Abstract:Based on single-factor tests analysis(enzyme concentration and substrate concentration ratio,pH,enzymolysis time and enzymolysis temperature),the optimum conditions of Alcalase2.4L enzymatic hydrolysis were determined by response surface methodology as follows:pH8.0,hydrolyzing temperature 53℃,enzyme concentration 8800U/g pro substrate concentration 1.2%,hydrolyzing time 50min.
