Abstract:Aluminum nitrate-nitrite colorimetry,phenol-sulfuric acid method,Kjeldahl method and RP-standard solution were used to determine the contents of flavonoids,total sugar,protein and lactone. Amino acids automatic analysis and HPLC were used to measure amino acid and organic acid content. It was evaluated for its antimicrobial action against the range of foodborne and food spoilage pathogens using agar disc diffusion assay in nutrient agar and czapek dox agar media. The results showed the contents of flavonoids,total sugar,protein and lactones were 0.251,0.383,0.625,1.439mg/mL,respectively. It exhibited antimicrobial activity against Staphylococcus aureus,Bacillus subtilis,Escherichia.coli,Aspergillus niger,Penicilliun citrinum and Saccharomyces cerevisiae with a concentration-dependent relationships. The minimum inhibitory concentrations against the tested bacterial strains were found in the range of 4.9~32mg/mL using the two-fold dilution method. Different heat treatment conditions have no significant influence on the antibacterial activity.

Abstract:Flowering peach trees, whose flowers have not be used and result in lot of waste of resources. This paper detected 18 kinds of amino acids and eight trace elements to provide data support for resource utilization of flowering peach blossom. Results showed that two amino acids (Asp and Pro) were higher than 2.0%, Glu, Lys, Leu, Ala and Val were more than 1.0% in flowers of flowering peach, especially Pro was the highest. Flowers of flowering peach contain many kinds of mineral elements, Mg, Ca, K and Mn were very high, which is beneficial for human health. All these data proved that flowers of flowering peach have high value as foods.

Abstract:In this study,the plant morphology of local Chinese cabbage〔Brassica campestris L.ssp.chinensis(L.)Makino var.communis Tsen et Lee〕‘Jinhua Houdagaojiao’(for short as‘Houdabai’)was observed and its nutritional quality was tested.The results indicated that its moisture content is significantly lower than that of the two control varieties‘Hangzhouyoudonger’and‘Zaoshu No.5’,the crude fiber and total soluble sugar content of‘Houdabai’is higher than that of‘Hangzhouyoudonger’and notably higher than that of‘Zaoshu No.5’.The zinc content of‘Houdabai’is also higher than that of the two control varieties.It was 1.9 times of‘Zaoshu No.5’,and 4.7 times of‘Hangzhouyoudonger’.However,the contents of VC,kalium,phosphor and amino acid were almost the same as‘Hangzhouyoudonger’,but obviously higher than‘Zaoshu No.5’.
Comprehensive Evaluation of the Nutritional Properties of Different Germplasms of Polygonatum cyrtonema Hua

Abstract:Polygonatum cyrtonema Hua, an edible resource and medical material, is mainly consumed as a food in China. However, few published studies have comprehensively assessed its nutritional components. In this study, the proximate, carbohydrate, and dietary fiber contents as well as the mineral, vitamin, and amino acid compositions of five sources of P. cyrtomena grown in Yuhang district, Hangzhou city, Zhejiang province, were investigated. The nutritional profile of the five germplasms was investigated using analytical chemistry methods. All germplasms had a low starch content and contained greater amounts of carbohydrates (23.25-34.29%), protein (2.96-5.40%), Ca (195.08-282.08 mg/100 g), Fe (29.68-59.37 mg/100 g), and vitamin C (60.49-149.86 mg/100 g) in comparison to ginger, yam, and potatoes. The polysaccharide content ranged from 16.92% to 28.48%, representing the main source of carbohydrates. Fructose, a desirable sweetener, was the most abundant monosaccharide, representing 1.06% to 4.88% of the content. P. cyrtonema was found to be high in dietary fiber, with pectin and resistant starch being the major soluble components and hemicellulose being the dominant insoluble dietary fiber. A correlation analysis (CA) revealed significant correlations for the carbohydrate components and dietary fiber fractions with other nutrients. A principal component analysis (PCA) identified significant differences between the nutritional characteristics of the five germplasms, with Huanggang having the highest comprehensive quality scores. Moreover, ten nutrient components were selected as potential indicators that could be used to further evaluate the nutritional quality of P. cyrtomena. Our results demonstrate the rich nutrient composition and characteristics of P. cyrtonema and provide a valuable reference for the future development and utilization of Polygonatum.
Comprehensive Analysis of 34 Edible Flowers by the Determination of Nutritional Composition and Antioxidant Capacity Planted in Yunnan Province China

Abstract:The main purpose of this study was to reveal the nutritional value and antioxidant activity of 34 edible flowers that grew in Yunnan Province, China, through a comprehensive assessment of their nutritional composition and antioxidant indices. The results showed that sample A3 of Asteraceae flowers had the highest total flavonoid content, with a value of 8.53%, and the maximum contents of vitamin C and reducing sugars were from Rosaceae sample R1 and Gentianaceae sample G3, with values of 143.80 mg/100 g and 7.82%, respectively. Samples R2 and R3 of Rosaceae were the top two flowers in terms of comprehensive nutritional quality. In addition, the antioxidant capacity of Rosaceae samples was evidently better than that of three others, in which Sample R1 had the maximum values in hydroxyl radical (·OH) scavenging and superoxide anion radical (·O2−) scavenging rates, and samples R2 and R3 showed a high total antioxidant capacity and 2,2-diphenyl-1-pyridylhydrazine (DPPH) scavenging rate, respectively. Taken together, there were significant differences in the nutrient contents and antioxidant properties of these 34 flowers, and the comprehensive quality of Rosaceae samples was generally better than the other three families. This study provides references for 34 edible flowers to be used as dietary supplements and important sources of natural antioxidants.

Breeding and Nutrient Content Analysis of Glutinous Rice Mutant Yuanpeinuo With High Remained Germ

Abstract:To innovate glutinous rice varieties with rich nutrition components,the seeds of Ningjing 3 were irradiated by 250 Gy 60Co-γ rays,and combining tissues cultivation,a glutinous rice mutant Yuanpeinuo,with high yield,good quality and disease resistance,was successfully obtained.The rate of Yuanpeinuo kernels remained germ was over 80％.The germ-remaining rice of Yuanpeinuo,brown and polished rice of Ningjing 3 were used to detect nutrient compositions including protein,micronutrient elements,amino acids,etc.Meanwhile,composition contents among the three samples were also analyzed and compared.The results showed that protein content of the Yuanpeinuo with remained germ was 8.25％,content of K,Ca,Mg,Na,Gu,Zn,Fe was 898.41,107.55,95.13,21.39,1.11,12.12,and 10.51 mg·kg-1,respectively,the total content of 17 types amino acids was 117.2 g·kg-1,and the content of essential amino acids was 39.6 g· kg-1.The nutritional value of Yuanpeinuo with remained germ was similar to that of brown rice of Ningjing 3,and significantly higher than that of polished rice of Ningjing 3.This work provides a scientific basis for further use and development of Yuanpeinuo.

Abstract:In order to investigate the chemical components and assess the nutritional value of wild Astragalus adsurgens,which collected from Alxa of Inner Mongolia,we had employed some methods,such as preliminary chemical test,Kjeldal method,Soxhlet extractor method,colorimetry,atomic absorption spectroscopy,and so on,to determined them.The results showed that the tested samples contained cardiac glycosides,alkaloids,flavonoids,quinones,phenol,saponins,organic acid,naphtha,aminoacid.The plant samples did not contain coumarin,cyanogenetic glycoside or aliphatic nitro compounds.The major contents of DM,CP,EE,NDF,ADF,Ash,NFE,CF,Ca and P are 91.15%,11.80%,1.28%,47.22%,29.87%,7.39%,40.81%,29.87%,1.03% and 0.16% respectively.In addition,the contents of Mg,Fe,Mn,Zn,Cu,Se are 1 803.62,250.06,25.62,25.60,4.98,0.02 mg/kg,respectively.The results of this study suggest that Astragalus adsurgens contains a variety of chemical composition and has high nutritional value.Therefore,it is a kind of available plant resource.
Measurement and analysis of the nutrients of Polygonatum sibiricum seeds.

Abstract:In order to find out the nutrients and the utilization value of Polygonatum sibiricum Red.,we measured the three major components,crude starch,crude fat,crude protein,of Polygonatum sibiricum seeds.The fatty acids component was analyzed by Gas Chromatography and the amino acid component was analyzed by Auto-Amino Acid Analyzer.The results showed that crude faecula(73.70%) was the main content;the content of crude fat(10.74%) was higher than that of grain crops,and the content of crude protein(8.21%) was lesser.The unsaturated fatty acid(89.52%) was the main content in the crude fat,and the content of linoleic acid was 49.77% which needed by human;all kinds of amino acid were detected and the content of Met,Lys and Ile were high than that in other normal crops such as Triticum aestivum and Zea mays.Those results indicate that Polygonatum sibiricum seeds have a great nutritional value,and have great potential and broad development prospects on food and health care.

Abstract:The contents of nutritional elements such as Na, K, P, Ca, Mg and trace elements such as Cu, Se, Mo, Fe in Agaricus bisporus fruit bodies harvested at four different maturity stages (stage I, II, III, IV) were analyzed by ICP-AES, and the contents of some nutritional ingredients such as water, soluble protein, soluble sugar and ascorbic acid were also investigated. The results showed that the contents of Na, K, P, Mg, Cu, Se and Mo in stage I was respectively higher than those in the other three stages (alpha = 0.05), and the contents of Ca and Fe were respectively higher than those in stage II and III. The content of Se in stage IV was respectively higher than that in stage II and III, while the content f Na was respectively higher than that in stage II. The content of Cu in stage IV was respectively higher than that in stage III. The contents of K, P, Ca, Mg, Mo and Fe in stage II and III were respectively higher than those in stage IV. The content of water in stage IV was respectively higher than that in stage I and III, and had no significant differences from that in stage II. There were no significant differences in the contents of soluble protein, but the content of soluble sugar was significantly lower in stage IV. The content of ascorbic acid in stage III had no significant differences from that in stage I, but it was respectively higher than that in stage II and IV. The content of ascorbic acid in stage I and IV was respectively higher than that in stage II. The differences in the nutritional ingredients and mineral elements in the four stages of Agaricus bisporus fruit bodies provide academic data for the consumers and food industries while choosing Agaricus bisporus produces.
Evaluation of Nutritional Ingredients, Biologically Active Materials, and Pharmacological Activities of Stropharia rugosoannulata Grown under the Bamboo Forest and in the Greenhouse

Abstract:Evaluations of the nutritional ingredients, biologically active materials, and pharmacological activities (antibacterial and antioxidant) of two types of Stropharia rugosoannulata, grown under the bamboo forest and in the greenhouse, respectively, were carried out in this study. The nutritional ingredient tests included moisture, ash, crude protein, crude fat, crude fiber, total carbohydrates, total sugar, mineral elements, vitamins, and amino acids. The biologically active material assays included total flavonoids, total polysaccharides, total triterpenoids, and reducing sugars. In addition, a broth microdilution susceptibility test was performed to evaluate antibacterial activity. The antioxidant activity was measured by ABTS+ radical scavenging, ferric-reducing power, and β-carotene bleaching assays. Results showed that two types of S. rugosoannulata were rich in protein, carbohydrate, fiber, mineral, B-group vitamins, polysaccharides, triterpenoids, and reducing sugars, with low content of fat and low Na/K ratio. Besides, they were effective in antibacterial and antioxidant activities, while S. Rugosoannulata grown under the bamboo forest was better than the greenhouse one in some respects such as higher content of protein, calcium, selenium, nicotinic acid, folic acid, polysaccharides and triterpenoids, and stronger antibacterial and antioxidant activities. They were appropriate for functional food and nutritional supplements, especially bamboo forest.

Analysis of Nutritive Components and Heavy Metals in Colocasia gigantea

Abstract:The aim of this study was to provide evidence for protecting and rational developing Colocasia gigan-tea by analyzing its nutritive elements and heavy metals. All nutritive elements and heavy metals were measured using international standards. The results were means of 3 tests. The results were shown as follows:the dietary fiber in the petiole of Colocasia gigantea was 43%. Its K, Ca, Mg, P and other inorganic elements, Vpp, V B6 and other vitamins, and 18 kinds of amino acids, the heavy metal content met the corresponding national stan-dard. The contents of nutritional and functional components of Colocasia gigantea were relatively abundant. Colocasia gigantea can be developed to be the low-sugar vegetable with rich in dietary fiber which is good for diabetes and hypertensive patients.
Nutrition in 20 Cultivars of Chrysanthemum

Abstract:To enrich edible cultivars of chrysanthemum(Dendranthema × grandiflorum),nutritional compo-sition of 20 cultivars was studied.Content of soluble sugars,soluble proteins,water,vitamin C,organic acid,coarse fiber,15 types of amino acids,and six types of mineral elements was determined in inflores-cences of 17 ornamental cultivars and three commercially edible cultivars consisting of mid-sized flowers with a large number of florets per inflorescence.A principle component analysis was used to evaluate nutri-tional quality.Essential amino acids for humans(7 types),medical amino acids(8 types),and aroma-im-proving amino acids(4 types) were detected in the 20 cultivars with a range of content for soluble sugars of 47.7-84.4 g.kg-1,soluble proteins of 4.3-14.4 g.kg-1,vitamin C of 0.178 5-0.678 8 g.kg-1,water of 83.72%-91.02%,coarse fiber of 7.5-34.1 g.kg-1,and organic acid of 0.7-4.4 g.kg-1.Also found were zinc at 18-74 mg.kg-1,iron at 118-1 144 mg.kg-1,magnesium at 1.3-2.0 g.kg-1,calcium at 2.5-6.8 g.kg-1,sodium at 58-322 mg.kg-1,and potassium at 20.1-42.7 g.kg-1.For nutritional quality a-mong the three commercial edible cultivars(‘Baohuatangyijing’‘Zifengmudan’ ‘Jingxingjiuying’),‘Jinx-ingjiuyin’ was significantly greater(P0.05) than the others.However,‘Xiangbinzi’,an ornamental culti-var,had higher nutritional quality than ‘Jinxingjiuyin’;other ornamental cultivars,namely ‘DF-6’ and‘Qiuyun’ also exhibited good nutritional quality.These ornamental cultivars are promising edible chrysan-themum cultivars.
Effects of Different Harvest Times on Nutritional Component of Herbaceous Peony Flower Petals

Abstract:Herbaceous peony (Paeonia lactiflora Pall.) flowers can be used as edible flowers, but few studies concerned about their edible values and the optimal harvest season. In this study, petals of three herbaceous peony cultivars including “Dafugui,” “Hongyan Zhenghui,” and “Yangfei Chuyu” at four different development stages were used as materials to measure the content of soluble sugar, organic acid, protein, vitamin C (Vc), total phenolics, total flavonoids, mineral elements, and superoxide dismutase (SOD) activity, with the aim to understand the variation tendency of the nutritional ingredients and bioactive components in herbaceous peony flower petals during development and to determine the optimal harvest time for herbaceous peony flowers with better edible qualities. The results demonstrated that the content of individual nutritional and bioactive components was varied with cultivars and developmental stages. The soluble sugar content was 63.69–225.97 mg/g FW, organic acid 10.13–24.60 mg/g FW, soluble protein 9.83–39.17 mg/g FW, Vc 12.31–33.52 mg/100 g FW, total phenolics 83.23–136.19 mg/g DW, total flavonoids 10.20–24.98 mg/g DW, and SOD activity 62.92–284.09 U/g FW. For mineral elements, the content of Na, Mg, K, Ca, Mn, Fe, Ni, and Zn was 20.96–65.51 μg/g DW, 810.85–1342.36 μg/g DW, 6723.68–12253.63 μg/g DW, 848.67–3038.46 μg/g DW, 1.14–8.44 μg/g DW, 48.70–149.72 μg/g DW, 1.20–2.17 μg/g DW, and 16.69–25.50 μg/g DW, respectively. The content of soluble sugar, protein, total flavonoids, and SOD activity in flower petals was the highest, and the content of organic acid was the lowest at the full bloom period (S3) for all three cultivars, while the highest Vc and total phenolics were at the early bloom stage (S2) and flower bud stage (S1), respectively. In conclusion, it is recommended to harvest herbaceous peony flowers at S3 with the best edible quality considering nutrients and bioactive components.

Determination and Nutritional Evaluation of Amino Acid in Staple Food Bamboo for Giant Panda in Qinling Mountain

Abstract:The composition and contents of amino acids in three kinds of staple food bamboo(Bashania fargesii,Fargesia qinlingensis and F.dracocephala)for giant panda in Qinling Mountains were determined by the automatic amino acid analyzer and their nutrition was evaluated together.The results showed that samples were hydrolyzed with acid into 17 kinds of amino acids including 8 kinds of essential amino acids.For all samples,Glu content was highest,followed by Asp,Leu,Phe,Val,Ala,Lys,Gly,Pro,Thr,Ile,Arg and Ser,and Cys content was lowest.Except the content of Cys in bamboo leaves was lower than that in stem,the contents of other amino acids in bamboo leaves were significant higher than those in bamboo stem.The proportions of amino acids were higher than the WHO/FAO standard.In this way,these bamboos can provide the protein source with good quality for daily life of giant panda in Qinling Mountain.The results would provide the scientific basis for food resources protection and sustainable development of giant panda in Qinling Mountain.
Effects of Nutrient Elements on Growth and Expression of Insect-Defense Response Genes in <i>Zanthoxylum bungeanum</i> Maxim

Abstract:In China, Zanthoxylum bungeanum Maxim, known as "Huajiao," has a pleasant, fragrant flavor and several therapeutic properties. The nutritional content of plants is necessary for their defense response to insects. In this study, we analyzed the effects of soil fertilization treatments such as nitrogen (N), phosphorus (P), potassium (K), calcium (Ca), and special compound fertilizer for pepper (HZ) on the different growth parameters and expression of insect-defense-response genes in Z. bungeanum. The results show that the height and weight of prickly ash significantly differed after the application of fertilizers with different concentrations. Additionally, seedlings that were treated with low concentrations of nutrient fertilizers (N1, P1, K1, Ca1, and HZ1) were significantly higher, and they were selected for transcriptome analysis. According to transcriptomic analysis, a total of 65,566 unigenes were discovered, among which 61,379 corresponded to annotated protein-coding genes and 4187 to transcripts of novel protein-coding genes. A total of 294 unigenes were detected as candidate genes for regulating the defense response to insects, including 204 protease inhibitors, 29 plant lectins, and 61 other defense response genes. Additionally, trypsin inhibitors, cystatin, phytepsin, metalloproteinase, MMP, caffeic acid, resveratrol, and thiol proteinase inhibitors, ACA, TDC, and 28 BES1 were enriched in Z. bungeanum. Specifically, the leaves of Z. bungeanum that were treated with Ca and HZ fertilizations were dominated by the protease inhibitors. In addition, the type of fertilizer significantly affects gene expression in plants. The functional annotations were predicted by the number of differentially expressed genes and classified by GO and KEGG ontology enrichment analysis. Moreover, according to the GO database, biological processes were the largest group and contained a high frequency of differentially expressed genes. According to KEGG pathway results, significantly enriched genes belonged to the biosynthesis of secondary metabolisms, amino acid metabolism, and folding, sorting, and degradation. Overall, it was found that the type of fertilizer with low concentrations had an effect on Z. bungeanum's primary and secondary metabolism, and these findings provided grounds for further research in forest protection science.

This study analyzed the sensory indexes, nutritional indexes and antioxidant indexes of fresh flowers of five cultivars, namely, ‘Fengdan’ (P. ostia ‘Fengdan’), ‘Xiangyu’ (P. suffruticosa ‘Xiangyu’), ‘Zhaofen’ (P. suffruticosa ‘Zhanfen’), ‘Luoyanghong’ (P. suffruticosa ‘Luoyanghong’) and ‘High Noon’ (P. ‘High Noon’), to provide a theoretical basis for eating fresh tree peony flowers. The aroma volatiles of petals mainly comprised terpenes, alcohols and alkanes. ‘Luoyanghong’ and ‘High Noon’ have brighter colors. The taste test showed that ‘Luoyanghong’, ‘High Noon’ and ‘Xiangyu’ were the most palatable. ‘High Noon’ contained the highest soluble sugar content, ‘Luoyanghong’ contained the highest starch and vitamin C (VC) levels, and ‘Zhaofen’ contained the highest soluble protein content. The contents of bioactive compounds were the highest in ‘Luoyanghong’, and superoxide dismutase (SOD) activity was the highest in ‘Xiangyu’. The petals were rich in essential amino acids, with the highest amount in ‘Xiangyu’. ‘Luoyanghong’ and ‘High Noon’ showed strong antioxidant capacity. Therefore, tree peony flowers have excellent sensory qualities, abundant nutrients and strong antioxidant activity and could be further developed as a food to be eaten fresh. The results showed that tree peony flowers had great edible potential. Flowers of red and yellow cultivars can be considered for fresh eating on the basis of the traditional consumption of white and pink tree peony flowers.

Abstract:Pitaya is a kind of cactaceous plant .Being looked as fruit, vegetable, flowers, medicine, it can be used to protect environment. It is a very useful plant resource with quite high economic and marketable values. So it is a plant with enormous potential of exploitation. This paper analysed the difference of the nutrient composition of flower petal, bud and core of red-purplepitaya. The nutrient composition including, total protein, crude fat, crude fiber, total free amino acids and vitamin C were studied by international standard methords. As the result, the contents of ash , fat and protein of flower petal were nearly as much as those of flower bud and core. However, the content of total sugar of petal was the most. The contents of soluble protein of petal,bud,core of red-purplepitaya were 11.12%, 3.90% and 8.07%, respectively. There were 819.02, 375.24 and 551.22 mg total free amino acids in petal, bud and core, respectively, in 100 g samples. But the content of vitamin C in the core was the most. The inorganic elements including phosphorus, calcium, copper, iron, and zinc were also determined and compared in these three parts ofPitaya flower. The content of calcium was of obvious difference, the content of calcium in the bud was the most, it can reach to 738.14 mg per 100 g samples.
