Enhancing Chlorophyll Stability by Regulating Charge Transfer in Chlorophyll Self-Aggregation

Abstract:Chlorophyll (Chl) has become a natural ingredient with great potential for food development due to its wide source range and valuable functions. However, the poor stability limits its application. This study shows that an environment with higher polarity was conducive to enhancing charge transfer (CT) during Chl aggregation, improving the stability of Chl. Fluorescence emission spectra, conductivity and inter-fragment charge transfer were applied to characterize the influence of solvent polarity on CT. On the 4th and 8th day under light treatment, the retention rate of Chl in the high-polarity group reached 213.04% and 302.61% of the low, respectively. Phytyl was proved to be another factor affecting CT. Its effect on the configuration of Chl aggregates leaded to the changes of CT in aggregates. It is hoped that this research can provide new ideas for improving the stability of photosensitive natural food ingredients.
