Abstract:Microwave is of non-ionizing energy from matter heated in electromagnetic field by high frequency.The change in granular properties of starches through microwave radiation is studied.The results show that the starch granule shape is not changed after microwave radiation,polarized cross existed and a concavity of the surface at the center of some starches could be clearly observed,and the microwave treatment increased the X-ray intensities of the major d-spacing of starch.The foregoing data shows that microwave induced the shift of starch molecule to more ordered crystalline array.

Abstract:Effects of gamma irradiation on the physicochemical and crystalline properties of the native and acetylated wheat starches were investigated. Peak, hot paste, cool paste and setback viscosities of both native and acetylated wheat starches decreased continuously and significantly with the increase of the irradiation dose, whereas breakdown viscosity increased after irradiation. However, gamma irradiation only exerted slight effects on thermal and retrogradation properties of both native and acetylated wheat starches. X-ray diffraction and fourier transform infrared spectroscopy revealed that acetylation modification had considerable effects on the molecular structure of wheat starch, and the crystallinity of both untreated and acetylated starches increased slightly with the increase of irradiation dose. However, the V-type crystallinity of amylose-lipid complex was not affected by gamma irradiation treatments with doses up to 9 kGy. (C) 2016 Elsevier B.V. All rights reserved.

Abstract:Maize starch was treated at a moisture content of 30% by microwave radiation.Results show that the swelling power,the solubility,the syneresis,and the gelatinization enthalpy of the treated starch decrease,and the gelatinization transition temperature and the gelatinization temperature range of the treated starch increase.The rise in pasting temperature and the drop in viscosity of the maize starch are observed after the microwave irradiation.The foregoing data indicate the rearrangement restricted to sections of the starch molecules result in the formation of new crystals of different stability and lead to a more ordered crystal array.

Abstract:As one of the crucial components of the food system, starch can be hydrolyzed into glucose after gastrointestinal digestion, so regulating its digestive properties is vital for maintaining health. Microwaves can promote the rearrangement of intramolecular structure of starch, thus improving its physicochemical properties, enhancing its slowly digestible features, and expanding its scope of application. This review zooms in describing recent research results concerning the effects of microwave treatment on the multi-scale structure and physicochemical properties of starch and summarizing the patterns of these changes. Furthermore, the changes in starch structure, resistant starch content, and glycemic index after digestion are pointed out to gain an insight into the enhancement of starch slowly digestible properties by microwave treatment. The resistance of starch to enzymatic digestion may largely hinge on the specific structures formed during microwave treatment. The multi-level structural evolutions of starch during digestion endow it with the power to resist digestion and lower the glycemic index. The properties of starch dictate its application, and these properties are highly associated with its structure. Consequently, understanding the structural changes of microwave-modified starch helps to prepare modified starch with diversified varieties and functional composites.

Abstract:Native starch has poor stability and usually requires modification to expand its industrial application range. Commonly used methods are physical, chemical, enzymatic and compound modification. Microwave radiation, as a kind of physical method, is promising due to its uniform energy radiation, greenness, safety, non-toxicity. It can meet the demand of consumers for safe food. Microwave-assisted modification with other methods can directly or indirectly affect the structure of starch granules to obtain modified starch with high degree of substitution and low viscosity, and the modification efficiency is greatly improved. This paper reviews the effect of microwave radiation on the physicochemical properties of starch, such as granule morphology, crystallization characteristics, and gelatinization characteristics, as well as the application of microwave radiation in starch modification and starch food processing. It provides theoretical references and suggestions for the research of microwave heating modified starch and the deep processing of starchy foods.
Structural and property changes of starch derivatives under microwave field: A review

Abstract:Native starches are commonly modified for desired properties because of their limited applications. Among various modifications, microwave irradiation has been gaining strong interests and becoming a focal area to transform starch during the last few years. Such interests reside in microwave irradiation's high heating rates, lesser extent of loss in nutritional qualities, and so on when compared with other approaches. This review summaries the effects of microwave field on the structural (e.g. morphology characteristic, lamellae structure, crystallinity, and molecular structure) and physicochemical properties (e.g. pasting properties and gelatinization) of naturally existing starch derivatives. Different microwave-assisted chemical derivatizations can directly or indirectly affect starch structure from the macroscopic to the microscopic level, thereby resulting in various functionalities. Moreover, conventional starch modification processes can be optimized by applying microwave irradiation to obtain modified starch with high degree of substitution and low viscosity. The future research will help to better understand the structural changes of microwave-assisted starch chemical derivatization and thereby creating a wide range of functionalities.

Abstract:The effects of varieties and properties of starch on puffing under microwave irradiation were researched. The results showed that glutinous rice, potato starch and the materials that have more amylopectin were suited for microwave puffing. And if the gelatinization degree was more than 95 %, the puffing ratio of the corresponding products was decreased. It found that the retrogradation was not advantageous to puffing with the increasing degree or retrogradation, this disadvantageous effect was enhanced.

Abstract:Waxy and non-waxy hull-less barley kernels and their isolated starches were irradiated under different microwave conditions (power 640, 720, and 800 W, time 60, 120 and 180 s). Changes in physicochemical properties were studied to investigate the effects of microwave irradiation (MWI) on in-kernel starches and isolated starches. For in-kernel starch, microwave reduced the ratio of 1047/1022 cm(-1) wavelengths, gelatinization enthalpy (Delta H-g) and relative crystallinity (RC), indicating that microwave of starch within the cells disrupted the crystalline regions. For isolated starch, microwave decreased the ratio of 1047/1022 cm(-1) wavelengths but increased Delta H-g of isolated starch, indicating that microwaving resulted in disruption of amorphous structure and an increase in the amount of remaining double helix structure. Moreover, viscosities of in-kernel starches decreased as microwave power and time increased, but this was not observed in isolated starches. Microwave treatment induced an enhancement of gelatinization temperature for non-waxy starches (NWS) but decreased in waxy starches (WS). Microwave had a greater effect for swelling power and solubility on in-kernel MWI-WS than MWI-WS, whereas the reverse results were found between in-kernel MWI-NWS and MWI-NWS. The results indicated that amylose plays a profound role in the properties of isolated and in-kernel starches during microwaving.

Abstract:Normal maize, waxy maize and amylomaize V starches were treated at a moisture content of 30% by microwave radiation. The results showed that the surface was porous and a cavity could be clearly observed at the center of the three starches. Microwave treatment increased the X-ray intensities of the major d-spacings of all starches and changed the X-ray pattern of amylomaize V from B to A+B. The swelling power (amylomaize V < normal maize < waxy maize) and solubility (amylomaize V < normal maize < waxy maize), syneresis (waxy maize > normal maize > amylomaize V) and the enthalpy of gelatinization (amylomaize V (B-type)> normal maize waxy maize (A-type)) decreased on this treatment. Microwave treatment increased the gelatinization transition temperatures (amylomaize V > waxy maize > normal maize) and the gelatinization temperature range (amylomaize V > normal maize > waxy maize) of all starches. A rise in pasting temperature and a drop in viscosity of the three starches were observed after microwave irradiation. The viscosity patterns of waxy and normal starches remained unchanged, while that of amylomaize V starches changed from C to D on microwave treatment. Abstract:Dry modification of starch, especially by microwave-assisted heating, has attracted increasing attention due to its various advantages, including energy saving, high conversion, rapidity, and avoidance of volatile organic solvents in organic synthesis. This work focuses on two fundamental issues: 1) effect of starch microstructure on dry modification; 2) effect of acid anhydride in solid and liquid states on the dry reaction, since their interfaces with solid starch are significantly different. Cornstarches with different amylose/amylopectin ratios were used to demonstrate the effect of starch microstructure, while two acid anhydrides, maleic (solid) and acetic (liquid) anhydrides, were used to study the reaction mechanisms. FTIR, SEM, XRD, and DSC were used to study the performance of modified starches and the mechanisms. It was found that the degree of substitution (DS) of starches modified by maleic anhydride generally increased with increasing amylose content since amylose contains more hydroxyl groups, resulting in higher sensitivity to microwaves. On the other hand, the DS of starches modified by acetic anhydride increased with increasing amylopectin content, since liquid acetic acid can diffuse into high-amylopectin starch granules. The higher amylopectin starches, waxy and maize, showed higher RC(%) and ∆H(%) than that of higher amylose starches G50 and G80.

Abstract:This work revealed the influence of thermal processing on the microstructural, mesoscopic and molecular scale structures and thus the plasticizer migration of the starch ester films. Thermal processing promoted the permeation of water molecules to hinder the shrink of the amorphous macromolecules. That is, the swelling of the amorphous macromolecules diminished the ordered regions to a certain degree, resulting in the enlarged amorphous regions. Along with slight degradation of the macromolecules, the crystallites were partially disorganized, as indicated by a reduced relative crystallinity. These multi-scale structural changes of the films and the thermally enhanced mobility of plasticizer molecules synergistically enhanced the plasticizer migration. This study not only enables a well understanding of how thermal treatment alters the plasticizer migration of starch-based films from a multi-scale structural view, but also hints to our future work that rationally modulating the structural features of starch-based film may effectively control the migration of chemicals.

Abstract:Potato starch and pea starch were used as the research objects.The effect of starch aging on the puffed properties was researched through controlling the cold storage time to get different degree of starch aging.The results showed that the amylose content of pea starch was 49.2%,significantly higher than that of the potato starch.The hardness of starch gelatin increased along with the cold storage prolonged,and the degree of aging increased.The expansion rates of both puffed products made of the potato starch and pea starch increased at first,then decreased.The expansion rate of the puffed potato reached the highest with the best color and taste while the starch was in cold storage for 12 h.The quality of the puffed pea was good while the starch was in cold storage for 8 h.

Abstract:Native waxy maize starch was treated at a moisture content of 30% by microwave irradiation for 5 min, 10 min and 20 min, respectively. The molecular structure and physical properties of waxy maize starch were characterized. Compared with native maize starch, lower population of short chains of amylopectin (A chain), higher proportion of short B1 and long B2 and B3 were observed in irradiated starches. 1H NMR data showed that α-(1,6) glycosidic linkages were destroyed more easily than α-(1,4) glycosidic linkages during microwave treatment. A increase in gelatinization temperatures and a decrease in the molecular weight, the relative crystallinity, ΔH, viscosities and syneresis were observed after microwave treatment. Gelatinization temperatures were positively correlated with long chains B3 with DP > 36, while ΔH and syneresis were negatively correlated with them. The extent of the changes induced by microwave treatment for different times revealed that the major degradation occurred in internal chain (amorphous region) at the first stage (microwave treatment for 5 min), the external chain (crystalline region) mostly destroyed at the second stage (microwave treatment for above 10 min). The foregoing data indicated that the molecular structure of amylopectin is a critical factor determining physical properties.

Abstract:The modification of waxy corn starch paste by microwave irradiation was studied. The effects of temperature, microwave power and irradiation time on the rheological property of waxy corn starch paste were investigated using a rotary viscometer. Results showed that the rheological property could be greatly affected by microwave irradiation. The treatment of microwave irradiation decreased the concentration and viscosity of the paste, changing the paste from a pseudoplastic fluid to a Newtonian fluid. This change tendency became obvious by improving the temperature and the power as well as prolonging the irradiation time.

Abstract:Waxy maize starches with a moisture content of 30% were treated with microwave radiation. The properties of the native and the treated starches were then studied by using SEM, XRD, DSC and Brabender viscoamylo-graph. It is indicated that (1) after the radiation, the surfaces of the starches become porous with concavity; (2) microwave radiation enhances the X-ray intensities of the starches, decreases the swelling power, solubility, syneresis and gelatinization enthalpy of the starches, and improves the gelatinization transition temperature and the corresponding range; and (3) the waxy maize starches treated by microwave is of an increased pasting temperature and a decreased viscosity with the viscosity pattern remains unchanged. The above-mentioned details reveal the interaction involving starch chains (amylose-amylose and amylose-amylopectin) in the amorphous and crystalline regions of the granules, which results in the formation of new crystallites with different stabilities and more ordered crystalline array in the starches.
Effect of Microwave on Digestion Resistibility of High Amylose Maize Starch Granule

Abstract:The high amylose maize starch granules were modified by the microwave and their digestion resistibility was changed under different moisture mass percents, microwave temperatures, treatment time and powers. The granule appearance and digestion resistibility of native and microwave modified high amylose starch granules under different microwave conditions were investigated by SEM and in in vitro digestion model. It was found that the microwave modified starch granule surface became roughness and most of them were damaged to some little fragment when the resistant starch content reached 22.0%. The results showed that under the microwave filed the moisture mass percent and microwave temperature had significant effects on the high amylase maize starch digestion resistibility but the microwave power and time had little effect.
