Abstract:Tenderness is one of the important sensory indicators of muscle quality, and plays an important role in the nutritional and eating quality of meats. However, the inevitable oxidative stress could have a significant adverse effect on meat quality during intensive animal production. Thus, it is important to seek an effective measure to improve the effect of oxidative stress on meat tenderness. Based on the domestic and foreign re-search references, this paper mainly elaborated the effects of oxidative stress and antioxidants on the tenderness of meat and its action mechanism, which provided a reference for improving the tenderness by using antioxida-nts effectively and reasonably.

Abstract:Tenderness is an important index to evaluate the quality of meat products, and improving the tenderness of meat products is conducive to attracting consumers to buy again. Although traditional physical tenderization technology is widely used in tenderizing processing of meat and meat products, the defect of poor online application leads to low consumer acceptance, which has promoted the research of emerging physical tenderization technologies. Among them, ultrasound as an energy-efficient, green environmental protection, strong penetration of non-thermal processing technology has been widely used in the tenderization of meat products. The theory of meat products tenderization, the main influencing factors of meat products tenderness and the basic principle of ultrasound tenderization are reviewed. The effects of ultrasound technology on tenderization of meat products are discussed from different perspectives (muscle fiber and connective tissue properties). It provides new ideas and theoretical guidance for ultrasound technology to improve the quality of meat products.

Abstract:This manuscript reviewed the current research progress of the technologies and mechanism of mutton tenderness during the processing,and analyzed the technologies on improving tenderness using enzyme,injecting calcium chloride solution,ultra-high pressure treatment,ultrasonic,electrical stimulation,and respectively introduced the mechanism in detail.Finally,this paper discussed the problems existed in the applications and looked forward to the direction of the development,which may play a guilding role in the production process of mutton.

Abstract:Tenderness could measure the eating quality of meat. The mechanism of muscle tenderization is becoming more and more critical in the past decade. Since the transforming of muscle into edible meat requires a complex physiological and biochemical process, the related tenderization of meat can be beneficial to improving the meat quality. As a non-thermal processing technology with energy-saving, environmental protection, and intense penetration, ultrasonic treatment has been widely used in the tenderizing process of meat products. In this paper, the principle of meat tenderization, the ultrasonic technology, and the application of ultrasonic technology in meat tenderization is summarized. The effect of ultrasonic technology on the tenderization of meat products is discussed from different perspectives (muscle fibers and connective tissue properties).

Abstract:Collagen, the major protein of connective tissue matrix in muscle, markedly affects the texture of meat with its quality and quantity in muscle. All of these are factually due to the cross-links of collagen, including its level, forming patterns and maturation. There are many factors that influence the cross-linking of collagen, such as muscle type, animal breed, age, sex and other conditions related to animal growth. This review focuses on enzyme-mediated covalent cross-linking of collagen, obligatorily an extracellular event, the role collagen plays in cooked meat texture, factors affecting cross-linking and mechanisms by which cross-linking may be regulated.

Abstract:Chicken, a cost-effective meat product with high nutritional value, is preferred by consumers over other meat sources. Chicken consumption in China increases year by year. However, whole chicken carcasses or parts (such as chicken breast, wings and legs) are mainly consumed in our country. Only a few processed chicken products are available in the market, which cannot meet consumers' demand for high quality chicken products. The effects of breeds and muscle locations on physicochemical properties and processing characteristics, such as muscle fiber characteristics, protein and lipid composition, texture, color, moisture, water-holding capacity and gelling properties of meat are reviewed herein. Hopefully, this article can provide a theoretical basis for the rational selection of breeds and muscle locations of chicken meat and the production of high quality chicken products.

Abstract:Abstract Developing efficient and promising tenderising techniques for postmortem meat is a heavily researched topic among meat scientists as consumers are willing to pay more for guaranteed tender meat. However, emerging tenderising techniques are not broadly used in the meat industry and, to some degree, are controversial due to lack of theoretical support. Thus, understanding the mechanisms involved in postmortem tenderisation is essential. This article first provides an overview of the relationship of ageing tenderisation and calpain system, as well as proteomics applied to identify protein biomarkers characterizing tenderness. In general, the ageing tenderisation is mediated by multiple biochemical activities, and it can exhibit better palatability and commercial benefit by combining other interventions. The calpain system plays a key role in ageing tenderisation functions by rupturing myofibrils and regulating proteolysis, glycolysis, apoptosis and metabolic modification. Additionally, tenderising techniques from different aspects including exogenous enzymes, chemistry, physics and the combined methods are discussed in depth. Particularly, innovation of home cooking could be recommended to prepare relatively tender meat due to its convenience and ease of operation by consumers. Furthermore, the combined interventions provide better performance in controlled tenderness. Finally, future trends in developing new tenderising techniques, and applied consideration in the meat processing industry are proposed in order to improve meat quality with higher economical value. Abstract:Water holding capacity is a significant index reflecting the meat quality,which has an important meaning on the physics form,flavor and flesh color of muscles.Several factors,such as the reduction of muscle net charge,muscle shrinkage,the degradation of cell protein in post-mortem and genetic factors,affect water holding capacity.However,the specific mechanisms of effect on water holding capacity were not very clear.This paper combined the research progress at home and abroad to review the effect factors on water holding capacity of meats and its mechanisms.Meanwhile,how to control water holding capacity in order to obtain good meat product is an important research direction in the future.

Abstract:The mechanism of postmortem tenderization of muscle has been the focus of meat science for years.It is generally accepted that improvement of meat tenderness during postmortem aging mainly results from limited degradation of myofibrillar proteins by endogenous proteolytic enzymes.Calpains are widely considered to be a major contributor,but not only ones to postmortem improvement of meat tenderness,which is the result of multi-enzymatic interaction.The roles of lysosomal cathepsins,proteasomes and calpains during postmortem tenderization of meat were briefly reviewed in the paper.The characteristics of apoptosis,activating pathways and caspases were introduced,meanwhile the potential contribution of caspases to postmortem tenderization was also discussed.In the last,the possibilities of interactions between caspases and calpains and contribution of both proteases together to meat tenderization were also analyzed in the review.

Abstract:The meat quality traits can be assessed by the characteristics of pH, color, tenderness, water hold?ing capacity, intramuscular fat content and fatty acid composition. These traits are influenced by both genetic and environmental factors, including breed, age, sex, feeding management and slaughtering techniques. It can be accepted that the meat from calves, cows or steers have more advantages on the quality compared with adult bulls in the same breeds. Moreover, polymorphisms at some genes also affect meat quality, such as calpasta?tin, calpain, diacylglycerol acyltransferase 1, fatty acid binding protein 4 and stearoyl?CoA desaturase. The pre?slaughter acute stress and the post?slaughter aging treatment also have impacts on the meat quality through the ultimate pH. In addition, it is worth noting that the mutations on myostatin gene can increase the meat pro?duction and may have an effect on meat quality. Abstract:When livestock and poultry undergo loading and unloading, transportation and recovery, lairage, fasting and stunning procedures before slaughter, the animals will face many stressors, such as hunger, bumpy, crowded and other objective factors, as well as panic, stress and other psychological factors. Most of the stress factors come from the preslaughter process is detrimental to meat quality, but fasting before transportation and pre-slaughter resting may have some benefi cial effects on meat quality. Both electrical stunning and CO2 stunning are often used in mechanized slaughter process, but CO2 stunning is less researched and applied in China. This paper summarizes the latest achievements in understanding the effects of pre-slaughter transportation, lairage, fasting and stunning ways on meat quality with the aim of providing a reference for producing high-quality meat and related research.
Effect and Mechanism of Fermentation on Beef Muscle Tenderness

Abstract:The objective of this study was to explore the improving effect and mechanism of fermentation on beef muscle tenderness. Beef semitendinosus (ST) was cut into 5 × 5 × 3 cm blocks. After adding 3.0% NaCl, 2.0% glucose and 0.02% Lactobacillus powder (lg(14 CFU/g)), the blocks were fermented at 10 ℃ under oxygen-free conditions. The fermented beef was subjected to physicochemical analysis on the 0, 2 nd, 4 th and 6 th days. The pH and shear force revealed a significant decrease (P0.05) with increasing fermentation time. Atomic force microscopic observation revealed a significant increase in myofibril fragmentation. As shown by SDS-PAGE, 24 kD myofibrillar proteins were decomposed. These results suggested that fermentation could lead to denaturation of beef muscle myofibrillar proteins and improve beef tenderness.
