Abstract:Yulin City is in the northern part of Shaanxi Province, China, and many sites from the Yangshao and Longshan cultures have been discovered during archaeological excavations conducted in recent years. We collected white lime surfaces belonging to the "Study of Settlement and Society in the Loop" project from more than thirty settlement sites in Yulin, dating from the Quanhu Phase II and the Miaodigou Phase II periods to the Shimao culture period. Chemical methods, including X-ray diffraction, enzyme-linked immunosorbent assay, and pyrolysis-gas chromatography/mass spectrometry, were used to analyze the samples. The results show that protein was already being added to the construction mortar by people in Northern Shaanxi more than 4000 years ago, and casein and gelatin are the most common types of proteins added. This discovery also provides a reference for the formation of the Neolithic agricultural and pastoral interlacing zone in Northern China. It is also noteworthy that we have detected branched chain starch additions in the white lime surface from the Zhaishan site in Zhaishan village, Long Town, Mizhi County, and Yulin City. This can be the earliest starch mortar in China.
