Effects of Different Drying Methods on the Product Quality and Drying Kinetics of Banana Slices

Abstract:In this study, three drying methods, namely, pulsed vacuum drying (PVD), infrared assisted hot air drying (IR-HAD), and hot air drying (HAD), were applied to dry fresh banana slices. This experiment has been studied the effects of hot air drying (HAD), pulsed vacuum drying (PVD), and infrared radiation assisted hot air drying (IR-HAD) on drying kinetics, sugar content, rehydration ratio and color of banana under constant drying temperature of 65 ℃. Results showed that the drying methods had significant influence on drying kinetics, sugar content, rehydration ratio and energy consumption of dried banana slices. The overall quality of dried banana was strictly dependent on the methods applied during drying. This study indicated that PVD is a promising drying method for banana quality preservation at 65 ℃, as it allowed higher retention of sugar content, higher rehydration ratio and shorter drying time of dried banana. But PVD is not energy-saving when compared to that of HAD and IR-HAD. The current findings indicated PVD drying had the potential to produce high-quality dried banana on commercial scale. The findings in current work contribute to a better understanding of the effects of different drying technologies on drying kinetics, sugar content, rehydration ratio and color of banana, which is necessary for selecting suitable drying technology for banana drying.
