Abstract:Yellow peaches (prunus persicu L. Batsch.) were stored under controlled atmosphere (CA) of 2% O-2 Plus 10% CO2, and normal atmosphere (CK) at 2 degrees C, to investigate the effects of storage conditions of atmosphere and time on the structure of single water soluble pectin (WSP) molecule. The microstructure changes including branches and widths of WSP were studied by atomic force microscopy (AFM) on initial, the 15th and 45th day. The probability of small width WSP was increasing with the time, and in CK group the probability of small width WSP was bigger than in CA group. The microstructures of WSP molecules and polymers showed that aggregates were separated with the storage time. The degradation of WSP molecules was inhibited by controlled atmosphere storage. Almost all of the chains were composed of four basic units with widths of 11.719 nm, 15.625 nm, 19.531 nm and 35.156 nm, which can be visualized and calculated exactly by AFM. It indicated that parallel linkage or intertwist between the basic units was fundamental information for WSP molecules.
