Abstract:Fruit of jujube (Ziziphus jujube Mill. cv. Dongzao), known as a high-quality fresh edible variety, is popular among consumers on account of its bright color, crispy texture and abundant nutrients. However, the softening of jujube fruit after harvest seriously shortens its shelf life. To examine possible treatments to reduce softening rate, we evaluated the effect on fruit quality attributes of an elevated atmospheric O2 concentration during cold storage, ultimately unraveling its biological effect on jujube cell wall metabolism and antioxidant level. Our results demonstrated that an elevated O2 atmosphere during cold storage induced both the activity of antioxidant enzymes and relative expression levels of related genes, promoting the scavenging of hydrogen peroxide and superoxide anion. By the end of storage, the activities of superoxide dismutase, peroxidase, and catalase in elevated O2-treated jujubes were 1.9, 1.3, and 1.1 times, respectively, those in the control group. In addition, elevated O2 concentration inhibited the activities of polygalacturonase, pectin methyl esterase, cellulase and the relative abundance of related transcripts, thus delaying the degradation of cellulose and hemicelluloses and reducing the conversion of insoluble pectin to water-soluble pectin and ionic-soluble pectin. These changes presumably contribute to the maintenance of the cell wall components and cell microstructure. In conclusion, an elevated atmospheric O2 concentration of 60 % during cold storage promoted antioxidant capacity and inhibited cell wall metabolism in postharvest jujube fruit, reducing postharvest softening.

Abstract:Jujube (Ziziphus jujuba Mill.) is the first tree species in China, with a long history and abundant yield. However, fresh jujubes have a short shelf-life and are not resistant to storage. Therefore, more and more processed jujube products are being studied. These processed products can extend the shelf-life of jujubes and attract widespread attention for their rich functional nutrients. This review summarized changes in nutrients of fresh jujube and processed products and the research progress of different preparation methods of jujubes. Meanwhile, the pharmacological effects of bioactive components in jujube-based products were concluded. Jujube and its processed products contain rich polysaccharides, vitamin C, and other functional nutrients, which are beneficial to humans. As the initial processing method for jujubes, vacuum freezing or microwave drying have become the most commonly used and efficient drying methods. Additionally, processed jujube products cannot be separated from the maximum retention of nutrients and innovation of flavor. Fermentation is the main deep-processing method with broad development potential. In the future, chemical components and toxicological evaluation need to be combined with research to bring consumers higher quality functional jujube products and ensure the sustainable development of the jujube industry.

Abstract:The invention relates to a red jujube health-care beverage, which can remove chloasma, beautify features and improve skin, and also relates to the production technology thereof. The invention combines the traditional Chinese medical science theory and the modern science theory, uses natural Chinese herbal medicine like red jujube as the main raw material, and prepares the red jujube health-care beverage, which can remove chloasma and delay senility. The raw materials used in the invention are common food materials and Chinese medicine homologous food materials, and the product provided by theinvention is safe and efficient and is a real non-toxic product suitable for long-term drinking. People drinks the red jujube health-care beverage for a long time can efficiently improve face skin, remove chloasma, efficiently delay senility, and improve immunity of the organism. In the invention, the formula is scientific, the technology is advanced, the process is simple and convenient, and thestandard, normalized and industrialized production is easy to realize.

Abstract:The effects of ultrasound (US), ultrahigh pressure (UP), cold plasma (CP), and high pressure and pulsed electric fields (PEF) pretreatments were evaluated for drying characteristics, bioactive components, and pectin properties of jujube slices during microwave coupled with pulsed vacuum drying (MPVD). The effects of ultrasound (US), ultrahigh pressure (UP), cold plasma (CP), and high pressure and pulsed electric fields (PEF) pretreatments were evaluated for drying characteristics, bioactive components, and pectin properties of jujube slices during microwave coupled with pulsed vacuum drying (MPVD). US, CP, and PEF reduced drying time by 18.75%, while UP reduced it by 6.25%. Samples treated with US and PEF showed improved color and rehydration (345.11%, 319.24%), with SEM revealing larger pores post‐pretreatment. PEF‐treated jujube had highest phenol (16.95 mg GAE/g DW) and water‐soluble pectin(WSP) (43.71 mg/g AIR), correlating positively with rehydration (r = 0.67). CP had highest flavonoid content (17.01 mg RE/g DW) and US showed highest antioxidant activity (DPPH 80.57%, ABTS 89.65%). Chelate‐soluble pectin (CSP) Sodium carbonate‐soluble pectin (NSP) was positively correlated with hardness (r = 0.71, 0.69). These findings suggest pretreatments improve drying efficiency, nutrient retention, and pectin functionality in jujube products. Practical Applications Drying for jujube (Ziziphus jujuba Mill.) is the most common method of processing and ensure the sale. Three kinds of non‐thermal processing pretreatment method (ultrasound, ultrahigh pressure, and cold plasma) combined with novel drying method, microwave coupled pulsed vacuum drying (MPVD) was studied in the application on the dehydration of jujube slice in this paper. The drying characteristics and pectin properties of winter jujube were analyzed and treated by MPVD compared with freeze drying and hot air drying, for both technological research and processing practice. The drying kinetics, bioactive compounds, antioxidant capacity, sensory attributes, and pectin properties were also used as descriptors in order to promising dehydration method for obtaining high value‐added jujube products. Moreover, the relationship between the cell wall pectin and the phenols, hardness and crispness were analyzed, which give a new insight to study the changing scheme in the nutrients and the texture during the dehydration for fruits and vegetables.

Abstract:Objective:To optimize extraction technology for jujube dispensing granules.Methods:L9 (34) orthogonal design was adopted to arrange the,experiment,extraction technology for jujube dispensing granules was optimized by taking paste rate,the contents of polysaccharide and total flavonoids as the investigation indexes.Results:The optimal water extraction process was adding 12 times of water,soaking for 30 minutes,extracting three times,and 3h each time.Conclusion:The optimized extraction technology for jujube dispensing granules is stable,feasible,reasonable and reliable.

Abstract:Objective: To optimize the shaping technology for jujube dispensing granules. Methods: Parallel test method was adopted, the shaping ratio, moisture content, dissolubility and hygroscopicity were taken as the indexes and studied. Results: The optimal shaping technology: when the ratios of excipients were chosen as: extract:sugar (1:4), the products showed good appearance, tinct, shaping rate and hygroscopicity. Conclusion: The optimized shaping technology for jujube dispensing granules is stable and practicable.

Abstract:In order to increase the jujube juice yield,the complex enzyme( pectinase∶ cellulase = 1 ∶1) was used to treat winter jujube.The effect of enzyme dosage,temperature and time on the yield of jujube juice were studied. Based on the single factor experiment,response surface method was used to optimize the preparation conditions. The optimal conditions were complex enzyme 0.0156% ,temperature 29℃ and time 20.8min. Under these conditions,the jujube juice yield was 72.4%.So enzymolysis method was a suitable method for increasing the yield of jujube juice.

Abstract:In this paper,the processing technology for instant powdered blackberry was explored,and the best processing technology was obtained.The results indicate that 0.3% pectinase and 0.15% cellulase in blackberry pulp can significantly reduce the viscosity and increase the output of juice.The addition of 0.08% chitosan can improve the clarity of blackberry juice significantly.Adding drying additives(40% malt-dextrin) into the concentrated blackberry juice for processing through spray-drying at the suitable intake temperature(160 ℃) and material-importing speed(50 mL/min) can produce instant powdered blackberry with good dispersivity and outstanding aroma.

Abstract:Microencapsulation of Zingiber officinale essential oil (EO) in polysaccharide, chitosan (CH) and sodium carboxymethyl cellulose (CMC) based on the electrostatic interaction between charged polysaccharides at pH 3.0 in dual delivery system. Ratio variations of CH and CMC in microencapsulation were studied at 1:2, 2:1 and 1:1. This study aimed to evaluate the influence of the encapsulating materials combination on freeze-dried EO powders and to present the mechanisms for loading and releasing EO involved in the preparation of CH/CMC microcapsules. The spectroscopy analysis, physical properties, microstructural, encapsulation efficiency and EO release behavior in obtained EO microparticles were evaluated by using the analysis of fourier transform infrared spectroscopy (FTIR), X-ray diffraction (XRD), scanning electron microscopy (SEM) and gas chromatography mass spectrometry (GC-MS), respectively. Afterwards, the above prepared microcapsules were applied on winter jujube fruit (Ziziphus jujuba Mill.) preservation. Results demonstrated that both the microstructure and stability of microencapsulation were improved in delivery system loading with CH and CMC (1:1) with the encapsulation efficiency of 88.50%, compared to other ratios of CH and CMC (1:2 and 2:1). Furthermore, the microencapsulation had a capacity to control and reduce the EO release, therefore the morphological and sensory quality of jujube fruits in EO delivery system during storage was enhanced significantly (P < 0.05), in comparison to control. Results revealed that the microparticles produced with CH and CMC (1:1) was considered to present better characteristics of microstructure, encapsulation efficiency, as well as to maintain higher nutritional quality for jujube fruit. Thus, EO microencapsulation loaded in CH/CMC-based dual delivery system has potential application and developmental value prospects in food industries.
Feasibility of Jujube Peeling Using Novel Infrared Radiation Heating Technology

Abstract:Infrared (IR) radiation heating has a promising potential to be used as a sustainable and effective method to eliminate the use of water and chemicals in the jujube-peeling process and enhance the quality of peeled products. The objective of this study was to investigate the feasibility of using IR heating as a dry peeling method for jujube. The rotating Li jujube fruits were heated using two electric IR emitters. The effects of IR radiation intensity (5.25-6.07 W/cm(2)), emitter distance (75-85 mm), and heating time (40 -60 s) on the peeling performance of jujube were investigated. Lye-peeled jujubes were used as a control. The operating parameters of the IR peeling system were optimized using response surface methodology (RSM). The heating with an IR intensity of 5.25 W/cm(2) at the emitter distance of 75 mm for 56 s were found as the optimum operating conditions resulting in the peelability of 96%, peeling easiness of 3.8 and moisture loss of 1.29% at jujube surface temperature of 115 degrees C. The experimental results agreed well with those predicted by the models. The IR peeled jujube had significantly low peeling loss and color change compared to lye peeled ones. Abstract:Fresh jujube is prone to rapid deterioration after harvest due to its active metabolism and rich nutrients. This study aimed to investigate the effects of acidic electrolyzed water (AEW), a high-voltage electrostatic field (HVEF) and a combination of AEW and HVEF (AEW + HVEF) treatments on the storage quality of Huping jujube (Ziziphus jujuba Mill. cv. Huping) stored at 0 ± 1 °C for 90 days. The results showed that the fruits treated with AEW + HVEF exhibited better storage quality than those treated with either AEW or HVEF alone. Specifically, the fruits treated with AEW + HVEF maintained higher levels of nutrients and taste compounds, including total soluble solid (TSS), total soluble sugar, reducing sugar and titratable acidity (TA), as well as lower respiration rate, weight loss, decay index and TSS/TA ratio. Additionally, the AEW + HVEF treatment could delay the increase in reddening index, a* and color change (ΔE) values, and the decrease in L* and b* values, by retarding the degradation of chlorophyll and accumulation of carotenoids and flavonoids, thereby preserving the more desirable appearance color. Furthermore, the combined treatment could enhance the glutathione reductase (GR) activity and 2,2′-azino-bis-(3-ethylbenzothizoline)−6-sulfonic acid (ABTS) +-scavenging ability. Thus, the AEW + HVEF treatment is a potential method for Huping jujube preservation.

Abstract:The formula and processing technology of blackberry pulp beverage were studied in this paper .The results showed that the optimum formula of blackberry pulp beverage was blackberry pulp 50%, high fructose corn syrup 8%, sodium citrate 0.1%, ferulic acid 0.05%, acid-resistant carboxymethyl cellulose 0.15%, xanthan gum 0.05%, and gellan gum 0.06%.The mixed beverage was grinded by using colloidal mill with the granularity of 15~30 μm, homogenized under the pressure of 20 MPa, degased at 38℃within the vacuum of 0.06 MPa, and finally sterilized at 85℃for 25 min.After processing with the above parame-ters, the taste and stability of the blackberry pulp beverage were the best .

Abstract:The present invention belongs to the technical field of functional tea, health jujube tea in particular to a method for its production. By the following percentages by weight of the composition of raw materials: red dates - Hawthorn mixed powder 50% to 72%, black tea powder 2% to 8%, 5% to 10% milk powder, dairy creamer 19% to 30%. The present invention will be date slices and hawthorn piece mixed airflow ultrafine grinding, effectively avoiding the separate dates after playing absorbent powder compaction problems resulting jujube - hawthorn mixes delicate taste. The dates - hawthorn mixed powder, tea, powdered milk mixed together to make a unique health jujube tea flavor and high nutritional value, and the process is simple, easy, cheap and readily available materials and equipment, and has good economic prospects.

Abstract:To stuy and manufacture a local-suitable drink composed of vegetable and fruit juices with health care function,preparation experiments showed that the optimum recipe was the system that contented 30% fruit-vegitable juice(the ratio of apple juice to carrot juice was 3∶1),7.0% granulate sugar,0.10% citric acid and 0.20% CMC-Na.It is concluded by trial and evaluation that the obtained formula is reasonable and satisfied,and also the production method is simple and feasible.

Abstract:Abstract Jujube is a crop highly resistant to drought and salinity, making it one of the main fruit trees in Xinjiang. The present study evaluated the changes in the physicochemical and antioxidant activities of jujube fruit of eight different cultivars from Xinjiang, China. The developmental stages were selected according to the days after full bloom and fruit peel colour during ripening; these stages included young (S1), fruit core-hardening (S2), green ripening (S3), half-red maturity (S4) and complete red. In present study, different cultivars of jujube fruit showed similar chemical profiles, but their amounts showed great variation. HZ had the highest content of sugars, and JY had the highest content of cAMP and cGMP, while relatively higher levels of ascorbic acid, catechin, epicatechin, rutin, proanthocyanidin and antioxidant activity were found in ‘FS’ than in other cultivars, indicating that ‘FS’ could be used as a potential natural antioxidant. Regarding the development stages of jujube fruit, the moisture, ascorbic acid, total polyphenol, catechin, epicatechin, proanthocyanidin and rutin contents decreased during the development of all jujube cultivars, while the fructose, glucose, sucrose, cAMP, and cGMP contents greatly increased. The antioxidant activity determined by DPPH and ABTS radical scavenging decreased as the fruits matured. Therefore, the results suggest that green jujube (S1) could be used for natural antioxidants (catechin, epicatechin, proanthocyanidin) and that the advanced ripening stage(S5) is the proper picking period for fresh fruit and commercial processing.

Abstract:China is the largest producer of jujubes in the world, with the Xinjiang region accounting for about 50 % of the total production. However, local jujube processing still relies on traditional methods, leading to reduced industrial efficiency. Research shows that jujube polysaccharides possess various biological properties, such as antioxidant, anti-tumor, and anti-inflammatory activities. Enhancing the extraction of jujube polysaccharides to boost their food, medicinal, and economic value has become an important development direction of the jujube industry. This paper reviews the current research on the active functions of grey jujube polysaccharides, extraction technologies, and recent advancements in their production and application. It systematically introduces both traditional and emerging extraction technologies and summarizes the current state of production and application of grey jujube polysaccharides. The aim is to provide references for other researchers interested in jujube polysaccharides and to extend the value chain of the grey jujube industry.

Abstract:The studies focused on plant soluble dietary fiber. The apparent characteristics of SDF from the Jujube under different treatment methods can provide theoretical support for product development to obtain the best trait products. Optimal extraction conditions, physical properties and antioxidant activity of SDF from the Jujube were investigated. The yield of 20.17 ± 0.16 % for extraction of soluble dietary fiber from Jujube were obtained as extraction temperature was 94 °C, extraction time was 40 min and ratio of raw material to water was 1:21. The physical properties of SDF were ascertained by measuring dissolution time, rehydration, swelling ability and bulk density, respectively. And it was evaluated by FT-IR and scanning electronic microscopy (SEM). Furthermore, it was proved that the soluble dietary fiber extracted by vacuum freeze dried had higher scavenging ability than that of vacuum dried and hot dried against DPPH, ABTS+ and hydroxyl radical. It has good antioxidant function and can slow down intestinal aging as a basis for new food development.
