Abstract:The market demand is directly affected by food freshness and the post-harvest spoilage of raw fresh foods,which causes incalculable economic losses and therefore motivates the development of preservation technologies.High voltage electric field (HVEF) is a safe and environment-friendly technology for food processing.HVEF is one of the most promising technologies to preserve raw fresh foods that requires very small energy consumption with no heat effect and only a small temperature increase in the processed foods and causes little effect on the quality of the foods themselves.This manuscript outlines the basic principle of HVEF and provides a systematic elucidation of its mechanism for preserving fruits and vegetables,aquatic products and meat products with respect to membrane potential,enzyme activities and microstructure.Furthermore,future research prospects are discussed.

Abstract:Fruit tissue is heavily damaged during fresh-cut processing, which induces a series of physiological disorders such as softening, browning and microbial infection. Rapid deterioration and short shelf-life are the major hurdle to the commercial marketing of fresh-cut fruit. This paper introduces physiological and biochemical characteristics and summarizes key biotechnologies for fresh-cut processed fruit to provide practical and theoretical basis for the development of fresh-cut fruit industry.

Abstract:The nutrients present in food are not only prone to a series of physicochemical reactions but also provide conditions for the growth and reproduction of foodborne microorganisms. In recent years, many innovative methods from different fields have been introduced into food preservation, which extends the shelf life while maximizing the preservation of the original ingredients and properties of food. In this field, there is a lack of a systematic summary of new technologies emerging. In view of this, we overview the innovative methods applied to the field of food preservation in recent 3 years, focusing on a variety of technological approaches such as antimicrobial photodynamic therapy based on nanotechnology, electromagnetic radiation sterilization based on radiation technology, and antimicrobial peptides based on biomolecules. We also discuss the preservation mechanism and the application of the different methods to specific categories of products. We evaluated their advantages and limitations in the food industry, describing their development prospects. In addition, as microorganisms are the main causes of food spoilage, our review also has reference significance for clinical antibacterial treatment.

Abstract:Low temperature environments can effectively inhibit the growth of microorganisms in raw meat products due to the reduced activity of enzymes, which is conducive to the long-term preservation of foodstuffs. At present, mainstream technologies include ultrasonic-assisted freezing, high-voltage electric and magnetic field-assisted freezing, and liquid nitrogen freezing technologies are widely used in the freezing process. In this paper, the freezing processes and devices for the fresh meat products were reviewed. The formation mechanism of ice crystals during the freezing of meat products was analyzed. The influence of the shape and size of ice crystals on their quality was studied. Also, the effect of different freezing processes and freezing device on the quality of meat products was studied. The key technologies regarding cold chain storage and transportation of meat products should move in the direction of intelligence, information, efficiency, and the unmanned. Finally, the key processes and device regarding freezing, cold chain, storage, and transportation were planned for the future development.

Abstract:<span>Raw fresh foods such as fruits, vegetables, meats, and aquatic products are highly perishable owing to microbial spoilage, chemical, and biochemical reactions after harvest. Pulse electric field (PEF) assisted preservation is a non-thermal technology that exhibits considerable potential to extend the shelf-life of food and provide safe and higher quality products because of its low temperature and short treatment time. This review presents the recent progresses in PEF technology for preserving raw fresh food. The change of cell microstructure, biochemical, and physicochemical properties in raw fresh food induced by PEF is discussed. The application of PEF on raw fresh food regarding inactivating microorganisms, drying, extracting bioactive compounds, and maintaining high quality is summarized. These findings indicate that PEF can be used in food preservation as an alternative or complement to conventional methods. However, the current studies on the effect of PEF on meat and aquatic products were limited. Therefore, more researches about the effect of PEF on protein-based food are needed to facilitate industrial applications.</span>

Abstract:During storage and transportation, meat is susceptible to the effects of microorganisms, endogenous enzymes, and oxygen, leading to issues such as moisture loss, spoilage, and deterioration. Superchilling, as a preservation method that combines the benefits of refrigeration and freezing, can effectively slow the growth and reproduction of microorganisms, control protein and lipid oxidation, reduce water loss, and maintain the quality and sensory properties of meat. This paper reviews the current application status of superchilling technology in meat preservation, focusing on the mechanisms of ice crystal formation, water retention, tenderness preservation, protein and fat oxidation control, and microbial growth inhibition under superchilling conditions. Additionally, it summarizes the research progress on the combined application of superchilling with emerging technologies such as electric fields, magnetic fields, and electron beams in meat preservation and explores its potential and future prospects for improving meat quality. The aim is to provide scientific evidence and technical support for the application of superchilling technology in enhancing meat quality.

Abstract:Most tropical and subtropical fruits are susceptible to chilling injury,mainly manifested as surface pitting and discoloration,water soaking,browning,and failure to ripening.The development of these chilling injury symptoms negatively affects fruit quality and thus shortens storage life.In this article,different postharvest approaches applied to alleviate chilling injury,such as physical techniques,chemical treatments and genetic engineering,were thoroughly reviewed.Meanwhile,the mechanisms involved in the alleviation of chilling injury were discussed and the future research need was proposed.

Abstract:Meat plays a significant role in human diets, providing a rich source of high-quality protein. With advancements in technology, research in the field of meat preservation has been undergoing dynamic evolution. To gain insights into the development of this discipline, the study conducted an analysis and knowledge structure mapping of 1672 papers related to meat preservation research within the Web of Science Core Collection (WOSCC) spanning from 2001 to 2023. And using software tools such as VOSviewer 1.6.18 and CiteSpace 5.8.R3c allowed for the convenient analysis of the literature by strictly following the software operation manuals. Moreover, the knowledge structure of research in the field of meat preservation was synthesized within the framework of "basic research-technological application-integration of technology with fundamental research," aligning with the research content. Co-cited literature analysis indicated that meat preservation research could be further categorized into seven collections, as well as highlighting the prominent role of the antibacterial and antioxidant properties of plant essential oils in ongoing research. Subsequently, the future research direction and focus of the meat preservation field were predicted and prospected. The findings of this study could offer valuable assistance to researchers in swiftly comprehending the discipline's development and identifying prominent research areas, thus providing valuable guidance for shaping research topics.

Abstract:With the increasing restriction on the use of conventional physical methods against food putrefaction and currently used chemical food preservative such as acetic acid, the study and application of biological and natural preservatives have been entering into a new developing field, which has been showing its advantages. In this review, we’ll compile the data available on the emerging alternatives for the commonly used chemical preservatives. We’ll present the current understanding of the mode of action of these biological preservatives and the possibilities for microbial resistance development. Also further study on microbial stress responses against common physico-chemical preservation factors such as heat, water activity (a w) and pH, which will give clue to the further study on biological preservatives, are mentioned briefly.

Abstract:The preservation of the freshness of fruits and vegetables until their consumption is the aim of many research activities. Quality losses of fresh fruit and vegetables during cold chain are frequently attributable to an inappropriate use of postharvest technologies. Moreover, especially when fresh produce is transported to distant markets, it is necessary to adopt proper postharvest preservation technologies in order to preserve the initial quality and limit microbial decay. Nowadays, for each step of supply chain (packing house, cold storage rooms, precooling center, refrigerate transport and distribution), are available innovative preservation technologies that, alone or in combination, could improve the fresh products in order to maintain the principal quality and nutritional characteristics. The issue groups five original studies and two comprehensive reviews within the topic of preservation technologies related to innovative packaging and postharvest operation and treatments, highlighting their effect on quality keeping.

Abstract:Food preservation involves different food processing steps to maintain food quality at a desired level so that maximum benefits and nutrition values can be achieved. Food preservation methods include growing, harvesting, processing, packaging, and distribution of foods. The key objectives of food preservation are to overcome inappropriate planning in agriculture, to produce value-added products, and to provide variation in diet. Food spoilage could be caused by a wide range of chemical and biochemical reactions. To impede chemical and microbial deterioration of foods, conventional and primitive techniques of preserving foods like drying, chilling, freezing, and pasteurization have been fostered. In recent years, the techniques to combat these spoilages are becoming sophisticated and have gradually altered to a highly interdisciplinary science. Highly advanced technologies like irradiation, high-pressure technology, and hurdle technology are used to preserve food items. This review article presents and discusses the mechanisms, application conditions, and advantages and disadvantages of different food preservation techniques. This article also presents different food categories and elucidates different physical, chemical, and microbial factors responsible for food spoilage. Furthermore, the market economy of preserved and processed foods has been analyzed in this article.

Abstract:Recent advances in emerging food-processing technologies, such as high hydrostatic pressure or high-intensity electric field pulses, allow targeted and sophisticated modification and preservation of foods. We are beginning to understand the mechanisms involved in pressure inactivation of bacterial spores and have been collecting considerable amounts of kinetic data regarding inactivation mechanisms of enzymes and vegetative microorganisms. We are also gaining more insight into the permeabilization of plant membranes and related biosynthetic responses, making progress in food structure engineering and food modification for function, and have been initiating process developments for gentle processing of delicate biomaterials based on pressure-assisted phase transitions of water.

Abstract:Meat and meat products are highly susceptible to contamination by microorganisms and foodborne pathogens, which cause serious economic losses and health hazards. The large consumption and waste of meat and meat products means that there is a need for safe and effective preservation methods. Furthermore, toxicological aspects of chemical preservation techniques related to major health problems have sparked controversies and have prompted consumers and producers to turn to natural preservatives. Consequently, natural preservatives are being increasingly used to ensure the safety and quality of meat products as a result of customer preferences and biological efficacy. However, information on the current status of these preservatives is scattered and a comprehensive review is lacking. Here, we review current knowledge on the classification, mechanisms of natural preservatives and their applications in the preservation of meat and meat products, and also discuss the potential of natural preservatives to improve the safety of meat and meat products. The current status and the current research gaps in the extraction, application and controlled-release of natural antibacterial agents for meat preservation are also discussed in detail. This review may be useful to the development of efficient food preservation techniques in the meat industry. © 2024 Society of Chemical Industry.
Low temperature preservation developed for special foods in East Asia: A review

Abstract:Low temperature can improve the quality and prolong the shelf life of perishable food effectively. East Asia has some special foods for its individual geography, climate, and culture, which need different low temperature preservation technologies to maintain their unique flavor. In this paper, the differences in food composition or cooking habits are briefly introduced in each section and then the low temperature preservation technologies developed for these special foods are mainly discussed. Also, the recommendations for future research are provided. Very fast chilling and controlled freezing/supercooling point are promising technologies for pre‐rigor fresh meat. Low temperature oxidation resistance and its combination with nonthermal sterilization can ensure the color, freshness, and safety of raw aquatic products. Low temperature rapid fermentation can effectively maintain the organoleptic property of pickles. The synergies of physical and biochemistry methods can reduce wrapper cracking and filling oxidation of frozen prepared foods. Low temperature is an effective method for the preservation of food. Due to climate and cultural differences, people in different regions have different eating habits. To better meet people's requirements for the special flavor of food, the corresponding low temperature preservation technologies need to be studied and summarized. This review summarizes the low temperature preservation techniques of four representative special foods in East Asia and provides recommendations for future research. These positive results will be helpful to the research and application of food preservation technologies in the future.
