Influence of Antigelation Agents on Frozen Egg Yolk Gelation

Abstract:This study aims to inhibit the gelation of frozen egg yolk stored at -18 degrees C for 180 d by antigelation agent treatment prior to freezing. The synergistic effect of each treatment on the frozen-thawed egg yolk gelation behaviour was explored, and their influence mechanisms were studied. The hardness of egg yolk frozen for 180 d with 2% (w/w) NaCl and sucrose decreased by 38.80% compared with that of pure yolk frozen for 180 d. The flow index n of all treated samples increased, indicating increased fluidity of the treated frozen-thawed yolk, especially with neutral protease. Samples with 2% (w/w) NaCl and sucrose had higher surface hydrophobicity than the control, with lower values for the four protease-treated samples. The reduced loss of immobile and free water in frozen egg yolks also contributed to gel formation inhibition. A Weibull model was also used to study the gelation kinetics to compare the rates between treatments. This study provides several ways to inhibit yolk gelation caused by freezing, and adding NaCl and/or sucrose prior to neutral protease treatment turns out to be more applicable in commercial freezing of egg yolks for shelf-life extension.
