In Vitro Antioxidant Activities Of Mulberry (Morus Alba L.) Leaves And Mulberry Black Teas

Abstract:Mulberry (Morus alba L.) leaves contain antioxidants such as flavonoids, polysaccharides, polyphenols, and so on. In vitro antioxidant capacity of mulberry leaves, mulberry black tea and mulberry black tea plus bacterial suspention were detected and compared from clear superoxide radical (O(2)(-)center dot), DPPH free radical scavenging, hydroxyl radical scavenging, Fe(2+) chelating, and reducing activities, respectively. The results showed that the antioxidant capacity of mulberry leaves, mulberry black tea and mulberry black tea plus bacterial suspention reduced as their concentration reduced. The clear superoxide radical (O(2)(-)center dot) activity of mulberry leaves, mulberry black tea and mulberry black tea plus bacterial suspention are 0.45, 0.67 and 0.65 times to that of vitamin C, respectively. The DPPH scavenging ability of mulberry leaves significantly higher than that of mulberry black tea and mulberry black tea plus bacterial suspention. Hydroxyl radical scavenging activity of mulberry leaves, mulberry black tea and mulberry black tea plus bacterial suspention are about 0.65, 0.55, and 0.60 times to that of vitamin C. Both the Fe(2+) chelating ability of mulberry leaves and mulberry black tea are lower than that of EDTA. Reducing ability of mulberry leaves, mulberry black tea and mulberry black tea plus bacterial suspention are about 1.0, 0.6, and 0.8 times to that of vitamin C. The results indicated that oxidation resistance of the developed mulberry black teas are remarkable, which is helpful to the further development and preparation of new mulberry black teas.
