Abstract:Freeze-drying and hot air-drying were applied in the preparation of pumpkin flours to investigate the effects of drying methods on the antioxidant activities and physicochemical properties. The antioxidant activities of methanol extracts from pumpkin flours were studied in terms of total antioxidant activity, reducing power, free radical scavenging, superoxide anion radical scavenging and metal chelating activities. Hot air-dried pumpkin flour showed stronger antioxidant activities than freeze-dried flour. The percentage inhibition of peroxidation in linoleic acid system by 15 mg mL(-1) extracts from hot air-dried and freeze-dried pumpkin flours was found to be 92.4% and 86.1% after 120 h of incubation, respectively. Hot air-dried pumpkin flour exhibited higher reducing power, free radical scavenging and metal chelating activities than freeze-dried flour. This study also indicated that freeze-drying significantly reduced the browning and preserved the redness of pumpkin flours. Hot air-drying reduced the oil absorption capacity, water absorption and porosity of pumpkin flours, while it markedly increased the water solubility and bulk density.

Abstract:The pumpkin has been used frequently as functional foods. Phytochemical and pharmacological investigations have shown that polysaccharides derived from pumpkins, have antioxidant, anti-tumor, immunoregulatory, hypoglycemic and hepatoprotective activities. This article reviewed the structural analysis, extraction/purification, pharmacological activities, and structure-activity relationships of pumpkin polysaccharides. Those pumpkin polysaccharides rich in uronic acid, with lower molecular weights tended to have increased biological effects, whereas (1→3) and (1→4)-Glcp glycosidic linkages in main chains were indispensable for hypoglycemic effects. This paper reviewed the production, investigation, and application of pumpkin polysaccharides in functional foods and therapeutic agents.

Abstract:Pumpkin polysaccharides have arrested researchers' attention in fields of food supplements for healthy product and traditional Chinese medicine due to their multiple bioactivities with non-toxic and highly biocompatible. This review emphatically summarized recent progresses in the primary and spatial structural features, various bioactivities, structure-to-function associations, different preparation techniques, and absorption characteristics across intestinal epithelial and in vivo bio-distribution of pumpkin polysaccharides. Additionally, current challenges and future trends in development of pumpkin polysaccharides were pointed out. We found that pumpkin polysaccharides were primary structure (e.g. glucan, galactoglucan, galactomannan, galactan, homogalacturonan (HG), and rhamnogalacturonan-Ι (RG-Ι)) and special structure diverse (e.g. hollow helix, linear, and sphere-like) and significant functional foods or therapeutic agents (e.g. oral hypoglycemic agents). Moreover, we found that the molecular weight (Mw), uronic acid, linkage types, and modifications all could affect their bioactivities (e.g. anti-oxidant, anti-coagulant, and anti-diabetic activities), and pumpkin polysaccharides may across intestinal epithelial into the blood reaching to target organs. Collectively, the structures diversity and pharmacological values of pumpkin polysaccharides support their therapeutic potentials and sanitarian functions.

Abstract:Nowadays, agricultural waste byproducts are exploited in the food industry rather than discarded. Pumpkin is one of the most significant vegetable crops that is widely consumed in farmland and certain urban regions. The current study was designed to measure the phytochemical constituents, food application, health benefits, and toxicity of pumpkin and pumpkin byproducts. Pumpkins and pumpkin byproducts (seeds, leaf, and skin/peel) can be utilized as functional ingredients. Different parts of the pumpkin contain bioactive compounds including carotenoids, lutein, zeaxanthin, vitamin E, ascorbic acid, phytosterols, selenium, and linoleic acid. Pumpkin is used in various food sectors as a functional food, including baking, beverages, meat, and dairy industries. Furthermore, the leaves and pulp of the pumpkin are used to produce soups, purees, jams, and pies. Different parts of pumpkins have several health benefits such as antidiabetic, antioxidant, anticancer, and anti-inflammatory effects. Therefore, this review paper elaborates on the pumpkins and pumpkin byproducts that can be used to develop food products and may be valuable against various diseases.

Abstract:A versatile and popular Cucurbitaceous vegetable, pumpkin has recently gained much attention because of its variety of phytochemicals and health advantages. Pumpkins are a type of winter squash, traditionally with large, spherical, orange fruits and a highly nutrient food. Pumpkin by-products comprise various parts, such as seeds, peels, and pulp residues, with their bioactive composition and many potential benefits poorly explored by the food industry. Pumpkin and their by-products contain a wide range of phytochemicals, including carotenoids, polyphenols, tocopherols, vitamins, minerals, and dietary fibers. These compounds in pumpkin by-products exhibit antioxidant, anticancer, anti-inflammatory, anti-diabetic, and antimicrobial properties and could reduce the risk of chronic diseases. This comprehensive review aims to provide a detailed overview of the phytochemicals found in pumpkin and its by-products, along with their extraction methods, health benefits, and diverse food and industrial applications. This information can offer valuable insights for food scientists seeking to reevaluate pumpkin's potential as a functional ingredient. Abstract:In the current conditions, the search for new biologically active substances of various functional orientation from affordable and inexpensive plant raw materials, the development of meat products with functional additives, the study of their consumer properties and effectiveness are promising tasks. Pumpkin flour is a naturally biologically active proteinvitamin-mineral complex of plant origin, combining the main essential amino acids, macroand microelements, vitamins and fiber. The purpose of the work is to study the chemical composition and functional and technological properties of zucchini seeds with the prospect of being used as a biocorrector in the technology of functional meat products. The research was carried out at the Department of Food Technologies of the Don State Agrarian University and at the Meat Processing Plant LLC, Razvilnoye village, Peschanokopsky district, Rostov region. It has been established that the introduction of zucchini seed additives into the formulations of meat products improves the organoleptic and physico-chemical characteristics of finished products. The prototypes were distinguished by a more delicate consistency and higher uniformity of minced meat on the cut, an increase in the mass fraction of protein and a decrease in the proportion of fat were also noted.

Abstract:Pumpkin peel is a main by-product produced during pumpkin consumption and processing, which is often disposed of as food waste. Therefore, it is necessary to develop ways to utilize pumpkin peel. In this study, the pectic polysaccharides were extracted from pumpkin peel, and their properties were evaluated. Results indicated that the extraction yield of pectin polysaccharides from Dongsheng pumpkin peel was the highest. Meanwhile, among the pumpkin peel pectic polysaccharides (PPs), Dongsheng PP exhibited the highest methylation degree (22.38%), acetylation degree (15.92%), molecular weight (6.26 × 105 Da) and initial apparent viscosity. Variety had little effect on the microstructure and functional groups of PPs. Compared with the other PP samples, Beibei PP (BBP) had the lowest molecular weight coupled with highest protein content, resulting in the highest emulsifying activity, emulsion stability and antioxidant activity. In addition, all the PPs had the ability to promote the growth of probiotics, and BBP and Banli PP (BLP) shown better capacities to promote the growth of Lactobacillus acidophilus and Bifidobacterium breve. Hence, it could be concluded that extraction pectin from pumpkin peel is a potential method for the utilization of pumpkin peel.

Abstract:Pumpkin ( Cucurbita moschata Duch.) is a versatile crop with strong stress resistance and promising growth potential. Widely cultivated in various regions of China, it ranks among the top crops globally in terms of both planting area and consumption. Known for its pleasant taste and high nutritional value, pumpkin pulp is rich in essential trace elements for the human body. Even after harvest, pumpkin fruit remains metabolically active, requiring its own nutrients to complete the postripening process. Failure to provide proper postharvest storage conditions can lead to excessive water loss and rapid nutrient depletion, resulting in rough, shriveled, and even rotten peel, ultimately diminishing the economic value of the pumpkin. This study aimed to investigate the changes in pumpkin quality and physiological indicators during storage to provide insights to determine optimal consumption and processing periods of pumpkins. The pumpkins were stored at a temperature of 16 ± 2 °C and 60% to 80% humidity during the experiment. The dynamic changes in fruit quality, hardness, respiration rate, malondialdehyde content, level of antioxidant enzymes, and other indicators of two pumpkin cultivars (BM5 and JQ) were assessed during storage, and the correlation among these indicators was evaluated. The results indicated a decrease in the vitamin C content and pulp hardness, whereas the superoxide dismutase and catalase contents initially increased and then decreased, and malondialdehyde and weight loss rates increased over the storage period. The weight loss rate exhibited significant positive and negative correlations with the malondialdehyde content ( P < 0.01) of the two cultivars, whereas the vitamin C content showed a significant positive correlation with pulp hardness ( P < 0.01). The findings indicate that optimal fruit quality was maintained within 40 days of postharvest storage. This study provides valuable insights into the selection of storable pumpkin cultivars.

Quality assessment and variety classification of seed‐used pumpkin by‐products: Potential values to deep processing

Abstract:Seed‐used pumpkin (SUP) is known as a traditional popular crop, which is mainly processed for seeds. However, the by‐products (49 times the amount of seeds) were disposed directly into the field as waste. In this study, potential values of seed‐used pumpkins' by‐products (SUPBs, peel and pulp) as food resource were investigated. Physico‐chemical, nutritional, and aroma profile of ten varieties of SUPBs were characterized, and variety differences were also distinguished. Peel "a*" value, water, fructose, crude fat, sucrose, and Ca contents were the 6 characteristic indicators of SUPBs which screened through correlation analysis, principal component analysis (PCA), and PCA‐X model. Comprehensive evaluation of physico‐chemical, nutritional, and aroma profile, four varieties by‐products (Jf8#, Nf8#, Rbf#, and Rf9#) were always characterized into Cluster Ⅰ. Other varieties were classified into Cluster Ⅱ based on aroma profile. However, two varieties by‐products (Db1# and Xn1#) presented significant differences from others (Db2#, Db3#, Db4#, and Myxc2#) in physico‐chemical and nutritional indices, they were classified as Cluster III and IV, respectively. Db1# had the highest nutritional value of soluble solid (11.78 ºBx), pectin (1,166.15 mg/ 100 g), total carotenoid (19.57 mg/ 100 g), and total sugar (13.69 g/ 100 g). Among all the SUPBs, Db1# had a relatively higher nutritional value, which was suitable as food resource for deep processing.

Abstract:The pumpkin belongs to the family of Cucurbitaceae, is a well-known edible plant that has been frequently used as functional food or herbal medicine. Pumpkins contain rich unsaturated fatty acids, phytoestrogens and vitamins E in their seeds that have potential pharmaceutical, nutraceutical, and cosmeceutical properties. Information regarding their nutritional components and therapeutic properties of pumpkin seeds has expanded dynamically in the recent years and this review focus on the three main components of pumpkin seeds that described before. Several types of unsaturated fatty acids are the dominant component in pumpkin seeds which can play a role in the disease prevention and promote health. Pumpkin seeds also contain the important phytoestrogen compounds, i.e., secoisolariciresinol and lariciresinol that have estrogenic-like effect such as preventing hyperlipidemia and osteoporosis for menopausal women. Phytoestrogens in pumpkin seeds also could be related to a reduced hormone-dependent tumor. Pumpkin seeds are rich in vitamin E contents as an emerging free radical scavenger, anti-aging and antioxidant such as a-tocopherol and g-tocopherol. Findings of these studies prove that patents field for the innovation product of pumpkin seeds holds promise for the future along with their immense nutraceutical properties.

Abstract:In recent years, with the accelerated pace of life and the high incidence of chronic diseases, the demand for functional food has been increasingly urgent. Under such circumstances, germinated edible foods have attracted much attention because of their unique physiological effects. This review mainly summarizes recent studies about the physiological and biochemical changes during edible seeds germination. Further, the different germination treatments and the enrichment of γ-amino butyric acid are discussed. Finally, the applications of germinated seeds in the food sector are mentioned. Germination of edible seeds is a complex process of material transformation, which not only improves the nutritional value of raw seeds, but also accumulates a wide variety of bioactive compounds with health benefits. As a potential source of numerous functional ingredients, germinated edible foods have attracted widespread attention for its physiological benefits. Therefore, germinated grain and legume seeds are expected to be functional dietary supplements with a variety of health benefits and medicinal values. Appropriate germination treatments can enrich bioactive components, which is conducive to the efficient production of bioactive functional food. Research in this area is expected to serve the purpose of preventing and alleviating chronic diseases.

Abstract:In recent years, with the increasing awareness of health concerns and environment protection needs, there is a growing interest for consumers to choose plant-based food diets compared with those made from animal origin. Pumpkin seed is an excellent dietary source for protein, oil, and some essential micronutrients. Raw pumpkin seed may have a compromised flavor, color, as well as digestibility. Therefore, the objective of present study is to study the influence of roasting (120, 160, and 200°C for 10 min) on the phenolics content, flavonoids content, antioxidant property, fatty acids, and volatile matter composition, as well as protein profile of pumpkin seeds. Our results indicated that, total phenolic compounds, total flavonoids content, as a consequence, total antioxidant capacity increased as the roasting temperature increased. Maillard reaction products and lipid peroxidation products were identified, especially from those pumpkin seeds roasted at high temperature. In the meantime, the composition and content of fatty acids did not change significantly after roasting. The results of electrophoresis and particle size analysis showed that the optimum roasting temperature was 160°C to obtain protein with better nutritional quality. The findings of this study may contribute to the utilization of pumpkin seed component in plant-based diets with increased nutritional quality.

Abstract:Phytoalexins are antimicrobial compounds of low molecular weight that are synthesized and accumulated in plants after exposure to microorganisms.Recent studies have revealed that phytoalexins carry a variety of nutrition and have numerous biological functions including antioxidant activity,anti-inflammation activity and anti-cancer activity.Thus phytoalexins as a crucial secondary metabolite,have a great potential to be applied in the fields of functional food and dietary supplement.This paper was an overall study on the variety,beneficial property,elicitation and accumulation of phytoalexins in plants,which provided an evidence and a guideline for the selectivity of phytoalexins for food functional component.

Abstract:Pumpkin ( Cucurbita moschata ) is an important cucurbit vegetable crop that has strong resistance to abiotic stress. While heat shock protein 20 (HSP20) has been implicated in vegetable response to heat stress, little is known regarding activity of HSP20 family proteins in C. moschata . Here, we performed a comprehensive genome-wide analysis to identify and characterize the functional dynamics of the Cucurbita moschata HSP20 ( CmoHSP20 ) gene family. A total of 33 HSP20 genes distributed across 13 chromosomes were identified from the pumpkin genome. Our phylogenetic analysis determined that the CmoHSP20 proteins fell into nine distinct subfamilies, a division supported by the conserved motif composition and gene structure analyses. Segmental duplication events were shown to play a key role in expansion of the CmoHSP20 gene family. Synteny analysis revealed that 19 and 18 CmoHSP20 genes were collinear with those in the cucumber and melon genomes, respectively. Furthermore, the expression levels of pumpkin HSP20 genes were differentially induced by heat stress. The transcript level of CmoHSP20-16 , 24 and 25 were down-regulated by heat stress, while CmoHSP20-7 , 13 , 18 , 22 , 26 and 32 were up-regulated by heat stress, which could be used as heat tolerance candidate genes. Overall, these findings contribute to our understanding of vegetable HSP20 family genes and provide valuable information that can be used to breed heat stress resistance in cucurbit vegetable crops.
