Effects of Ultrasonic Treatment on Physico-Chemical Properties of Ethylene Scavenging Γ-Cyclodextrin Metal–Organic Framework for Active Food Packaging

Abstract:During fruit storage, ethylene accumulates, resulting in rapid fruit ripening and deterioration and, thus, waste. The development of materials that can adsorb and store ethylene gas is a promising method to prevent ethylene-induced ripening. Thus, we developed a nontoxic edible metal–organic framework (MOF) based on potassium ions and γ-cyclodextrin (γ-CD), denoted γ-CD-MOF-K. This material was synthesized using the microwave-assisted method and characterized by powder X-ray diffraction, scanning electron microscopy, differential scanning calorimetry, Fourier transform infrared spectroscopy, elemental analysis, and N 2 adsorption/desorption measurements. The MOF showed good adsorption for ethylene gas: 56%±0.67% (w/w), which is significantly higher than those of adsorbents based on V-type crystalline starch and α-CD reported previously. Thus, the crystal structure of γ-CD-MOF-K was analyzed to explain its ability to absorb ethylene. In addition, molecular docking was used to model the storage of ethylene molecules in γ-CD-MOF-K, revealing that γ-CD-MOF-K has a spindle-like cavity structure that can effectively adsorb and store ethylene gas. Finally, storage experiments were carried out using red kiwi fruit, which revealed that the material effectively absorbs the ethylene gas in the storage packaging, thus reducing the cellular respiration rate, delaying fruit maturation, and prolonging the storage period. Therefore, γ-CD-MOF-K has great potential for improving the postharvest quality of fruits and vegetables.
