Abstract:Now with the rapid development of food industry, food safety is concerned all over the world. Many factors affect the food safety, among which pathogenic microbe is one of the most primary factor. In order to effectively and efficiently monitor the food safety, it is more and more important for food quality control and supervision to control the pathogenic microorganism in food processing, and establish the method for rapid detection of food pathogen. Traditional methods for detection of food borne pathogens are quite complex, and cost much time, so more researches focus on the quick, convenient and differential methods. The scope of application of rapid detection method is very extensive, and more sensitive than the traditional detection method. This article introduced several advanced fast detection technology of food pathogenic bacteria, including molecular biology technology, immunity technology, metabolism technology and biosensor technology, and the rapid detection technology of those more advanced analysis and summarize the current mainstream, aiming to provide a reference for the further study.

Abstract:A simple, highly-automated instrument system used for on-site detection of foodborne pathogens based on fluorescence was designed, fabricated, and preliminarily tested in this paper. A corresponding method has been proved effective in our previous studies. This system utilizes a light-emitting diode (LED) to excite fluorescent labels and a spectrometer to record the fluorescence signal from samples. A rotation stage for positioning and switching samples was innovatively designed for high-throughput detection, ten at most in one single run. We also developed software based on LabVIEW for data receiving, processing, and the control of the whole system. In the test of using a pure quantum dot (QD) solution as a standard sample, detection results from this home-made system were highly-relevant with that from a well-commercialized product and even slightly better reproducibility was found. And in the test of three typical kinds of food-borne pathogens, fluorescence signals recorded by this system are highly proportional to the variation of the sample concentration, with a satisfied limit of detection (LOD) (nearly 102–103 CFU·mL−1 in food samples). Additionally, this instrument system is low-cost and easy-to-use, showing a promising potential for on-site rapid detection of food-borne pathogens.

Abstract:The detection method of food safety based on spectroscopy uses the spectrum characteristics of the hazards in foods,such as absorption,reflection,transmission and fluorescence to detect the food safety. This method has obvious advantages in the aspect of rapid,non-destructive and non-invasive measurement,and is promising in the field of online detection for food production. The on-line detection method of food safety based on spectroscopy and its applications in the detection of mycotoxins,fruit and vegetable surface contaminants were reviewed. Deep study should be taken on aspects of the sensitivity improvement,appropriate spectrum selection,calibration models establishment and the cost reducing in the future.

Abstract:The recent development progress of rapid detection technology for foodborne pathogenic microorganisms were reviewed in this paper, including improved culture-based methods, immunoassays, PCR technology, DNA probe, ATP bioluminescence and biochip etc. Current application status in China of these technical products was introduced. To provide a reference to domestic food safety testing technology research and industrial development, the challenges of rapid detection methods of foodborne pathogenic microorganisms were analyzed and the development trends were discussed.

Abstract:Rapid and accurate detection of foodborne pathogens is a powerful and effective strategy to prevent the outbreak of foodborne diseases. Conventional detection methods like the plate counting and molecular diagnosis strategies are still not suitable for timely and rapid on-site detection due to the cumbersome operations, requirement of trained operators and sophisticated instruments. Microfluidics provide a powerful tool for pathogen detection due to the intrinsic advantages including easy integration, miniaturization, portability, and small sample consumption. Up to now, many research works have reported the combination of microfluidics with various detection techniques and signal amplification technologies to achieve the rapid and sensitive detection of foodborne pathogens. In this review, we mainly summarized the significant developed microfluidic based devices for pathogenic bacteria detection over the past five years, including (1) integration of sample preparation techniques like cell capture and enrichment, and nucleic acid related sample preparation methods on chip; (2) various detection methods, such as colorimetric, fluorescence, chemiluminescence, and mass spectrometry; (3) microfluidic paper-based analytical devices, particularly for the applications in resource-limited settings, remote areas or on-site detection. The limitations and advantages of these methods were summarized and discussed in order to comprehensively understand the latest microfluidic-based detection techniques for foodborne pathogens. Finally, the future challenges and directions for pathogens detection based on microfluidic based biosensors were also discussed and summarized.

Abstract:Food safety is of obvious importance, but there are frequent problems caused by foodborne pathogens that threaten the safety and health of human beings worldwide. Although the most classic method for detecting bacteria is the plate counting method, it takes almost three to seven days to get the bacterial results for the detection. Additionally, there are many existing technologies for accurate determination of pathogens, such as polymerase chain reaction (PCR), enzyme linked immunosorbent assay (ELISA), or loop-mediated isothermal amplification (LAMP), but they are not suitable for timely and rapid on-site detection due to time-consuming pretreatment, complex operations and false positive results. Therefore, an urgent goal remains to determine how to quickly and effectively prevent and control the occurrence of foodborne diseases that are harmful to humans. As an alternative, microfluidic devices with miniaturization, portability and low cost have been introduced for pathogen detection. In particular, the use of microfluidic technologies is a promising direction of research for this purpose. Herein, this article systematically reviews the use of microfluidic technology for the rapid and sensitive detection of foodborne pathogens. First, microfluidic technology is introduced, including the basic concepts, background, and the pros and cons of different starting materials for specific applications. Next, the applications and problems of microfluidics for the detection of pathogens are discussed. The current status and different applications of microfluidic-based technologies to distinguish and identify foodborne pathogens are described in detail. Finally, future trends of microfluidics in food safety are discussed to provide the necessary foundation for future research efforts.

Abstract:The global burden of foodborne disease is enormous and foodborne pathogens are the leading cause of human illnesses. The detection of foodborne pathogenic bacteria has become a research hotspot in recent years. Rapid detection methods based on immunoassay, molecular biology, microfluidic chip, metabolism, biosensor, and mass spectrometry have developed rapidly and become the main methods for the detection of foodborne pathogens. This study reviewed a variety of rapid detection methods in recent years. The research advances are introduced based on the above technical methods for the rapid detection of foodborne pathogenic bacteria. The study also discusses the limitations of existing methods and their advantages and future development direction, to form an overall understanding of the detection methods, and for point-of-care testing (POCT) applications to accurately and rapidly diagnose and control diseases.

Abstract:Foodborne viruses have been recognized as important threats to food safety and human health. Rapid and accurate detection is one of the most crucial measures for food safety control. With the development of biology, chemistry, nanoscience, and related interdisciplines, detection strategies have been devised and advanced continuously. This review mainly focuses on the progress of detection methods for foodborne viruses. The current detection methods for foodborne viruses are summarized, including traditional electron microscopy and cultural isolation, immunoassay, molecular technology, biosensors, and newly emerging CRISPR/Cas-based detection technology. Furthermore, a comparison of the detection methods was objectively discussed. This review provides a comprehensive account of foodborne virus detection methods from fundamentals to state-of-the-art and illustrates the advantages and disadvantages of the current methods and proposes the future trends and directions for foodborne virus detection. It is hoped that this review can update current knowledge and present blueprints in order to accelerate futuristic development.

Abstract:Food safety become a hot issue currently with globalization of food trade and food supply chains. Chemical pollution, microbial contamination and adulteration in food have attracted more attention worldwide. Contamination with antibiotics, estrogens and heavy metals in water environment and soil environment have also turn into an enormous threat to food safety. Traditional small-scale, long-term detection technologies have been unable to meet the current needs. In the monitoring process, rapid, convenient, accurate analysis and detection technologies have become the future development trend. We critically synthesizing the current knowledge of various rapid detection technology, and briefly touched upon the problem which still exist in research process. The review showed that the application of novel materials promotes the development of rapid detection technology, high-throughput and portability would be popular study directions in the future. Of course, the ultimate aim of the research is how to industrialization these technologies and apply to the market.

Abstract:Food safety is increasingly becoming an important public health issue, as foodborne diseases present a widespread and growing public health problem in both developed and developing countries. The rapid and precise monitoring and detection of foodborne pathogens are some of the most effective ways to control and prevent human foodborne infections. Traditional microbiological detection and identification methods for foodborne pathogens are well known to be time consuming and laborious as they are increasingly being perceived as insufficient to meet the demands of rapid food testing. Recently, various kinds of rapid detection, identification, and monitoring methods have been developed for foodborne pathogens, including nucleic-acid-based methods, immunological methods, and biosensor-based methods, etc. This article reviews the principles, characteristics, and applications of recent rapid detection methods for foodborne pathogens.

Abstract:Foodborne diseases caused by pathogenic bacteria pose a serious threat to human health. Early and rapid detection of foodborne pathogens is an urgent task for preventing disease outbreaks. Microfluidic devices are simple, automatic, and portable miniaturized systems. Compared with traditional techniques, microfluidic devices have attracted much attention because of their high efficiency and convenience in the concentration and detection of foodborne pathogens. This article firstly reviews the bio-recognition elements integrated on microfluidic chips in recent years and the progress of microfluidic chip development for pathogen pretreatment. Furthermore, the research progress of microfluidic technology based on optical and electrochemical sensors for the detection of foodborne pathogenic bacteria is summarized and discussed. Finally, the future prospects for the application and challenges of microfluidic chips based on biosensors are presented.Graphical abstract

Abstract:In recent years, foodborne diseases have posed a serious threat to human health, and rapid detection of foodborne pathogens is particularly crucial for the prevention and control of such diseases. This article offers a detailed overview of the development of detection techniques for foodborne pathogens, transitioning from traditional microbiological culture methods to the current array of techniques, including immunological, molecular biological, and biosensor-based methods. It summarizes the technical principles, advantages, disadvantages, and research progress of these diverse methods. Furthermore, the article demonstrates that the combination of different methods enhances the efficiency and accuracy of pathogens detection. Specifically, the article focuses on the application and advantages of combining CRISPR/Cas systems with other detection methods in the detection of foodborne pathogens. CRISPR/Cas systems, with their high specificity, sensitivity, and ease of operation, show great potential in the field of foodborne pathogens detection. When integrated with other detection techniques such as immunological detection techniques, molecular biology detection techniques, and biosensors, the accuracy and efficiency of detection can be further improved. By fully utilizing these tools, early detection and control of foodborne diseases can be achieved, enhancing public health and preventing disease outbreaks. This article serves as a valuable reference for exploring more convenient, accurate, and sensitive field detection methods for foodborne pathogens, promoting the application of rapid detection techniques, and ensuring food safety and human health.

Abstract:Salmonella contamination in food production and processing is a serious threat to consumer health. More and more rapid detection methods have been proposed to compensate for the inefficiency of traditional bacterial cultures to suppress the high prevalence of Salmonella more efficiently. The contamination of Salmonella in foods can be identified by recognition elements and screened using rapid detection methods with different measurable signals (optical, electrical, etc.). Therefore, the different signal transduction mechanisms and Salmonella recognition elements are the key of the sensitivity, accuracy and specificity for the rapid detection methods. In this review, the bioreceptors for Salmonella were firstly summarized and described, then the current promising Salmonella rapid detection methods in foodstuffs with different signal transduction were objectively summarized and evaluated. Moreover, the challenges faced by these methods in practical monitoring and the development prospect were also emphasized to shed light on a new perspective for the Salmonella rapid detection methods applications.

Abstract:Rapid, efficient, and accurate detection of foodborne bacteria is important for public health and food safety; however, point-of-care testing remains a limiting factor in the field. Compared with traditional methods, the use of microfluidic chips in monitoring foodborne bacteria has the advantages of miniaturization, automation, integration, high throughput, and low consumption. Notably, the combination of nanomaterials with microfluidics further provides an improved method of pathogen detection with superior, rapid, and sensitive detection efficiencies. This review presents a broad overview of a wide range of microfluidic chips, including the magnetic nanomaterial-based assay, metal nanomaterial-based assay, carbon nanomaterial-based assay, quantum dot-based assay, and upconversion nanoparticle-based assay, for the detection of foodborne bacteria using different nanomaterials. Additionally, the main challenges that exist for translation of scientific research into product development are discussed. On this basis, we provide perspectives on both future technological directions and potential applications, which will guide researchers in identifying the most promising areas of development in this field.

Abstract:This graph illustrates “sample in to answer out” detection procedure of foodborne pathogens. Food samples were first processed into detectable molecules in sample preparation process, and then the corresponding detection methods were applied to form qualitative or quantitative readouts. The results can be obtained directly or analyzed with other equipment. In this review, recent developments of sample preparation and detection methods were exhaustively illustrated, and their limitations and advantages were also summarized to give a comparative assessment for future investigation to ensure food safety.

Abstract:Foodborne pathogens have become the subject of intense interest because of their high incidence and mortality worldwide. In the past few decades, people have developed many methods to solve this challenge. At present, methods such as traditional microbial culture methods, nucleic acid or protein-based pathogen detection methods, and whole-genome analysis are widely used in the detection of pathogenic microorganisms in food. However, these methods are limited by time-consuming, cumbersome operations or high costs. The development of nanopore sequencing technology offers the possibility to address these shortcomings. Nanopore sequencing, a third-generation technology, has the advantages of simple operation, high sensitivity, real-time sequencing, and low turnaround time. It can be widely used in the rapid detection and serotyping of foodborne pathogens. This review article discusses foodborne diseases, the principle of nanopore sequencing technology, the application of nanopore sequencing technology in foodborne pathogens detection, as well as its development prospects.
