The Analysis of Meat Production Performance on Luzhou Yellow-Feather Mountainous Chickens

Abstract:[Objective]In order to provide basic information for conserving and breeding Luzhou Yellow-feather mountainous (YFM) chickens,the slaughter performance and meat quality were determined. [Method]1-day-old YFM chickens and Dotted-feather and green shank (DFG)chickens(300 for each breed) were raised to 150-day-old and 75-day-old,respectively. Then each of 15 males and females were randomly selected from each breed to determine their slaughter performance.The contents of amino acids in breast muscle were determined by hydrolysis method.Meanwhile,the intramuscular fat of pec-toral muscles was determined by Soxhlet extraction method.[Results]The final average body weight of 150-day-old YFM chickens were 2.32(male)and 1.74 kg(female),respectively.The final average body weight of 75-day-old DFG chickens were 2.59 (male) and 2.11kg (female),respectively. The slaughter rate of male DFG chickens was significantly lower than that of YFM chickens(P<0.05);The breast mus-cle rates of female YFM chickens was significantly higher than that of male DFG chickens(P<0.05);The leg muscle rates of male YFM chickens was significantly higher than that of male DFG chickens (P<0.05). The thickness of subcutaneous fat of YFM chickens was significantly lower than that of DFG chickens(P<0.05);The half-eviscerated rate and eviscerated rate between two populations had no signifi-cant difference(P>0.05);The redness values of male YFM chickens was significantly higher than that of DFG chickens(P<0.05),and the content of intramuscular fat,the essential amino acids(Thr,Met,Ile, Leu and Phe),and the delicious amino acids(Glu,Asp,Arg and Gly)in breast muscle of YFM chickens were significantly higher than those in DFG chickens(P<0.05).[Conclusion]Generally,the carcass per-formance and meat quality of Yellow-feather mountainous chickens were better than those of Dotted-feather and green shank chickens.
