Abstract:The canning properties of 9 loquat (Eriobotrya japonica Lindl.) were investigated. The chemical components of fresh and canned fruit analyzed. The changes of these chemical components during and their effects on canning are discussed. Cultivars `Glory,' `For Treasure,' and `Big Red Gown' are found most suitable for canning with their yellow to orange flesh color, good flavor and texture. `Small Red Flower,' a small fruit cultivar, and `White Flower,' a milk color cultivar, did not seem very good for direct canning, but they did not seem bad for producing canned fruit cocktails. There were no correlation between the chemical components, including titrable acidity, total soluble solids, sugar, total phenols, activity of polyphendoxidase, pectin, and the sensory scores of the canned loquat.

Abstract:Loquat（Eriobotrya japonica Lindl. ）was an evergreen fruit produced in subtropical region. China had about 70% of the world loquat yield,which provided a large quantity of loquat flowers. The flower had abundant bioactive constituents,such as flavonoid,carotenoid,oleanolic acid,ursolic acid,amygdalin etc. The recent research developments of the loquat flowers were reviewed.

Abstract:Soft can processing technique of water bamboo with pickled potherb mustard was optimized.The best formula was :water bamboo 100g,pickled potherb mustard 70g,rice wine 15mL,pepper ring 1g,sugar 6g.By cooking and stewing,vacuum packaging,sterilizing in a 95℃water bath for 25min,the soft canned food with a delicious taste,a longer shelf life and convenient to carry was produced.The product shelf life can as long as 3 months without preservatives,better meet the current development trend of food industry and market requirments.

Abstract:Practical applications Osmotic dehydration (OD) is the most important procedure for producing candied green plums. This study investigated high hydrostatic pressure treatment (HHP) to improve OD process. Central composite design was applied to optimize HHP parameters with pressure ranging from 50 to 400 MPa and time from 1 to 30 min. Innovative HPP procedure was compared with traditional heating treatments on the acceleration efficiency by Peleg's model. The physico-chemical and sensorial properties were compared. The results showed that HHP was effective to accelerate the OD process, but was not as efficient as heating methods. HHP promoted higher titratable acid content, firmness and greener color than heating on the obtained product. Sensory results revealed that HHP allowed to better preserve the typical odor and flavor of the final products. Generally, HHP treatments show high potentiality to improve the OD performances of candied green plums, together with the overall quality of the final product. Candied green plum is a popular snack in Eastern Asian countries. The traditional process includes a heating assisted treatment in order to accelerate the candying progress, which may induce decrease to the quality of the final product. Non-thermal high hydrostatic pressure could improve the osmotic dehydration process performances, minimizing the thermal damages on the final products, promoting the improvement of its overall quality.
Effect of Chitosan Coating with Nano-CaCO_3 Appendix on Postharvest Quality and Physiology of Loquat Fruits

Abstract:In order to determine the effectiveness of nano-CaCO3 appendix on quality and physiology of the loquat fruit,loquat fruit were treated by chitosan coating with nano-CaCO3 appendix before stored at 25℃.The results indicated that the firmness and titratable acidity(TA)of treated fruits were 11% and 20% higher than that of control,and 34% less of the weigh loss than that of the control,but the total soluble sol- id(TSS)content had no change.It also inhibited the activities of polyphenol oxidase(PPO)and peroxidase (POD),the BI was 43% lower than that of the control,and the shelf-life was 3 days longer than that of con- trol.Therefore,nano-CaCO_3 appendix had significant effects on chitosan coating loquat fruit storage.

Abstract:Litchi and longan are important commercial fruits of southern China. Fresh litchi and longan have a very short shelf life and market price at peak harvesting season decreases markedly due to excessive supply. Processing of litchi and longan recently gained increasing importance in China. According to the principles of food preservation, the processing technology of litchi and longan is divided into different methods, i.e., drying, canning, juice, fermentation, and frozen. The current status of some selected processed products such as dried litchi and longan, canned litchi, litchi juice, litchi wine and frozen litchi and their practical methods of processing are discussed in this paper.
Study on Processing Technology of A Low-sugar Citrus medica Preserved Fruit

Abstract:This paper used the processing technology that the sugar solutions concentration was gradually increased to produce a low-sugar Citrus medica preserved fruit by vacuum osmosis of sugar three times, and researched the processing technology parameters of vacuum osmosis of sugar by L9(3)4 orthogonal test. The best processing technology parameters is: the vacuum degree 0.06MPa, the sugar solutions concentration progressively 40%, 50%, 60%, each soaking sugar time 3.5 hours and the processing temperature 30℃. The low-sugar Citrus medica preserved fruit was made by seasoning with spice water of concentration 70%, salt 3% and sodium cyclamate 0.1% after vacuum osmosis of sugar.

Abstract:The study compared and analyzed the quality of loquat jam with different cooking times through physicochemical parameters, headspace-gas chromatography-ion migration spectroscopy (HS-GC-IMS) and intelligent senses. The results showed that with the prolongation of the cooking time, the color of loquat jam slowly deepened, the energy significantly increased, the adhesiveness, gumminess, hardness and chewiness enhanced, the free amino acid content increased from 22.40 to 65.18 mg/g. The organic acid content increased from 1.64 to 9.82 mg/g. Forty-seven volatile flavor compounds were identified in five types of loquat jam using HS-GC-IMS, among which the relative content of aldehydes was sharply higher than that of other chemical substances, playing an important role in the flavor formation of loquat jam. LJ0, LJ1 and LJ2 had higher aldehyde content, followed by LJ3 and LJ4 had the lowest aldehyde content. The orthogonal partial least squares-discriminant analysis (OPLS-DA) screened 15 marker compounds that could distinguish five types of loquat jam. The E-nose results showed a significant difference in olfactory sense between loquat jam cooked for 100 and 120 min. The E-tongue results corroborated the results of free amino acids (FAAs) and organic acids, indicating that the gustatory sense of loquat jam changed significantly when the cooking time reached 120 min. The results provided a basis for further research on the relationship between the cooking process and quality characteristics of loquat jam.

Abstract:In this paper,the biological and economic characteristics of loquat cultivars introduced from Sichuan and Fujian Province were studied.The cultivated techniques were also discussed.The result showed that the Zaozhong 6 was the most suitable cultivar in the northern of Guangxi Province.The Zaozhong-6 grew best with ripening date,20 days earlier than others.After planted for years,the yield of each tree and single fruit weight were 10.630 kg and 37.494 g on average,respectively,and soluble solid content was 11.303%.The flesh was delicious and good quality.

Abstract:This article mainly studied the low sugar pumpkin candied and preserved fruit the production craft, and the critical processes such as scleroses,pervasion dehydrate,vacuum penetrate the sugar and drying on the processing technology of low-sugar preserved pumpkin were studied. Results showed that vulcanize by 0.2 % of CaCl2(calcium chloride), pervasion dehydrate by 30%sucrose,1 % salt for 4 hours were good exporimental condition. The optimum technology on processing using sugar was candied 1 h in vacuum by 40 %sucrose,2.5 %glucose,0.6 %CMC-Na for 40 minutes(0.09 MPa). Drying at 50 ℃ for 1 hour first and then at 70 ℃ for 16 hours but do not blast, the product is fine.

Abstract:It is studied that the pickling process technics is improved in cabbage through adding different natural ingredient to improve its color, the fragrance and the taste and through. By spectrophotometry to determine nitrite in the pickling process. The result indicated that, it can obviously reduce nitritere by adding blue apple or pear, but it is better than before by increasing the right tea extract or the tea polyphenol based on this. Two peaks of nitritere content appears in the pickling process, and this is different from the predecessor findings. High quality pickling product is obtained which the mouth is good but nitritere is too lower to safe by increaseing the right tea extract or the tea polyphenol and the blue apple or the pear which has up-regulate function of reducing nitritere.

Abstract:Stroke is a sexually dimorphic disease, with differences between males and females observed both clinically and in the laboratory. While males have a higher incidence of stroke throughout much of the lifespan, aged females have a higher burden of stroke. Sex differences in stroke result from a combination of factors, including elements intrinsic to the sex chromosomes as well as the effects of sex hormone exposure throughout the lifespan. Research investigating the sexual dimorphism of stroke is only in the beginning stages, but early findings suggest that different cell death pathways are activated in males and females after ischemic stroke. A greater understanding of the mechanisms underlying sex differences in stroke will lead to more appropriate treatment strategies for patients of both sexes.

Abstract:The control of the temperature and the heating time of the reaction liquid are the keys in the processing of preserved Chinese gooseberry. It has expounded the basic thought of fuzzy controlling by study of the methods on the temperature control of the heating tanks. It has given a more detailed introduction, focusing on the design methods of fuzzy controllers on temperature control, putting forward the improved method on the open question, proposing design ideas on the parameters self-adjusting fuzzy control, which have improved the quality of the preserved fruit and lowed the sugar content in the practical application. This method has successfully been applied to the processing and production of the preserved fruit, attained the predicated control effect, achieved good economic benefits in some subordinate enterprise of Shaanxi kiwi fruit industry development service center.

Abstract:The invention discloses a loquat fruit preservation technology through nano packaging compound plant essential oil treatment, specially used for rot control and quality maintenance in a normal temperature storage process after loquat fruits are picked in the south, so as to prolong a storage period of product. According to the technology, a nano titanium dioxide low-density polyethylene preservative film is adopted and carvacrol essential oil with proper concentration is used for treatment to store the loquat fruits at temperature of minus 20 DEG C, so that the preservation life is prolonged to more than 15 days. The preservation technology disclosed by the invention significantly inhibits rot of the picked loquat fruits to keep good eating quality. The carvacrol essential oil, as a secondary metabolism product of plant, is low in working concentration so as to guarantee eating safety of the fruits. The nano thin film packaging has the advantages of being efficient, safe, convenient to use and the like.

Abstract:This paper studies the process,such as color protecting,hardening and drying,in making lowsugar sulfur-free preserved lotus root. Results show that to make persevered lotus root of high quality,the optimal color fixative is 0. 5% Nacl,0. 3% Citric acid and 0. 2% Vitamin C,the optimal hardening concentration of CaCl2 is 1. 5%,the optimal precooked time is 9 min,the optimal glucose concentration is 50%,and the optimal drying time is 8 hours at 55 ℃ 。

Abstract:The loquat fruit is much appreciated for its nutritional properties and healthy benefits, but it has a short storage life. Utilization of essential oil incorporation with chitosan has been found to be effective for improving quality and postharvest life of fruit. In the present work, the effect of chitosan (1.0%, w/v) in combination with Torreya grandis essential oil (TEO) at concentrations of 0.5% and 1.0% (v/v) treatment on the fruit quality of loquat (Eriobotrya japonica Lindl. cv. Tangxi) during storage (15 days, 25 °C) was explored. The results showed that among all the tested treatments 1.0% chitosan + 1.0% TEO was the best in keeping quality attributes and extending storage life of loquat fruit. This formulation retarded loss of fresh weight, preserved higher contents of total soluble solids and ascorbic acid, and reduced decay index and respiration rate. Meanwhile, this treatment exhibited better sensory quality, and inhibited the increase in polyphenol oxidase and peroxidase activities but improved superoxide dismutase activity. It can be suggested that the 1.0% chitosan + 1.0% TEO treatment delayed undesirable postharvest changes and kept the loquat quality, demonstrating its feasibility for loquat preservation.

Abstract:In the production of canned citrus, large amounts of processing water were discharged during the segment membrane removal process, causing severe pollution. In order to reduce pollution and recover the bioactive compounds in the processing water, the production of canned satsuma mandarin, sweet orange and grapefruit were studied, and improved acid (0.1% HCl, 0.4% citric acid) and alkali (0.1% KOH, 0.2% NaOH) were used to conduct the new chemical hydrolysis process to remove the segment membrane. The obtained acid and alkali processing water were firstly explored the potential to make novel beverages, which contain electrolytes (Na: 472-945 ppm; K: 208-279 ppm; Cl: 364-411 ppm; citrate: 1105-1653 ppm) and potential prebiotics such as pectin and flavonoids. The improved segment membrane removal process realized the conversion of wastewater into drinkable beverages at low costs. The bioactive compounds were fully recovered without wastewater discharging, which produced great environmental, economic and health value.

Abstract:In the process of Chinese gooseberry pre-served fruit, many factors affect the quality, the temperature adjustment process of steam heating can is a key role can control the quality of preserved kiwi fruit .Using ARM embedded microprocessor, according to the Parameters Self-tuning Fuzzy PID adjustment methods ,Control the temperature process of steam heating can,can be effective control the sugar contents of Chinese gooseberry pre-served fruit, is a core technology in the process of Chinese gooseberry pre-served fruit. This method has been successfully applying in Shan xi preserved kiwi fruit processing enterprises, also realizing a certain economic benefit.

Abstract:A comprehensive processing technology of L.vannamei is developed to produce two kinds of products,seasoning base material and multi-functional feed additives.The operation conditions for the extraction of taste components by flavourzyme and papain are optimized by single factor experiment and Box-Behnken experiments.The results indicate that the optimum conditions are: initial pH value is 6.8,ratio of material and water is 1:1,the addition amount of salt is 3.0%,the dose of enzyme is 1046 U/g,hydrolysis temperature is 62.42 ℃,hydrolysis time is 3.28 h.Under the optimum conditions,the degree of hydrolysis is up to(28.15±0.10)%,and the bitterness value of hydrolysis is 33.05±0.21.The drying methods of hot air drying and intermittent microwave drying for feed additives are investigated,and it is found that intermittent microwave drying is superior to hot air drying.Base on the drying rate and drying power dissipation,the best drying process conditions for feed additives are obtained as 3 W/g(on/off ratio is 0.5) through single factor experiments.
