pomegranate juice and suggests the inclusion of this juice in a diet for a healthy living. the composition of aloe vera and its role in development of functional foods. The colorless and watery gel-like consistency are the characteristics of aloe vera gel that makes it better option for blend beverages. The functional characteristics render aloe vera with broad range of application in the pharmaceutical, cosmetics and food sectors. The presence of antioxidants and hormones (auxins and gibberellins) in aloe vera, are responsible for preventing chronic diseases and wound healing properties by inducing the cell propagation, thus providing anti-inflammatory action, respectively. Saponins and salicylic acid present in it, provides antibacterial and antiseptic activity. The literature also reveals that emidine and aloin are the compounds present in aloe that act as antiviral, antibacterial and analgesic agent. Whereas, it also contains vitamins E, C and minerals such as, copper, selenium and zinc, along with enzyme brady kinase, fatty acids and sugar, essential and non-essential amino acids, 12 anthraquinones phenolic compounds. The most abundant monosaccharide and polysaccharides found in aloe vera are Mannose-6-phosphate, and glucomannans, respectively.

Abstract:Aloe vera gel is one kind of new resource food.In the extraction processing,filtration is a very important section.In order to prompt the rate of aloe-gel filtrate,the influencing factors of the processing of aloe-gel suspension filtration were studied.The program to prompt the rate of aloe-gel filtrate was obtained.At a certain scope,the greater the stress,the faster the filtration rate;keeping warm of the suspending liquid and adding enzyme could prompt the rate of the filtration;mixing filter aid was the perfectly method for mass filtration.Mixing 0.05% pectinase and 8% diatomite with the aloe-gel could obtain the optimal effect in the processing of aloe-gel filtration.

Abstract:In this study,0.5％ (mass concentration) black tea and 6.54％ (mass concentration) honey (with soluble solids content of 76.4％) were used as substrate to ferment Gluconacetobacter sp.,A4,a strain of Kombucha separated and purified in our laboratory earlier,at inoculum concentration of 10％ to develop a new kind of functional beverage.Kombucha could produce functional factor with liver-protecting effect named D-Saccharic acid 1,4 lactone monohydrate (DSL).The beverage with unique flavor and taste was obtained after fermentation at 86 °F for about 4-5 days.The fermented liquid was centrifuged,filtrated,mixed,filled into bottle,sealed,and sterilized to obtain industrial product.After sensory evaluation,the final formula of the beverage was determined as follows:87.35％ fermented liquid,12.24％ sugar,0.16％ citric acid and 0.25％ malic acid.Finally,compared with three commercially available Kombucha beverages,our product has the highest resistance tooxidation.
