Abstract:Using soybean meal, the by-product of grain and oil industry, as the main raw material, the soy milk with low fat and high content protein was produced. Results showed that the best ratio of soybean meal to water, white sugar content, hexametaphosphate content, dextrin content, mixed emulsifier KHN-9993 content, soybean oil content were 1:10.0, 5%, 0.05%, 3%, 0.25%, and 0.5%, respectively. And the optimum homogenization power, times and temperature were 30MPa, 2 and 83℃, respectively. The best sterilization temperature and time were 121 ℃, and 15min, respectively. Under those conditions, the soy milk was achieved with low-cost, stability and quality.

Abstract:The aim of this study was to develop a novel plant-based yoghurt with high sensory acceptance and nutrition value. Soybean and quinoa were used as the substrates, and all formulations with different substrate ratios were inoculated with lactic acid bacteria (LAB). Fermentation modified the proximate composition, and a higher content of soybean accentuated the growth of LAB. Formulated yoghurts presented a weak post-acidification, and the viability of LAB was higher than 10(6-7) CFU/g during a 21 days storage. Quinoa addition significantly improved the water holding capacity (WHC) and decreased the yellowness, and an increase of lightness and a decrease of WHC occurred during the storage. Compared with the plain substrate yoghurt, mixed formulation had no significant impact on textual parameters, whereas increased the liking scores in sensory evaluation. Furthermore, fermentation improved the total phenolic content (TPC), which showed a dose-dependent relationship between soybean content. Results obtained from DPPH, ABTS, hydroxyl radical scavenging assay, FRAP assay, and alpha-amylase, alpha-glucosidase and pancreatic lipase inhibition assay showed that fermentation enhanced the antioxidant capacities and digestive enzyme inhibitory activities. TPC increase and phenolic biotransformation may explain the enhancement of the nutritive values. Based on the sensory and function evaluation, the ratio of quinoa against soybean at 8:2 and 2:8 presented the best formulations.

Abstract:Soybean could greatly improve stability of quinoa milk substitute. However, the key compound and underlying mechanisms remained unclear. Here we showed that soybean protein was the key component for improving quinoa milk substitute stability but not oil or okara. Supplementary level of soybean protein at 0%, 2%, 4%, and 8% of quinoa (w/w) was optimized. Median level at 4% could effectively enhance physical stability, reduce particle size, narrow down particle size distribution, and decrease apparent viscosity of quinoa milk substitute. Microscopic observation further confirmed that soybean protein could prevent phase separation. Besides, soybean protein showed increased surface hydrophobicity. Molecular docking simulated that soybean protein but not quinoa protein, could provide over 10 anchoring points for the most abundant quinoa vanillic acid, through hydrogen bond and Van-der-Waals. These results contribute to improve stability of quinoa based milk substitute, and provide theoretical basis for the interaction of quinoa phenolics and soybean protein.

Abstract:Taking coix lacryma-jobi,beans,whole milk powder,and white sugar as raw materials,solidified coix lacryma-jobi soybean yoghurt could be processed by applying the technology discussed in this paper.The processing technology of coix lacryma-jobi fluid preparation,raw soybean flavor removing,lactobacillus domestication,and the effects on flavor,taste,stability of coix lacryma-jobi soybean yoghurt were studied.By the orthogonal experiment,that the optimal fermentation conditions were: adding inoculation rate 4%,emulsion stabilizer 0.15%,white sugar 8% and fermentation time 5 hrs,and the ratio of raw materials,i.e.,soybean,coix lacryma-jobi and whole milk powder is 10∶2.5∶1(W∶W).

Abstract:The beany flavor of soymilk can be eliminated by blanching soybeans at high temperatures. However, compared with the traditional preparation methods, this pre-extraction heating process may have additional effects on protein aggregation. In this study, the distribution of lipid and protein was analyzed by an ultracentrifugation method that separates different fractions of soymilk on the basis of the size and density of particles. For traditional soymilk, results showed that ∼95% of total lipids were enriched in the floating fraction. For the soymilk prepared by blanching soybeans (blanched soymilk), only ∼ 55% of total lipids were found in the floating fraction, in accordance with ∼40% of total lipids presenting in the particulate fraction. SDS-PAGE also showed that the oleosin band existed in the particulate fraction of the blanched soymilk. Moreover, compared with traditional soymilk, blanched soymilk exhibited an obvious red shift in the intrinsic fluorescence spectrum and was composed of particles with significantly high surface hydrophobicity. In conclusion, blanching process alters the denaturation and aggregation mechanism of soymilk particles, thus trapping parts of oil bodies into particulate proteins.

Abstract:Soymilk is the aqueous extract of whole soybeans, resembling dairy milk in physical appearance and composition. The basic steps of its preparation include selection of soybeans, soaking in water, wet grinding, separation of soymilk from fiber (okara), cooking to inactivate lipoxygenase and trypsin inhibitors, formulation and fortification, and packaging. The properly processed soymilk and its derivatives offer many neutraceutical and health benefits. The type of processing and ensuing processing conditions such as high or low temperatures, short or prolonged temperature and cooking time, ultra high temperature, spray-drying parameters, processing treatment combinations with alkali or other chemicals etc. affect the properties of soymilk. The present article focuses on various processing aspects like soaking, blanching, heat treatments, chemical and enzyme treatments, fermentation, homogenization, filtration, spray-drying etc., and their effects on the composition, anti-nutrients, physico-chemical properties, sensory attributes, microbial load, and shelf-life of liquid and powdered soymilk. The applications of some novel techniques such as high-pressure processing, pulsed electric field, ultra high-pressure homogenization, ultrasound, and membrane separations on soymilk processing are also discussed.

Preparation of High Purity Soybean Isoflavone Aglycones from SPC Milk Serum

Abstract:SPC milk serum was selected as material raw because for its low price and pollution to environment.High purity soybean isoflavone aglycones was separated and purified by the following technology: soluble protein was deposited by adjusting pH to 4.50 and adding CaCl_(2)solution;milk serum was decolored by active carbon and desalted by ion-exchange resins;after purified by non-polar macroporous resins HPD-100 and hydrolyzed by HCl,high purity isoflavone glycogens was obtained.Through analysis with HPLC and other methods,the purity of total isoflavones is(58.4±2.5)%(w/w);the recovery rate is(78.3±2.6)%;the relatively percentage content of isoflavone aglycones≥95%(w/w). Genistein and Daidzein are the main components with the percentage content(23.4±0.8)% and(31.2±0.9)% respectively,and Glycitein is the minor component that we can ignore.Purity and value added of product is high,not only overcome some lacks of current extraction technology such as high cost of material raw,trivial pre-treatment and low purity of product,but also make full use of the waste.The technology has favourable application merit and market outlook.

Abstract:Soymilk is a high-nutrient soybean product. The lipides were catalytic oxidated into special products with beany flavor by lipoxygenase during the processing,which debased the edible quality of the soymilk. Sodium bicarbonate,cysteine and citric acid were used to prepare soymilk by soaking beans. The effect of the removal of beany flavor was evaluated by the organoleptic analysis,the inhibition or inactivation of the lipoxygenase was determined by measuring the activity of lipoxygenase,and the composition of the main volatility aldehydes compounds was inspected by GC-MS. The results showed that the soymilk,which was made with bean soaked in 0.25% NaHCO3 solution,obtained acceptable taste,beany flavor was significantly reduced,the activity of lipoxygenase was decreased 52%,and the relative contents of total aldehydes and caproic aldehyde both were decreased 72%. Therefore,soaking bean in 0.25% NaHCO3 solution was an effective method to remove beany flavor.
Research and development trend of modification technology of soy protein isolate

Abstract:Soy protein isolate is widely used in food industry owing to its high protein nutritional functions and features. In order to explore the functional properties of modified soy protein isolate, the soy protein isolate modification methods and the latest research progress in terms of the features of soy protein isolate after modification was reviewed. Some suggestions on the future development according to the current situation and existing problems were made. The results showed that different ways of modification could generate appropriate functional characteristics of soy protein isolate, in order to broaden the application field of soy protein isolate.

Abstract:Lactobacillus rhamnosus 05-28 which was isolated from dairy products were taken as experiment strains. It was of oxygen-resistant, adversity-resistant and high activity. The main factors affected texture and flavor during soybean milk fermentation were studied by analysis of variance, including the fermentation technology which determined by orthogonal experiment. The result was satisfactory under the following processing conditions: inoculation amount 5% (5×107 cfu/mL), initial pH 7.0, fermented temperature 37°C. the fermentation period was 5 h, the viable cell numbers reached more than 1.6×109 cfu/mL, pH 4.5, acidity 79.6°T. This study could provide a scientific basis for the industrial production of Lactobacillus rhamnosus fermented soybean milk products and their application.

Abstract:The purpose of this research was to explore the impacts of different homogenization pressures, pasteurization conditions, and process sequence on the physical and chemical properties of soybean oil body (SOB)-substituted low-fat ice cream as well as the storage stability of SOB-substituted ice cream under these process parameters. With the increase of homogenization pressure (10–30 MPa), the increase of pasteurization temperature (65 °C for 30 min–85 °C for 15 min), and the addition of SOB before homogenization, the overrun and apparent viscosity of ice cream increased significantly, and the particle size, hardness, and melting rate decreased significantly. Thus, frozen dairy products of desired quality and condition could be obtained by optimizing process parameters. In addition, the SOB ice cream showed better storage stability, which was reflected in lower melting rate and hardness and more stable microstructure compared with the full-milk-fat ice cream. This study opened up new ideas for the application of SOB and the development of nutritious and healthy ice cream. Meanwhile, this research supplied a conceptual basis for the processing and quality optimization of SOB ice cream.

Abstract:This article reports the study on the processing technology and key technique of lily rice milk beverage.Several tests were conducted to obtain optimum conditions including the proportion of staple material and complex stabilizer of lily rice milk beverage.The results indicated that the optimum hydrolysis conditions of lily and rice juice using α-amylase are: the amount of en.= 0.01g en./g drying lily,60 min,65 ℃,pH6.0 and the amount of en.= 0.02 g en./g rice,60 min,65 ℃,pH6.0.The use of complex stabilizer of 0.05 % guar gum,0.27 % edible gelatin,0.06 % monoglyceride and 0.04 % sucrose ester can make a better stable effect.Lily rice milk beverage with nice flavor and characteristics could be obtained under the following conditions: ratio of lily juice to rice juice=1:2,1.0 % defatted milk powder;2.0 % sucrose,sterilization at 90 ℃ for 10 min and homogenization at a pressure of 25 MPa.

Abstract:Using soluble soybean polysaccharide(SSPS)as a stabilizer,the effect of technological conditions on the stability of the acidic soybean protein beverage was studied.The single factor experimental results showed that the amount of SSPS,pH value,the beverage adjusting acidic temperature,and homogenization pressure have significant impacts on the precipitation rate of beverage.The optimal conditions was determined through orthogonal experiments,and the optimal technological process was 0.25% of SSPS,pH3.8,20 MPa of homogenization pressure and acidified temperature at 10℃.When the SSPS was added in soybean protein beverage with the optimal process,the stability of the beverage was significantly improved,and the precipitation rate was 1.41%.This beverage product had the uniform white color,suitable sweet and sour,fresh and delicious taste,and no beany flavor.

Abstract:Soy protein isolate is the most refined form of soy protein widely used in food processing.It has higher nutritional value and better functional properties.The differences of functional properties between different extracting method were investigated.Three different methods including ultrasonic wave assisted(AOT)/isooctane reverse micelle system consisting bis-(2-ethylhexyl)sulfosuccinate,isooctane reverse micelle system and alkali-solution extraction followed by a acids precipitation.Experimental results showed that ultrasound-assisted reverse micelle had the higher value in protein content,water holding capacity,foaming capacity and foaming stability,emulsification and emulsion stability were also better than the other two methods,while solubility was slightly inferior to the reverse micelles extraction of soy protein.It was found that the micro-structure of soybean protein varied among three methods and were all characterized by electron microscope scanner.The results indicated that the reverse micelles in the micro-environment and ultrasound changed the micro-structure of protein,affected the functional properties of the protein.

Abstract:The objectives of this study were to optimize pulverizing and boiling process for germinated soybean milk.Pulverizing temperature and boiling time were explored through single-factor experiments and the optimal temperature was figured out as 70℃and boiling time as 4min.With optimized process,content ofγ-aminobutyric acid,total freeamino acids,essential freeamino acids in the germinated soybean based milk were 1.36mg/100 g,0.455g/100 g,and 0.219g/100 g,respectively.Compared with dry soybean milk,the above contents were 3.68,1.34,8.87 folds increased respectively.Despite that the trypsin inhibitor activity(TIA)was 1.27 times that of dry soybean based milk,the nutritional value of germinated soybean milk has been remarkably improved.
