Abstract:Litchi (Litchi chinensis) is an important fruit crop owing to its juicy and nutritional arils and the seeds, which are the primary by-products during processing and are a significant source of complex polysaccharides with starch, accounting for 40% of the whole dry matter. Litchi seed starch from various sources exhibits significant variations in their physicochemical, morphological, and functional characterization, attributed to varied chemical composition and isolation methods. Starch from litchi seeds can be exploited for various food and non-food applications. Modification approaches like physical, chemical, enzymatic, and novel methods can be studied for reducing the deficiencies associated with the native litchi seed starch and ameliorating the characteristics and applications toward unlocking the full utilization potential. The increased utilization of litchi seed starch for food and non-food products can enhance the economic viability and sustainability of the litchi fruit processing industry while preventing the accumulation of waste and reducing environmental pollution from its processing.
