Abstract:The optimum extraction conditions for highest recovery of chlorophyll a(Chl a) and chlorophyll b(Chl b) were carried out using central composite design(CCD) and antioxidant capacities of Chl extracts were evaluated using [2,2-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid)](ABTS·+) radical scavenging,hydroxyl(·OH) radical scavenging,superoxide anion(O2-·) radical scavenging and reducing power) were assayed for kiwifruit.The effects of homogenization time(X1,min),liquid-to-solid ratio(X2,mL·g-1) and extraction time(X3,min) on the recovery of Chl a and Chl b were investigated.The optimum extraction conditions for Chl a were 9.93 min,8.63 mL·g-1,115 min,and Chl b were 11.26 min,7.83 mL·g-1 and 114.71 min,respectively.Predicted values for extraction of Chl a and Chl b agreed well with the experimental values.Antioxidant capabilities of the optimally obtained chlorophylls extracts from kiwifruit revealed better scavenging abilities on ABTS·+ and ·OH,and reducing power as compared to BHA,while they were weaker than BHA in O2-· scavenging ability.In conclusion,kiwifruit contained approximately 25 μg·g-1 FW of total chlorophylls(the ratio of Chl a:Chl b was 1.2:1),and the chlorophylls extracts possess potent antioxidant and free radical scavenging activities.
