Abstract:Background: Currently, balanced diet and healthy foods are attracting increasing attention due to their great health-beneficial effects. The tuber of Dioscorea (yam) is both edible and medicinal, as it contains various functional compounds with multiple pharmacological activities and disease targets. Moreover, yam tuber can serve as a vegetable or staple food due to its high starch content. Therefore, exploring the functional activities of yam tuber and its application in food and medicine industries is significant. Scope and approach: This review comprehensively summarizes the characteristics and application of yam tuber, as well as the findings about its primary nutrients, distinct functional components, extraction technologies, detection methods and biological activities, and provides some new prospects for further investigation. Besides, the development and comprehensive utilization of yam tuber products are elucidated. Finally, some future research directions for better utilization of yam tubers are suggested. Key findings and conclusions: The Dioscorea genus is distributed worldwide with a wide variety of species. Yam tuber is rich in nutrients and bioactive compounds, such as starch, protein, non-starch polysaccharides, steroid saponin, allantoin, and phenolic compounds. The most important health benefits include antioxidant activity, anti-inflammatory activity, gastrointestinal protection, gut microbiota regulation, cardiac diseases treatment, hypoglycemic activity, anti-tumor activity, and estrogen-like effect. We also summarize the applications of yam tuber in foods and medicine. Finally, the review indicates that better utilization of yam tuber is hindered by poor variety protection, limited research on its pharmacological activities, browning phenomenon, and some safety concerns.

Abstract:Yams are the edible subterranean rhizomes, or tubers, of plants from the genus Dioscorea. There are approximately 600 species of yam plants in the world, with more than 90 of these growing in East Asia. One particular species, Dioscorea opposita Thunb., is highly praised as "the Chinese yam". This distinction arises from millennia of storied history, both as a nutritional food source and as a principal ingredient in traditional Chinese medicine. Among the many cultivars of Dioscorea opposita Thunb., Huai Shanyao has been widely regarded as the best. This review surveyed the historical background, physiochemical composition, applications as food and medicine, and research prospects for the Chinese yam. Modern science is finally beginning to confirm the remarkable health benefits of this yam plant, long-known to the Chinese people. Chinese yam promises anti-diabetic, anti-oxidative, anti-inflammatory, immunomodulatory, anti-hyperlipidemic, anti-hypertensive, anti-cancer, and combination treatment applications, both as a functional food and as medicine.

Abstract:Background Nuoshanyao (NSY) is a special species of Chinese yam ( Dioscorea opposita Thunb.) and shows rich functionality and superior nutritional value. The chemical components and structural properties of Nuoshanyao polysaccharide (NSYP) were investigated in his study. Results The molecular weight (Mw) of the major component in the polysaccharide was 23 kDa. NSYP was mainly composed of glucose, mannose, and galactose, and the molar ratio was 36.5:1.63:1. There might be an ordered helical conformation in NSYP, and the surface of NSYP was granular. NSYP exhibited strong scavenging capacity on the DPPH radical and chelating capacity on the ferrous ion in vitro with a rate of 94.94% and 82.49% at 4 mg/mL. Conclusion NSYP with the appropriate molecular weight range and helix structure could possess great antioxidant activity, while monosaccharide compositions may affect the activity. This work supplied important information for the potential application of NSYP in the nutritional and food industries.

Abstract:Anthocyanins extracted from purple yam (from Huangyan district,Taizhou city,Zhejiang province) were isolated by macroporous resin and the main 4 types of them were tentatively identified by the method of HPLC-DADESIMS.The total content of anthocyanins is 28.8 mg/kg in the yam,using pH differential method.The 4 main anthocyanins may be cyanidin-3-glucoside (galactoside) acylated with two caffeic acids,cyanidin-3-diglucoside acylated with sinapic acid,cyanidin-3-diglucoside acylated with ferlulic acid and peonidin-3-diglucoside acylated with sinapic acid.
Identification and Determination of Phenolic Acids in Purple Yam

Abstract:Objective: As a kind of multipurpose bioactive compound, phenolic acids are widely existed in the plant kingdom. Phenolic acids from purple yam (from Huangyan district, Taizhou city, Zhejiang province) were identified in order to provide references for subsequent analysis on other natural products. Method: Phenolic acids in the purple yam were identified and determined by the method of high performance liquid chromatography (HPLC), photodiode array detection (PAD). Result:The phenolic acids were mainly present in soluble form. Sinapic acid and ferulic acid dominated in both soluble and insoluble fraction and the content of sinapic acid was higher than that of ferulic acid. The total content of soluble phenolic acid was 356.71 g.g-1 (dry weight) and that of insoluble phenolic acid was 26.92 g.g-1 (dry weight). Conclusion: HPLC-PAD-MS is a fast and effective method to analyze phenolic acids in purple yam.

Abstract:Yam (Dioscorea) is a tuber crop cultivated for food security, revenue, and medicinal purposes. It has been used to treat diabetes, asthma, diarrhea, and other diseases. The main active ingredients in yam, polysaccharides, are regarded to be the important reason for its widespread applications. Now, a comprehensive review of research developments of yam polysaccharides (YPs) was presented to explore their prospects. We outlined the structural characteristics, biological activities, structure-activity relationships, and potential applications. Around 13 neutral components and 17 acidic components were separated. They exhibited various bioactivities, including immunomodulatory, hypoglycemic, hypolipidemic, antioxidant, gastrointestinal protective, anti-fatigue, and senile disease treatment activities, as well as prebiotic effect. Structure-activity relationships illustrated that unique structural properties, chemical modifications, and carried biopolymers could influence the bioactivities of YPs. The potential applications in medicine, food, and other fields have also been summarized.

Abstract:The greater yam (Dioscorea alata L.) is the most widely distributed yam species in the world. In many countries, its cultivation is expanding because of its ease of preparation, taste and nutritional properties. The greater yam has been the object of significant research studies conducted by independent teams in distant countries, and aiming at characterising its complex chemical composition in major compounds and in secondary metabolites. Here, we conduct a detailed and comprehensive literature review regarding the chemical composition and functional properties of the greater yam. We also review briefly the botanical, phylogeny and genetic information on D. alata, as well as the antioxidant, antimicrobial and anti-inflammatory properties of its phytochemicals, and its use as a staple food, or in processed products. One of the objectives of this review is also to compile the information needed by genetic improvement programs interested in the biofortification of the greater yam.

Abstract:In this study, the components, stability, apparent viscosity, and antioxidant activity of Wencheng Chinese yam（Dioscorea opposita Thunb.） were determined. The contents of polysaccharide and protein are（14.99±1.27）% and（57.16±7.24）%, respectively, and the content of Mg reached（2 654±44） mg/kg. Under the condition of acid-base and higher temperature, the particle size of mucilage decreased and the stability was improved. The viscosity of mucilage solution increased with the increase in concentration, and the viscosity increased significantly at 60-80 ℃, showing obvious pseudoplasticity and shear refinement. Meanwhile, mucilage had a good scavenging ability of hydroxyl radical and DPPH free radicals, and the scavenging rates at 4 mg/mL were 75.7% and 67.45%, respectively. Thus, Wencheng Chinese yam mucilage can be considered as an antioxidant and thickener, which lays a foundation for its application in the food industry.
Effect of Nano-Caco3-ldpe Packaging on Quality and Browning of Fresh-Cut Yam

Abstract:In order to evaluate the effects of nano-CaCO3-based low density polyethylene (nano-CaCO3-LDPE) packaging on the quality of fresh-cut Chinese yam, the browning index, overall visual quality (OVQ), total bacterial count (TBC), and yeast and mold count (YMC), titratable acid, ascorbic acid, total phenolic content, ethylene production, malondialdehyde content phenylalanine ammonia-lyase (PAL), polyphenol oxidase (PPO), and peroxidase (POD) activities were determined during storage at 10 degrees C. TBC and YMC counts of fresh-cut Chinese yam were significantly reduced by nano-CaCO3-LDPE packaging. Nano-CaCO3-LDPE packaged fresh-cut Chinese yam exhibited significantly lower activities of PAL, PPO, and POD compared to the control yam samples. Meanwhile, nano-CaCO3-LDPE packaging significantly inhibited the increase of browning index, total phenolic and malondialdehyde content, and maintained OVQ titratable acid, and ascorbic acid. These results indicated that nano-CaCO3-LDPE packaging and stored at 10 degrees C was a promising approach in inhibiting browning and maintaining quality of fresh-cut Chinese yam. Abstract:The diversification of food crops can improve our diets and address the effects of climate change, and in this context the orphan crop Chinese yam shows significant potential as a functional food. As the effects of climate change become increasingly visible even in temperate regions, there is an urgent need to diversify our crops in order to address hunger and malnutrition. This has led to the re-evaluation of neglected species such as Chinese yam (Dioscorea polystachya Turcz.), which has been cultivated for centuries in East Asia as a food crop and as a widely-used ingredient in traditional Chinese medicine. The tubers are rich in nutrients, but also contain bioactive metabolites such as resistant starches, steroidal sapogenins (like diosgenin), the storage protein dioscorin, and mucilage polysaccharides. These health-promoting products can help to prevent cardiovascular disease, diabetes, and disorders of the gut microbiome. Whereas most edible yams are tropical species, Chinese yam could be cultivated widely in Europe and other temperate regions to take advantage of its nutritional and bioactive properties. However, this is a laborious process and agronomic knowledge is fragmented. The underground tubers contain most of the starch, but are vulnerable to breaking and thus difficult to harvest. Breeding to improve tuber shape is complex given the dioecious nature of the species, the mostly vegetative reproduction via bulbils, and the presence of more than 100 chromosomes. Protocols have yet to be established for in vitro cultivation and genetic transformation, which limits the scope of research. This article summarizes the sparse research landscape and evaluates the nutritional and medical applications of Chinese yam. By highlighting the potential of Chinese yam tubers, we aim to encourage the adoption of this orphan crop as a novel functional food.

Abstract:Huai Yam (Dioscoreae Rhizoma) contains many active ingredients such as flavonoids, saponins, and amino acids. In this study, an efficient method for the classification and rapid identification of yam components was established based on UPLC-Q-Exactive-MS and data post-processing techniques. First, the mass spectrometry information including the characteristic fragmentations (CFs) and neutral losses (NLs) of yam reported in the literature were summarised and a database of compounds was established. Then, the mass spectrometry data detected by the yam sample are compared with those described in database for rapid identification of target compounds. Finally, 60 compounds were identified, including 18 flavones, 2 saponins, 10 amino acids, 7 organic acids, 3 carbohydrates, 8 fatty acids and 12 others. A new strategy for identifying target constituents based on CFs and NLs was successfully established, laying the foundation for further research on yam and promoting the development of composition analysis of Traditional Chinese Medicine (TCM).

A Comparative Analysis between Whole Chinese Yam and Peeled Chinese Yam: Their Hypolipidemic Effects via Modulation of Gut Microbiome in High-Fat Diet-Fed Mice

Abstract:Chinese yam is a "medicine food homology" food with medical properties, but little is known about its health benefits on hyperlipidemia. Furthermore, the effect of peeling processing on the efficacy of Chinese yam is still unclear. In this study, the improvement effects of whole Chinese yam (WY) and peeled Chinese yam (PY) on high-fat-diet (HFD)-induced hyperlipidemic mice were explored by evaluating the changes in physiological, biochemical, and histological parameters, and their modulatory effects on gut microbiota were further illustrated. The results show that both WY and PY could significantly attenuate the HFD-induced obesity phenotype, accompanied by the mitigative effect on epididymis adipose damage and hepatic tissue injury. Except for the ameliorative effect on TG, PY retained the beneficial effects of WY on hyperlipemia. Furthermore, 16S rRNA sequencing revealed that WY and PY reshaped the gut microbiota composition, especially the bloom of several beneficial bacterial strains (Akkermansia, Bifidobacterium, and Faecalibaculum) and the reduction in some HFD-dependent taxa (Mucispirillum, Coriobacteriaceae_UCG-002, and Candidatus_Saccharimonas). PICRUSt analysis showed that WY and PY could significantly regulate lipid transport and metabolism-related pathways. These findings suggest that Chinese yam can alleviate hyperlipidemia via the modulation of the gut microbiome, and peeling treatment had less of an effect on the lipid-lowering efficacy of yam.

Abstract:Chinese yam(Dioscorea opposita Thunb.), as one of the medicinal and edible homologous plants, is rich in various nutrients and functional factors. In this study, Chinese yam fermented by Saccharomyces boulardii was performed to investigate its bioactive components and metabolic profile. And then, the main bioactive components and biological activities of fermented Chinese yam ethanol extract(FCYE) were evaluated. Results showed that there were 49 up-regulated metabolites and 52 down-regulated metabolites in fermented Chinese yam compared to unfermented Chinese yam. Besides, corresponding metabolic pathways analysis initially revealed that the distribution of bioactive substances was concentrated on alcoholsoluble small molecular substances. Ulteriorly, the total polyphenol content and the total flavonoid content in FCYE were significantly increased, and the corresponding antioxidant and immunomodulatory activities in vitro were also significantly enhanced. Our study provided a new reference for the comprehensive utilization of Chinese yam and laid a theoretical foundation for the development and application of natural probiotic-fermented products.
Effect of the Drying Approach on the Quality of Yam Slice

Abstract:Yam is consumed either as a food or as a traditional Chinese herbal medicine, it possesses very effective medicine function and nutritional value. Fresh yam is not suitable for storage in a long time, so we can prolong the storage life by removing the moisture of yam. The nutrient composition of three varieties of yams (huai yam, tie -gan yam and fo -shou yam)were compared on this test. Firstly, Fo -shou yam as the raw material was processed to an off-water yam slice by different drying methods, such as microwave drying, hot- air drying and the mixed-drying. The best method which was obtained by comparing the water-return quality, sensory value and nutrient composition was microwave drying(1200 W, 8 min), followed by hot-air drying (60 ℃, 50%, 5 min). We compared the nutrient composition of three varieties of yams, and found the relatively suitable drying method for fo-shou yam on this test, which provided a theoretical basis for the research and development of yam.

Abstract:The quest for a food secure and safe world has led to continuous effort toward improvements of global food and health systems. While the developed countries seem to have these systems stabilized, some parts of the world still face enormous challenges. Yam (Dioscorea species) is an orphan crop, widely distributed globally; and has contributed enormously to food security especially in sub-Saharan Africa because of its role in providing nutritional benefits and income. Additionally, yam has non-nutritional components called bioactive compounds, which offer numerous health benefits ranging from prevention to treatment of degenerative diseases. Pharmaceutical application of diosgenin and dioscorin, among other compounds isolated from yam, has shown more prospects recently. Despite the benefits embedded in yam, reports on the nutritional and therapeutic potentials of yam have been fragmented and the diversity within the genus has led to much confusion. An overview of the nutritional and health importance of yam will harness the crop to meet its potential towards combating hunger and malnutrition, while improving global health. This review makes a conscious attempt to provide an overview regarding the nutritional, bioactive compositions and therapeutic potentials of yam diversity. Insights on how to increase its utilization for a greater impact are elucidated.

Abstract:Chinese Yams (Dioscorea polystachya Turczaninow) are mainly used as functional food and traditional Chinese medicine in China. Adulteration is a major problem in the food and herbal industry and has affected the commercial use of natural products. Here, a 1H NMR-based metabolomics approach was used for the identification of the distinguishing metabolites between geo-authentic Chinese yam (D. polystachya cv. Tiegun plants grown in Wenxian County) and other yams. The metabolomics results suggested that the geo-authentic Chinese yam had the lowest concentrations of glucose, fructose and sucrose and the highest concentrations of leucine, threonine, arginine, glutamate, aspartate, citrate and choline among all yams tested. HPLC method confirmed the results that geo-authentic Chinese yam had lower concentrations of glucose, fructose and sucrose than the other yams. These results indicated geo-authentic Chinese yam could be verified according to the contents of glucose and fructose. And the tetrazolium solution can be used as an identification reagent for the rapid discrimination of geo-authentic Chinese yam based on the color reaction of glucose.

Abstract:Shizhen Li and Cangqi Chen believed that the clinical health effects of yam bulbils were better than those of yam tubers. In this study, we identified the characteristic metabolites between dried and cooked yam tubers and yam bulbils. Dried and cooked yam tubers had two amino acids (alanine and γ-aminobutyrate) at higher levels, while dried and cooked yam tubers had a high level of fumarate and malate, respectively. Compared with yam tubers, dried and cooked yam bulbils had a high level of other metabolites except alanine, γ-aminobutyrate, fumarate and malate. In addition, cooking the yam bulbils with water steam resulted in increased dopamine levels. HPLC results showed the dopamine levels were 20.77 and 37.06 mg/kg in cooked yam tubers and yam bulbils, respectively. All the above results verify the suggestion of Shizhen Li and Cangqi Chen; therefore, yam bulbil is worth processing to increase its nutritional and economic value further.

Abstract:As a medicinal and edible plant, Chinese yam (CY) can promote the enrichment of intestinal probiotics. Mucilage polysaccharides, diosgenin and taxifolin are the dominant components of CY. The purpose of this study was to investigate whether the impact of Chinese yam on gut microbiome structure and metabolism is attributable to its components. In the in vitro gastrointestinal digestion and colon fermentation system, the changes in gut microbiota composition and function were determined by 16S rRNA sequencing, and the levels of bacterial metabolites including short-chain fatty acids (SCFAs) and indole-like metabolites were detected by gas chromatography and an enzyme-linked immunoassay. The results show that CY, mucilage polysaccharides, diosgenin and taxifolin could increase the microbial diversity index. Furthermore, probiotics including Lactobacillus and Bacteroides were significantly increased, while harmful bacteria such as Escherichia and Proteus declined. CY could increase the production of SCFAs including acetic acid and butyric acid. Of note, CY and diosgenin displayed similar impacts on enhancing the abundance of Clostridium and promoting the production of indole-3-lactic acid and lactic acid. These findings provide evidence supporting Chinese yam as a natural food to regulate intestinal health. Diosgenin as a component of CY contributes mostly to the impact on regulating intestinal flora.

Extraction optimization, purification, and biological properties of polysaccharide from Chinese yam peel

Abstract:In this study, the Chinese yam peel polysaccharide (CYPP) was obtained under the extraction conditions optimized by the Response Surface Methodology (RSM). Further biological properties of CYPP-1 purified from CYPP were also determined. The results indicated that the optimum extraction conditions were an extraction temperature of 90.5 degrees C, a liquid-solid ratio of 28.0 ml/g, and an extraction time of 2.94 h, along with a yield of 8.81 +/- 1.48%. CYPP-1 was identified as a kind of heteropolysaccharide mostly composed of glucose and galactose (59.4:1.0). The molecular weights were two main parts of 50.5 kDa (54.77%) and 4.4 kDa (21.02%), and the triple-helix conformation was not formed in CYPP-1. Besides, CYPP-1 showed good biological properties including in vitro antioxidant activity and immunomodulatory function on RAW264.7 cells, as well as favorable hypoglycemic effect. Overall, the high-value utilization of CYPP-1 reveals a broad application prospect in the industrial production of functional foods and pharmaceuticals. Practical applications Yam peel, which is discarded in large quantities during postharvest processing, results in the production of tremendous by-products and is a great waste of resources. In this study, the yield of water-soluble polysaccharide from yam peel reached 8.81 +/- 1.48%. Besides, the purified CYPP-1 exhibited excellent antioxidant activity, favorable immunomodulatory function, and hypoglycemic effect. The high productivity and bioactive effects are both great merits for Chinese yam peel polysaccharide as a promising candidate for foods and medicines industrial production.
