Abstract:Tea polyphenols is an ideal natural anti-oxidant,which has being widely applied in many fields.The methods of extraction of tea polyphenols from green tea have been become one of hot points of tea research.In the present paper,methods of extraction of tea polyphonols from green tea were reviewed,including solvent extraction,ionic precipitation,supercritical CO2 extraction,resin adsorption,ultrasonic assistant extraction,microwave assistant extraction and so on.We also discussed basic principle,producing routine and advantage or disadvantage of each method at the same time.

Comprehensive Reviews in Food Science and Food Safety

Abstract:The functional components in tea confer various potential health benefits to humans. To date, several special tea products featuring functional components (STPFCs) have been successfully developed, such as O-methylated catechin-rich tea, γ-aminobutyric acid-rich tea, low-caffeine tea, and selenium-rich tea products. STPFCs have some unique and enhanced health benefits when compared with conventional tea products, which can meet the specific needs and preferences of different groups and have huge market potential. The processing strategies to improve the health benefits of tea products by regulating the functional component content have been an active area of research in food science. The fresh leaves of some specific tea varieties rich in functional components are used as raw materials, and special processing technologies are employed to prepare STPFCs. Huge progress has been achieved in the research and development of these STPFCs. However, the current status of these STPFCs has not yet been systematically reviewed. Here, studies on STPFCs have been comprehensively reviewed with a focus on their potential health benefits and processing strategies. Additionally, other chemical components with the potential to be developed into special teas and the application of tea functional components in the food industry have been discussed. Finally, suggestions on the promises and challenges for the future study of these STPFCs have been provided. This paper might shed light on the current status of the research and development of these STPFCs. Future studies on STPFCs should focus on screening specific tea varieties, identifying new functional components, evaluating health-promoting effects, improving flavor quality, and elucidating the interactions between functional components.

Abstract:Background: Brewing is the final stage in tea consumption, which amplifies the original flavor or embellishes defects of tea infusion, turning drinking into a life attitude and an artistic pursuit. Nevertheless, present research focused on tea brewing is majorly about chemical compositions and sensory evaluation, which lacks a systematic framework that connects apparent phenomena, underlying principles, and technical applications. Besides, the daily methods employed for tea brewing primarily rely on experience because of lacking a systematic generalization of the scientific brewing design. Simultaneously, lacking targeted tea brewing technology leads to underexpressed tea qualities and is difficult to innovate tea brewing techniques. Scope and approach: In this review, the latest research progresses of the release principle, extraction and transformation process of tea chemical components, the effect of brewing parameters on sensory quality were summarized. Meanwhile, existing methods and potential pollutants during brewing were reviewed. Key findings and conclusions: According to brewing kinetics, more efficient brewing would be achieved by providing enough space for tea to swell (such as reducing the single tea particle size and the height of tea bed). Meanwhile, Non-fermented and lightly-fermented teas were recommended to be brewed with low total dissolved solids (TDS) and weakly acidic water, and higher fermented teas should be brewed with higher TDS water. Temperature, time and water/tea ratio affect the overall quality of tea infusion by affecting the leaching and conversion of tea polyphenols, caffeine and theanine. Moreover, innovative CBT processing technologies have been collated, including DLC, UAE, HHP, etc. In view of the above, an interconnected framework "brewing kinetics principles - key influencing factors - brewing technologies" was proposed, which lays a foundation for the brewing technologies. Based on this framework, the possible future research orientation was also prospected in this review, especially in the aspects of healthy activity, nanoparticles and additives.

Abstract:Background: Tea seed (TS), as the mature fruit and growth source of tea plant, has been characterized with appealing bioactive substances, remarkable health benefits and diverse application prospects. As one of the most significant products of TS, tea seed oil (TSO) has gained recognition as the "oriental olive oil". Tea seed meal (TSM) and tea seed shell (TSS) continue to be underutilized and are usually considered as low-value by-products. Nevertheless, current exploration of the underlying mechanisms is inadequate, and investigations concerning deep processing and potential prospects still remain at their infancy. Consequently, there exists a gap in the comprehensive aspects of TS utilization and the related advancements.Scope and approach: In this review, we have summarized the latest research progresses on TS, specifically focused on the bioactive substances, pharmacological activities, manufacturing process and potential applications. Furthermore, we have also elucidated the current challenges in existing studies, and proposed the research orientations and potential prospects of TS.Key findings and conclusions: TS contain abundant bioactive substances, and exhibit outstanding performance in antioxidant, anti-tumor, anti-obesity, anti-microbe, gastric protection, and so on. These properties contribute to its application potentials as crucial materials in industry, agriculture and ecology, as well as new perspective in drug development and clinical translation. Future researches should concentrate on the specific active in-gredients, intricate structure-activity relationships, bioactive mechanisms, undiscovered health benefits and manufacturing process, which would facilitate the transformation of waste resources into valuable treasures, thus fostering sustainable development and socio-economic growth.

Abstract:Pu-erh tea is a unique microbial fermented tea produced from the sun-dried leaves of large-leaf tea species (Camellia sinensis (Linn.) var. assamica (Masters) Kitamura) in the Yunnan province of China. Pu-erh tea has become increasingly popular in Southeast Asia may be due to its multiple health benefits. The special sensory characteristics of Pu-erh tea arise from the multitudinous chemical changes and transformations of the chemical constituents of the sun-dried green tea leaves that occur during the post-fermentation process. Many functional components have been isolated from Pu-erh tea and identified. In this paper, modern processing techniques and their effects on the transformation of the chemical constituents and the major chemical components of Pu-erh tea are reviewed and discussed.
The Research of the Relationship between Antioxidation of Tea Extractive and Tea Polyphenols as Well as Catechins

Abstract:In this experiment, six kinds of tea extractive were tested as research objects, their total phenol content, catechins content, antioxidant activity and free radical scavenging activities were determined, and the relationships between them were analyzed according to the results. The analysis showed that the correlation coefficient between antioxidant activity and total phenol content is higher than that between antioxidant activity and total catechins content as well as EGCG by and large, indicating that tea polyphenols without catechins also has high antioxidant ability; the correlation coefficient between antioxidant activity and EGCG content is higher than that between antioxidant activity and total catechins, indicating that antioxidant activity of EGCG is higher than that of catechins' average; the results also showed that free radical scavenging ability of tea polyphenols, catechins and EGCG is different from each other.

Abstract:Kuding tea (KT) is the general name of a set of bitter-tasting herbal tea made from varied original plant species. However, limited information was reported about the difference of bioactive constituents, heavy metals, and bioactivities among those original species. In the present study, comparison analyses among heavy metals, polysaccharides, phenolics, flavonoids, and saponins constituents, as well as the antioxidant and antidiabetic activities were performed through colorimetry, UPLC-QTOF-MS, enzymatic assay and molecular docking techniques on the six KT original plants mainly from the genus Ilex . Results showed that Cd contents in the four KT original plants other than Ilex pubescens (IP) and Ilex cornuta (IC) and heavy metal contents including Pb, Cu, As and Hg in the all six plants were lower than standard limit values. Furthermore, contents of carbohydrate in polysaccharides (470.06 and 548.51 mg GLE/g), total phenolics (33.84 and 48.85 mg GAE/g), flavonoids (30.86 and 109.97 mg RE/g), phenolic acids (49.68 and 61.48 mg CAE/g), flavonols (18.47 and 19.19 mg RE/g), flavanols (0.18 and 0.14 mg CE/g), saponins (90.81 and 97.33 mg GSE /g) in IP and Ligustrum japonicum (LJ), as well as their antioxidant activity levels (IC 50 607.41–780.44, and 547.06–754.00 mg/L) were all significantly higher than those in other four KT original plants. Moreover, a total of 6 and 9 compounds were tentatively characterized from IP and LJ, respectively, and molecular docking and molecular dynamics simulation were further used to analysis the interaction between α-glucosidase and bioactive compounds in IP. At last, principal component, hierarchical cluster, and correlation analysis indicated that carbohydrate content of polysaccharides, total phenols, flavonoids and phenolic acids were the main influencing factors to antioxidant abilities. Overall, according to our systematic analysis, IP possessed the highest antioxidant and antidiabetic potentials, thus might be a better KT original plants from the genus Ilex for further development and utilization.

Abstract:The antioxidative activity,aroma constituents and the major chemical components of three grades of Pu-erh tea,i.e.high,medium and low grade,were studied and compared.Results showed that the significant difference(P0.05)was shown in evaluation of the total antioxidative activity,scavenging hydroxyl free radical activity,scavenging DPPH free radical activity,total amount of alcohols compounds,total amount of heterocyclic oxygen compounds,total flavonoids and tea pigments between high and low grades.When compared with high or low grade,the medium grade of Pu-erh tea was found no significant difference(P0.05)in the others testing index except the total antioxidative activity,scavenging hydroxyl free radical activity,tea polyphenols and total flavonoids.Principal component analysis showed that the important indicator to distinguish the grade of Pu-erh tea seemed to be the scavenging hydroxyl free radical activity,the total antioxidative activity,tea polyphenols,total flavonoids and total amount of alcohols compounds.

Abstract:In the process of adapting to the environment, tea plants () endow tea with unique flavor and health functions, which should be attributed to secondary metabolites, including catechins, L-theanine, caffeine and terpene volatiles. Since the content of these flavor-contributing metabolites are mainly determined by the growth of tea plant, it is very important to understand their alteration and regulation mechanisms. In the present work, we first summarize the distribution, change characteristics of the main flavor-contributing metabolites in different cultivars, organs and under environmental stresses of tea plant. Subsequently, we discuss the regulating mechanisms involved in the biosynthesis of these metabolites based on the existing evidence. Finally, we propose the remarks and perspectives on the future study relating flavor-contributing metabolites. This review would contribute to the acceleration of research on the characteristic secondary metabolites and the breeding programs in tea plants.

Abstract:Pu-erh tea is post-fermented sun-dried tea leaves of Camellia sinensis (Linn.) var. assamica (Masters) Kitamura plant, native to Yunnan, China. Pu-erh tea is a highly prized commodity with unique aroma and taste and multiple health effects. This review overviews the chemical constituents, tentative bioactive compounds and their mechanisms responsible for bioactivities of Pu-erh tea. The bioactivities include antioxidative, antimutagenic, antimicrobial, laxative and neuroprotective activities, and controlling or preventing hypercholesterolemia, hyperglycemia, obesity, diabetes, osteoporosis and Alzheimer's disease. Limited human trials hardly convince the claimed therapeutic efficiency of Pu-erh tea. Raw and ripened Pu-erh tea possess their respective sensory characteristics, chemical and microbial diversities. Chemical and biological differences between Pu-erh and other tea types could be explained by different extents of their respective processing-induced compound transformations. Undesirable heavy metals, mycotoxins and other biocontaminants detected in Pu-erh tea relate to growing conditions of tea plantations, processing and storage conditions. Chemistry- and nutrition-derived mechanisms for tea pricing are lacking. Decontamination strategies and future studies for quality improvement of Pu-erh tea are recommended.

Abstract:Background: Tea (Camellia sinensis) has a rich history and is widely consumed across many countries, and is categorized into green tea, white tea, oolong tea, yellow tea, black tea, and dark tea based on the level of fermentation. Based on a review of previous literature, the commonly recognized bioactive substances in tea include tea polyphenols, amino acids, polysaccharides, alkaloids, terpenoids, macro minerals, trace elements, and vitamins, which have been known to have various potential health benefits, such as anticancer, antioxidant, anti-inflammatory, anti-diabetes, and anti-obesity properties, cardiovascular protection, immune regulation, and control of the intestinal microbiota. Most studies have only pointed out the characteristics of tea's bioactivities, so a comprehensive summary of the pharmacological characteristics and mechanisms of tea's bioactivities and their use risks are vital. Aim of review: This paper aims to summarize tea's bioactive substances of tea and their pharmacological characteristics and mechanisms, providing a scientific basis for the application of bioactive substances in tea and outlining future research directions for the study of bioactive substances in tea. Key scientific concepts of review: This review summarizes the main biologically active substances, pharmacological effects, and mechanisms and discusses the potential risks. It may help researchers grasp more comprehensive progress in the study of tea bioactive substances to further promote the application of tea as a natural bioactive substance in the medical field.

Abstract:The pu-erh tea was extracted with water and separated by the order of chloroform,ethyl acetate and n-butanol.The antioxidant activity of pu-erh tea extracts was investigated by the 2,2-diphenyl-1-picrylhydrazyl(DPPH) free radical-scavenging assay.The result pointed pu-erh tea ethyl acetate extract(PEAF)had the strongest DPPH scavenging activity.High performance liquid chromatography combined with diode array and electrospray-ion trap-mass spectra detection was used to separate and identify the compounds present in PEAF.There are three phenolic acids,i.e.,4-hydroxy-benzoic acid,dihydroxy-benzoic acid and gallic acid,seven catechins,i.e.,catechin,epicatechin(EC),gallocatechin,epigallocatechin(EGC),epicatechin gallate,epigallocatechin gallate and epiafzelechin-3-O-gallate,nine catechins derivatives,i.e.,procyanidins dimmer,puerin A,puerin B,EC-8,7-e-4α-(4-hydroxyphenyl)-3,4-dihydro-2(3H)-pyranone,EC-8,7-e-4β-(4-hydroxyphenyl)-3,4-dihydro-2(3H)-pyranone,Cinchonain Ib(α and β),EGC-8,7-e-4α-(3,4-dihydroxyphenyl)-3,4-dihydro-2(3H)-pyranone and EGC-8,7-e-4β-(3,4-dihydroxyphenyl)-3,4-dihydro-2(3H)-pyranone,and six flavonol glycosides,i.e.,quercetin,quercetin-glucoside,quercetin-rhamnoside,quercetin-rutinoside,quercetin-glucoside-rhamnoside-rhamnoside and kaempferol-rutinoside.

Abstract:Ginkgo biloba leaf extract (EGBL) is a valuable herbal extract. The main active ingredients are flavonoids, terpene lactones, organic acids and proanthocyanidins. In recent years, there have been many reports on the detection of the above active ingredients. In this paper, the analysis methods of chemical components in EGBL were reviewed, such as ultraviolet spectrophotometry, high-performance liquid chromatography, and quantitative nuclear magnetic resonance. The analysis methods of ginkgolic acids are also reviewed. Based on the current research progress, three suggestions are provided. Firstly, the quality marker research of EGBL needs to be strengthened. Secondly, more bioassay methods for EGBL quality control should be developed. Thirdly, it is necessary to strengthen the detection of proanthocyanidins in EGBL. [GRAPHICS] .

Abstract:Polyphenols, the most abundant components in tea, determine the quality and health function of tea. The analysis of polyphenols in tea is a topic of increasing interest. However, the complexity of the tea matrix, the wide variety of teas, and the difference in determination purposes puts forward higher requirements for the detection of tea polyphenols. Many efforts have been made to provide a highly sensitive and selective analytical method for the determination and characterization of tea polyphenols. In order to provide new insight for the further development of polyphenols in tea, in the present review we summarize the recent literature for the detection of tea polyphenols from the perspectives of determining total polyphenols and individual polyphenols in tea. There are a variety of methods for the analysis of total tea polyphenols, which range from the traditional titration method, to the widely used spectrophotometry based on the color reaction of Folin–Ciocalteu, and then to the current electrochemical sensor for rapid on-site detection. Additionally, the application of improved liquid chromatography (LC) and high-resolution mass spectrometry (HRMS) were emphasized for the simultaneous determination of multiple polyphenols and the identification of novel polyphenols. Finally, a brief outline of future development trends are discussed.

Abstract:Despite the fact that mankind has been drinking tea for more than 5000 years, its chemical composition has been studied only in recent decades. These studies are primarily carried out using chromatographic methods. This review summarizes the latest information regarding the chemical composition of different tea grades by different chromatographic methods, which has not previously been reviewed in the same scope. Over the last 40 years, the qualitative and quantitative analyses of high volatile compounds were determined by GC and GC/MS. The main components responsible for aroma of green and black tea were revealed, and the low volatile compounds basically were determined by HPLC and LC/MS methods. Most studies focusing on the determination of catechins and caffeine in various teas (green, oolong, black and pu-erh) involved HPLC analysis. Knowledge of tea chemical composition helps in assessing its quality on the one hand, and helps to monitor and manage its growing, processing, and storage conditions on the other. In particular, this knowledge has enabled to establish the relationships between the chemical composition of tea and its properties by identifying the tea constituents which determine its aroma and taste.
