Research Progress in the Detection of Veterinary Drug Residues in Food of Animal Origin by Mass Spectrometry

Abstract:With the rapid development of farming technology,the drug residues caused by the large-scale use of veterinary drugs are closely related to food safety. In animal-derived food, the sources of veterinary drug residues in different matrices are relatively wide,which will pose a threat to human health,and even produce carcinogenic and teratogenic effects. There are many regulations for restriction of veterinary drug residues globally. At the same time,the development of detection technology provides a strong guarantee for the rapid and efficient detection of veterinary drugs in food of animal origin that do not meet the legal limits. In this paper,the pretreatment methods and the commonly used mass spectrometry techniques used in the multi-residue detection of veterinary drugs in food of animal origin in the past ten years were reviewed. The pros and cons of pretreatment methods,as well as different mass spectrometry based detection techniques,were summarized.
