Abstract:This article synthetically discussed the mechanism of nitrate accumulation and relevant affecting factors, and put forward the effective measures of controlling and reducing the nitrate pollution and nitrate content in vegetable. The measures included normal breeding combining with bio-technology breeding vegetable varieties with low concentrated nitrate, suitable cultivation model, scientifically fertilizing, processing and treatment before eating and going into market safety test system.

Abstract:Excessive accumulation of nitrates in vegetables is a common issue that poses a potential threat to human health. The absorption, translocation, and assimilation of nitrates in vegetables are tightly regulated by the interaction of internal cues (expression of related genes and enzyme activities) and external environmental factors. In addition to global food security, food nutritional quality is recognized as being of strategic importance by most governments and other agencies. Therefore, the identification and development of sustainable, innovative, and inexpensive approaches for increasing vegetable production and concomitantly reducing nitrate concentration are extremely important. Under controlled environmental conditions, optimal fertilizer/nutrient element management and environmental regulation play vital roles in producing vegetables with low nitrate content. In this review, we present some of the recent findings concerning the effects of environmental factors (e.g., light, temperature, and CO2) and fertilizer/nutrient solution management strategies on nitrate reduction in vegetables grown under controlled environments and discuss the possible molecular mechanisms. We also highlight several perspectives for future research to optimize the yield and nutrition quality of leafy vegetables grown in controlled environments.

Abstract:Vegetable is a kind of plant that accumulated much nitrate easily. Nitrate content is an important index to evaluate vegeta-ble quality. Agricultural intensity is very high in Shanghai, applying too much fertilizer has affected farmland environment in some extent. Research results indicated that, there was the highest content of nitrate in greenery vegetable growing in green-houses with average value 463.95 mg/kg, followed by leguminous vegetable with 141.91 mg/kg, melon vegetable with 102.38 mg/kg, nightshade vegetable with 38.81 mg/kg, and the lowest content of nitrate was found in edible fungus vegetable whose average value was 26.29 mg/kg. Both cultivation and cropping system could affect nitrate accumulation and transference in soil. Because of different man-agement manner, there was more nitrate in vegetable growing in green-houses, followed by growing in opened air, and then by tradi-tional vegetable. Pollution in greenery vegetable was the most serious with 57.1 percent samples’ nitrate content exceeding level I of the standard, and the pollution index was up to 3.50. Nitrate in leguminous, melon and nightshade vegetable was below the level I, which indicated that these vegetable were slightly polluted.

The effect of nitrogenous fertilizer, phosphate fertilizer, potassic fertilizer, micronutrient fertilizer, and organic manure on the content of nitrate in vegetable are reported. Abstract:Determinations of 11 kinds, 48 varieties of vegetables were carried out at different seasons. The results showed that nitrate-N concentrations in 20 vegetables reached Pollution Level 4 (NO3(-)-N > 325 mg.kg-1), which accounted for 41.7% of the total number of the sampled vegetables and included all of the leafy, and most of the melon, root, onion and garlic vegetables. Among them, 5 leafy vegetables even exceeded Level 4 (NO3(-)-N > 700 mg.kg-1). Although leafy vegetables were usually apt to heavily accumulate nitrate, most of them were with nitrate-N concentrations lower than Level 3 (NO3(-)-N < 325 mg.kg-1) in leave blades. Further investigation showed that vegetable soils accumulated more nitrates in each layer from 0 cm to 200 cm than did cereal crop soil. The total amount of residual nitrate-N was 1358.8 kg.hm-2 in the 200 cm soil profile of usual vegetable fields, and 1411.8 kg.hm-2 and 1520.9 kg.hm-2 in the 2-yaers and the 5-years long plastic greenhouse fields respectively, however that in the cereal crop fields was only 245.4 kg.hm-2. Nitrate residual in vegetable soils formed serious threats to underground water in vegetable growing areas.

Abstract:To investigate nitrate and nitrite content in fresh vegetables, 264 samples were randomly collected in the farmers' markets in Shanghai, Southeast China. The results indicate that 25.0% of the fresh vegetables were critically or more contaminated by nitrate [>1440 mg/kg FW (Fresh weight)]. Generally, leafy vegetables were more highly enriched in nitrate than root-tuber and fruit vegetables. About 22.6% of the leafy vegetables had a nitrate content exceeding the limit for edible permission (>3000 mg/kg FW). Nitrite content in the fresh vegetables was all within the safe level (<1 mg/kg FW). It was estimated that the daily nitrate intake through eating vegetables in Shanghai exceeded the WHO/FAO allowable limit. The field experiment indicated that the hyper-accumulation of nitrate and nitrite in the vegetables was mainly attributed to the excessive application of chemical fertilizers. The maxima of nitrate and nitrite in the vegetables were attained one week after applying chemical fertilizer, and thus they cannot be picked for dietary use. Applying organic manure can effectively lower the risk of nitrate and nitrite contamination in vegetables. The old leaves and leaf petioles were more easily enriched in nitrate due to their weaker metabolic activity. Vegetables with high nitrate content had a high risk of nitrite toxicity during storage due to the biological conversion of nitrate into nitrite, which is easily triggered by suitable temperature and mechanical damage processing. Therefore, fresh vegetables should be stored by rapid cooling and in undamaged forms to prevent nitrite accumulation.

Abstract:The content and distribution of nitrate in 8 catalogues of Vegetables available in Taiyuan market were studied by ion chromatography.It was shown that the accumulation of nitrate in varied vegetable samples conformed to the following order:leaf vegetablesroot vegetablescabbageslegumesscallionsegg plantsgourdsyam.The levels of nitrate in various vegetable tissues were found different,i.e.rootsstemspetiolesleaves.The influence of nitrate on health has been studied based on the ADI value.It was shown that most of the vegetables available in Taiyuan market had been polluted by nitrate to some certain extent.Some species such as radish and celery had been contaminated badly.It will be harmful to health if we eat them improperly.
Intensive Vegetable Production Results in High Nitrate Accumulation in Deep Soil Profiles in China

Abstract:A comprehensive understanding of the patterns and controlling factors of nitrate accumulation in intensive vegetable production is essential to solve this problem. For the first time, the national patterns and controlling factors of nitrate accumulation in soil of vegetable systems in China were analysed by compiling 1262 observations from 117 published articles. The results revealed that the nitrate accumulation at 0-100 cm, 100-200 cm, 200-300 cm, and >300 cm were 504, 390, 349, and 244 kg N ha(-1), with accumulation rates of 62, 54, 19, and 16 kg N ha(-1) yr(-1) for plastic greenhouse vegetables (PG); for open field vegetables (OF), they were 264, 217, 228, and 242 kg N ha(-1) with accumulation rates of 26, 24, 18, and 10 kg N ha(-1) yr(-1), respectively. Nitrate accumulation at 0-100 cm, 0-200 cm, and 0-400 cm accounted for 5%, 11%, and 17% of accumulated nitrogen (N) inputs for PG, and represented 4%, 9%, and 13% of accumulated N inputs for OF. Nitrogen input rates and soil pH had positive effects and soil organic carbon, water input rate, and carbon to nitrogen ratio (C/N) had negative effects on nitrate accumulation in root zone (0-100 cm soil). Nitrate accumulation in deep vadose zone (>100 cm soil) was positively correlated with N and water input rates, and was negatively correlated with soil organic carbon, C/N, and the clay content. Thus, for a given vegetable soil with relatively stable soil pH and soil clay content, reducing N and water inputs, and increasing soil organic carbon and C/N are effective measures to control nitrate accumulation.

Abstract:The effect of different nitrogen fertilization rates and harvest times on nitrate accumulation in the tissues and yield of celery and cucumber as well as on soil were studied under greenhouse in the Loess Plateau.Results show that concentration of nitrate in plants and soil increases with increasing nitrogen supply under lower soil nitrogen levels.Specifically,celery and cucumber yield increases by 16.7% and 37.5% over the control when nitrogen is applied at 300 kg·hm-2 and 400 kg·hm-2 respectively.There is significant difference in nitrate content between the treatment and the control.The nitrogen application of 500 kg·hm-2 for cucumber and 600 kg·hm-2 for celery fields leads to significant decline in yield and remarkable increase in nitrate concentration in plants and soils,and a serious pollution of the vegetables.With plants development,nitrate content in vegetable plants gradually drops to edible level 30 days after moderate nitrogen application.Soil nitrogen leaches intensively in the Loess Plateau which leads to nitrate accumulation in the 50 cm soil layer,at most 15 days after nitrogen fertilization,though maximum accumulation gradually drops with plant growth and development.Subsequently,an adequate supply of nitrogen markedly raises vegetable yield and efficiently reduces nitrate pollution.Optimum application of nitrogen fertilizer should be restricted to 400~500 kg·hm-2,and vegetable plant should not be fertilized by nitrogen 30 days before harvest in greenhouse in the Loess Plateau.

Abstract:As little information available on pesticide and fertilizer uses and they impacts on groundwater quality in vegetable production areas to provide science-based guidance in formulating regulations and nutrient management strategies that address risks to human health and the environment, we have conducted a survey in vegetable fields in Quzhou County, North China Plain from 2002 to 2003. The data of fertilizer and pesticide uses on production of vegetables were collected from 120 farmers randomly using questionnaires. 299 groundwater samples were taken from wells in the region. In 2002, fertilizer application rate was 1 650.4 kg·hm-2, with application rate for chemical fertilizer was 1 126.7 kg·hm-2. Pesticide application dose was 22.73 kg·hm-2. Agrochemical use-frequency and quantities among farmers were discussed, and pesticide types and quantities were displayed in the present paper. Of the groundwater samples, 9.3% had the nitrate-N concentration higher than 10 mg·L-1 exceeding the drinking water standard established by official authorities, but mean nitrate concentrations were found to be 4.04 mg·L-1. The results showed that high fertilization rates in the vegetable production areas resulted in increasing nitrate contamination of groundwater and good farming practices for the agrichemical use should be formulate later.
Effects of Nitrate Accumulation on Water and Organic-N in Vegetables

Abstract:The vegetable yields enhance with N fertilizer used increase, but their growth will be inhibited with too much N fertilizer used. Different to this, nitrate-N contents in the vegetables enhance continuously with the increase of N fertilizer used, and remarkable positive correlation exists between them. Meantime, at different amount of N used, the water and organic-N contents in the 3 vegetables are also positively correlated with the nitrate-N contents (r ranging from 0.735 to 0.834). Further analysis indicates that the nitrate-N absorption, accumulation and reductive transform are the major structural parts of N-metabolism in vegetables of dryland farming. With increase of N-fertilizer used, the accumulation of nitrate-N in vegetables also increases, and this promoting absorption of water.
Sources, fate and influencing factors of nitrate in farmland drainage ditches of the irrigation area

Abstract:Global irrigation areas face the contradictory challenges of controlling nitrate inputs and ensuring food-safe production. To prevent and control nitrate pollution in irrigation areas, the study using the Yellow River basin (Ningxia section) of China as a case study, employed nitrogen and oxygen dual isotope tracing and extensive field investigations to analyze the sources, fate, and influencing factors of nitrate in agricultural drainage ditches. The results of source tracing of nitrate showed that annual proportions of nitrate sources entering the Yellow River in the ditches are as follows: for manure & sewage, fertilizer, and natural sources, the ratios are 33%, 35%, and 32% overall. The results of nitrate fate showed that nitrates derived from nitrate fertilizer exhibit a lower residual rate in drainage ditches (ecological ditches) compared to ammonium fertilizer, which can undergo self-ecological restoration within one year. The results of influencing factors showed that crops with high water and nutrient requirements, such as vegetables, the nitrate pollution and environmental harm resulting from "exploitative cultivation" are five times more than normal cultivation practices in dryland and paddy fields, especially winter irrigation without crop interception exacerbates the leaching of nitrate from the soil. Therefore, nitrate management in irrigation areas should focus on preventing and controlling "exploitative cultivation" and losses during winter irrigation, while appropriately adjusting the application ratio of ammonium nitrogen fertilizers. The results of the study can guide strategies to mitigate nitrate pollution in irrigated areas such as livestock farming, fertilizer application, irrigation management, ditch optimization, and crop cultivation.

Abstract:This paper pointed out that the rate of nitrogen fertilizer application was variation largely among districts and among crops because of unevenly economic development in China based on statistics data and research data. The nitrogen application rate in southeast regions was far higher than that in northwest regains, and economic crops far higher than cereal crops, which leaded nitrogen fertilizer shortage and excessive usage both exist. No-point pollution in agriculture is becoming serious owing to excessive nitrogen fertilization rate and the continuously descending of recovery rate. Because the “average proper nitrogen fertilizer rate “( N 150~180 kg/hm2 ) reaching higher yield in field crops still remain certain distance with safe environment index. Therefore, we can realize the dual targets completely for water environment protection and high yield, superior quality agriculture. But China needs to take into account of formulating relevant policy and laws in order to encourage farmers in economically developed area to reduce applying nitrogen fertilizer rate, meanwhile China needs to develop conventional fertilization recommendation techniques for small scale disperse farming systems and strengthen to formulate fertilization technique standard on economic crops such as vegetable, fruit trees and flower etc.

Abstract:Excessive application of N fertilizers in orchards and vegetable fields (OVFs) in China is particularly common. ● Long-term excessive application of N fertilizers has made OVFs hotspots for N surplus and loss in China. ● Nitrate accumulation in the soil profile is the main fate of N fertilizers in OVF systems. ● Reducing the N surplus is the most effective way to reduce N loss and increase NUE. China is the largest producer and consumer of fruits and vegetables in the world. Although the annual planting areas of orchards and vegetable fields (OVF) account for 20% of total croplands, they consume more than 30% of the mineral nitrogen fertilizers in China and have become hotspots of reactive N emissions. Excess N fertilization has not only reduced the N use efficiency (NUE) and quality of grown fruits and vegetables but has also led to soil acidification, biodiversity loss and climate change. Studies using 15N labeling analysis showed that the recovery rate of N fertilizer in OVFs was only 16.6%, and a high proportion of fertilizer N resided in soils (48.3%) or was lost to the environment (35.1%). Nitrate accumulation in the soil of OVFs is the main fate of N fertilizer in northern China, which threatens groundwater quality, while leaching and denitrification are the important N fates of N fertilizer in southern China. Therefore, taking different measures to reduce N loss and increase NUE based on the main pathways of N loss in the various regions is urgent, including rational N fertilization, substituting mineral N fertilizers with organic fertilizers, fertigation, and adding mineral N fertilizers with urease inhibitors and nitrification inhibitors.
