Study on Amino Acids and Mineral Elements in Fruiting Body of Tricholoma matsutake from Different Areas

Abstract:The contents of amino acids and mineral elements in the fruiting bodies of three Tricholoma matsutake strains from different areas were studied with HPLC and spectrophotometer. Among the three, the amino acid content of the strain from Tongjiang was highest (10.582%), the strain from Changming was 9.607%, and one from Chongqing was 3.381%. The contents of K, Ca and Mg mineral elements were higher than other elements. The contents of Fe and Mn were higher in Changming, 62.282 mg/Kg and 6.064 mg/Kg, respectively. The content of Cu was 52.845 mg/Kg in Chongqing. The content of Zn was the same in the 3 strains.
