Abstract:Food contamination, flavor and adulteration were indistinguishable for consumers. Rapid, reliable and sensitive detection of characteristic compounds in food products is imperative for quality evaluation and safety assurance. Due to the high sensitivity, fast perception and low cost, quartz crystal microbalance (QCM) sensors such as basic QCM sensors, electrochemical QCM sensors, QCM with dissipation and QCM sensor arrays have been utilized as promising techniques for the quick detection and precise identification of food products. This paper gave an overview of the working principle and common modification methods for QCM sensors. Then, the current status of the QCM sensors for food was introduced in detail, including food contaminations caused by harmful residuals and microorganism, food flavors changed during ripeness and storage time, food classification through taste and aroma, detection of food adulteration, allergens and additives. The challenges and perspectives on future work associated with QCM sensors for food were elaborated.
