Abstract:Drying is one of the widely used methods of grain, fruit, and vegetable preservation. The important aim of drying is to reduce the moisture content and thereby increase the lifetime of products by limiting enzymatic and oxidative degradation. In addition, by reducing the amount of water, drying reduces the crop losses, improves the quality of dried products, and facilitates its transportation, handling, and storage requirements. Drying is a process comprising simultaneous heat and mass transfer within the material, and between the surface of the material and the surrounding media. Many models have been used to describe the drying process for different agricultural products. These models are used to estimate drying time of several products under different drying conditions, and how to increase the drying process efficiency and also to generalize drying curves, for the design and operation of dryers. Several investigators have proposed numerous mathematical models for thin-layer drying of many agricultural products. This study gives a comprehensive review of more than 100 different semitheoretical and empirical thin-layer drying models used in agricultural products and evaluates the statistical criteria for the determination of appropriate model.

Abstract:Fresh foods like vegetables, fruits, and aquatic products have high water activity and they are highly heat-sensitive and easily degradable. Dehydration is one of the most common methods used to improve food shelf-life. However, drying methods used for food dehydration must not only be efficient and economic but also yield high-quality products based on flavor, nutrients, color, rehydration, uniformity, appearance, and texture. This paper reviews some new drying technologies developed for dehydration of vegetables, fruits, and aquatic products. These include: infrared drying, microwave drying, radio frequency drying, electrohydrodynamic drying, etc., as well as hybrid drying methods combining two or more different drying techniques. A comprehensive review of recent developments in high-quality drying of vegetables, fruits and aquatic products is presented and recommendations are made for future research.

Abstract:The honeycomb paperboard drying process determines its forming quality.The research of honeycomb paperboard drying process and the drying part structure optimization is of important theoretical value and practical application value. Based on the theory of moisture migration in sold matters during drying,here we introduce the main theory of moisture transfer in solid material and establish the honeycomb paperboard drying part model.With the simulation analysis and simplifying calculation,we can get the temperature field distribution,moisture distribution,pressure distribution and the hot air flow direction in drying part.

Efficient, energy-saving, low environmental impact drying processes to produce dried products of uniform quality that meet specific specifications are desired. This mini-review provides a nonexhaustive view of recent advances in drying technologies, particularly on product perspectives. Based on the listed studies, the challenges and ways forward are discussed.

Abstract:The work aims to provide reference for the future application of freeze drying technology in fruits,vegetables and more kinds of food.The application of vacuum freeze drying technology in fruits and vegetables in recent years was reviewed,and the possible problems in the freeze drying process and some measures to strengthen the freeze drying process were discussed.Although vacuum freeze drying technology is regarded as one of the most expensive dehydration methods,in recent years,due to the demand of consumers for less processing and high-quality food,this technology has been more and more widely used in the food industry.In recent years,the challenges faced by vacuum freeze drying technology have been effectively solved through pretreatment and process strengthening of some innovative technologies.With the introduction of online monitoring,intelligent quality monitoring and other technologies,vacuum freeze drying has been further developed.

Abstract:The heat and mass transfer models applicable to biological products at each element in a far-infrared fixed-bed dryer were established. The model was validated by comparing the simulation results with experimental data of black mushrooms (Lentinus edodes) in terms of moisture content and drying rate. The very good agreement suggests that the models for heat transfer and drying rate of biological products in the far-infrared fixed-dryer can be obtained by establishing the equations of radiation and dehydration in interspace elements. An unevenness of change in moisture content and drying rate on the same horizontal layer in the dryer was found. Thus it is necessary to take some measures to solve this nonuniformity in drying if the proposed dryer is employed.

Abstract:The process of drying thin-layer radish strips under two drying conditions was analyzed and a predictive model was set up according to the mass and heat balance principles in drying.The corresponding experiment showed that the measured values were very close to the predicted values.The predictive result indicates that the drying speed of material first increases,then decreases and lastly the moisture content of material tends to equilibrium in drying,which accords with the law of drying.So it is feasible to forecast the process of drying thin-layer radish strips by the predictive model.

Abstract:Drying serves as an effective method to truncate the post-harvest wastage of agricultural products. This research paper presents a new thin-layer drying model to predict drying kinetics in the falling rate region. The semi-empirical model is derived as a modification of Fick's second law and includes one drying constant. By determining this drying constant at a specific temperature, the model allows for the prediction of drying kinetics at any temperature. A Python program was used to evaluate the drying constant through nonlinear regression. Additionally, the model was simplified to obtain the required drying time at any given temperature. The study examined the drying kinetics of several agricultural products, including potato slices, green peas, and banana slices, at temperatures of 60 °C, 70 °C, and 80 °C, respectively. Experimental data of these agricultural products at various drying temperatures were validated against several known thin-layer drying models and the proposed model. The evaluation of model performance was conducted using statistical measures, specifically R 2 and MAE . The higher R 2 values (0.991-0.999) and lower MAE values (0.008-0.032) suggest strong agreement between the proposed model and experimental data, demonstrating its efficacy compared to previously reported models. Additionally, the proposed model exhibited the capability to predict drying time with high accuracy (error ± 2.9%) for any given temperature.

Abstract:In this paper,microwave drying equipments and the application of microwave drying technology in Chinese medicine were introduced.Advantages of microwave drying in the preparation of Chinese medicine extracts and products were also summarized.Advantages of microwave drying include fast drying,high energy utilization,uniform drying effect,effective sterilization,and easy automatic control.Meanwhile,three suggestions were proposed to solve the application problems,which include the study of drying processes mechanism,development of online testing technology and evaluation improvement of microwave drying methods.

Abstract:The technology of drying by hot-air on fruit and vegetable is widely used in practice because of its convenience. However, it has some defects such as a low efficiency and the inferior quality of the dried products, which are the obstacles to its further application. This study focuses on improving the current technology and a new technology is introduced, that is, to dry bio-products by hot-air after they are pretreated by gamma irradiation. Experiments are made to study the influence of different irradiation dosages, air temperatures, slice thicknesses of apple on the dehydration rate and temperature of samples. A conclusion is reached that the three factors affect the dehydration rate and temperature of slice apple, and, the higher the dosage, the greater the rate of dehydration of apple, and the higher the temperature.

Abstract:Fresh berries containing in bioactive compounds are perishable under natural conditions. Drying is one of the most effective processing techniques to extending the shelf life of berry products, and the nutrients and active components of berries can be retained to a great extent. However, the flavor and texture of the final product considerably correlate with drying techniques. Therefore, the present reviewed work summarizes the research progress of berry drying technology by the perspectives of traditional drying technology and innovative drying concepts and explores the research situation of convective drying, freeze drying, vacuum drying, microwave drying and innovative drying technology for berry drying. The dehydration mechanism, pretreatment methods, and drying technology of various berries were summarized. And the effects of different drying treatments on nutritional components of berry drying were presented; application status of mathematical modeling employed in berry drying was also discussed. Moreover, the research direction and development trend of berry drying techniques in the future were pointed out, which are aimed at improving the drying efficiency of berries, preserving the active components of berries to the greatest extent, and promoting the processing utilization of berries and economic benefits in the future to provide a reference for further research and utilization of drying technology.

Abstract:Pulsed vacuum drying (PVD) is a novel vacuum drying method that has demonstrated significant potential in improving energy efficiency and product quality in the drying of foods and agricultural products. The current work provides a comprehensive analysis of the latest advancements in PVD technology, including its historical development, fundamental principles, and mechanistic aspects. The impact of periodic pulsed pressure changes between vacuum and atmospheric pressure on heat and moisture transfer, as well as structural changes in foods at micro- and macro-scales, is thoroughly discussed. The article also highlights the influential drying parameters, the integration of novel auxiliary heaters, and the applications of PVD across various fruits, vegetables, and herbs. Furthermore, the review examines the current status and needs for mathematical modeling of PVD processes, identifying key challenges, research opportunities, and future trends for industrial application. The findings suggest that PVD not only enhances drying efficiency and reduces energy consumption but also preserves the nutritional value, color, and texture of dried products better than traditional methods. Future research should focus on optimizing process parameters and integrating advanced control systems to further improve the scalability and applicability of PVD technology in the food industry.

Abstract:Abstract In this study, experimental works were carried out in three different drying methods named HE-ETADS, greenhouse solar dryer (GHSD), and open sun drying (OSD) to compare thin layer drying kinetics, concept of mass transfer, and quality assessment of banana slices. Initial moisture content (MC) of banana slices was obtained 78 ± 2.0% (wb), which decreased to 23.2 ± 2.0% (wb), 25.6 ± 2.0% (wb), and 28.8 ± 2.0 % (wb) in all three drying systems respectively in 9hours of drying time. Average drying rate was evaluated as 7.89, 7.65, and 7.25gwater/g solid.hr in HE-ETADS, GHSD, and OSD, respectively. Weibull model (WM) defines thin layer drying kinetics of banana slices in all three drying processes. Maximum hardness and shrinkage factor of dried banana slices were obtained as 373.6g and 75%, respectively, in HE-ETADS. Effective moisture diffusivity, activation energy, and mass transfer coefficient were computed as 1.11E-07 to 2.48E-07m2s−1, 30.25kJ/mole, 3.21E-04 to 1.0E-04m/s, in HE-ETADS. Similarly, in GHSD and OSD these factors were observed as 1.21E-07 to 2.34E-07m2s−1, 41.25kJ/mole, 3.15E-04 to1.0E-04 m/s and 1.3E-07 to 2.21E-07m2s−1, 56.89kJ/mole, 3.01E-04 to1.0E-04m/s. Maximum total color changes were noted in OSD. Hence, HE-ETADS can potentially dry high moisture content crops effectively within a minimum drying period.

Abstract:Drying is an essential method for the process and storage of aquatic products. With the removal of water, the occurrence of oxidation, hydrolysis and browning reaction also accompanies it. This article reviews the applications of emerging drying methods in aquatic products, emphasising high‐quality drying. In addition, it summarises the effects of the drying process on the quality of aquatic products, including appearance, nutritional components, flavour and microorganisms. Especially, non‐destructively monitoring technologies are introduced and discussed, including near‐infrared spectroscopy, Raman spectroscopy, hyperspectral imaging, low‐field nuclear magnetic resonance and computer vision system, which are applied to detect and predict the quality of aquatic products. A comprehensive review of recent advances in the research of the drying process of aquatic products is presented, and some perspectives are made for future research.

Abstract:This chapter evaluates the impact of drying on the physicochemical parameters of fruits and vegetables like texture, shrinkage, color, porosity, flavor, etc. It highlights the changes in the nutritional properties during drying. The chapter also focuses on the organoleptic and rehydration characteristics of fruits and vegetables as influenced by the drying process. Numerous research works showed the actual drying occurring during the falling rate period. The drying techniques like fluidized bed and spouted bed drying and tray drying are included under the convective drying, which exhibited the analogous anthocyanin levels, color, taste, and rehydration of halved cranberries. The handling of fresh fruits and vegetables after harvesting is a great challenge due to their perishable nature and drying process may increase the storage life and prevent the microbial growth of these products. While the drying process, the rehydration behavior can be studied as an induced damage like integrity loss and reduced rehydration ability of the foodstuff.

Abstract:Drying is the main technical means of fruit and vegetable processing and storage; freeze drying is one of the best dehydration processes for fruit and vegetables, and the quality of the final product obtained is the highest. The process is carried out under vacuum and at low temperatures, which inhibits enzymatic activity and the growth and multiplication of micro-organisms, and better preserves the nutrient content and flavor of the product. Despite its many advantages, freeze drying consumes approximately four to ten times more energy than hot-air drying, and is more costly, so freeze drying can be assisted by means of highly efficient physical fields. This paper reviews the definition, principles and steps of freeze drying, and introduces the application mechanisms of several efficient physical fields such as ultrasonic, microwave, infrared radiation and pulsed electric fields, as well as the application of efficient physical fields in the freeze drying of fruits and vegetables. The application of high efficiency physical fields with freeze drying can improve drying kinetics, increase drying rates and maintain maximum product quality, providing benefits in terms of energy, time and cost. Efficient physical field and freeze drying technologies can be well linked to sustainable deep processing of fruit and vegetables and have a wide range of development prospects.

Abstract:Medium and short-wave infrared drying (MSWID) is a new drying technology, widely used for drying agricultural products, such as fruits, vegetables, and edible fungi. MSWID is superior to conventional drying technologies due to its high energy efficiency, uniform heating, and high product quality. This method can be combined with other drying techniques to improve the penetration degree, drying rate, and product quality, including vacuum freeze-drying, differential pressure flash, air impingement, and microwave vacuum drying. This review comprehensively investigates and discusses the principles, characteristics, and applications of MSWID with/without other techniques for agricultural products. The effects of three parameters (drying temperature, radiation power, and distance) on the drying kinetics and product quality are discussed in detail. The combination of MSWID with other drying methods is also summarized, providing new insights into MSWID applications.

Abstract:Open sun drying experiments in thin layers of crain-crain (CC), fever (FV) and bitter (BT) leaves grown in Abeokuta, Nigeria were conducted. The drying process took place in the falling rate period and no constant rate period was observed from the drying curves. Eight thin layer mathematical drying models were compared using the multiple determination coefficients (R 2 ), reduced chi-square (χ 2 ) and root mean square error (RMSE) between the observed and predicted moisture ratios. Accordingly, Midilli et al. model satisfactorily described the drying curves of the three leaves with R 2 of 0.9980, χ 2 of 2.0×10 -4 and RMSE of 1.09×10 -2 for CC leaves; R 2 of 0.9999, χ 2 of 2×10 -6 and RMSE of 1.11×10 -3 for FV leaves; and R 2 of 0.9998, χ 2 of 1.9×10 -5 and RMSE of 3.3×10 -3 for BT leaves. The effective diffusivity was found to be 52.91×10 -10 , 48.72×10 -10 and 43.42×10 -10 m 2 /s for CC, BT and FV leaves, respectively.

Abstract:The thick-layer drying kinetics of moisture-containing porous material (honeysuckle) at constant temperature and humidity are experimentally investigated, and the drying characteristics under variable temperature and humidity conditions are analyzed in this paper. The results show that the drying rate is constant and linearly/positively corrected with the moisture content under constant temperature and humidity conditions, and the corresponding slope (drying rate constant) decreases exponentially with the increase in the number of stacked layers because of the increased flow resistance and diminished convective migration of water vapor. The migration of saturated water vapor changes from convection-dominated to diffusion-dominated after the thickness of the stacked materials exceeds a critical value. Based on the experimental data, a new semi-theoretical drying model was proposed for thin-layer and thick-layer drying of moisture-containing stacked porous materials, and it was experimentally verified with a coefficient of determination greater than 0.92. The relative humidity of the drying medium is a key factor in determining the drying rate, and reducing the relative humidity of the drying medium at a constant temperature is suitable for drying heat-sensitive materials. This paper can contribute to the development of drying kinetics and provide a theoretical basis for the drying of moisture-containing porous material.
