Abstract:In order to explore the effect of modified atmosphere(MA) storage on water bamboo shoot,postharvest water bamboo shoots were stored at(1±1)℃ under MA storage or not(control) and the effect of MA storage on quality and physiology were investigated.The results indicated that the chlorophyllase activities increased 1.4-fold,and led to chlorophyll decreased 43%;While the activities of phenylalanine ammonia lyase(PAL) and peroxidase(POD) increased,and led to cellulose and lignin content increased 32% and 36% respectively.MA storage decreased the respiration rate and ethylene releasing amount,but also retarded the activities of chlorophyllase,PAL and POD.The total sugar and chlorophyll content was higher 21% and 34% than those of control,while the hollowness index,cellulose and lignin content was only 66%,92% and 81% than those of control.These results indicated that MA storage has potential efficiency to control yellowing and hollowness of water bamboo shoot.

Abstract:Effect of hot water treatment on tenderness, surface color and content of chlorophyll of minimally processed water bamboo was studied. The results showed that the treatment with hot water at 38 ℃ for 1 h could maintain tenderness of water bamboo, maintain better cell membrane integrity, and inhibit the synthesis of chlorophyll in surface cells. It was also showed that there was no respiration summit during storage.

Abstract:To explore the effectiveness of heat treatment on quality maintenance of bamboo shoot (Phyllostachys vivax McClure. cv. Huapuji), lightly processed bamboo shoots were dipped in water at either 20°C, 40°C, 45°C or 50°C for 5 min before stored at 10°C for 6 days. The experimental results indicated that the respiration rate and ethylene production were decreased, while the activities of phenylalanine ammonia lyase (PAL), polyphenol oxidase (PPO) and peroxidase (POD) increased quickly, and it led to accumulation of total phenolic compounds, thereby promoting L decrease and browning index (BI) increase. Heat treatments at 40°C or 45°C for 5 min reduced the respiratory rate and ethylene production, inhibited the activities of PAL, PPO and POD, and maintained higher level of L and lower level of BI. Therefore, these two temperature treatments have potential use in lightly processed bamboo shoots storage. However, the treatment at 50°C for 5 min, had no beneficial effects on maintaining quality in lightly processed bamboo shoots because of the heat injury.

Abstract:Background Minimally processed water bamboo shoot (WBS) lignifies and deteriorates rapidly at room temperature, which limits greatly its marketability. This study was to investigate the effect of modified atmosphere packaging (MAP) on the sensory quality index, lignin formation, production of radical oxygen species (ROS) and activities of scavenging enzymes, membrane integrity and energy status of minimally processed WBS when packaged with or without the sealed low-density polyethylene (LDPE) bags, and then stored at 20°C for 9 days or 2°C for 60 days. Results The sensory quality of minimally processed WBS decreased quickly after 6 days of storage at 20°C. Low temperature storage maintained a higher sensory quality index within the first 30 days, but exhibited higher contents of lignin and hydrogen peroxide (H 2 O 2 ) as compared with non-MAP shoots at 20°C. Combined MAP and low temperature storage not only maintained good sensory quality after 30 days, but also reduced significantly the increases in lignin content, superoxide anion ( ) production rate, H 2 O 2 content and membrane permeability, maintained high activities of superoxide dismutase (SOD), catalase (CAT) and ascorbate peroxidase (APX), and reduced the increase in activities of lipase, phospholipase D (PLD) and lipoxygenase (LOX). Furthermore, the minimally processed WBS under MAP condition exhibited higher energy charge (EC) and lower adenosine monophosphate (AMP) content by the end of storage (60 days) at 2°C than those without MAP or stored for 9 days at 20°C. Conclusion These results indicated that MAP in combination with low temperature storage reduced lignification of minimally processed WBS, which was closely associated with maintenance of energy status and enhanced activities of antioxidant enzymes, as well as reduced alleviation of membrane damage caused by ROS.

Abstract:The effectiveness of modified atmosphere packaging (MAP) on the peeled bamboo shoots (Phyllostachys praecox) was studied in this paper. The peeled bamboo shoots were stored at 10℃ with a combination of 2%O2+5%CO2+93%N2, and the main physiological and quality parameters were monitored during storage. The results showed that MAP significantly inhibited MDA contents and POD, PAL activity, thereby prevented the browning of bamboo shoots. The browning of bamboo shoots was due to the combination of the changing of cell compartmentalization membrane system and enzymatic browning. The polyphenol and PPO activity could not be used as the indicators of browning of bamboo shoots.

Abstract:【Objective】 The effect of chitosan/nano-SiOx complex coating on shoot of bamboo (Phyllostachys vivax Mcclure. cv. Huapuj) was studied. 【Method】 Fresh-cut bamboo shoots were stored at (4±1)℃ for 8 days, and the effect of 1% chitosan/nano-SiOx coating on quality and physiology of fresh-cut bamboo shoots were then investigated. 【Result】 The results indicated that the respiration rate and ethylene production rate decreased while the activities of phenylalanine ammonia lyase (PAL), polyphenol oxidase (PPO) and peroxidase (POD) increased quickly and the accumulation of total phenolic compounds enhanced, thereby promoting the lightness (L) decrease and browning index (BI) increase. Chitosan/nano-SiOx complex coating not only reduced the respiratory rate and ethylene production rate, but also delayed the increase of activities of PAL, PPO and POD, maintained high L value and low level of BI. 【Conclusion】 Chitosan/nano-SiOx complex coating exhibits potential use for storage of fresh-cut bamboo shoots.
Effects of Solid Chlorine Dioxide Treatment on Quality and Physiology of Minimally Processed Bamboo Shoots

Abstract:Minimally processed bamboo shoots were treated with solid chlorine dioxide and stored at 4 ℃ for 12 days. The influences of 0.50 mg/L chlorine dioxide on the quality and physiology of minimally processed bamboo shoots were evaluated by examining the changes in respiration rate, color, firmness, the activities of phenylalamine ammonia lyase (PAL), polyphenol oxidase (PPO), catalase (CAT), ascorbate peroxidase (APX) and glutathione reductase (GR), the rate of superoxide anion (O2-·) generation, total antioxidant capacity and aerobic bacterial count of bamboo shoots. The results showed that compared with the control, 0.50 mg/L chlorine dioxide treatment decreased the respiration rate and inhibited the increase in firmness. The treatment also retarded the increases in the activities of PAL and PPO but increased the activities of CAT, APX and GR. In addition, this treatment reduced the rate of O2-· production but maintained higher total antioxidant capacity. The results may provide a theoretical basis for the application of solid chlorine dioxide in the preservation of minimally processed bamboo shoots.

Abstract:Consumption of brown rice decreased the risk of chronic diseases, which might be due to the presence of phytochemicals. However, the aging process reduced phytochemical contents of brown rice. The present work investigated modified atmosphere packaging (MAP) of different oxygen levels to preserve cooking qualities and phytochemicals of brown rice during aging storage. Compared with other treatments, 90 % N2 + 10 % O2 packaging showed best effect of preserving cooking qualities including texture and microstructure. The oxidation level of brown rice was also the lowest in 90 % N2 + 10 % O2 packaging. After storage, contents of phytosterol (campesterol, stigmasterol, β-sitosterol) and phenolic compounds (gallic acid, p-coumaric acid, ferulic acid, caffeic acid, syringic acid, catechin, quercetin) of brown rice in 90 % N2 + 10 % O2 packaging were significantly higher than those in other packagings. These results indicated that 90 % N2 + 10 % O2 packaging was a suitable MAP method for the retention of acceptable cooking qualities and phytochemical contents of brown rice.

Abstract:Tender bamboo shoots undergo rapid senescence that influences their quality and commercial value after harvest. In this study, the tender sweet bamboo shoots ('Wensun') were packed by a passive modified atmosphere packaging (PMAP) to inhibit the senescence process, taking polyethylene package as control. The increase in CO 2 and the decrease in O 2 gas concentrations in the headspace atmosphere of the packages were remarkably modified by PMAP treatments. The modified gas atmosphere packaging inhibited the changes in firmness, as well as the content of cellulose, total pectin, and lignin in the cell walls of bamboo shoots. The enzymatic activities of cellulase, pectinase, and polygalacturonase that act on cell wall polysaccharides, and phenylalanine ammonia lyase, cinnamyl alcohol dehydrogenase, peroxidase, and laccase regulating the lignin biosynthesis were modified by PMAP treatment different from control during storage. The expression levels of the lignin biosynthesis genes PePAL3/4 , PeCAD , Pe4CL5, PeC4H, PeCCOAOMT, PeCOMT , cellulose synthase PeCESA1 , and related transcription factors PeSND2, PeKNAT7, PeMYB20, PeMYB63 , and PeMYB85 were clearly regulated. These results suggest that PMAP efficiently retards the changes in lignin and cell wall polysaccharides, thus delaying the senescence of tender sweet bamboo shoots during storage.

Abstract:This paper studyied the quality of bamboo shoots conserved in normal temperature and packaged with three packaging plastic bags with different gas permeability under MAP(2%O2,5% CO2,97%N2), and tested the browning intensity, losing-weight, total soluble solids (TSS), total vitamin c content and sensory of bamboo shoots during the storage period. The result indicated that the packaging material with BOPP/PET/PE is the best choice for fresh-keeping of bamboo shoots.

Abstract:Fresh bamboo (Phyllostachys praecox) shoots were stored in open or packaged circumstance at 10°C to determine the effect of modified atmosphere packaging on the browning and lignification of the bamboo shoots. The packaging film was 0.04mm polyethylene bags and the gas components were 2% O2, 5% CO2 and 93% N2. The bamboo shoots of control treatment were not edible† at the end of the storage for severe browning, while the shoots of modified atmosphere packaging treatment browned slightly and remained edible. Modified atmosphere packaging treatment inhibited the formation of malondialdehyde and the activity of peroxidase and phenylalanin ammonialyase, which attributed to preventing the browning and lignification. Modified atmosphere packaging could not inhibit the formation of polyphenol and polyphenol oxidase activity, but the low O2 concentration and the low activity of peroxidase and phenylalanin ammonialyase prevented the enzymatic reaction and maintained the bamboo shoots unbrowned. Modified atmosphere packaging treatment could also significantly inhibit the lignification of the bamboo shoots by preventing the formation of cellulose and lignin contents. Abstract:The browning and lignification of peeled bamboo shoots (Phyllostachys praecox f. prevelnalis) under modified atmosphere packaging (MAP) with a combination of 2% O(2)+5% CO(2)+93% N(2) in 0.04 mm polyethylene bag during storage at 10 degrees C were investigated. The results indicated malondialdehyde (MDA) content of bamboo shoots under MAP with low O(2) atmosphere was lower than that in the control during early storage, the activities of peroxidase (POD) and phenylalanine ammonia-lyse (PAL) were significantly inhibited (P<0.05 and P<0.01, respectively), and the browning of bamboo shoots under MAP with low O2 atmosphere was eventually significantly prevented (P<0.01) and cellulose and lignin contents were significantly decreased (P<0.05). The browning of bamboo shoots was probably caused by POD and PAL activities, and the increase in POD and PAL activities might account for the lignification of bamboo shoots.

Abstract:In this paper,effect of modified atmosphere package on Prunus americana fruit was studied.The results showed that PE,PVC and CO2 hypertonic package treatments significantly inhibited the reduction of fruit firmness and titratable acid content and delayed aging of the Prunus americana fruit in comparison with CK.PE package of 0.02 mm thickness was more suitable for the Prunus americana fruit to keep good quality after 75 days storage under 0 ℃.

Abstract:Effects of blanching,freezing and frozen storage condition on the quality of water bamboo slices were studied.By blanching water bamboo slices under different temperature,effects of blanching temperature and time on peroxidase(POD) activity,hardness and nutrient content were researched.Blanched water bamboo slices were frozen at-25 ℃,-75 ℃,liquid nitrogen(-196 ℃) respectively and then preserved at-25 ℃ for 6 months.Besides,after being quickly frozen at-196℃,water bamboo slices were preserved at-25 ℃ and-75 ℃ respectively for 6 months,the quality of water bamboo slices under different freezing storage temperature were compared.Results showed that blanching in 100 ℃ water for 2 min could reduce POD activity,the loss of hardness,VC and soluble reducing sugar content.The damage to cells of water bamboo slices which were quickly frozen at 196 ℃ and stored at-75 ℃ were minimum,drip loss rate,relative electric conductivity and color difference were lowest,hardness and nutrient content maintained better.

Abstract:The effect of different barrier properties packaging materials (PE, PET, PVC) on the shelf life of the shelled fresh bamboo shoots were studied. The effection of packaging materials were assessed by the sensory evaluation and the changes of their moisture content, ash content, total sugar content and protein content during storage time. The results showed that the shelled bamboo shoots in conditions at 10 °C with the packaging of PVC and PET have the better quality and longer shelf life than which with the packaging of PE and no packaging at the room temperature.

Abstract:Effects of heat shock treatment,chitosan coating or combined treatments on qualities of water bamboo(Zizania latifolia) without shell preserved at Room temperature were studied.Results showed that compared with the control group,the combined treatments with hot water at 38℃ for 15min and 1.5% chitosan coating reduced the rate of weight loss,color difference,respiration intensity,the content of MDA,the content of total phenols,the activity of enzymes(such as PAL,PPO and POD)significantly during the storage period.Besides,hardness,VC and soluble reducing sugar content of the treated group were remained relatively high.

Abstract:Storage quality of psidium guajava was studied in 4% O2+5% CO2+91% N2 at 12 ℃.Compared with non-modified samples at 12 ℃,fruit softening was delayed,the peak time of peroxidase activity and reducing sugar was postponed,the decomposition rate of vitamin C and titratable acid was reduced,the production rate of malondialdehyde was controlled.The results show that psidium guajava shelf-life in modified atmosphere packaging(MAP) was extended by two times,and it has some promotional value in psidium guajava preservation.
