Advances in Research on Listeria monocytogenes in Raw Milk

Abstract:Raw milk from dairy cows can harbor a variety of microorganisms including Listeria monocytogenes,as a major foodbome that causes listeriosis in both animal and man,which poses a threat to the quality and safety of raw milk.A review of recent progress in the biological characteristics and pathogenicity of the pathogenic bacterium,existing assays for its detection,its detection rates in raw milk,and preventive and controlling measures against its occurrence in raw milk is provided in this paper with the aim to lay the theoretical basis for the quality and safety risk assessment of raw milk.
