Relationship Between Protein-related Traits and Palatabilities of Japonica Rice(Oryza Sativa L.) with Distinct Taste

Abstract:Protein is one of the critical factors affecting the cooking and eating qualities of rice grain.Forty-four conventional japonica rice varieties from Jiangsu local origins and northern rice-planting regions of China and Japan were selected as materials to investigate the correlations of protein-related traits and palatability of rice grain under Nanjing ecological conditions by correlation analysis,multiple stepwise regression analysis and regression analysis.These japonica cultivars were classified into two groups(inside and outside Jiangsu local regions),and each group was classed into good and bad taste type based on Wuyujing3.Statistical data showed that the total protein content,free amino acid content,total soluble protein content and gluten content of rice grains from northern China and Japan were all higher than those of the other three types,while its whole growth period was shorter than the other three types.The total protein content,free amino acid content,total soluble protein content and albumin content of grains of forty-five japonica rice showed significant or highly significant negative correlations with the palatability.Further multiple stepwise regression analysis indicated that free amino acid content,total soluble protein content and albumin content of grains were relatively critical factors and all showed significant negative correlations with palatability of cooked rice.Path analysis showed that albumin component content was more important to affect the palatability of japonica rice.
