Monitoring Quality of Frying Oil by First Order Derivative Spectrum Ultraviolet Spectroscopy

Abstract:In order to achieve the quick and convenient monitoring to frying oil,the correlations between first order derivative spectrum ultraviolet spectroscopy and traditional physicochemical index of the vegetable oil in frying process was researched.The results showed that there were the linear correlation between the first order derivative spectrum absorbance at 370nm and frying time.After the soybean oil and blending oil being fried by 8h,peanut oil's absorbance at 370 mm doesn't foundationally increases longer,and the obvious absorption peak occurs at over 370 mm.Combined with the traditional vegetable oil quality evaluation index,soybean oil and blending oil after 1 hour of linear correlation,the polar compounds had been exceeded;and peanut oil was fried for 8 hours,the peroxide value was exceeded,while the polar compound didn't obviously increase.Besides,the first order derivative spectrum scanning was made to other vegetable oils,and oils were not absorbed at 370 nm.So the first-order derivative UV spectra can be used for frying oil quality monitoring index,especially,the absorbance at 370 nm.
