A Novel Method to Evaluate the Moromi Maturity During the Long-Term Fermentation of Traditional Soy Sauce

Abstract:During the fermentation process, the extraction time of soy sauce is crucial to its quality. However, there is currently a deficiency of an objective, fast, and intuitive evaluation method for maturity. In this study, a new method for determining the maturity of the moromi was established by combining scanning electron microscopy (SEM) and particle and crack analysis system (PCAS). This study collected moromi from 1 to 32 months of fermentation, suggesting that the number and area of the internal pores of the moromi increased, leading to a stronger layering in the microstructure with fermentation extension. By fitting a curve model, when the number of pores reached 130, the pore area reached 9.68 x 104 pixels and the pore percentage reached 6.89%, the moromi was considered mature that reflect obvious layering with 80% accuracy. It provides a new approach for judging the maturity of fermented foods in the future.
