Influence of Fermentation Temperature on Aroma Quality of Dry Chardonnay Wine

Abstract:This work evaluated effect of fermentation temperature on aroma quality of dry white wine with Chardonnay grape from Yinchuan as the feedstock.Wine samples were fermented at five gradients of temperatures ranging from 15 ℃ to 25 ℃ under normal white wine making process,and analyzed through the sensory and instruments in May of the following year.The analysis of sensory quality was performed quantitatively by 30 panelists with wine standard aroma training,and aroma components in wine were detected with Solid-Phase Microextraction-Gas Chromatography-Mass Spectrometric (SPME-GC-MS).Odor activity of varietal aroma and fermentative aroma was also analyzed.Experiment data with statistical analysis show that aroma quality of dry white wine was affected significantly by fermentation temperature,and the intensity of fruit aroma (green apple,pineapple,banana,lemon,pear,etc.) increased firstly and decreased subsequently with increasing temperature.Higher fermentation temperatures contributed to more sweet fruity aromas,but also led to negative odors.Wine fermented at 23~25 ℃ had the lowest concentration of varietal compounds.Lower temperatures contributed to lower concentration of fermentative volatiles.Aromatic esters and high alcohols increased at first,but decreased subsequently with increasing temperature which may be related to the shortening duration of fermentation.Fatty acid concentrations increased with increasing temperature.With comprehensive consideration,the optimal fermentation temperature range was 17~21 ℃ for Chardonnay dry white wine.
