ENVIRONMENTAL-EFFECTS ON THE PHYSICOCHEMICAL PROPERTIES AND EATING QUALITY OF SWEET-POTATOES

Abstract:The purpose of this study was to investigate the effects of production location and short -term storage on the performance of several imporant characteristics determining the eating quality of sweet potato (Ipomoea batatas L. ). Six lines and 2 check cultivars of edible sweet potato were grown in the fall crop season at Maioli, Yunlin and Kaohsiung with replicated field design. Roots were analyzed for eating quality components on the day of harvest (0-day) and after 30 and 60 days of storage under ambient conditions (16.5-24.2-degrees-C and 65-97% RH) . Results from analysis of variance indicated that both location and storage existed hightly significant effects on the contents of soluble sugars, starch, crude protein, amylose , dry matter, beta-amylase activity, Hunter a value, specific gravity and sensory evaluation score of the roots. The eating quality was highest for sweet potatoes grown in Kaohsiung area, due mainly to higher beta-amylase activity in the roots. The location effect was considered to be caused by the soil and meteorological factors, therefore, the planning of sweet potato production in areas favorable for the performance of eating quality components is recommended, The sugar content and fresh weight loss increased while starch content and eating quality score decreased as a result of extended storage duration of roots. It is suggested that proper handling, curing and storing techniques should be emphasized when short-term storage of sweet potato under ambient condition is available. There were hightly significant genotypeXlocation and genotypeXstorage duration interactions for most eating quality characteristics studied. These results revealed that various genotypes might behave differently under diverse environmental conditions and storage durations as eating qulaity was concerned. Selection of cultivars with stable performance in eating quality components is therefore recommended in the sweet potato breeding programs.
