Abstract:SO2 acute injury of seven table grapes at room temperature was studied. The results showed that the sequence of acute injury threshold of grapes was "Hongbaoshi"＜“Red Globe”＜“Manai”＜“Autum black”＜“Kyoho”＜“Muscate hamburg ”＜“Longyan”.The bleaching index had very strong correlation with the fumigation concentration and time, and the fumigation concentration showed the greatest effect on acute injury. Epidermis and stem were probably the two main entrances of SO2 into grape fruit.

Abstract:The cuticular wax layer as a natural defensive barrier plays a key role in postharvest fruit quality maintenance. This study investigated the effects of simulated transport vibration (STV) on the berry quality and cuticular wax, and the ability of sulfur dioxide (SO2) to ameliorate STV damage in table grapes during cold storage. Results showed that STV damage accelerated the deterioration in grapes quality, and resulted in degradation and melting of cuticular wax, accompanied by a decrease in load of total wax, triterpenoids, fatty acids, alcohols, and olefins while an increase in alkanes and esters content during subsequent storage. However, SO2 effectively reversed the adverse impact of STV damage by increasing most wax fraction levels and corresponding genes expression, especially triterpenoids, although it had no apparent effect on wax structure. Overall, SO2 delayed the quality deterioration caused by vibration damage that occurs during transportation and storage by altering cuticular wax composition.

Abstract:Rachis browning is a visual marker of table grape freshness and plays a vital role in consumer preference and food waste. In this study, the role of sulfur dioxide (SO2) in maintenance of quality attributes of grape rachis during shelf-life was systematically studied, and results demonstrated that the rachis browning was significantly inhibited, and endogenous phenolic metabolism and sulfur assimilation were affected by exogenous SO2, at both transcriptional and metabolic levels. Furthermore, SO2 treatment promoted the accumulation of major phenolic compounds, such as (+)-catechin, (-)-epicatechin, (-)-epicatechin gallate, and proanthocyanidins, by increasing the transcript levels of VvLAR and Vv3GT genes involved in flavonoid pathway. Besides, gene expression involved in sulfite assimilation was also activated by exogenous SO2, resulting in the accumulation of sulfur-containing metabolites, including cysteine, hydrogen sulfide, and glutathione. The present study provided the first evidence for the anti-browning effect of SO2 through the accumulation of flavanols and sulfur-containing compounds.
Studies on Relationship Between SO2 Injury and Active Oxygen Metabolism in Grape During Storage

Abstract:Relationship between SO2 injury and active oxygen metabolism of grapes was studied. Results showed that treatments with toxic dose of SO2 provoked the metabolism of active oxygen. The production of , H2O2 and GSH and activities of ASP were enhanced, while activities of SOD and CAT were inhibited. As a tolerant variety, Kyoho exhibited higher GSH contents, activity of SOD and the increscent extent of activity of ASP than those of Red Globe.

Abstract:Eight grape cultivars were treated with different SO2 doses and their sensitivity to SO2 and absorbing mechanism of SO2 were studied.The results showed that the sensitivity to SO2 and injured part were different in the different grapes. The eight grape cultivars can be classified to four types according to the sensitivity to SO2. SO2 can accumulate in the grapes. The sensitivity of grapes to SO2 was different, and the way and ability of absorbing SO2 was also different.

Abstract:：Titratable acidity and pH in ripe grapes juice are 0．5％～0．7％ and 3．7～3．8 respectively，a SO2-endurable variety has higher level of titratable acidity，pH and buffer capacity than a SO2-unendurable one． During senescence of grapes， there are falls of titratable acidity and buffer capacity． Superfluous SO2 induces a raise of titratable acidity and a more fall of buffer capacity， while appropriate SO2 keeps a relatively changeless level．

Abstract:Grape is one of the oldest tree species in the world which have a relatively high tolerance to salt stress. The function of Suberin Lamella is to control the transport of water and ions, which has a positive effect on salt tolerance. However, whether the suberin lamella of grape root is related to its salt-tolerance has not been revealed. In this study, suberin lamella in roots of two grape varieties, "Crimson seedless" and "1103p", were stained by FY0888. Results showed that salt stress induced the appearance and thickening of suberin lamella of grape root cortex. The induction effect was very obvious in salt-toerant "Crimson seedless", while the effect was weak in "1103P", indicating that the suberin lamella of grape was indeed involved in the salt tolerance of grape.

Abstract:Sulfur dioxide (SO2) and its derivatives are known to be hazardous but their common application in food, especially the grape industry, is conditionally allowed. Potential hazards to consumers and the environment could occur upon the control-lost SO2 during grape logistics and storage. Researchers have usually focused on the anti-pathogen role of SO2 whereas limited efforts were conducted on the sulfur (S) absorption, assimilation patterns, and sulfite detoxification. In this study, short-term, room-temperature, and SO2-stored grapes were investigated, whose S flux of various forms was quantified through an estimation model. Accordingly, the additional accumulated S (0.50-0.86%) in pulps from atmospheric SO2 was considered mainly through rachis transport compared to across skin surfaces and the usage arrangement of the absorbed S was included. The first quantitative evidence of induced S assimilation under SO2 was also provided, which challenged the previous knowledge. In addition, sulfite oxidase and reductase (SiO and SiR) played major roles in sulfite detoxification, being effectively stimulated at multiple levels. The induced S metabolism associated with enhanced reactive oxygen species (ROS) scavenging capacity and alleviated senescence contributed to quality maintenance. Overall, these findings provide novel insights and are valuable supports for developing SO2-controlling strategies to avoid potential hazards.

Abstract:Berry texture affects consumer acceptance and postharvest shelf life of table grapes. This study elucidates how sulfur dioxide (SO2) treatment maintains grape texture quality, focusing on the role of hydrogen peroxide (H2O2)-mediated cell wall modifications. SO2 treatment exhibited effects similar to those of H2O2 treatment, resulting in firmer berries with more intact cell wall structures, higher contents of chelate-soluble pectin, sodium carbonate-soluble pectin, hemicellulose, and cellulose, with lower levels of water-soluble pectin compared to untreated fruit. Moreover, it delays pectin nanostructure disassembly and reduces degree of pectin methylesterification, which facilitates the formation of calcium bridges between demethylesterified pectin and increased calcium ions, thereby strengthening the cell wall and weakening enzymatic pectin degradation. Conversely, combining ROS generation inhibitors with SO2 mitigated these effects. Overall, these findings highlight the role of H2O2-mediated cell wall modification in maintaining grape postharvest texture through SO2 treatment, providing new insights for managing grape postharvest softening.
Effects of different SO2 dosages on the antioxidation of two kinds of grape during cold storage

Abstract:Two kinds of grape(Longyan and Hongbaoshi) were treated with normal and excessive SO_2 dosage,and the changes of relative membrane permeability,MDA content and antioxidation in the stems and fleshes were(analyzed) to determine the effect and mechanism of SO_2 treatment on grape during 0℃ storage.Results show that membrane permeability and MDA content of grapes increase with the increase of SO_2 dosage.The tendency of different enzymes changing in grapes is various.SOD and POD activities show a rise and then a drop,while CAT activity keeps dropping during storage in grapes treated with SO_2.The degree of enzymes activity change in grapes treated by different SO_2 dosage shows a different response.Excessive SO_2 dosage induces more severe change of the enzyme activity.The content of antioxidant(Vc) decreases more quickly in excessive SO_2 package than that by normal SO_2 treatment.Antioxidation systems in Longyan and Hongbaoshi show different responses to SO_2 treatment during storage at 0℃.

Abstract:The concentration of ethanol and acetaldehyde in MeiGuiXiang (fragrant rose scent) grape after 120 days storagewas studied .It showed that CO2 injury of grape happened in 10%O2+18%CO2 after 100 days storage, 10%O2+15%CO2after 120 days storage, while low O2 injury during storage was not apparent. Low O2 and high CO2 caused the obviousincrease of ethanol and acetaldehyde in grape during storage. Acetaldehyde was the main factor causing the gas injury ofgrape.

Abstract:The key indexes weighing the effect of preservation were the green preservation, the dehydration prevention ofgrape stalk and the wrinkle prevention of grape berry during storage. The dehydration of stalks and berries of seven table grapevarieties were studied at room temperature. Part of grapes was observed anatomically. The results show that the sequence of thedehydration rates of grape stalks(from fast to low) was Red Globe grape, Manicure finger, Centennial Seedless, Kyoho, Italia,Autumn Black and Autumn Red grape during storage. The sequence of the grape berries was Red Globe, Centennial Seedless,Italia, Manicure finger, Autumn Black, Autumn Red and Kyoho grape.

Abstract:The seedless treatment of seeded table grapes can have a negative impact on the table grape industry due to the occurrence of berry abscission during storage. This study aimed to investigate grape berry abscission by utilizing two distinct cultivars of table grapes, specifically 'Ziqiu' and 'Shine Muscat'. The results revealed that seedless treatment grapes had a higher percentage of berry abscission during post-harvest storage than seeded ones. This may be attributed to the interaction between auxin and ethylene. In the early stage of storage, the higher level of auxin in the abscission zone of seeded grapes compared to seedless grapes may be associated with the continued high expression of auxin synthesis genes ( VvYUC2 and VvYUC4 ) and transport gene ( VvPIN4 ) in seeded grape seeds, as well as auxin transport gene ( VvAUX1 ) in the abscission zone. The higher auxin content in the abscission zone enhances the expression of ethylene receptor genes ( VvETR1 , VvETR2 , and VvEIN4 ), thereby reducing the sensitivity of the abscission zone to ethylene and decreasing the berry abscission percentage. Consequently, enzymes such as polygalacturonase (PG), pectinesterase (PE), and beta-galactosidase (β-GAL) are quickly activated, leading to pectin degradation and the initiation of the abscission process. Increased ethylene sensitivity in the abscission zone also leads to a reduction in superoxide dismutase (SOD) and catalase (CAT) activities, causing reactive oxygen species (ROS) to accumulate, and malondialdehyde (MDA) content to rise. Which results in cell membrane damage, and an acceleration of the grape berry abscission process. This study sheds light on the mechanisms behind grape berry abscission in response to seedless treatment and provides valuable insights for the table grape industry to improve the storage and transportation of seedless grapes.

Abstract:Table grape is a fruit well suited for consumption as fresh-cut product. Selenium (Se) is an essential mineral nutrient for human growth, and Se-deficiency is a worldwide nutrition problem. Meanwhile, with Se-enriched fruits is becoming more and more popularity, improving Se content and fruit quality in grape is especially important for human health. Se content of grape berries was increased by Se fertilizer application, the maximum Se content and raise ratio of European and American species was 34.96ugkg−1FW and 36.88% respectively, higher than those of Eurasian species 19.46ugkg−1 FW and 21.40%. In addition, Se fertilizer increased nutrition quality, including soluble sugar, Vc, soluble protein, soluble solid, reduced organic acid, while it had no effect on polyphenol antioxidants of Eurasian species. K and Ca content of grape berries was significantly increased, and reduced accumulation of heavy metals Pb, Cr, Cd, As, Ni. Se in fruits was positively related to fruit quality, and negatively correlation of heavy metals. In conclusion, Se fertilizer can be used to increase Se content of grape, especially for European and American species, with significant effect of increasing grape nutrition quality and an effective means of lowering heavy metals.

The Impact of Mechanical Compression on the Postharvest Quality of ‘Shine Muscat’ Grapes during Short-Term Storage

Abstract:Mechanical stress induced by compression during preharvest and postharvest handling of fresh fruit is a major factor influencing the quality of fresh fruit. The degree of compression primarily governs the extent of quality deterioration. However, research on the damage mechanisms of mechanical compression in table grapes remains scarce. This investigation evaluated the impact of varying compression levels (0%, 20%, 40%, 60%, and 80%) on the postharvest quality attributes of table grapes. Changes in postharvest physical properties (overall appearance and color), structural properties (firmness, springiness, cohesiveness, and chewiness), physiological qualities (total soluble solids, titratable acidity, ascorbic acid, malonaldehyde content, and relative electrical conductivity), and cell microstructure of the berries was determined at 4 °C during 15 d of storage. Mechanical compression contributed to the deterioration of the quality of table grapes during storage, resulting in increased weight loss, decay rate, malonaldehyde content, and relative electrical conductivity; and decreased total soluble solids, titratable acidity, and ascorbic acid content. Furthermore, as compared to the control group, mechanical compression resulted in substantial yellowing and diminished textural qualities of grapes. In particular, compression treatment caused significant deformation of grape cell microstructure. In conclusion, mechanical compression stress significantly affects the physical and physiological properties of postharvest table grapes, as well as the internal cellular organization. As compression levels increase, the quality of table grapes progressively deteriorates, leading to a substantial reduction in storage life and commercial value. This study offers essential information for devising damage prevention strategies in preharvest and postharvest handling of table grapes.

Effect of different applying methods of sulfite preservatives on keeping quality of Manicure Finger grape

Abstract:Effect of different applying methods of sulfite preservatives on the keeping quality of Manicure Finger grape was carried out. The results indicated that the third treatment for keeping quality was the best, with the bleaching rate and rot rate of berries being the lowest. The proportion of granule preservative in the fourth treatment was so high that the SO2 injury was the seriousest, with the bleaching rate being 7.9%. There were no great effect on the concentration of O2 and CO2 in bags for 4 different treatments. But using troche and granule preservative cooperatively could cause TA of grape juice up.

Abstract:Atemoya is prone to soft ripening and cracking and has a short storage life at room temperature in summer and autumn in China. To better understand the mechanisms involved in fruit ripening and cracking, the effects of five temperature and humidity treatments (28 degrees C + 50%, 28 degrees C + 70%, 28 degrees C + 95%, 32 degrees C + 95%, 15 degrees C + 95%) were evaluated, and transcriptome analysis of the fruits was performed under storage conditions (stored for 0, 2, 4, and 6 days at 28 and 15 degrees C) in this study. The transcriptome results revealed that starch and sucrose metabolism was the most enriched KEGG pathway, including 485 DEGs. Compared with the 28 degrees C + 95% and 28 degrees C + 70% treatments, which accelerated the fruit ripening and cracking, low-temperature storage (15 degrees C + 95%) inhibited the expression of starch hydrolase genes such as GWD, LSF2, BAM3, BAM9, ISA3, and DPE2, , decreased the activities of BAM and DBE, increased the concentrations of sucrose and trehalose, slowed down the conversion rate of the starch to soluble sugar, decreased the RWC of the pulp, and effectively delayed ripening and cracking. These results provide a physiology and molecular foundation for explaining fruit softening and cracking and extending the shelf life of atemoya.

Abstract:Summary Cultivation of grape is popular in China,and the problem of nutrition disorders is becoming more and more obvious,especially in shelter cultivation with semi-closed environment.To diagnose this problem and produce safe grape to meet the need of high quality and food safety,“Muscat of Alexandria”(Vitis vinifera)was used as the experimental materials and cultivated in Changxing district of Huzhou City,Zhejiang Province. <br> Two kinds of substrates were carried out:One was organic substrate [V(peat)∶V(compost)∶V (vermiculite)=4∶1∶1],and the other was half organic substrate [V(soil)∶V(organic substrate)=1∶1],and soil was taken as a control.The two treatments and control were all cultured under root system.Physical and chemical characters of different substrates and their influence on vine growth,phenology and berry quality of grapes were investigated.The results were shown as follows:1) The date of budding and flowering in organic substrate and half organic substrate was 1 to 2 days earlier than in soil,but the maturity date had no difference between the soil and organic substrate;the half organic substrate delayed the date of color turning for about a week,and delayed the date of maturity for 3 days.2) The branch length,branch thickness,leaf area and leaf greenness at different periods were measured in this study.Compared with the soil,grapes cultivated in organic substrate had longer branch length,smaller leaf area,and lower leaf greenness from young fruit stage to stone hardening stage;grapes cultivated in half organic substrate had the longest branch length with smallest leaf area in all period of the vine,and the chlorophyll content was lower than the control in most time.3)The diameter of berry had no difference between the soil and organic substrate,but the berry in half organic substrate had the smallest size;the single fruit mass also had no difference between the soil and organic substrate,but the mass in half organic substrate was the lowest;the berry firmness between the half organic substrate and organic substrate had no difference,which was higher than that in soil.4) Organic substrate improved the sugar and acid content in flesh,and the content of sugar decreased in half organic substrate.The content of berry volatile aroma components was also increased in the organic substrate;and the content of geraniol in berry was increased in the half substrate,but the content of linalool was reduced, which was probably caused by the lower leaf area,leaf greenness and the stronger growth potential. <br> In summary,organic substrate improved the quality of the berries.However,the pH value of the organic substrate declined obviously,and its performance on water retention capacity was not good.We suggested that the integrated management of fertilization and irrigation should be applied to solve these problems.
