Abstract:The detection method of food safety based on spectroscopy uses the spectrum characteristics of the hazards in foods,such as absorption,reflection,transmission and fluorescence to detect the food safety. This method has obvious advantages in the aspect of rapid,non-destructive and non-invasive measurement,and is promising in the field of online detection for food production. The on-line detection method of food safety based on spectroscopy and its applications in the detection of mycotoxins,fruit and vegetable surface contaminants were reviewed. Deep study should be taken on aspects of the sensitivity improvement,appropriate spectrum selection,calibration models establishment and the cost reducing in the future.

Abstract:Background: Nowadays, consumers increasingly prefer food with original, natural, and delicious flavors, which is closely linked to the content of volatile organic compounds (VOCs) in food. In recent years, the function of plant VOCs as natural food additives (flavoring and aromatizing agents, antibacterial agents) and their health benefits have attracted increased attention from the food industry. However, plant VOCs are quickly deteriorated because of their reactive molecular characteristics, which is the most critical bottleneck in their functions. Exploring the consequence, mechanism, sensor detection, and control technology of VOC deterioration can help to promote further advances in the protection of the food aroma and the application of plant VOCs in the food industry. Scope and approach: Focusing on the highlighted roles of VOCs in the food industry and deterioration-prone characteristics, concluding the consequence, mechanism, sensor detection, and control technology of VOC deterioration. Key findings and conclusions: The VOC deterioration in fresh food mainly results from composition variation induced by intracellular metabolism during storage, and metabolic loss induced by environmental factors. The leading causes inducing the VOC deterioration in processed food include physical loss by heating and chemical variations arising from the Maillard reaction, lipid oxidation, and other reactions. The biosensors assembled by proteins, peptides, or DNA showed excellent VOC sensitivity and selectivity performance. One technology cannot ideally protect every volatile component. Establishing the loss model and law of characteristic aroma components in specific technical treatment helps the component preservation of VOCs.

Abstract:With the development of olfaction sensors sensors, many research and applications have been made in the electronic nose. The electronic nose consists of an array of gas sensors with different selectivity patterns, signal handling and pattern recognition and decision strategy. Measurement data from the artificial smell and taste sensors are used to produce sensor-specific opinion about these two human-like sensing modalities. This paper is introduced the configuration and basic principle of electronic nose? at the same time, current research situation and applications of the electronic nose in the food industry have been introduced in details. It is also given that the theoretic and technology problem which should be solved.

Abstract:Aroma is one of the important indexes to evaluate food quality. The formation of food aroma is based on the interaction of complex substances. The accurate quantification of aroma substances in food has significance in the analysis of aroma substances in food. In this review, the basic principle and significance of stable isotope dilution analysis is introduced, general steps for flavor analysis and its historical progress in food flavor analysis is discussed. Additionally, the application progress of stable isotope dilution analysis in food flavor analysis from 2019 to 2023 has been described in detail, which is also categorized by food. Finally, the accuracy and superiority of stable isotope dilution analysis as an accurate quantitative analysis method were discussed.

Abstract:Fermented foods are sensitive to the production conditions because of microbial and enzymatic activities, which requires intelligent flavor sensing system (IFSS) to monitor and optimize the production process based on the flavor properties. As the simulation system of human olfaction and gustation, IFSS has been widely used in the field of food with the characteristics of nondestructive, pollution-free, and real-time detection. This paper reviews the application of IFSS in the control of fermentation, ripening, and shelf life, and the potential in the identification of quality differences and flavor-producing microbes in fermented foods. The survey found that electronic nose (tongue) is suitable to monitor fermentation process and identify food authenticity in real time based on the changes of flavor profile. Gas chromatography-ion mobility spectrometry and nuclear magnetic resonance technology can be used to analyze the flavor metabolism of fermented foods at various production stages and explore the correlation between flavor substances and microorganisms.

Abstract:This chapter presents a discussion of the most commonly used methods for the analysis of aroma, taste and chemesthetic compounds found in foods. Each group of flavor compounds presents unique challenges and thus has a different focus. The methodology for aroma analysis (i.e. primarily isolation of an aroma fraction) has been well researched and, thus, these methods are discussed in some detail. The analysis of taste compounds has been studied much less and having no standard methods, is discussed using examples from the literature. Since chemesthetic compounds may be either volatile or non-volatile, this discussion is again done by example. In all cases, the discussion focuses on getting an appropriate food flavor isolate to the proper instrument (primarily gas chromatography/mass spectrometry (GC-MS) or high-performance liquid chromatography/mass spectrometry (HPLC-MS)) with no discussion of the instrumental methods used: these instruments are described in detail in many texts.

Abstract:Food flavor compounds due to the complexity of food as a matrix, and usually their very low concentrations in a product, as well as their low odor thresholds, create a challenge in their extraction, separation and quantitation. Food flavor volatiles represent compounds of different polarity, volatility and chemical character, which determine method of extraction for their isolation from food. Microextraction techniques, mainly SPME and SBSE have been used for food flavor compounds analysis for two decades. Microextraction methods other than SPME and SBSE are seldom used despite their analytical potential. The review discusses the nature of food flavor compounds, and different approaches to food flavor analysis. It summarizes the use of microextraction methods in food flavor compounds analysis based on papers published in the last 5years, and discusses the potential of microextraction methods in this field.

Abstract:Food quality and nutrition have received much attention in recent decades, thanks to changes in consumer behavior and gradual increases in food consumption. The demand for high-quality food necessitates stringent quality assurance and process control measures. As a result, appropriate analytical tools are required to assess the quality of food and food products. VOCs analysis techniques may meet these needs because they are nondestructive, convenient to use, require little or no sample preparation, and are environmentally friendly. In this article, the main VOCs released from various foods during transportation, storage, and processing were reviewed. The principles of the most common VOCs analysis techniques, such as electronic nose, colorimetric sensor array, migration spectrum, infrared and laser spectroscopy, were discussed, as well as the most recent research in the field of food quality and safety evaluation. In particular, we described data processing algorithms and data analysis captured by these techniques in detail. Finally, the challenges and opportunities of these VOCs analysis techniques in food quality analysis were discussed, as well as future development trends and prospects of this field.

Abstract:Flavor is an important index to evaluate the sensory quality of tobacco. The process of fermentation is a key step in the production of aromatic substances in tobacco leaves and an important factor in improving their quality. Worldwide, reams of research show that chromatographic technology plays an irreplaceable role in the tobacco aromatic chemistry. Nevertheless, the degradation mechanism of latent aromatic compounds and the formation mechanism of characteristic aromatic substances have not been fully and systematically elucidated. In this study, the latest progress of basic methods, techniques, and research results of the separation, analysis, and identification of aromatic substances in fermented tobacco leaves were reviewed, and the next research and application directions were prospected. It is expected to provide theoretical reference for the study of molecular mechanism of tobacco flavor, reveal the degradation mechanism of potential aroma compounds, and help improve the quality of tobacco.

Abstract:The real-time, precise qualitative and quantitative sensing of food flavor compounds is crucial for ensuring food safety, quality, and consumer acceptance. As indicators for food flavor labeling, it is vital to delve deep into the specific ingredient and content of food flavor compounds to assess the food flavor quality, but still facing huge challenges. Photoluminescent fluorescent probe technology, with fast detection and high sensitivity, has shown immense potentials in detecting food flavor compounds. In this review, the classification and optical sensing mechanism of photoluminescent fluorescent probe technology are described in detail. Besides, challenges in applying photoluminescent fluorescent probe technology to analyze food flavor compounds are outlined to indicate future research directions. We hope this review can provide an insight for the applications of photoluminescent fluorescent probe technology in the evaluation of food flavor quality in future.

Abstract:Background: The odor and flavor produced by a complex mixture of chemical components with different amounts and thresholds, which is the unique property for food and Traditional Chinese Medicine (TCM). These compounds usually belong to mono- and sesquiterpenes, esters, lipids, and others. Objective: This review was aimed to demonstrate the extraction method and reliable technology for identifying the compounds responsible for their odor and flavor. Method: Summarize existing techniques for the analysis of taste and odor components and their characteristics, such as electronic nose (enose, EN) and electronic tongue (etongue, ET), which can separate the high-quality food from low quality, natural from artificial food in terms of unique odor and flavor. Results: Gas chromatography-olfactometry mass spectrometry (GC-O-MS), a technique coupled Gas chromatography mass spectrometry (GC-MS) with human sense by Olfactory Detector Ports, has been successfully applied for screening the odor-producing components with representative odor for the food or Chinese medicine. Conclusion: This current review provides some guidelines for quality evaluation of food or Chinese medicine. Abstract:Food quality control is an important area to address, as it directly impacts the health of the whole population. To evaluate the food authenticity and quality, the organoleptic feature of the food aroma is very important, such that the composition of volatile organic compounds (VOC) is unique in each aroma, providing a basis to predict the food quality. Different types of analytical approaches have been used to assess the VOC biomarkers and other parameters in the food. The conventional approaches are based on targeted analyses using chromatography and spectroscopies coupled with chemometrics, which are highly sensitive, selective, and accurate to predict food authenticity, ageing, and geographical origin. However, these methods require passive sampling, are expensive, time-consuming, and lack real-time measurements. Alternately, gas sensor-based devices, such as the electronic nose (e-nose), bring a potential solution for the existing limitations of conventional methods, offering a real-time and cheaper point-of-care analysis of food quality assessment. Currently, research advancement in this field involves mainly metal oxide semiconductor-based chemiresistive gas sensors, which are highly sensitive, partially selective, have a short response time, and utilize diverse pattern recognition methods for the classification and identification of biomarkers. Further research interests are emerging in the use of organic nanomaterials in e-noses, which are cheaper and operable at room temperature.

Abstract:The volatile components of wine have a great influence on its characteristic flavor,and extraction is a vital step in analysis of the volatile components in wine. In this paper,the main and new extraction technique for volatile components in wine:headspace extraction,simultaneous distillation-extraction,solid phase microextraction,stir bar sorptive extraction,headspace sorptive extraction and solid phase dynamic extraction were introduced. The theory,the main procedure,the strengthes and weaknesses of these extraction technique were also concluded . Besides,we also concluded the application of them in detail.

Abstract:The evaluation of volatiles in food is an important aspect of food production. It gives knowledge about the quality of foods and their relationship to consumers’ choices. Alcohols, aldehydes, acids, esters, terpenes, pyrazines, and furans are the main chemical groups that are involved in aroma formation. They are products of food processing: thermal treatment, fermentation, storage, etc. Food aroma is a mixture of varied molecules. Because of this, the analysis of aroma composition can be challenging. The four main steps can be distinguished in the evaluation of the volatiles in the food matrix as follows: (1) isolation and concentration; (2) separation; (3) identification; and (4) sensory characterization. The most commonly used techniques to separate a fraction of volatiles from non-volatiles are solid-phase micro-(SPME) and stir bar sorptive extractions (SBSE). However, to study the active components of food aroma by gas chromatography with olfactometry detector (GC-O), solvent-assisted flavor evaporation (SAFE) is used. The volatiles are mostly separated on GC systems (GC or comprehensive two-dimensional GCxGC) with the support of mass spectrometry (MS, MS/MS, ToF–MS) for chemical compound identification. Besides omics techniques, the promising part could be a study of aroma using electronic nose. Therefore, the main assumptions of volatolomics are here described.

Abstract:The advantage and disadvantage of three methods such as vacuum distillation-GC,activated carbon adsorption-GC,and HS-GC for quantitative analysis of flavor components in wine were compared in this paper.The experimental results have shown that the activated carbon adsorption-GC is proper for detecting acetaldehyde,n-butyl alcohol and glycerine in wine;vacuum distillation-GC,activated carbon adsorption-GC analysis are applicable for measuring n-propyl alcohol and isoamyl alcohol.Besides,it is simple and convenient for analyzing acetic ether,ethyl lactate and methanol by HS-GC.Furthermore,in the quantitative detection of acetic acid,vacuum distillation-GC is more accurate.Due to its moderate boiling point and viscosity,isobutanol can be measured by all the three methods.The above conclusions can provide a good reference for the later analytical work for flavor components in wine.
