Abstract:Asparagus is a highly perishable vegetable which deteriorated rapidly after harvesting.Treated with mixture of 6-benzylaminopurine(6-BA)and CaCl2 or NaClO,asparagus' shelf life and quality were improved.Quality parameters including chlorophyll,shear force,lignin,cellulose content,PAL,POD,ASA-POD and CAT activity were studied.The results showed that the mixture additives significantly decreased the loss of the chlorophyll,maintained good shear force,increased CAT and POD activity,inhibited PAL peak,but no significant effect on lignin,cellulose content and ASA-POD activity.

Abstract:The effect of conditions of pre-heating and sterilizing on the quality and storability of vacuum packed sweet corn was studied. The results showed that the sucrose content of sweet corn processed by high pressure sterilizing and/or pre-heating (120 °C) would be decreased and the color would become darker and redder. Between the two factors, preheating had bigger effect on the quality of sweet corn than sterilizing. The quality of vacuum packed sweet corn processed by pre-heating and sterilizing at 100 C was good on the whole after stored at 4∼6 °C for 3∼6 months.

Abstract:In order to evaluate the effects of heat treatment on the quality of fresh-cut sugarcane, overall visual quality (OVQ), total bacterial count (TBC), yeast and mold count (YMC), reducing sugar content, ethylene production, and the activities of phenylalanine ammonia-lyase (PAL), polyphenol oxidase (PPO), peroxidase (POD), 1-amino cyclopropane-1-carboxylic acid (ACC) synthase (ACS), ACC oxidase (ACO), acid invertase (AI) and neutral invertase (NI) were examined during storage at 10C after heat treatment at 45C for 3 h. TBC and YMC were significantly reduced by heat treatment. Heat-treated fresh-cut sugarcane exhibited significantly lower activities of PAL, PPO, POD, ACS, ACO, AI and NI than control sugarcanes during the storage. Meanwhile, heat treatment significantly attenuated the increase of browning index, ethylene production, total phenolics and reducing sugar content, while improving OVQ. Practical Applications This paper investigated not only the effects of heat treatment on quality of fresh-cut sugarcane, but also fundamentally inspected the physiological and biochemical changes in the sugarcane stems. It provided experimental information for further researches pertaining heat treatment on shelf life of sugarcane. The results indicated that heat treatment is a promising approach in inhibiting browning and maintaining quality of fresh-cut sugarcane.
Influence of Heat Treatment on Quality and Physiology of Lightly Processed Bamboo Shoot

Abstract:To explore the effectiveness of heat treatment on quality maintenance of bamboo shoot (Phyllostachys vivax McClure. cv. Huapuji), lightly processed bamboo shoots were dipped in water at either 20°C, 40°C, 45°C or 50°C for 5 min before stored at 10°C for 6 days. The experimental results indicated that the respiration rate and ethylene production were decreased, while the activities of phenylalanine ammonia lyase (PAL), polyphenol oxidase (PPO) and peroxidase (POD) increased quickly, and it led to accumulation of total phenolic compounds, thereby promoting L decrease and browning index (BI) increase. Heat treatments at 40°C or 45°C for 5 min reduced the respiratory rate and ethylene production, inhibited the activities of PAL, PPO and POD, and maintained higher level of L and lower level of BI. Therefore, these two temperature treatments have potential use in lightly processed bamboo shoots storage. However, the treatment at 50°C for 5 min, had no beneficial effects on maintaining quality in lightly processed bamboo shoots because of the heat injury.

Abstract:In order to evaluate the effects of heat treatment on the quality of postharvest bamboo shoots, the firmness, disease incidence, respiration and ethylene production, ACC synthase (ACS) and ACC oxidase (ACO) activities, lignin and cellulose contents, and the activities of phenylalanine ammonia-lyase (PAL), cinnamyl alcohol dehydrogenase (CAD) and peroxidase (POD) were examined during storage at 20°C after heat treatment at 45°C for 5h. Heat treatment inhibited disease incidence and respiration, retarded ethylene production, and decreased ACS and ACO activities in bamboo shoots. Furthermore, heat treatment significantly delayed the rise in the activities of PAL, CAD and POD, which were associated with the inhibition of the synthesis of lignin and the delayed tissue lignification. These findings suggest that heat treatment could be a potential tool to delay lignification and decrease disease incidence in bamboo shoots during storage at 20°C.
Effects of Exogenous SA Pretreatment on Thermotolerance and Photosynthesis in Pakchoi under High Temperature Stress

Abstract:To study the effects of exogenous salicylic acid pretreatment on thermotolerance and photosynthesis,two pakchoi varieties,'Xia-di' and 'Suzhou-qing',were sprayed with salicylic acid(SA) and then subjected to high temperature stress.The results showed that SA pretreatment prevented lipid peroxidation on pakchoi leaves under high temperature stress by reducing the electrolyte leakage,MDA content,proline content and net photosynthetic rate(Pn).Meanwhile,the soluble sugar content,soluble protein content,SOD activity and POD activity increased to make the pakchoi adapt to high temperature.However,two pakchoi varieties showed the opposite trend beween stomatal conductance(Gs) and transpiration rate(Tr) after spraying SA,with no significant alteration on intercellular CO2 concentration(Ci).As compared with heat tolerant cultivar 'Xia-di',the effects of SA pretreatment on heat susceptible cultivar 'Suzhou-qing' were more significant under high temperature stress.

Abstract:In order to understand the effects of high temperature stress and different sowing periods on growth and development of Salvia splendens,three cultivars were employed.Flowering and some morphological indexes,activities of peroxidase(POD) and catalase(CAT) in leaves were examined.The results showed that there was less effect on the growth period of Salvia splendens at different sowing time from April 10th to May 25th,but greater impacts on the plant growth rate,flowering rate,survival rate and other morphological indexes were observed,which could be used as indicators for evaluating the heat-resistance of Salvia splendens.There was a certain relationship between the activity of POD and the heat-resistance of Salvia splendens.

Abstract:Green asparagus (Asparagus officinalis L.) was harvested and treated by immersion in 20 µg/g 6-benzylaminopurine (6-BAP) and submitted to ultrasound wave (20 kHz) for 20 min, then stored at 12 ± 2C for 10 days, followed by 10 days at 2 ± 2C. The changes in quality and enzyme activities of asparagus were investigated. Qualities such as chlorophyll content, shear force, lignin and crude fiber contents were monitored during storage. Similarly, the increases in shear force and lignin following ultrasound-assisted 6-BAP treatment were significantly reduced (P < 0.05) during the first 10 days, crude fiber contents appeared significantly reduced (P < 0.05) after 20 days. The enzyme activities of asparagus including catalase, polyphenol oxidase, ascorbate peroxidase were also enhanced by treatments with 6-BAP; phenylalanine ammonia lyase was relatively inhibited, and peroxidase was promoted within 5 days and subsequently inhibited. Ultrasound wave treatment appeared to enhance the effect of 6-BAP on asparagus. PRACTICAL APPLICATIONS Besides cleaning of fresh-cut vegetables and fruits for its removal of dirt and bacteria without mechanical damage, ultrasonic sound can be used as a pretreatment to enhance the effects of preservative on postharvest fruit and vegetable. It can be used in a farm or a supermarket after vegetable and fruit harvest.

Abstract:Broccoli has been described as one of the most important vegetables worldwide, and it is a rich source of vitamin C and anti-carcinogenic phytochemicals, such as glucosinolates. The edible part of broccoli is floret head, which is high in respiration rate, and easy to be senescent and yellowing. As a kind of highly perishable products, broccoli heads usually undergo losses in nutrients and quality during postharvest period. The researches on the influence of different postharvest handlings in functional components and quality of broccoli are significant to postharvest physiology, but also have an important guiding role for the broccoli industry. Based on recent investigations, the effects of different postharvest handlings, including cooling storage, atmosphere control, modified atmosphere packaging, 1-methylcyclopropene (1-MCP) and light treatment on functional components and quality of broccoli were reviewed, and the related mechanisms were verified by elucidating the biosynthesis and metabolism pathway of glucosinolates. The common postharvest handling methods of broccoli products were summarized and evaluated, and future researches as well as their potential in broccoli industry were prospected.

Abstract:To explore the effect of thermal treatment on the quality and reactive oxygen species(ROS) metabolism of cold stored Huanghua pear,postharvest fruit samples were treated in hot air at 40℃for 12 h before storage at 1℃for 120 d followed by at 20℃for another 7 days,and changes in fruit firmness,conductivity,MDA content and superoxide anion radical generation rate,soluble protein content and ROS scavenging enzyme activities during the whole storage period were monitored.Results showed that fruit firmness,soluble protein content,and the activities of SOD,CAT and POD in hot air treated fruits were higher than control fruits,whereas opposite results were observed for soluble solid content,electrolyte leakage,MDA content and superoxide anion radical production rate.These results indicate that hot air treatment can improve the quality of Huanghua pear fruits during storage,and the mechanism might be related to the activation of antioxidant enzymes and the reduction of ROS accumulation.

Abstract:The effect of blanching parameters on the activity of POD,cooked degree,microbiology indicators on the Lettuce piece was investigated. The relationship between the activity of POD,and content of chlorophyll in dehydratation lettuce piece under several blanching conditions was analyzed. Preliminary storage test of dehydrated lettuce piece was also analyzed. It showed:95℃ 4min was the best blanching condition,0.03% ZnAc2 ,0.02% NaHSO3 was the best effect on colour-protecting.1% salt,6% glucose,4% lactos was the best osmotic process,low temperature was the best colour-protecting method.

Abstract:The objective of this study was to investigate the effects of different additives on the quality of Asparagus officinalis silage (stem and leaf).Lactobacillus,lactobacillus+cellulose,lactobacillus+rice bran and lactobacillus+cellulose+rice bran were added to silage;the concentration of lactobacillus,cellulose and rice bran were 5×10 5 cfu/g,0.6 IU/g,30 mg/g of fresh weight respectively.After being ensiled for 90 days, the quality of A.officinalis stem leaf silage was assessed.The chemical composition,pH,NH 3-N and organic acid content of fermented juice were analysed.The data showed that,compared with the control group,the ad-dition of lactobacillus increased the acetic acid content,reduced aerobic deterioration (P <0.05)and improved the aerobic stability.Lactobacillus with rice bran and cellulose tended to lower the quality of A.officinalis stem leaf silage.The results demonstrated that high quality A.officinalis stem leaf silage can be obtained with addition of lactobacillus only.

Abstract:Changes in qualities of Red Fuji' and Golden Delicious' apples in response to different heat treatments (45 and 60 degrees C) following cold storage were investigated. Quality indices including firmness, titratable acidity, total phenolic content, antioxidant capacity, colour parameters and microstructure were measured. Results indicated heat treatment at both temperatures for 3-h hastened loss of titratable acidity in Red Fuji' and Golden Delicious' apples, but maintained firmness in both cultivars. However, heat treatment at lower temperature (45 degrees C) best maintained total phenolic compounds and antioxidant capacity in Red Fuji' apples throughout storage, whereas there was no difference between heat treatments in Golden Delicious' apples. Examination by scanning electron microscope (SEM) revealed that the effect of heat treatment at different temperatures on Red Fuji' and Golden Delicious' apples was structurally different. Apple tissue that had been heat treated at elevated temperature (60 degrees C) for 3h was associated with fractured cell walls and collapse of cells.

Abstract:In order to investigate the effect of heat treatment on white shrimp quality, the changes in aerobic plate count, color, hardness and pH of shrimp meat were studied. Moreover, electrophoresis technology was also used to assess protein from heat-treated shrimp meat. Shrimp meat were heated in a water bath in a range of 40—90℃ for 10 min. Heat treatment induced a reduction of aerobic plate count (P<0.05) compared to untreated samples. Temperatures higher than 40℃ provided a brighter and less transparent appearance of shrimp meat. The whiteness (WI) and total colour difference (ΔE) of shrimp meat showed an overall trend of increase with increasing temperature. While the pH and hardness presented an inverted S-type change. Electrophoresis analysis demonstrated that intermolecular cross-links by non-covalent bond were enhanced with increasing temperature. Protein bands in low molecular weight area were more abundant in sample heated at 60℃. Aggregation of unfolded proteins could be induced by intermolecular disulfi de bond at a higher temperature. These results indicated that shrimp quality is related to protein modifi cations which are not a single change process during heat treatment.

Abstract:Effects of high temperature stress on chlorophyll, chlorophyll fluorescence parameters and antioxidant systems in early cauliflower leaves were studied. Under high temperature conditions, the contents of chlorophyll a, chlorophyll b, total chlorophyll and carotenoid decreased by more than 25 percent as compared with the control. The intrinsic photochemical efficiency (Fv/Fm), quantum yield of PSII (#phi# PSII) and photochemical quenching (qP) decreased as well by high temperature stress. On the other hand, SOD, APX, GPX, CAT activities and ascorbate (AsA, DAsA) content, glutathione (GSH, GSSG) content increased under high temperature stress.

Abstract:The“Fengxiang” strawberry, as experimental material, was used to study the effect of thermal treatment on fresh fruit qualities.The results showed that strawberry was sensitive to heat. With the temperature increasing, both sensory and nutrient qualities were decreasing. As to mechanism, besides temperature effect, POD, a heat hardiness enzyme that was more active with temperature up, was a important factor affecting the quality of fruit. According to the experimental results, thermal treatment to strawberry could not exceed 10 minutes at 60℃。

Abstract:The effects of salicylic acid (SA) on the quality and antioxidant activity of asparagus stored at 18 ± 2 °C were investigated by analyzing the color, chlorophyll, shear force, and the activity of antioxidant compounds such as ascorbic acid, phenolics, flavonoids, 1,1-Diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity ferric reducing antioxidant power (FRAP), and polyamines (PAs). The results showed that SA improved the color and maintained the chlorophyll, phenolic, flavonoid, and ascorbic acid content of asparagus. High concentrations of SA caused a deterioration in asparagus would harm to color and had no effect on shear force within 6 d. SA induced the maximum concentration of phenolics in postharvest asparagus, promoted the increase in total flavonoids before 6 to 9 d, affected the antioxidant activity positively as indicated by the resultant increase in FRAP concentration; however, SA was only active with regard to DPPH scavenging activity within 6 d of treatment. Spermidine (Spd) is the most common form of PA in asparagus, and free putrescine (Put) contents increased over the first 3 d following harvest and then decreased. Spd and Spm concentrations evolved in a similar way and decreased during storage. Higher Spd and Spm contents in the SA pre-treatment Put was inhabited and its peaks appeared later.

Abstract:Asparagus (Asparagus officinalis L.) is a widely consumed vegetable with high nutritional value and health benefits. However, little is known about how different processing treatments affect the nutritional and phytochemical composition of asparagus juice. This study investigated the effects of physical, thermal, and enzymatic juicing treatments on the nutritional and phytochemical composition (phenolic compounds, protodioscin, amino acids, and volatile organic compounds (VOCs)) of asparagus juices prepared from green and white asparagus spears. Both asparagus type and processing method affected the nutrient and phytochemical composition. Green asparagus juices contained more phenolic compounds and amino acids, whereas white asparagus juices were enriched with protodioscin. The type and content of VOCs also differed with asparagus type. Physical processing was favorable for amino acid retention. Thermal treatment significantly increased the phenolic and VOC contents in green asparagus juice. Enzymatic treatment optimized the juice yield and protodioscin extraction from both green and white asparagus (0.46 and 22.59 mg/g, respectively), but significantly reduced the phenolic and amino acid contents and altered the VOCs. Our results indicate that green asparagus has desirable properties for juice production, particularly with appropriate thermal treatment.
