Abstract:Phospholipids (PLs)is a vital class of lipids. Although there is few content of PLs found in cereal grains, it plays funda-mental roles in grain nutrition, physicochemical properties and the formation and maintenance of cereal qualities. In the present re-view, we summarized the classification, composition and distribution of PLs and corresponding fatty acid in rice, maize, wheat, barley and oat. In addition,the effects of endogenous PLs on grain storage, processing and eating qualities have been discussed, for the pur-pose of providing new insight into the improvement of grain qualities and storage with manipulating PLs.

Abstract:Eating-quality is one of the most important qualities for rice. With the development and application of molecular biology techniques, studies of its genetic and molecular bases have made great progresses. This paper summarizes these progresses from the following aspects: the relation between starch component and structure and cooked rice texture, gene location and QTL analysis, the key enzymes involved in the starch synthesis and corresponding gene expression and regulation on starch quality. The possible approaches to further research are discussed.

Comprehensive Reviews in Food Science and Food Safety

Abstract:Postharvest operations, such as drying, storage, and milling, have been used to ameliorate the aging of rice grains and to achieve and maintain desirable rice grain quality, and thus play a key role in determining rice commercial quality and value. This review summarizes publications from the past decade and outlines the evidence supporting attribution of grain quality changes induced by postharvest processes to changes in the physical properties and chemical composition of the rice grain (starch, protein, lipids, and antioxidants). Rice drying mainly affects rice milling quality as rice kernel fissuring that may occur during drying leads to head rice yield reduction. Rice grain aging occurring during storage is inevitable and responsible for the changes in rice appearance, milling, eating, cooking, and nutritional quality. As milling significantly changes the chemical composition of rice by removing protein- and lipid-rich bran layers, milling can alter the aging process of rice and also affect rice appearance, eating, and sensory quality, but mainly affects the nutritional quality. Therefore, drying methods, storage conditions, and milling methods warrant further research to achieve and maintain the desired rice grain quality. This review may contribute to better understanding of the impacts of postharvest processes on rice grain quality, and provide insights into potential improvements in these practices for rice production and utilization in the whole rice industry.

Abstract:Taking Qi 319,9801,Chang 7-2,Zheng 58 and Ph 6 wc,five maize inbred lines of different grading of grain seed as the test material,by seed length,width,thickness and weight determination,seedling growth test,field seedling growth test,as well as plant growth and maturation index observation,had researched the influence on different grading grain of maize seed vigor and plant growth.The results showed that: among five maize inbred lines four to five grading grain type(big flat,big round,small flat,small round and no grading),the seed vigor of big flat was the highest.The majority of inbred line classification particle type on middle heading time period,plant height,ear height,blossom,blossom beginning period of flourishing period,spin,spin the flourishing period,early maturation time and grain number per spike showed no significant influence,but they has significant influence on the seed weight at harvest time.

Abstract:There were complicated biochemical changes in rice grains, and dry matter of rice was accumulated and moisture content of rice decreased gradually during rice maturity. Post-harvested rice grains were fractionated by kernel thickness with grader of slotted screen; there were differences of physical, physicochemical and milling characteristics among grains in various thickness sections. This fractionating process by kernel thickness improved uniformity among grains and applicability of processing product of rice, and the relative characteristics on fractionating process to rice grains could be applied in drying, storing and milling with better the applicability.

Abstract:Grain quality involves the appearance, nutritional, and safety attributes of grains. With the improvement of people’s living standards, problems pertaining to the quality of grains have received greater attention. Modern quality detection techniques feature unique advantages including rapidness, non-destructiveness, accuracy, and efficiency in detecting grain quality. This review summarizes research progress of these techniques in detection of quality indices of grains. Particularly, the review focuses on detection techniques based on physical properties including acoustic, optical, thermal, electrical, and mechanical properties, and those simulating sensory analysis such as electronic noses, electronic tongues, and electronic eyes. According to the current technological development and application, the challenges and prospects of these techniques are demonstrated.

Abstract:Grain is extremely vulnerable to external loads during production and processing, resulting in the deterioration of grain quality. Deteriorated grain not only affects the economic value of grain but also affects the safety of storage. This has a very important relationship with the biomechanical properties of grains. It is of great significance to explore the mechanical properties of grain under different conditions and analyze the relationship between its physical and chemical properties and mechanical properties for improving its processing and eating quality. In this paper, the research methods of the mechanical properties of grains are reviewed. Various factors influencing the mechanical properties of cereals were analyzed. The relationship between the internal organizational structure of grain and its mechanical properties was discussed. This paper puts forward the shortcomings in the current research on the mechanical properties of grains and puts forward the prospect and analysis of its importance in future development in order to provide a reference for reducing crushing in the grain processing process.

Abstract:Physicochemical properties of wheat grains with largest kernel thickness always was lowest than the other sections, examination of microstructure of wheat grains can help us understand this phenomena. Two varieties of wheat, soft white winter wheat Yangmai 11 and hard white winter wheat Zhengmai 9023, were fractionated into five sections by kernel thickness. Then the fractionated wheat grains in 2.7–3.0 mm section were separated into three fractions by kernel specific density sequentially. Microstructure of the fractured surface were evaluated at different scale level to two varieties wheat with different kernel thickness and specific density by using environmental scanning electron microscopy. Compactness and size of endosperm cell tended to decrease with decreasing wheat kernel thickness and specific density. Protein matrix tended to increase with decreasing wheat kernel thickness and specific density. Size of starch granules and proportion for different type starch granules also varied with different wheat kernel thickness and specific density. Those microstructure properties of the fractured surface, formation of endosperm cells, protein matrix and starch granules were close related to rheological properties and pasting properties of wheat grains.
Changes of Components and Organizational Structure Induced by Different Milling Degrees on the Physicochemical Properties and Cooking Characteristics of Quinoa

Abstract:The pasting characteristics induced by different milling degrees on the cooking quality of quinoa were investigated. The results showed that significant variations were observed in the basic composition of quinoa with different milling degrees, which indicated the existence of effects due to the degree of milling. The combination of starch and water promoted the pasting of quinoa, and with increasing milling, quinoa textural properties tended to produce softer and more viscous. LF NMR results indicated that more water was present in the dense network formed by the starch gelatinization. Rheological properties further demonstrated that milling degree enhanced the interactions between starch molecules and correspondingly increased the energy storage modulus and loss modulus. The microstructures (SEM and CLSM) confirmed that the physical property changes in quinoa were attributed to a dense network structure caused by starch pasting, which was similar to the results of RVA. The higher the amylose/amylopectin ratio (between 0.113 and 0.167), the more pronounced the characteristic peaks. The different degrees of milling of quinoa changed the quinoa crystallinity. Consequently, the degree of milling improved the cooking characteristics and enhanced the physicochemical properties. These results help the quinoa processing industry to develop healthy quinoa products with moderate milling.
Relations between Grain Quality Traits and Variaiton of Protein Components among Genotypes in Wheat (Triticum aestivum L.)

Abstract:To explore the difference of grain protein content between (genotypes) and environment, and the effect of the variation of protein components on grain (quality) in wheat, forty wheat cultivars (widely) grown in eastern China were grown in two sites to study the diversity of protein components, and the (relationships) between protein components and grain (quality) traits. The results showed that there were (significant) difference in the (contents) of each protein components among (genotypes), significant variations of both the (contents) of protein components and the ratios between them resulted in difference of protein (quality) between environments. At Xuzhou the environment favored the formation of glutenin so that the ratio of glutenin/gliadin was significantly larger than at Nanjing. The (increase) of albumin (content) reduced the (contents) of glutenin and gliadin while the ratio of glutenin/gliadin decreased with globulin (content) (increased) so that sedimentation value decreased. Favorable bread baking (quality) was obtained at 1.3 of the ratio of glutenin/gliadin which is an ideal trace (indicator) to evaluate grain (quality) in the (genotypes) with high protein (content).

Abstract:Grain quality is one of the key targets to be improved for rice breeders and covers cooking, eating, nutritional, appearance, milling, and sensory properties. Cooking and eating quality are mostly of concern to consumers and mainly determined by starch structure and composition. Although many starch synthesis enzymes have been identified and starch synthesis system has been established for a long time, novel functions of some starch synthesis genes have continually been found, and many important regulatory factors for seed development and grain quality control have recently been identified. Here, we summarize the progress in this field as comprehensively as possible and hopefully reveal some underlying molecular mechanisms controlling eating quality in rice. The regulatory network of amylose content (AC) determination is emphasized, as AC is the most important index for rice eating quality (REQ). Moreover, the regulatory mechanism of REQ, especially AC influenced by high temperature which is concerned as a most harmful environmental factor during grain filling is highlighted in this review.

Dynamic Change of Chalkiness and Observation of Grain Endosperm Structure with Scanning Electron Microscope under Controlled Temperature Condition

Abstract:Based on the experiment with two chalkiness types of indica rice variety (Xinong8116 and Guang'er'ai 104) and two different temperature treatment (the daily average temperature was 33℃ and 23℃, respectively) in climatic chamber, chalkiness change of rice grain during grain filling stage and its relationship with the endosperm starch structure characteristics such as starch shape, size, developing degree and arrange pattern which was observed by scanning electron microscope were analysed.The result showed that the key stage of the chalkiness change of rice grain during the filling stage was from 5 days to 15-20 days after heading, but at the other stage the chalkiness change was not clear; the difference of chalkiness change between 33℃ high temperature treatment and 23℃ proper temperature treatment was mainly at the stage of 10 days to 20 days after heading; through the observation of grain endosperm structure with scanning electron microscope, it was found that the distinguish between “uncovered endosperm starch” and “ covered endosperm starch” had close relationship with starch developing degree in endosperm cell, no inevitable relative to the chalkiness type of rice variety.

Abstract:Starch, protein and lipid are the most important nutrients in rice, and their composition and content in rice grains play a decisive role in the grain quality. Rice quality (including appearance quality, cooking quality, nutrition quality, grinding and processing quality, etc.) is not only affected by the composition of the nutrients in grain of rice, but also by the physical and chemical characteristics and their content in grains, but also vulnerable to external environmental conditions. To clarify the relationship between the main nutrients in rice and their grain quality traits is of great theoretical significance and potential application value for the continuous improvement of rice quality in the future. Therefore, this paper reviewed the effects of starch, protein, lipid and mineral elements in grain of rice and also on quality of trait in rice. It is also discussed the relationship between these nutrients and rice grain quality traits. All of those will provide important information for the quality of grain improvement and breeding of new varieties with high quality in rice.

The application of transcriptomics to rice has widened the understanding of complex molecular responsive mechanisms, differential gene expression, and regulatory pathways under varying conditions. Similarly, metabolomics has also contributed drastically for rice trait improvements. As master regulators of plant growth and development, phys influence seed germination, vegetative growth, photoperiodic flowering, shade avoidance responses. OsPHYB can regulate a variety of plant growth and development processes, but little is known about the roles of rice gene OsPHYB in modulating grain development.

Abstract:Grain storage is a critical issue in the national economy and greatly affects the livelihood of the people, and inefficient management of granaries will downgrade the quality of stored grains. To achieve a quantitative evaluation of grain quality during its storage period, we focus on two of the important metrics (temperature and humidity), and fully use the data collected from sensor networks in granaries. Specifically, we develop an approach for modeling grain quality characteristics by incorporating the estimated temperature field with humidity data in the granary, and we characterize the grain quality via dynamic models. A real case study has been conducted to validate the performance of the proposed approach. Results indicate a deep insight into grain quality characteristics and provide a reference for developing grain quality inspection and maintenance strategies.
Physicochemical and Morphological Changes in Long-Grain Brown Rice Milling: A Study Using Image Visualization Technologies

Abstract:This study evaluated the changes in physicochemical properties and appearance quality of long-grain rice during the grinding process using image technologies and aimed to provide reference for future research. The brown rice milling process was divided into three stages, and flatbed scanning, scanning electron microscopy (SEM), X-ray micro-computed tomography (micro-CT), low-field nuclear magic resonance (LF-NMR), and headspace-gas chromatography-ion mobility spectrometry (HS-GC-IMS) were employed to examine the physicochemical and volatile properties of the samples. Results revealed a continuous increase in the degree of milling, with a broken rice rate and a whiteness value increasing by 50.84% and 21.13%, respectively, compared with those during the initial stage; dietary fiber and vitamin B1 contents were reduced by 54.41% and 66.67%, respectively. The image results visualized showed that the cortex of brown rice was gradually peeled off with the increase in milling degree; the cortical thickness was gradually reduced, the endosperm was gradually exposed, and the surface was smoother and shinier. T2 populations exhibited a shift toward longer relaxation times, followed by a decrease in relaxation time during the milling process. Additionally, 31 target compounds impacting rice flavor, mainly ketones, alcohols, and esters, were identified, and the concentration of volatile substances in the B region decreased with the reduction in the bran layer; the concentration of volatile substances in the C region provided rice flavor, which increased with the milling process. This study showed changes in the physicochemical properties and appearance quality of long-grain brown rice during milling. Furthermore, the use of various image processing techniques offers significant insights for optimizing processing parameters and enhancing overall quality and taste.
