Abstract:It is studied that the pickling process technics is improved in cabbage through adding different natural ingredient to improve its color, the fragrance and the taste and through. By spectrophotometry to determine nitrite in the pickling process. The result indicated that, it can obviously reduce nitritere by adding blue apple or pear, but it is better than before by increasing the right tea extract or the tea polyphenol based on this. Two peaks of nitritere content appears in the pickling process, and this is different from the predecessor findings. High quality pickling product is obtained which the mouth is good but nitritere is too lower to safe by increaseing the right tea extract or the tea polyphenol and the blue apple or the pear which has up-regulate function of reducing nitritere.

Abstract:The profiling of physicochemical properties, nonvolatile flavour compounds and bacterial community during the fermentation of Chinese dry-salted and brine-pickled radishes was performed. Dry-salted radishes matured on the 30th day, and the pH, total titratable acid, and water activity of the matured samples were 4.7, 0.43 g/100 g lactic acid, and 0.90, respectively. Brine-pickled radishes matured in only 5 days, and the pH, total titratable acid, and water activity were 3.4, 0.31 g/100 g lactic acid, and 0.96, respectively. The contents of reducing sugars, organic acids, and free amino acids generally increased with the fermentation of dry-salted radishes, reaching 15.8 g/100 g, 1009.1 mg/100 g, and 300.3 mg/100 g on the 30th day, respectively. Lactic acid was the characteristic flavour substance of brine-pickled radishes. Exiguobacterium, Glutamicibacter, and Leuconostoc were the dominant genera when the dry-salted radishes matured. Lactobacillus dominated brine-pickled radish fermentation and was correlated to lactic acid, Arg, Val, and His (P<0.05). This study could improve our understanding of the effects of dry salting and brine pickling on the flavour and bacterial characteristics of salted vegetables.

Abstract:The contents of nitrites changed regularly during the fermentation and salt-cured of the vegetable. At the initial period of fermentation, nitrite peak formed, at the middle of fermentation nitrites decreased rapidly, and at the final of fermentation nitrites decreased slowly. In order to control concentrations of nitrites in foods, in the paper we investigated the reasons for the formation and disappearance of nitrite peak in cabbages. The results suggested that the formation of nitrites is due to the reduction of nitrate reductase in the cabbage such as gram-negative bacteria, intestinal bacteria and flavobacteria longly and numerously existing. The chemical and microbial action caused the disappearance of nitrites peak. The decrease of pH ( less than 4) caused the partial depletion of nitrites. Most microbes in the solution of brine can deplete nitrites. 35% of them can deplete 80% of nitrites, 40% of them can deplete 90% of nitrites and 10% of them can deplete all the nitrite. Six strains which depleted all the nitrites were identified as lactic acid bacteria.

Abstract:In order to provide a more scientific and healthy reference for the people lived in the northeast of China to eat sour pickled cabbages, in the study, the nitrite content of 11 naturally fermented sour pickled cabbages collected from the Daqing area were detected by the spectrophotometry method according to Chinese National Food Standard (GB5009.33-2010). The results shown that the content level of nitrite in the pickled vegetables were between 0.17 mg/kg and 1.98mg/kg,it was more lower than 20mg/kg, the limit of nitrite described in Chinese National Food Standard (GB2714-2003).

Abstract:The nitrite content of six kinds of pickled vegetables sold in Yunnan and Chongqing city was investigated and analyzed,the results showed that the nitrite content of six kinds of pickled vegetables had some differences,the average content: Zhaotong dried pickle vegetables of Yunnan province Xuanwei dried pickle vegetables of Yunnan province bulk pickles of a large supermarket in Chongqing City pickled vegetables of a large supermarket in Chongqing City Jiangjin pickled vegetables in Chongqing City Tengchong dried pickle vegetables of Yunnan province,but nitrite content of six kinds of pickled vegetables did't exceed the standard(standard of all kinds of pickles nitrite content≤ 20 mg/kg),the findings will provide certain theory basis for people's edible safety.

Abstract:Nitrite is commonly present in pickled vegetables. Nitrite has been proven to have adverse effects on health, including changing the normal form of hemoglobin and the formation of carcinogenic nitrosamines. The aim of our study was to determine the levels of nitrite in pickled vegetable samples consumed in Harbin, China. In this study, 218 samples of pickled turnip (PT) (n = 42, packaged (PK) = 19; unpackaged (UPK) = 23), pickled tuber mustard (PTM) (n = 44, PK = 23; UPK = 21), pickled cucumber (PCC) (n = 48, PK = 25; UPK = 23), and pickled cabbage (PCB) (n = 84, PK = 39; UPK = 45) were analyzed between October 2011 and December 2011, using colorimetric nitrite assay based on the Griess reaction. A nitrite level of <5 mg/kg was normally predominant in 147 (67%) samples of the investigated pickled vegetables, ranging from 0.01 mg/kg to 42.03 mg/kg, while a nitrite level of >20 mg/kg was detected in 9 (4%) samples. The overall nitrite content was 4.02 ± 0.62 mg/kg for PT, 4.52 ± 1.07 mg/kg for PTM, 3.91 ± 0.69 mg/kg for PCC, and 4.86 ± 0.80 mg/kg for PCB. The content of nitrite in unpackaged pickled vegetables (PT, 5.47 ± 0.89; PTM, 6.84 ± 2.02; PCC, 5.32 ± 1.27; PCB, 6.41 ± 1.28; and total, 6.08 ± 0.71 mg/kg) was significantly higher than those in packaged products (PT, 2.68 ± 0.72; PTM, 2.30 ± 0.55; PCC, 2.62 ± 0.54; PCB, 3.08 ± 0.81; and total, 2.73 ± 0.36 mg/kg) (P < 0.05). The variance in the concentration of nitrite in the pickled vegetables probably resulted from differences in quality, processing technique, and storage condition of the pickled vegetables. Our results indicated that, in China, low level nitrite is widely present in pickled vegetables. It is therefore important to assess the content of nitrite in pickled vegetables in China.

Abstract:Nitrite content variation and nitrite formation mechanics of the vegetables, respectively stored in different room- temperatures, low temperatures and natural fermentations, are studied in this paper. And the test materials are varieties of Chinese cabbage, cabbage and white radish. The results show that the nitrite peaks appear in the initial stage (3days storge) in the three kinds of storage methods. The main reasons for nitrite peak formation of the varied treatments are different. When vegetables were plucked, their nitrate reductase activity increased. So the main reason for nitrite peak formation of vegetables stored in room-temperature and low temperature, is the reduction of nitrate into nitrite by vegetable's nitrate reductase, where, nitite peak formation was caused by microorganisms in the course of fermentation. This peak value is much higher than that of the two other treatments in excesse of the ADI value established by FAO/WHO. But the nitrite content is in the safety edible range in the anaphasic stage (in the latter stage of storage 8 dags latter). The nitrite content value of the vegetables stored in room- temperature and low temperature is lower ADI value, so the vegetables are edibly safe.

Abstract:During the fermentation, both of the vegetable nitrate reductase and the bacteria nitrate reductase showed the same activity pattern. Both enzyme forms′ activity gradually increased and reached a peak at the 96th hour after fermentation and then declined. In the same time, the concentration of nitrite was determined. As forecasted, it showed a similar pattern to the enzymes′, and peaked at the same time. It was proposed that the concentration of nitrite might have a close relationship not only with the bacteria but also with the rough material, suggesting a good way to control the nitrite concentration in pickled vegetables.

Abstract:Griess reagent colorimetry is used, in this thesis, for monitoring the process of making pickles and surveying the amount of nitrite, whether it is harmful to our healthy, contained in some food, which is selected from Chifeng market.According to the result, the maxima which is 4.15 mg/kg in long cabbage and 2.50 mg/kg in round cabbage are found on the 9th day, but they are descen -ding after 10 days and they hardly change, keeping respectively at 1.25 mg/kg, 0.25 mg/kg.The amount of nitrite is in the range of 1.0～1.8 mg/kg, 1.0～1.87 mg/kg and 4.0～15.0mg/kg in the preserved szechuan pickles, eggs and hams.They are edible enough if you are eat properly. RSD is less than 2.36%,and the rate of recovery is in the range of 93%～100%.

Abstract:Pickled potherb mustard is a traditional salted vegetable and popular with consumers because of its unique taste, texture and flavor. Contents of moisture content, crude protein, reducing sugar, total acidity, nitrite, NaCl, organic acid and free amino acid of pickled potherb mustard during its fermentation were determined by using moisture tester, Kieldahl method, 3, 5-two nitro salicylic acid colorimetric method, acid-base neutralization method, naphthyl ethylenediamine hydrochloride method, indirect precipitation titration method and High Performance Liquid Chromatography (HPLC), respectively. It is showed that content of nitrite in pickled potherb mustard is far below the national standard for pickle, which is 20 mg/kg. Changes of contents of reducing sugar, total acidity, organic acid and amino acid during processing also followed certain regulations, which providing theory basis for the industrialization, standardization and nu-trimental production of pickled potherb mustard. Besides, these main ingredients are closely related to the flavor formation of pickled potherb mustard and the increases of the contents of reducing sugar, organic acid and amino acid could make it more delicious.

Abstract:The effect of fermentation on nitrate, nitrite and organic acid contents in pickled Chinese cabbage and brine was researched. The nitrate content in pickled Chinese cabbage decreased from 1,303.5 and 1,380.5 mg/kg to 245.7 and 354.9 mg/kg, respectively, during the natural and inoculated fermentation. The peak content of nitrite was formed in pickled vegetables and brine during the natural fermentation. The nitrite was at a low level in pickled Chinese cabbage and brine during the inoculated fermentation. During the 7-day natural fermentation, lactic acid increased from 22.4 to 3,117.3 mg/kg, acetic acid increased from 32.9 to 254.6 mg/kg and citric acid increased from 8.3 to 255.8 mg/kg, and the responding results were 27.9 to 3,559.9 mg/kg, 40.5 to 572.1 mg/kg and 13.4 to 268.0 mg/kg, respectively, during the inoculated fermentation. When the pH of the brine was lower than 4.5, the peak content of nitrite gradually decreased.

Abstract:In this experiment,the white radish is used as the main raw material,and the radish is pickled by wet method.By measuring the nitrite content in pickled radish,soluble solids,pickled radish juice's pH and sensory evaluation,etc.,the effects of fermentation factors on the quality of pickled radish are studied by the additive amount of sucrose (％),additive amount of spices (％),salt water concentration (％),and pickling days.The orthogonal experiment is carried out on the basis of the test results.The results show that radish with 5％ sucrose content,5％ spice content and 6％ salt water concentration could be fermented at 25 ℃ for 5 days,which tastes delicious and with lower nitrite content.

Abstract:Pickle is the fermented vegetable by lactic acid bacteria.Spoilage bacterial' growth will make the quality fall down and form the toxic matter--nitrite.In the food's safe angle 8 strains lactic acid bacteria isolated from pickles were studied in this experiment.After selecting by antibacterial activities and ability of degradation nitrite content,3 good strains were obtained.Through comparison to natural fermentation,the effects of scpc-4 and jpsc-6∶scpc-4∶ttsc-9(1∶1∶1)fermentation by inoculating lactobacillus were test,the results showed that the pickle under condition of artificial fermentation had a lower nitrite content,and nitrite peak was earlier than natural fermentation.And the jpsc-6,scpc-4,and ttsc-9's combination fermentation with 1∶1∶1 had the lowest nitrite peak.

Abstract:Objectives This work aimed to investigate and compare the physicochemical properties and bacterial diversity of traditionally pickled mustard tuber from different regions in China.Materials and Methods Pickles were obtained from Ningbo (NB), Nei Mongol (NMG), and Harbin (HEB). The pH was monitored by a pH meter. Titratable acidity and salinity were determined via titrimetric analysis. Nitrite content was measured using N-(1-naphthyl)-ethylenediamine dihydrochloride spectrophotometric method. Organic acids were detected by liquid chromatography-tandem mass spectrometry (LC-MS/MS). Bacterial diversity was conducted through the Illumina high-throughput sequencing platform.Results There were significant differences in the physicochemical properties of pickled mustard tuber from various locations, with the NB pickles having the highest pH, salinity, and nitrite content and the lowest titratable acidity. Importantly, pickles with higher titratable acidity levels had relatively lower nitrite and salinity contents. A total of 63 organic acids were detected, with lactic acid and succinic acid being the most prevalent. Moreover, the organic acid compositions of the NMG and HEB samples were more similar than those of the NB pickles. Additionally, bioinformatic analysis revealed that Firmicutes and Proteobacteria were the predominant bacterial phyla in all the samples. Among these, Lactobacillus was the major genus. The most abundant bacteria were found in the HEB pickles. Further correlation analysis revealed a strong correlation between bacterial community and 11 internal physicochemical parameters.Conclusions This study could contribute to a better understanding of the physicochemical characteristics and bacterial diversity of pickled mustard tuber from different locations. Abstract:Effect of pickle aged brine on the quality of the fermented cabbage was studied in this paper.The parameters included nitrite content,lacticacid bacteria(LAB),pathogenic bacteria and product sensory were investigated.The results showed that the nitrite content in cabbage produced bypickle aged brine was lower than one of spontaneous fermentation,and the nitrite peak which appeared in spontaneous fermentation disappeared.There were less mesophilic aerobic bacteria besides enterobacteriacea and LAB,and more LAB in cabbage produced by pickle aged brine were observed compared to those in spontaneous fermentation.Base on the results,it could be concluded that the quality of product from pickle aged brinewas better than that of spontaneous fermentation.

Abstract:The relationship between change pattern of nitrate, nitrite, microorgnism in the process of pickling of cowpea and salt concentration,temperature was studied. The relationship between the composition of pectic substance fractions and the texture of pickled cowpea during pickling was investigated. The results showed that nitrate content declined and there was nitrite peak. Colony forming units increased and then declined. Pectin content declined and soluble pectin increased. Hardness declined and fracturability increased and then declined. There was relationship between texture of pickled cowpea and pectin content and composition.

Abstract:The study aimed to analyze the change of pH and nitrite concentration during the fermentation of pickles with different strains,proportion and amount of Lactobacillus and different amount of sugar.Through single factor and optimal experiments,type,proportion and amount of strains was determined.The results showed that the proportion of L.plantarum and L.casei was 2∶1,the fermentation cycle of pickles was shortened,pickle had better sensory state,nitrite concentration was obviously degraded.
