Abstract:In this paper, we study the technology of tea saponin-induced ultrasonic-assisted extraction of perilla seed oil. Based on single-factor experimental data, the Plackett-Burman design (PBD) co-operated with the Box-Behnken design (BBD) to optimize the influencing factors. The optimal process conditions after optimization were as follows: ultrasonic power of 90 W, ultrasonic time of 16 min, tea saponin dose of 0.3%, extraction temperature of 40 degrees C, ethanol volume fraction of 80% and liquid material ratio of 10:1 mL/g. In this situation, the actual average oil yield was 39.10 +/- 2.13%, which was highly consistent with the expected theoretical value of 39.94%. Based on a comparative analysis, the first-order kinetic model was more suitable for fitting the ex-perimental data and interpreting the mechanism. The efficiency, unsaturation degree, free radi-cal scavenging ability and physical and chemical properties of oil obtained using UAE and mi-crostructures of defatted cake were superior to those of SE. Therefore, the development of UAE induced by tea saponin technology markedly improves the yield of perilla seed oil and has great potential to extract effective ingredients from perilla seed, which provides a foundation for the ef-ficient utilization of perilla resources and other oil crops.
