Abstract:Background: Foodborne pathogens pose many threats to human life and health. Rapid, sensitive, and easy detection is urgently needed to avert the threat early. Quantum dots are compact in size, exhibit excellent and stable performance, and provide candidate components for small-sized detection devices. Scope and approach: In this review, we comprehensively summarize the way quantum dots capture foodborne bacteria and rapidly monitor foodborne pathogenic bacteria. Key findings and conclusions: In recent years, many advances, including the production and application of quantum dots, have enhanced the performance of the detection of target pathogenic bacteria. Quantum dots are more cost-friendly and attractive than other detection methods. Detection strategies associated with smartphones help to produce new breakthroughs. Low-toxicity materials are of great significance for the practical detection of foodborne pathogens.

Abstract:A simple, highly-automated instrument system used for on-site detection of foodborne pathogens based on fluorescence was designed, fabricated, and preliminarily tested in this paper. A corresponding method has been proved effective in our previous studies. This system utilizes a light-emitting diode (LED) to excite fluorescent labels and a spectrometer to record the fluorescence signal from samples. A rotation stage for positioning and switching samples was innovatively designed for high-throughput detection, ten at most in one single run. We also developed software based on LabVIEW for data receiving, processing, and the control of the whole system. In the test of using a pure quantum dot (QD) solution as a standard sample, detection results from this home-made system were highly-relevant with that from a well-commercialized product and even slightly better reproducibility was found. And in the test of three typical kinds of food-borne pathogens, fluorescence signals recorded by this system are highly proportional to the variation of the sample concentration, with a satisfied limit of detection (LOD) (nearly 102–103 CFU·mL−1 in food samples). Additionally, this instrument system is low-cost and easy-to-use, showing a promising potential for on-site rapid detection of food-borne pathogens.

Abstract:Abstract Due to the increasing number of food-borne diseases, more attention is being paid to food safety. Food-borne pathogens are the main cause of food-borne diseases, which seriously endanger human health, so it is necessary to detect and control them. Traditional detection methods cannot meet the requirements of rapid detection of food due to many shortcomings, such as being time-consuming, laborious or requiring expensive instrumentation. Quantum dots have become a promising nanotechnology in pathogens tracking and detection because of their excellent optical properties. New biosensor detection methods based on quantum dots are have been gradually developed due to their high sensitivity and high specificity. In this review, we summarize the different characteristics of quantum dots synthesized by carbon, heavy metals and composite materials firstly. Then, attention is paid to the principles, advantages and limitations of the quantum dots biosensor with antibodies and aptamers as recognition elements for recognition and capture of food-borne pathogens. Finally, the great potential of quantum dots in pathogen detection is summarized.

Comprehensive Reviews in Food Science and Food Safety

Abstract:Abstract The importance of food quality and safety lies in ensuring the best product quality to meet consumer demands and public health. Advanced technologies play a crucial role in minimizing the risk of foodborne illnesses, contamination, drug residue, and other potential hazards in food. Significant materials and technological advancements have been made throughout the food supply chain. Among them, quantum dots (QDs), as a class of advanced nanomaterials with unique physicochemical properties, are progressively demonstrating their value in the field of food quality and safety. This review aims to explore cutting‐edge research on the different applications of QDs in food quality and safety, including encapsulation of bioactive compounds, detection of food analytes, food preservation and packaging, and intelligent food freshness indicators. Moreover, the modification strategies and potential toxicities of diverse QDs are outlined, which can affect performance and hinder applications in the food industry. The findings suggested that QDs are mainly used in analyte detection and active/intelligent food packaging. Various food analytes can be detected using QD‐based sensors, including heavy metal ions, pesticides, antibiotics, microorganisms, additives, and functional components. Moreover, QD incorporation aided in improving the antibacterial and antioxidant activities of film/coatings, resulting in extended shelf life for packaged food. Finally, the perspectives and critical challenges for the productivity, toxicity, and practical application of QDs are also summarized. By consolidating these essential aspects into this review, the way for developing high‐performance QD‐based nanomaterials is presented for researchers and food technologists to better capitalize upon this technology in food applications.

Abstract:Carbon quantum dots (CQDs) are ideal fluorescent probes for rapid detection. This paper reviews the synthesis methods of CQDs, their application in the rapid detection of antibiotics and heavy metals in the environment and food, and the underlying detection mechanisms. The hydrothermal method is the most commonly used for synthesis, and CQDs doped with heteroatoms (such as N, P and S) exhibit superior fluorescence performance. In the presence of antibiotics and heavy metals, the fluorescence of CQDs can be quenched or enhanced. Single-signal and dual-signal probes can be developed using the fluorescence, phosphorescence and absorbance of CQDs, enabling rapid detection of various antibiotics (e.g., tetracycline, quinolone and beta-lactam antibiotics) and heavy metals (e.g., Cd2+, Cr6+, Fe3+, Hg2+, and Pb2+). With the combination of smartphones and fluorescent probe test strips developed based on CQDs, on-the-spot rapid detection can be realized. This review offers new insights into the rapid detection of CQDs.

Abstract:In recent years, the issues about the quality and safety of agricultural products and livestock have occurred frequently. As a source of security problems, the residues of pesticides and veterinary drug had caused serious threat on environment and human’s health. It was focused on developing a fast, simple and inexpensive method to detect the residues of pesticides and veterinary drug in recent years. Quantum dots (QDs) is made into a new fluorescent probes with excellent optical characteristics compared with the conventional organic fluorochrome. The detection techniques and researches based on QDs became more and more mature. The optical features of QDs were reviewed briefly in this paper. Its application and analysis on detecting the residues of pesticides and veterinary drug were introduced in detail. Additionally, the prospects of development were discussed.

Comprehensive Reviews in Food Science and Food Safety

Abstract:Food quality and safety are crucial public health concerns with global significance. In recent years, a series of fluorescence detection technologies have been widely used in the detection/monitoring of food quality and safety. Due to the advantages of wide detection range, high sensitivity, convenient and fast detection, and strong specificity, quantum dot (QD)-based fluorescent nanosensors have emerged as preferred candidates for food quality and safety analysis. In this comprehensive review, several common types of QD production methods are introduced, including colloidal synthesis, self-assembly, plasma synthesis, viral assembly, electrochemical assembly, and heavy-metal-free synthesis. The optoelectronic properties of QDs are described in detail at the electronic level, and the effect of food matrices on QDs was summarized. Recent advancements in the field of QD-based fluorescent nanosensors for trace level detection and monitoring of volatile components, heavy metal ions, food additives, pesticide residues, veterinary-drug residues, other chemical components, mycotoxins, foodborne pathogens, humidity, and temperature are also thoroughly summarized. Moreover, we discuss the limitations of the QD-based fluorescent nanosensors and present the challenges and future prospects for developing QD-based fluorescent nanosensors. As shown by numerous publications in the field, QD sensors have the advantages of strong anti-interference ability, convenient and quick operation, good linear response, and wide detection range. However, the reported assays are laboratory-focused and have not been industrialized and commercialized. Promising research needs to examine the potential applications of bionanotechnology in QD-based fluorescent nanosensors, and focus on the development of smart packaging films, labeled test strips, and portable kits-based sensors.

Abstract:Food safety is closely related to human health and has become a worldwide, pressing concern. Food safety analysis is essential for ensuring food safety. Sulfur quantum dots (SQDs), a new type of zero-dimensional metal-free nanomaterials, have recently become the focus of scientific research due to their good luminescence properties, dispersibility, biocompatibility, and inherent antibacterial properties. This review focuses on recent advances in SQDs, with emphasis on their practical applications in the food field. First, commonly used methods for the synthesis of SQDs are presented, including traditional and emerging strategies. The properties of SQDs are then analyzed in detail, particularly their luminescence properties, catalytic activities, and reducing properties. Next, the use of SQDs in food safety detection and antibacterial fields are elaborated. Finally, this review discusses the challenges associated with the use of SQDs in food safety detection and antimicrobial applications.

Abstract:Analyzing food composition and detecting contaminants is important for monitoring food quality and assessing public health risks. Traditional food analysis methods can meet laboratories' routine food analysis needs, but critical food safety situations require rapid, time-saving, and low-cost analytical technologies, including on-site, portable, and convenient test kits. As one of these methods, fluorescence analysis has great potential in food safety due to its outstanding features such as high sensitivity, simple operation, low cost, and fast result output. Carbon quantum dots (CQDs) are innovative 0D carbon-based nanoparticles that have recently emerged as promising replacements for standard fluorescent materials. CQDs have many advantages over conventional fluorescent materials such as quantum dots, organic dyes, and metal nanoclusters, including easy preparation, non-blinking, low cytotoxicity, low cost, high resistance to photo-bleaching, and excellent biocompatibility. As a result, CQD-based fluorescence detection provides a useful analytical tool for analyzing food-related analytes. This review provides an overview of the state-of-the-art synthesis methods, CQD fluorescence properties, detection process, and design ideas for CQD-based fluorescence detectors for food analysis. The advantages and disadvantages of CQD-based fluorescence sensors for detecting food contaminants are also highlighted.

Abstract:Carbon quantum dots (CQDs) with stable physicochemical properties are one of the emerging carbon nanomaterials that have been studied in recent years. In addition to the excellent optical properties such as photoluminescence, photobleaching resistance and light stability, this material also has favorable advantages of good biocompatibility and easy functionalization, which make it an ideal raw material for constructing sensing equipment. In addition, CQDs can combined with other kinds of materials to form the nanostructured composites with unique properties, which provides new insights and ideas for the research of many fields. In the field of food analysis, emerging CQDs have been deeply studied in food composition analysis, detection and monitoring trace harmful substances and made remarkable research progress. This article introduces and compares the various methods for CQDs preparation and reviews its related sensing applications as a new material in food components analysis and food safety inspection in recent years. It is expected to provide a significant guidance for the further study of CQDs in the field of food analysis and detection.

Abstract:Food safety is of great concern, and food-borne bacterial infections and diseases are a major crisis for health. Therefore, it is necessary to develop rapid detection techniques for the prevention and recognition of food safety hazards caused by food-borne pathogens. In recent years, the fluorescence assay has become a widely utilized detection method due to its good signal amplification effect, high detection sensitivity, high stability, and short detection time. In this review, the different kinds of fluorescence materials were concentrated, including quantum dots (QDs), carbon dots (CDs), metal–organic frameworks (MOFs), and upconversion nanoparticles (UCNPs). The optical properties and applications of different kinds of fluorescent materials were analyzed and compared. Furthermore, according to the biosensing components, different fluorescence biosensors are reviewed, including label-free based fluorescence probes, aptamer-based biosensors, and antibody-based biosensors. Finally, we focused our attention on the discussion of fluorescent detection techniques combined with other techniques and their applications. The review presents future trends in fluorescence sensors, providing new sights for the detection of food-borne pathogens.

Abstract:Semiconductor quantum dots (QDs) are a new kind of biological fluorescence material, which has many advantages, such as broad excitation spectra, tunable emission spectra and good photostability. In the field of biomedical detection, the problems encountered in the traditional organic dye-based biomedical detections, such as short fluorescence lifetime and failure to simultaneous excitation of multiple colors, can be solved by using QDs. Water-soluble QDs combined with specific bio-molecules can label targeting bio-compound, which is useful in bio-molecule detection, cell labeling, tissue imaging, and can be used in fluorescence resonance energy transfer (FRET) technology. Combining QDs and protein chip technology to develop a new technology to detect multiple kinds of tumor markers will be one of the promising clinical applications of QDs with greater sensitivity, specificity, rapidity and convenience.

Abstract:Antibiotic resistance and pathogenic bacterial monitoring are two main challenges in clinical diagnostics and treatment of bacteria. To conquer those issues, many new materials and novel technologies are explored. Among them, quantum dots (QDs) are regarded as not only powerful bacteriostatic agents, but also bacterial monitoring probes due to their excellent photoluminescence properties, tunable multiwavelength luminescence, and capability in reactive oxygen species‐generation. While, till now, no systematic and critical review has been published in this related research area. This review paper aims at summarization and review of the monitoring and combating of pathogenic bacteria utilizing QDs (mainly in the recent five years), in view of their classification, modification, mechanism, and application. Semiconductor QDs, transmission‐metal‐based QDs, carbon‐based QDs, and silicon‐based QDs are mainly covered in this review. Moreover, a thorough discussion on the possible interaction mechanism between bacteria and QDs is given, which will contribute to the designing of QDs for novel and high‐efficient bacterial monitoring and combating applications. Eventually, the current challenges and the future research focus of QDs in bacterial monitoring and combating are proposed. This review will be of significance for the related field to understand the designing principles of QDs for pathogenic bacterial monitoring and combating applications.

Abstract:Quantum dots(QDs)are zero-dimension semiconductor nanocrystals.Compared to traditional organic dyes,QDs possess unique optical properties.As a new generation of fluorescent probe QDs have been widely used in biological detection due to their broad excitation and narrow emission spectra,accurate size-tunable emission wavelength,high quantum yield and good photostability.The basic concept,properties,the preparation method,surface modification of QDs and their toxicity were introduced,and some examples on QDs-based fluorescence immunoassay,biochips,biosensors and animal imaging in vivo were given out in this paper.As developing QDs technology,QDs will exhibit the great potential in bio-analytical applications.

Abstract:ABSTRACT In the past ten years, as a novel and prospective nanomaterials, carbon dots have acquired tremendous attention for their unique optical and physicochemical properties, high compatibility and low cost, as well as great potential in sensing area. This review aims to present the current detecting principles based on carbon dots and other nano biological technologies, involving fluorescence quenching and recovery mechanisms. The synthetic and modificatory approaches in making carbon dots including top-down and bottom-up methods, as well as surface passivation and heteroatom doping ways are introduced. Their applications in food area, concerning detection of nutrients, restricted or banned substances as well as foodborne pathogenic bacteria and the toxins secreted are discussed. Finally, the difficulties to be overcome or problems to be solved are presented, and other novel techniques to combine with carbon dots to obtain more stable and specific nanosensors in various fields are proposed. Although carbon dots based sensors have shown the potential in sensing aspect of food area, as food samples are complex in compositions that may cause interferences, more novel techniques are needed to combine with carbon dots to develop sensitive and specific sensing probes.

Abstract:Food safety is a global concern, and conventional methods for detecting foodborne bacteria, such as polymerase chain reaction and enzyme-linked immunosorbent assay, often involve time-consuming processes, specialized equipment, or specific recognition of particular bacterial strains. There is an urgent need for more efficient and convenient detection methods for foodborne pathogens. This study addresses this need by introducing an easily constructed fluorescent sensor array for the identification of various foodborne bacteria. The sensor array comprises carbon quantum dots (CQDs) functionalized with ampicillin, polymyxin, and gentamicin, each exhibiting different affinities for binding with specific bacteria. Leveraging machine learning algorithms, the proposed sensor array enables rapid, accurate, and highly sensitive identification of foodborne pathogens. This approach offers a convenient solution for the development of rapid, accurate, and hypersensitive detection methods for multiple bioactive samples. In summary, the fluorescent sensor array in this study holds promise for advancing the field of foodborne bacteria detection.
