Abstract:The effect of fermented soybeans from three different origin places (Hunan, Guangdong, and Sichuan in China) on protein oxidation and freshness of largemouth bass (Micropterus salmoides) was investigated during repeated freezing-thawing (FT) cycles. The Hunan fermented soybean exhibited the best antioxidant capacity according to the capacity of Fe3+ reducing power, DPPH radical scavenging activity, super oxide radical scavenging assay, hydroxyl radical scavenging assay, and reduced glutathione (GSH). As expected, 0.1% fermented soybean significantly (P < 0.05) delayed protein oxidation including the decline of reactive and total sulphydryls, Ca2+ ATPase activity, and freshness as well as the increase of total volatile base nitrogen (TVB-N) during repeated freezing-thawing cycles treatments. It was concluded that the fermented soybean was not only a seasoning, but also an antioxidant in prepared fishes.

Abstract:Fermented soybean products are favorite foods worldwide because of their nutritional value and health effects. In this study, solid-state fermentation (SSF) of soybeans with Rhizopus oligosporus RT-3 was performed to investigate its nutraceutical potential. A rich enzyme system was released during SSF. Proteins were effectively transformed into small peptides and amino acids. The small peptide content increased by 13.64 times after SSF for 60 h. The antioxidant activity of soybeans was enhanced due to the release of phenolic compounds. The soluble phenolic content increased from 2.55 to 9.28 gallic acid equivalent (GAE) mg/g after SSF for 60 h and exhibited high correlations with microbial enzyme activities during SSF. The potential metabolic pathways being triggered during SSF indicated that the improved nutritional composition of soybean attributed to the biochemical reactions catalyzed by microbial enzymes. These findings demonstrated that SSF could evidently improve the nutritional value and prebiotic potential of soybeans.

Abstract:Animal nutritionists have incessantly worked towards providing livestock with high-quality plant protein feed resources. Soybean meal (SBM) has been an essential and predominantly adopted vegetable protein source in livestock feeding for a long time; however, several SBM antinutrients could potentially impair the animal's performance and growth, limiting its use. Several processing methods have been employed to remove SBM antinutrients, including fermentation with fungal or bacterial microorganisms. According to the literature, fermentation, a traditional food processing method, could improve SBM's nutritional and functional properties, making it more suitable and beneficial to livestock. The current interest in health-promoting functional feed, which can enhance the growth of animals, improve their immune system, and promote physiological benefits more than conventional feed, coupled with the ban on the use of antimicrobial growth promoters, has caused a renewed interest in the use of fermented SBM (FSBM) in livestock diets. This review details the mechanism of SBM fermentation and its impacts on animal health and discusses the recent trend in the application and emerging advantages to livestock while shedding light on the research gap that needs to be critically addressed in future studies. FSBM appears to be a multifunctional high-quality plant protein source for animals. Besides removing soybean antinutrients, beneficial bioactive peptides and digestive enzymes are produced during fermentation, providing probiotics, antioxidants, and immunomodulatory effects. Critical aspects regarding FSBM feeding to animals remain uncharted, such as the duration of fermentation, the influence of feeding on digestive tissue development, choice of microbial strain, and possible environmental impact.

Abstract:As a new type of protein ingredient,fermented soybean meal almost doesn't contain any anti-nutritional factors and is rich in various kinds of small peptides and probiotics.Early-weaning piglets have not fully developed digestive enzyme systems,which lead to their weak digestion ability for vegetable protein and sensitive to anti-nutritional factors.So,regular soybean meal products are difficult to meet needs of weaning piglets.Fermented soybean meal has been applied in diets of weaning piglets in recent years and achieves good effects.In this paper,nutrition characteristics of fermented soybean meal and its' application effects in diets of weaning piglets,as well as the factors influencing on its' application effects were summarized.

Abstract:The objective of this study was to improve the nutritional value of a corn-soybean meal mix feed by biological fermentation.Bacillus subtilis,Lactobacillus plantarnm,Saccharomyces cerevisiae and several lactic acid bacteria were screened for ferment mixed feed respectively.Compound enzyme preparation was added with fermented strains to decrease the anti-nutritional factors and increase the lactic acid during fermentation.The nutrition value of fermented feed was evaluated by in vitro digestibility of amino acids and animal experiment.The results indicated that:1) Bacillus subtilis BS12 has the greater ability of degrading anti-nutritional factors.Enterococcus faecalis EF can efficiently synthesize lactic acid;2) Mixed fermentation with Bacillus subtilis BS12 and Enterococcus faecalis EF,could get optimal effect by 8∶1 ratio.Soild state fermented corn-soybean meal mixed feed 72 h under 37 ℃ with effective bacteria of 107 CFU/mL,1 × 10％ inoculum size,and 0.50％ compound enzyme preparation,the degradation rate of β-conglycinin could reach to 80.74％ (P ＜ 0.05),glycinin 86.87％ (P ＜ 0.05),neutral detergent fiber 39.36％ (P ＜0.05),Lactic acid content reached 122.57 mmol/kg and pH decreased to 5.0.The vitro digestion analysis suggested that crude protein digestibility increased from 78.46％ to 85.77％,essential amino acid methionine and phenylalanine digestibility increased(P ＜0.05) by 15.15％ and 17.60％,respectively,non-essential amino acid alanine,cysteine and tryptophan increased (P ＜ 0.05) by 10.11％,10.05％ and 9.89％,respectively;3) The average daily gain and feed intake of piglets were increased by substituting fermented feed for 10％ unfermented feed.In conclusion,fermented feed has a good prospect in improving the nutrient digestibility of feed and decreasing antibiotics in animal production.

Abstract:The nutritional components of fermented soybean meal (FSBM) vary because of the complex process of microbial fermentation. The objective of this study was to investigate the nutritional value of FSBM from two sources and explore the mode of actions of FSBM on the improvement of nutrient digestibility with the measurements of digestive enzymes and serum biomarkers. Eight weaned barrows (initial BW: 14.12 ± 0.24 kg) equipped with T-cannula in the distal ileum were allotted to a duplicated 4 × 4 Latin-square design with four experimental diets and four periods. Four experimental diets included a soybean meal control diet, two FSBM diets, and a nitrogen-free diet. The two sources of FSBM increased the contents of CP, amino acid and lactic acid, while decreased the levels of anti-nutritional factors, including glycinin, β-conglycinin and trypsin inhibitors. Compared to soybean meal control diet, both FSBM diets significantly increased the apparent and standardised ileal digestibility of CP and amino acids (P < 0.05), increased the activities of lipase, maltase and invertase in digesta (P < 0.05), increased total antioxidant capacity, activities of glutathione peroxidase and superoxide dismutase, the levels of interleukin-4, IgA, IgG and IgM in serum (P < 0.05), while decreased the levels of diamine oxidase, malondialdehyde, interleukin-6, and interleukin-2 in serum (P < 0.05). Additionally, the standardised ileal digestibility of amino acids were highly correlated with the aforementioned digestive enzymes and health-related serum biomarkers. In summary, FSBM diets showed an improved nutritional value evidenced by the higher nutrient digestibility, which may be partially derived from its beneficial effects on intestinal integrity, anti-oxidative capacity and immune function.
