Abstract:As one of the crucial components of the food system, starch can be hydrolyzed into glucose after gastrointestinal digestion, so regulating its digestive properties is vital for maintaining health. Microwaves can promote the rearrangement of intramolecular structure of starch, thus improving its physicochemical properties, enhancing its slowly digestible features, and expanding its scope of application. This review zooms in describing recent research results concerning the effects of microwave treatment on the multi-scale structure and physicochemical properties of starch and summarizing the patterns of these changes. Furthermore, the changes in starch structure, resistant starch content, and glycemic index after digestion are pointed out to gain an insight into the enhancement of starch slowly digestible properties by microwave treatment. The resistance of starch to enzymatic digestion may largely hinge on the specific structures formed during microwave treatment. The multi-level structural evolutions of starch during digestion endow it with the power to resist digestion and lower the glycemic index. The properties of starch dictate its application, and these properties are highly associated with its structure. Consequently, understanding the structural changes of microwave-modified starch helps to prepare modified starch with diversified varieties and functional composites.
Microwave Irradiation Differentially Affect the Physicochemical Properties of Waxy and Non-Waxy Hull-Less Barley Starch

Abstract:Waxy and non-waxy hull-less barley kernels and their isolated starches were irradiated under different microwave conditions (power 640, 720, and 800 W, time 60, 120 and 180 s). Changes in physicochemical properties were studied to investigate the effects of microwave irradiation (MWI) on in-kernel starches and isolated starches. For in-kernel starch, microwave reduced the ratio of 1047/1022 cm(-1) wavelengths, gelatinization enthalpy (Delta H-g) and relative crystallinity (RC), indicating that microwave of starch within the cells disrupted the crystalline regions. For isolated starch, microwave decreased the ratio of 1047/1022 cm(-1) wavelengths but increased Delta H-g of isolated starch, indicating that microwaving resulted in disruption of amorphous structure and an increase in the amount of remaining double helix structure. Moreover, viscosities of in-kernel starches decreased as microwave power and time increased, but this was not observed in isolated starches. Microwave treatment induced an enhancement of gelatinization temperature for non-waxy starches (NWS) but decreased in waxy starches (WS). Microwave had a greater effect for swelling power and solubility on in-kernel MWI-WS than MWI-WS, whereas the reverse results were found between in-kernel MWI-NWS and MWI-NWS. The results indicated that amylose plays a profound role in the properties of isolated and in-kernel starches during microwaving.
Rapid Liquefaction of Corn Stover with Microwave Heating

Abstract:Microwave heating was applied in the liquefaction of corn stover with polyhydric alcohol to establish a rapid process for converting corn stover into polyols. With ethylene glycol (EG) as liquefacient and 3.5% sulfuric acid as a catalyst, the residue content was reduced to 4.7% after 20 min of microwave liquefaction at 160 °C. Effects of liquefaction parameters on the residue content were investigated. It was found that the reaction temperature had a greater influence on the residue content than the sulfuric acid concentration and reaction time. The liquefied mixture was characterized as complexes of ester and ether type polyols by means of Fourier transform infrared spectroscopy. 3-(2-Methyl-1,3-dioxolan-2-yl) propanoic acid was characterized as the main degradation product of corn stover, besides the large amount of condensation product of EG.

Abstract:Native starch has poor stability and usually requires modification to expand its industrial application range. Commonly used methods are physical, chemical, enzymatic and compound modification. Microwave radiation, as a kind of physical method, is promising due to its uniform energy radiation, greenness, safety, non-toxicity. It can meet the demand of consumers for safe food. Microwave-assisted modification with other methods can directly or indirectly affect the structure of starch granules to obtain modified starch with high degree of substitution and low viscosity, and the modification efficiency is greatly improved. This paper reviews the effect of microwave radiation on the physicochemical properties of starch, such as granule morphology, crystallization characteristics, and gelatinization characteristics, as well as the application of microwave radiation in starch modification and starch food processing. It provides theoretical references and suggestions for the research of microwave heating modified starch and the deep processing of starchy foods.

Abstract:Sustainable utilisation of food waste in biorefineries is imperative to actualising a circular economy and alleviating the massive environmental burden. An efficient biorefinery system design necessitates comprehensive understanding of the impurity effects such as salt. This study scrutinised the hydrolysis of rice starch, a major component in food waste, in NaCl(aq) solution under robust microwave heating, without adding catalysts and organic solvents to pursue green chemistry. The NaCl-microwave synergy was revealed via an innovative approach, by tracing and assimilating the data of microwave real-time power output, in-vessel pressure, and temperature gradient across the reactant matrix. The use of very diluted NaCl(aq) (0.05 wt%) increased the total product yields from 23.6 to 37.4 mol%, with tetra/tri/disaccharides and glucose being the major products after reaction at 200 degrees C for 15 min. The highest product yields of 65.9 mol% could be obtained in 1 wt% NaCl(aq). Fluctuation in the temperature measurement during ramping signified the NaCl-promoted gelatinisation, in which the reactant mixture exhibited rapid changes in viscosity. The C-13 solid-state nuclear magnetic resonance spectroscopy suggested the possible selective interactions between NaCl and the free hydroxyl groups at C6 and C2,3,5 positions, whereas alpha(1 -> 4) linkages were less assessable due to steric hindrance. The hydrolytic depolymerisation of starch was auto-catalysed by acid species generated in situ at the temperature holding stage. This step was accelerated by the presence of NaCl that might interact with and weaken the glycosidic bonds. From an energy perspective, the use of microwaves in place of conventional heating reduced the energy consumption by 70% to achieve the same products profile, as NaCl enabled superior dielectric heating via ionic loss. This study offers new insights into the NaCl-polysaccharide interactions and unique NaCl functions under microwave conditions, which are necessary fundamentals to develop green and energy-efficient biorefinery systems.
Structural and property changes of starch derivatives under microwave field: A review

Abstract:Native starches are commonly modified for desired properties because of their limited applications. Among various modifications, microwave irradiation has been gaining strong interests and becoming a focal area to transform starch during the last few years. Such interests reside in microwave irradiation's high heating rates, lesser extent of loss in nutritional qualities, and so on when compared with other approaches. This review summaries the effects of microwave field on the structural (e.g. morphology characteristic, lamellae structure, crystallinity, and molecular structure) and physicochemical properties (e.g. pasting properties and gelatinization) of naturally existing starch derivatives. Different microwave-assisted chemical derivatizations can directly or indirectly affect starch structure from the macroscopic to the microscopic level, thereby resulting in various functionalities. Moreover, conventional starch modification processes can be optimized by applying microwave irradiation to obtain modified starch with high degree of substitution and low viscosity. The future research will help to better understand the structural changes of microwave-assisted starch chemical derivatization and thereby creating a wide range of functionalities.
Impact of Microwave Irradiation Energy Levels on Molecular Rotation, Structural, Physicochemical, Proximate and Functional Properties of Potato (Ipomoea batatas) Starch

Abstract:Starch isolated from potato was subjected to microwave treatment at different energy levels (200-800 W) to modify the functional, structural and physicochemical properties, as well as induce molecular rotation of the hydroxyl group on the starch polysaccharide. Proximate analyses revealed that moisture content reduced, while ash, protein, fat and fibre increased after modification. Fourier-transform infrared spectroscopy spectra indicated a strong shift in absorption band of OH from 3441 to 3454 cm-1. Optical light microscopy revealed that starch granules were oval and spherical in shape with hyla on some of the granules. Least gelation concentration reduced following microwave treatment. Compared with the native starch, the pasting parameters of the microwave treated starches decreased, with the exception of setback viscosity for starch modified at 800 W. Onset temperature (TO), peak temperature (TP) and conclusion temperature (TC) of gelatinization increased in microwave treated starches compared with native potato starch. Also, gelatinization enthalpy increased from 8.21 J/g in native starch to 15.39, 16.36, 17.76 and 38.06 J/g in microwave treated starches at 200, 400, 600, and 800 W, respectively. It was concluded that the energy of microwave irradiation can induce and accelerate molecular rotation of the hydroxyl group on the starch polysaccharide.

Abstract:Starch is the most abundant carbohydrate in legumes (22–45 g/100 g), with distinctive properties such as high amylose and resistant starch content, longer branch chains of amylopectin, and a C-type pattern arrangement in the granules. The present study concentrated on the investigation of hydrolyzed faba bean starch using acid, assisted by microwave energy, to obtain a possible food-grade coating material. For evaluation, the physicochemical, morphological, pasting, and structural properties were analyzed. Hydrolyzed starches developed by microwave energy in an acid medium had low viscosity, high solubility indexes, diverse amylose contents, resistant starch, and desirable thermal and structural properties to be used as a coating material. The severe conditions (moisture, 40%; pure hydrochloric acid, 4 mL/100 mL; time, 60 s; and power level, 6) of microwave-treated starches resulted in low viscosity values, high amylose content and high solubility, as well as high absorption indexes, and reducing sugars. These hydrolyzed starches have the potential to produce matrices with thermo-protectants to formulate prebiotic/probiotic (symbiotic) combinations and amylose-based inclusion complexes for functional compound delivery. This emergent technology, a dry hydrolysis route, uses much less energy consumption in a shorter reaction time and without effluents to the environment compared to conventional hydrolysis.

Abstract:Texture characteristics of quinoa under microwave (MW) irradiation were studied from the perspective of starch gelatinization. MW reduced the light transmittance and increased the hardness and stickiness of quinoa. Microstructure showed that MW dispersed the vesicular structure of starch aggregates into separate starch particles, resulting in the full hydration of starch and water molecules to form denser network structures. The value of peak viscosity and setback decreased in RVA after MW treatment, but the gelatinization temperature remained stable. DSC further proved that moderate MW treatment could reduce the gelatinization enthalpy of starch and made quinoa accessible to gelatinize. However, XRD showed that the crystal structure of starch was preserved, but the crystallinity increased. Finally, low field NMR showed that moderate MW stimulated the full hydration of starch to form denser network structures, while excessive MW treatment made starch partially gelatinize and form rigid structure, resulting in negative texture properties.

Abstract:Pure granular amylose (AM) and pure granular amylopectin (waxy) starch (AP) granules have the high nutritional value in food industry. Effects of microwave treatment (400 W/g DW, 1–8 min) on the structure and properties of transgenic AM granules and AP granules were investigated in direct comparison. Microwave treatment, especially during the first 3 min, decreased the molecular weight of molecules in both the AM and the AP samples. The crystallinity of AM starch initially increased from 15.6% to 20.6%, which was associated with the formation of new Vh-type crystals. After that, crystallinity decreased alongside to 11.3% with the complete disruption of B-type crystals. In contrast, the crystallinity of AP starch initially decreased from 18.9% to 10.8% followed by an increase to 20.0%. Upon prolonged treatment of AM granules, the resistant starch and water solubility was significantly increased. Our data demonstrate notable different microwave-dependent reorganization patterns for pure granular AM and AP molecules as native granular systems, which is helpful to the improvement of functionality of these two starches.

Abstract:<section class="article-section__content"><p>Microwave processing has attracted much attention in the field of cereal processing due to its positive effect on improving the nutritional quality of cereals and prolonging the shelf life of cereal food. Microwave (MW) treatment (600 W, 6 min) was studied to evaluate its effect on the physicochemical properties and in vitro digestibility of three kinds of sorghum (<i>Sorghum bicolor [L</i>.<i>] Moench</i>) starch, including Longmiliang No. 1 (LML1), Longza No. 13 (LZ13), and Hongnuo (HN). After microwave treatment, the contents of insoluble dietary fiber, soluble dietary fiber and total dietary fiber of the three kinds of sorghum were significantly increased by 3.72–7.45 g/100 g, 0.33–0.64 g/100 g, and 4.36–7.78 g/100 g, respectively. Microwave treatment also resulted in sorghum starch granules with rough surfaces, an increase in pasting temperature and pasting time, and a decrease in pasting viscosity and transition enthalpy (<i>p</i> < .05). However, Fourier transform near infrared spectroscopy showed that microwaves did not change the chemical groups of sorghum starch. Additionally, after microwave treatment, the in vitro digestibility of sorghum starch was significantly reduced by 3.21–6.61%, the rapidly digestible starch content decreased by 5.88–9.24%, the slowly digestible starch and resistant starch contents increased by 4.63–6.65% and 1.03%–2.41%, and the hydrolysis index (HI) and glycemic index (GI) decreased by 4.98–5.74% and 2.73–3.15%, respectively. These results indicate that microwave treatment is an effective method for decreasing the in vitro digestibility and improving the physicochemical properties of starch. </p></section><section class="article-section__content"><h3 class="article-section__sub-title section1"> Practical applications</h3><p>Sorghum, as an important raw material in the food industry, plays an irreplaceable role in the development of cereal food. Additionally, microwaves have been used as a novel approach for improving the edible quality and functional characteristics of cereals. A comparative study of the microstructure, pasting properties, thermal properties, and in vitro digestion of sorghum starch was performed. The results showed that compared with the original starch, microwave treatment changed the physicochemical properties of sorghum starch and decreased the GI. The results can be used to improve the properties of sorghum starch and provide a theoretical basis for the development of sorghum food.</p></section>

Abstract:The main aim of the current work is to investigate the influences of microwave irradiation (in absence of α-amylase enzyme) on the properties of different kinds of starches namely maize (MS), rice (RS), and wheat starch (WS). To achieve this goal. Starch was subjected to microwave irradiation in the absence of enzyme namely α-amylase under different conditions. The latter comprise is the starch concentration, time, and temperature of microwave irradiation. Furthermore, starch was subjected to microwave irradiation in the presence of enzyme under different conditions too. The latter comprises the concentration of enzyme and power level (watt) of microwave irradiation. The influence of these treatments on both the solubility as well as rheological properties of treated starches was thoroughly evaluated. Moreover, the visibility of using these treated starches as a thickening agent in burn-out printing style in printing paste was also investigated. The results of these investigations demonstrated that the optimum condition was found to be 10g starch (irrespective of the starch nature) in 100 ml water at pH 7 then added 0.2 ml of α-amylase enzyme. The mixture was cured at 55◦C for 3 minutes at 30 watts under microwave irradiation. Also, the obtained result showed that at a constant rate of shear the apparent viscosity increases by increasing the concentration of starch, temperature as well as time of treatment, irradiation of starches in presence of enzyme convert the rheological properties of starches from non-Newtonian thixotropic into non-Newtonian pseudoplastic. The prepared pastes were successfully used in printing wool/polyester (45/55) or wool/nylon (70/30). Where the loss in weight of the burn-out printed wool/polyester or wool/nylon is slightly higher on using modified starches compared with mypro gum. The color fastness of printed sample for rubbing, washing and perspiration was evaluated.
Retaining a large amount of resistant starch in cooked potato through microwave heating after freeze-drying

Abstract:Resistant starch (RS) is beneficial for humans, especially for the diabetes. Raw potato had a great deal of RS, while most of which become digestible after gelatinization. Thus, few RS will be retained in potatoes after regular cooking. To preserve RS in cooked potatoes as much as possible, microwave heating before (MFD) and after freeze-drying (FDM) were conducted with three different potatoes. After MFD, the RS content in potatoes was lower than 7% and the RDS content was higher than 45% for three potatoes. However, RS in potatoes treated with FDM was still as high as 40%, similar to that in the raw potatoes. Meantime, FDM caused less browning, produced a certain level of pyrazines, benzeneacetaldehyde and other flavor compounds, endowing cooked potatoes special baked flavor. Freeze-drying before microwave heating is a valuable way to reserve RS in cooked potatoes, which could also be used to reserve high RS content in crisp, chips, and other processed potatoes.

Abstract:The large volume and complex composition of kitchen waste necessitate environmentally sound treatment methods. Pyrolysis emerges as a promising way in treatment and utilization of kitchen waste. However, due to the complex composition and structure of kitchen waste, its pyrolysis characteristics remain unclear. Herein, thermogravimetric analysis was used to compare the pyrolysis characteristics of starch, protein, and lipid in kitchen waste as well as their synergistic interactions at various heating rates. Activation energy and reaction mechanisms were explored using the model-free and model methods. Evolved vapors were analyzed with thermogravimetric-mass spectrometry. The results showed that the presence of lipid slowed down the escape of volatile fractions when co-pyrolyzing with starch, protein or their mixtures (250–420 °C), but promoted the overall conversion with lower solid residual rates (ΔW > 1.6 wt%) and higher generation of gaseous products (mainly C 2 H 4 /CO and H 2 O). The increased activation energies led by lipid addition during co-pyrolysis were mainly because of the liquid phase formation over starch and protein, thereby preventing the deep degradation of organics. Contrary to the pyrolysis of starch, protein and lipid, distinct reaction mechanisms were revealed during the co-pyrolysis, with starch/lipid, starch/protein, protein/lipid and starch/protein/lipid following reaction models of F1.5, R1, ZH and F2, respectively. This study provides theoretical support for the development of advanced pyrolysis-based technologies for kitchen waste treatment.

Abstract:Silication of potato starch was performed by microwave irradiation and convectional heating of starch with sodium metasilicate. The study has shown that microwaves offered more selective silication than convectional heating. Depending on the dose of metasilicate products of either monoesterification or crosslinking esterification were formed. Increase in the amount of the silicating agent favoured crosslinking of starch. In the case of microwave irradiation, the C–O–SiO2Na moieties were formed, whereas the convectional heating generated the C–O–Si–O–Si–O–C crosslinks.

Abstract:Abstract This study aimed to determine the response of potato starch granules to microwave radiation indicated by changes in starch granule size. Laboratory analyses were carried out in 2019 with tubers of an early edible potato cultivar Innovator. The tubers were irradiated for 10-600 s using a 100 W generator producing microwaves having a frequency of 2.45 GHz. Dimensions of starch granules were measured using an OPTICA B-510BF optical microscope and PROVIEW x64 software, 3.7.13483.20181206. The results were analyzed in STATISTICA 13.3. software package at a significance level of α=0.05. The microwaves were shown to significantly modify the maximal diameter and surface area of potato starch granules.

Abstract:Dietary fiber can be obtained by dextrinization, which occurs while heating starch in the presence of acids. During dextrinization, depolymerization, transglycosylation, and repolymerization occur, leading to structural changes responsible for increasing resistance to starch enzymatic digestion. The conventional dextrinization time can be decreased by using microwave-assisted heating. The main objective of this study was to obtain dietary fiber from acidified potato starch using continuous and discontinuous microwave-assisted heating and to investigate the structure and physicochemical properties of the resulting dextrins. Dextrins were characterized by water solubility, dextrose equivalent, and color parameters (L* a* b*). Total dietary fiber content was measured according to the AOAC 2009.01 method. Structural and morphological changes were determined by means of SEM, XRD, DSC, and GC-MS analyses. Microwave-assisted dextrinization of potato starch led to light yellow to brownish products with increased solubility in water and diminished crystallinity and gelatinization enthalpy. Dextrinization products contained glycosidic linkages and branched residues not present in native starch, indicative of its conversion into dietary fiber. Abstract:From a supramolecular structure viewpoint, we concern how concurrent microwave and heat moisture treatment (M/HMT) tailors the pasting and digestion features of indica rice starch (IRS) and waxy rice starch (WRS), using combined analytical methods such as scanning electron microscopy and small-angle X-ray scattering. The results confirm that, for the starches (especially IRS), M/HMT led to a concave granule surface, weakened alignment of helices in lamellae, loosened packing of chains in amorphous regions, and somewhat disrupted crystallites. Consequently, the susceptibility of starch structures to hydrothermal effects was insignificantly altered, as reflected by unchanged pasting temperature; the enzyme absorption/hydrolysis could be properly accelerated, as affirmed by a modestly increased digestion rate and slightly reduced enzymatic resistance. Also, compared to WRS, IRS had more amylose with relatively long branches, which probably contributed to starch chain interactions during M/HMT. This tended to reduce the paste viscosity related to the swelling degree of starch granules, and increase the paste stabilities during heating and cooling related to the robustness of swelled granules and the reorganization of glucan chains.

Abstract:Starch is an abundant natural polysaccharide that is inexpensive, renewable, and fully biodegradable. Modification of starch O–H groups by esterification to form an appropriate degree of substitution imparts thermoplasticity and water resistance to the starch ester over the unmodified starch. Unlike chemical esterification, enzymatic esterification is an environmentally friendly method which occurs under milder conditions. A non-commercial CaCO3-immobilized lipase from Staphylococcus aureus (SAL3) was used to catalyze the esterification reaction between oleic acid and starch in pure substrate conditions using microwave heating followed by liquid state esterification. Response surface methodology based on three variables (the reaction temperature, the amount of lipase and the molar ratio of starch/oleic acid) at three levels was adopted to optimize the experimental conditions of the starch oleate synthesis. The optimal conditions for achieving 76% conversion with a degree of substitution (DS) of 2.86 are 386IU of immobilized lipase, a starch/oleicacid molar ratio of 0.18 during 4h of incubation at 44°C. The structure of the modified starch was checked by 13C NMR spectroscopy, FT-IR and differential scanning calorimetry (DSC). Results showed that the α-amylolysis of the starch was significantly affected after esterification. The hydrophobic starch fatty acid esters produced may have potential industrial applications such as surface coating materials, flavoring agents in food industry and biomedicals for bone fixation and replacements.

Abstract:Adding lentil flours as an affordable and sustainable plant-based ingredient in food formulation plays vital role in promoting human health and reducing the environmental footprint of human diet. Also, the inclination toward sustainable food products requires the introduction of green technologies as the substitution of conventional heating. A proper substitution demands investigating the impact of different heat transfer mechanisms of conventional and green volumetric heating processes on starch gelatinization and enhancement in starch structural, functional, and nutritional properties. Hence, modified lentil flours through soaking/germination pretreatment followed by volumetric heating (microwave-infrared and vacuum-microwave drying) and conventional heating (roasting and convective air drying) were examined in this study. The results showed that using microwave-infrared not only significantly decreased processing time but also created a similar gelatinization degree compared to the lentils treated by roasting at 240°C. Vacuum-microwave also found a suitable substitution for convective air drying, producing similar modified starch at a shorter processing time. Almost all thermal treatments improved total starch digestibility; however, microwave-infrared drying and roasting increased rapidly digestible starch while vacuum-microwave and convective air drying enhanced slowly digestible starch. Generally, soaking/germination followed by the mentioned dryings leads to modified flours by changes in their starch structure, resulting in the effective utilization of pulse flours as a promoting food ingredient.
