Abstract:Bee bread is one of the least studied bee products. In this study, ten bee bread samples were characterized using palynology and HS–SPME–GC–MS (headspace solid-phase microextraction gas chromatography-mass spectrometry). In total, over one hundred different volatile components were identified, belonging to different chemical groups. Only ten common components were detected in all the samples. These volatiles were ethanol, ethylene chloride, ethyl acetate, acetic acid, α-pinene, furfural, nonane, nonanal, n -hexane and isovaleric acid. Several other components were commonly shared among various bee bread samples. Over sixty detected compounds have not been previously reported in bee bread. The analysis required a mild extraction temperature of 40 °C, as higher temperatures resulted in the Maillard reaction, leading to the production of furfural. The profile of volatile compounds of the tested bee pollen samples was complex and varied. Some relationships have been shown between botanical origin and volatile organic compound profile.

What problem does this paper attempt to address?
The paper aims to study the composition of volatile organic compounds (VOCs) in bee bread. Bee bread is a product fermented under anaerobic conditions in the hive, made by bees mixing pollen, honey, and digestive gland secretions. Despite its potential nutritional value and health benefits, research on the volatile compounds in bee bread is relatively scarce. The main objectives of the paper include: 1. **Analyzing the volatile compounds in bee bread**: Using headspace solid-phase microextraction combined with gas chromatography-mass spectrometry (HS-SPME-GC-MS), volatile compound analysis was conducted on 10 bee bread samples from different locations in Eastern Europe. 2. **Identifying common components**: Ten common volatile compounds were detected in all samples, including ethanol, dichloromethane, ethyl acetate, acetic acid, α-pinene, furfural, nonane, nonanal, n-hexane, and isovaleric acid. 3. **Exploring the relationship between plant sources and volatile compounds**: The study found that the composition of volatile compounds in bee bread is complex and diverse, with some compounds related to plant sources. Through these studies, the authors hope to reveal the specific composition of volatile compounds in bee bread and their potential health benefits, providing a scientific basis for further development and utilization of bee bread.
