Abstract:Double emulsions are complex emulsion systems with a wide range of applications across different fields, such as pharmaceutics, food and beverage, materials sciences, personal care, and dietary supplements. Conventionally, surfactants are required for the stabilization of double emulsions. However, due to the emerging need for more robust emulsion systems and the growing trends for biocompatible and biodegradable materials, Pickering double emulsions have attracted increasing interest. In comparison to double emulsions stabilized solely by surfactants, Pickering double emulsions possess enhanced stability due to the irreversible adsorption of colloidal particles at the oil/water interface, while adopting desired environmental-friendly properties. Such advantages have made Pickering double emulsions rigid templates for the preparation of various hierarchical structures and as potential encapsulation systems for the delivery of bioactive compounds. This article aims to provide an evaluation of the recent advances in Pickering double emulsions, with a special focus on the colloidal particles employed and the corresponding stabilization strategies. Emphasis is then devoted to the applications of Pickering double emulsions, from encapsulation and co-encapsulation of a wide range of active compounds to templates for the fabrication of hierarchical structures. The tailorable properties and the proposed applications of such hierarchical structures are also discussed. It is hoped that this perspective paper will serve as a useful reference on Pickering double emulsions and will provide insights toward future studies in the fabrication and applications of Pickering double emulsions.

Abstract:Pickering double emulsions exhibit higher stability and biocompatibility compared with surfactant-stabilized double emulsions. However, tailored synthesis of particle stabilizers with appropriate wettability is time consuming and complicated and usually limits their large-scale adoption. Using binary stabilizers may be a simple and scalable strategy for Pickering double emulsion formation. Herein, commercially available hydrophobic silica nanoparticles (SNPs) and sodium alginate (SA) as binary stabilizers are used to prepare O/W/O Pickering double emulsions in one-step emulsification. The influence of system composition on double emulsion preparation is identified by optical microscopy, confocal laser scanning microscopy, and interfacial tension and water contact angle analyses. The formation of the O/W/O Pickering double emulsion depends critically on the aqueous phase viscosity and occurrence of emulsion inversion. Both hydrophobic SNPs and SA adsorb at the droplet surface to provide a steric barrier, while SA also reduces interfacial tension and increases aqueous phase viscosity, giving double emulsion long-term stability. Their microstructure and stability are controlled by adjusting the SA concentration, water-oil volume ratio, concentration and wettability of the particle stabilizer, and oil type. As a demonstration, the middle layer of the as-prepared O/W/O Pickering double emulsions can be cross-linked in situ with calcium ions to produce calcium alginate porous microspheres. We believe that our strategy for double emulsion formation holds great potential for practical applications in food, cosmetics, or pharmaceuticals.

Abstract:Double emulsions hold great potential for various applications due to their compartmentalized internal structures. However, achieving their long-term physical stability remains a challenging task. Here, we present a simple one-step method for producing stable oil-in-water-in-oil (O/W/O) double emulsions using biocompatible gliadin/ethyl cellulose complex particles as the sole stabilizer. The resulting O/W/O systems serve as effective platforms for encapsulating enzymes and as templates for synthesizing porous microspheres. We investigated the impact of particle concentration and water fraction on the properties of Pickering O/W/O emulsions. Our results demonstrate that the number and volume of inner oil droplets increased proportionally with both the water fraction and particle concentration after a 60-day storage period. Moreover, the catalytic reaction rate of the encapsulated lipase within the double emulsion exhibited a significant acceleration, achieving a substrate conversion of 80.9% within 15 min. Remarkably, the encapsulated enzyme showed excellent recyclability, enabling up to 10 cycles of reuse. Additionally, by utilizing the O/W/O systems as templates, we successfully obtained porous microspheres whose size can be controlled by the outer water droplet. These findings have significant implications for the future design of Pickering complex emulsion-based systems, opening avenues for extensive applications in pharmaceuticals, food, cosmetics, material synthesis, and (bio)catalysis.

Abstract:Double emulsion is the most common multiple emulsion with compartmentalized internal structure. It can be used for delivery of both hydrophilic and hydrophobic bioactives and fat reduction in foods. However, con-ventional approach for stable double emulsion preparation often requires high dosage of synthetic surfactants (e. g., polyglycerol polyricinoleate, PGPR) and complicated two-step emulsification process. Herein, we report a facile approach to create stable double emulsion using particular emulsifier of edible chitosan/soy beta-conglycinin (7S) complex nanoparticles via one-step emulsification. By modulating chitosan/7S complex ratio of particles and algal oil content in oil phase, water-in-oil-in-water (W/O/W) Pickering double emulsion was generated in most cases. The dominant mechanism for one-step generation of Pickering double emulsion can be attributed to the polyunsaturated fatty acids (PUFA) in algal oil. The binding of PUFA on particle surface contributes to hydrophobization of the chitosan/7S complex nanoparticles, leading to stabilization of W/O interface. Moreover, stability of the resultant Pickering double emulsions is correlated to particle contact angle. When using nano -particles with chitosan/7S complex ratio of 1:2 and oil phase containing 40 wt% algal oil, particle contact angle at O/W interface is near 90 degrees, which is the optimum condition to produce highly stable Pickering double emulsion. This facile approach for the fabrication of stable double emulsion is promising for a wide range of applications, particularly in food field.

Abstract:Double emulsions are complex fluid systems, which offer significant advantages over simple single emulsions for encapsulation, protection, and sustained release of cargos. However, they are thermodynamically unstable systems. Double emulsions are usually prepared using two sets of surfactants with different hydrophilic–lipophilic balance values. However, these surfactants often interfere with each other, thus affecting the emulsion stability. Colloidal particles have also been used to prepare double emulsions, which are known as Pickering double emulsions. The formulated double system is, however, temporary, and the adjustment of particle wettability is cumbersome and expensive. Here, the authors report a one‐step emulsification process to generate water‐in‐oil‐in‐water double emulsions using two oppositely charged, plant‐derived particles, zein nanoparticles, and cellulose nanocrystals as stabilizers. The stabilization is attributed to the adsorption of aggregates formed by the two types of particles through electrostatic attraction at the oil–water interface with different curvatures. The application of co‐encapsulation of β‐carotene and epigallocatechin gallate is demonstrated, which synergistically improves their stability under different conditions. Therefore, the formulated all‐natural Pickering double emulsions can find applications in various industries, including food, pharmaceutics, and cosmetics. A novel approach to prepare all‐natural Pickering double emulsions by a one‐step emulsification process is described. It is demonstrated that the stabilization mechanism of the double emulsion is attributed to the amphiphilicity of aggregates consisting of oppositely charged, bio‐based particles and phase inversion process of the emulsion. Additionally, the encapsulation and protection of both polar and apolar cargos are achieved.

Abstract:This communication presents a simple yet straightforward method for preparing water-in-water-in-water particle-stabilized double emulsions, also known as Pickering double emulsions. The approach involves using oppositely charged nanoparticles (OCNPs) in two distinct fluid phases, promoting self-assembly and the formation of aggregates with varying sizes and compositions. By enhancing the interfacial area through the adsorption of aggregates at the interface, this method increases the Gibbs detachment energy of particles between the two aqueous phases, forming stable double emulsions. Furthermore, we investigated the impact of the molecular weight of polyethylene oxide and dextran in the respective fluid phases and the mass ratio (M) of the OCNPs on double emulsion formation. The results demonstrate that the molecular weight of the polymers used in the aqueous phase is a critical parameter influencing the structural formation of the emulsion and the generation of double emulsions. Consequently, double emulsions are formed when equal molecular weight polymer mixtures are employed at an appropriate M, with the dispersed phase placed in the highly viscous continuous phase. The proposed method offers a one-step synthesis process, enabling easy preparation, and exhibits excellent stability for at least 30 days. This study represents the first reported approach for the one-step synthesis of multiple emulsions in an aqueous two-phase system utilizing a Pickering emulsion template.

Abstract:Pickering emulsions are increasingly being explored for their potential applications within the food industry. However, the stability of these emulsions is often limited when stabilized by single colloidal particles. Herein, we examined the possibility of improving the performance of Pickering emulsions by using a combination of colloidal particles (zein nanoparticles, Z) and small molecular emulsifiers (quillaja saponin, Q). The stability mechanism of Pickering emulsions was explored from microscopic to macroscopic scales using QCM-D, microrheology and Cyro-SEM, et. Corn oil-in-water Pickering emulsions were prepared by adding the Z and Q in different sequences: (i) mix Z and Q and then homogenize ("ZQ-P′′); (ii) add Z, homogenize, and then add Q ("Z-QP"); (iii) add Q, homogenize, and then add Z ("Q-ZP"). The sequence significantly influenced the interfacial structure and properties of Pickering emulsions. Macroscopic rheology and microrheology showed that the Pickering emulsions formed an elastic-like structure (G'>G′′) and their viscoelastic properties increased over time. QCM-D analysis showed that the properties of the interfacial layers depended on the emulsifier addition sequence used to form the Pickering emulsions. The interfacial membranes formed using the Q-ZP sequence were the thickest (5.8 nm). Cyro-SEM imaging showed that nanoparticle bridges formed between neighboring droplet surfaces, which led to the formation of a 3D network that provided mechanical strength. Overall, this study showed that the Q-ZP addition sequence was the most effective at forming stable Pickering emulsions. It provides new insights that may facilitate the formation of plant-based Pickering emulsions with improved functional performance in food applications.

Abstract:Here we reported a food-grade Pickering emulsions with pH switchable properties based on soy peptides functionalized calcium phosphate particles (CaP). The nanometer crystalline CaP were synthesized according to the well-established wet chemical precipitation process followed by microfluidization treatment, and functionalized in situ with a pepsin released peptides of soy β-conglycinin. These peptides characterized with a large amount of carboxyl amino acid (Glu and Asp) residues, exhibit high affinity to CaP particles. The decoration of CaP particles with soy peptides enhanced their hydrophobic wettability and electrodynamics properties simultaneously. Hence, the surface modified CaP particles facilitate to construct interfacial crystal architecture and resulting stable Pickering emulsions and gels. The pH triggered switchable properties of the emulsion were established based on the pH-dependent dissolution-recrystallization transition of CaP. Stimuli-responsive Pickering emulsification will not only offer opportunity to create a sustainable way to improve oil and catalyst recovery, but also find interesting applications in food industry for phase release of the functional elements by on-demand strategies. The food grade status of both soy peptides and calcium phosphate might extend their applications for food industry.

Abstract:Multiple emulsions are widely used in pharmaceuticals, foods, and cosmetics. However, those stabilized by surfactants with different HLB values are generally unstable due to the diffusion of the surfactants between inner and outer interfaces. Here, we report that multiple W/O/W emulsions can be prepared by using the same particles in combination with a surfactant of different concentrations. The less surface-active raw CaCO 3 nanoparticles can be hydrophobized to surface-active in situ by adsorption of the anionic surfactant SDS, and the wettability of the particles can be controlled to be suitable for stabilizing both O/W and W/O Pickering emulsions by adjusting the surfactant concentration. With toluene as oil phase, the CaCO 3 particles at 1.0 wt% tend to stabilize a W/O emulsion in the presence of 3 mm SDS in an aqueous solution, which can then be further dispersed in an aqueous phase with 1.0 wt% CaCO 3 and SDS below 1 mm to form a W/O/W multiple emulsion. The effects of the ratio of W/O emulsion to the outer water phase and the preparation methods on stabilization of multiple emulsions were examined. With a ratio smaller than 3:1 and by gentle magnetic stirring, the multiple emulsions obtained can stay stable for at least a month without coalescence. This simple method not only ensures stabilization of multiple emulsions but also avoids complicated synthesis of colloid particles with different wettability.

Abstract:In this paper, we demonstrate the use of gliadin/chitosan complex particles (GCCPs) as particulate stabilizers of oil-in-water emulsions of natural oils and water. For this purpose, we fabricated GCCPs through a facile anti-solvent procedure and demonstrated their usage in the formation of Pickering emulsions and Pickering high internal phase emulsions (HIPEs). The GCCPs can be used to produce surfactant-free o/w Pickering emulsions and Pickering HIPEs; unfortunately these emulsions were labile to coalescence. NaCl addition and/or pH regulation, and the combination were used to modify the surface wettability of the complex particles to achieve stable emulsions. The microstructures, e.g., interfacial frameworks, GCCP partition between the continuous phase and interfacial region, and the state of the droplets, of Pickering emulsions were visualized by confocal laser scanning microscopy (CLSM), confirming that the inclusion of NaCl and slightly adjusting pH toward 4.0 and/or 5.0 benefited the adsorption and accumulation of colloid particles at the droplet surface to form an engineered interfacial structure, bridging droplets together through a percolating layer of colloidal particles at the oil/water interface. A schematic representation for the formation route of the emulsions is proposed to relate the physical performance and rheological property with the interfacial structures and aggregate behaviors in the Pickering system stabilized by the complex particles. Interestingly, direct freeze-drying of the emulsions transformed unstable Pickering emulsions into stable oil powders. This study opens a promising route based on Pickering HIPEs or oil powders to structure liquid oils into solid-like fats without artificial trans-fat, which outlines new directions for future fundamental research.

Abstract:Using two types of colloidal particles having natural origins to synergistically stabilize Pickering emulsions is essential for food, cosmetics, and pharmaceutics, especially when neither particle can stabilize the Pickering emulsions alone. The use of two natural stabilizers avoids the complicated surface treatments of particles and the introduction of poisonous or harmful chemicals. In this work, we report an all-natural Pickering emulsion stabilized synergistically by starch nanocrystals and zein protein nanoparticles. Our result shows that the electrostatic interaction between the two types of particles greatly affects their assembled structure at the oil/water interface, which is closely related to the emulsion stability. Specifically, particle bilayers could form with oppositely charged particles at the interface to endow the emulsion with improved stability. As a demonstration, the resultant Pickering emulsions effectively carry β-carotene and have high stability against high temperatures and ultraviolet radiation. This type of all-natural Pickering emulsion is a promising tool to protect and deliver liposoluble bioactive components.

Abstract:In this work, the ZEIN-HTCC nanoparticles formed by zein and N-(2-hydroxy)propyl-3-trimethylammonium chitosan chloride (HTCC) were used as stabilizers to prepare oil-in-water (O/W) Pickering emulsions. The preparation conditions including shearing time, volume fraction of corn oil, mass ratio of ZEIN:HTCC and total concentration of ZEIN-HTCC of emulsions were optimized by measuring the droplet size, zeta potential, PDI and surface tension of emulsions. The ZEIN-HTCC emulsions are stable at the pH range of 4-9 and in the low salt ion concentrations up to 0.2 mol L-1, and can keep stable up to 21 d during low temperature storage. Fourier transform infrared spectroscopy (FTIR), the confocal laser scanning microscope (CLSM) and scanning electron microscopy (SEM) were used to analyze the interaction between emulsion components, revealing that zein and HTCC form a composite layer by flocculation to adsorb on the surface of oil droplets, thus preventing emulsion droplets from aggregation. This novel, long-term stable, surfactant-free, and edible zein-based Pickering emulsion could be used as potential carriers for lipophilic nutrients delivery.

Abstract:Pickering emulsions stabilized by food-grade particles have garnered increasing interest in recent years due to their promising applications in biorelated fields such as foods, cosmetics, and drug delivery. However, it remains a big challenge to formulate nanoscale Pickering emulsions from these edible particles. Herein we show that a new Pickering nanoemulsion that is stable, monodisperse, and controllable can be produced by employing the spherical micellar nanoparticles (EYPNs), self-assembled from the food-derived, amphiphilic egg yolk peptides, as an edible particulate emulsifier. As natural peptide-based nanoparticles, the EYPNs have a small particle size, intermediate wettability, high surface activity, and deformability at the interface, which enable the formation of stable Pickering nanodroplets with a mean dynamic light scattering diameter below 200 nm and a polydispersity index below 0.2. This nanoparticle system is versatile for different oil phases with various polarities and demonstrates the easy control of nanodroplet size through tuning the microfluidization conditions or the ratio of EYPNs to oil phase. These food-grade Pickering nanoemulsions, obtained when the internal phase is an edible vegetable oil, have superior stability during long-term storage and spray-drying based on the irreversible and compact adsorption of intact EYPNs at the nanodroplet surface. This is the first finding of a natural edible nano-Pickering emulsifier that can be used solely to make stable food Pickering nanoemulsions with the qualities of simplicity, versatility, low cost, and the possibility of controllable and mass production, which make them viable for many sustainable applications.
Construction of highly stable, monodisperse water-in-water Pickering emulsions with full particle coverage using a composite system of microfluidics and helical coiled tube

Abstract:Water-in-water (W/W) Pickering emulsions, exhibit considerable potential in the food and pharmaceutical fields owing to their compartmentalization and high biocompatibility. However, constrained by the non-uniform distribution of shear forces during emulsification or the spatial obstruction in polydimethylsiloxane (PDMS) passive microfluidic platform, the existing methods cannot generate monodisperse W/W Pickering emulsions with high particle coverage rate, thereby limiting their applications. Herein, a novel microfluidic system is designed for the preparation of monodisperse and highly particle-covered W/W Pickering emulsions under mild conditions. pH-responsive Polyethylene glycol (PEG)/phosphate aqueous two-phase system (ATPS) is used for the emulsions' preparation. Notably, a coverage rate of 96 ± 3 % is obtained by adjusting the length of the helical coiled tube, as well as the size and contact angle of genipin cross-linked BSA (BSA-GP) particles. Moreover, these W/W Pickering emulsions, with surfaces almost completely covered, can maintain monodisperse (Ncoal = 1.18 ± 0.03) for one day. Furthermore, the results of ranitidine hydrochloride (RH) release demonstrated that the drug release rate of W/W Pickering emulsions in the simulated gastric fluid (SGF) was 10 times faster than that in the neutral solution. We believe that the highly particle-covered monodisperse W/W Pickering emulsions possess great potential applications in bioencapsulation for foods and drug delivery.

Abstract:Water-in-oil (W/O) emulsions have gained interest in many fields, including food, healthcare, pharmaceutical, and agriculture. However, research on Pickering W/O emulsions is limited due to the lack of available stabilizers. This study aimed to demonstrate the development of edible Pickering W/O emulsions using biocompatible and biodegradable gliadin/ethyl cellulose complex particles (GECPs) with neutral hydrophobicity as the stabilizer. The characterizations of GECPs indicated that the particle size, contact angle, and dynamic interfacial tension could be adjusted by varying the gliadin-to-ethyl cellulose (EC) ratio. The investigations of emulsions revealed that the most stable emulsions were obtained when the gliadin-to-EC ratio was 2:1. Moreover, stable emulsions could be prepared at particle concentrations higher than 1.5%. The phase inversion of emulsions from W/O to O/W occurred at 55 wt% water. Confocal laser scanning microscopy and the theoretical calculations confirmed that GECPs formed multiple interfacial layers and acted as physical barriers against coalescence, thereby contributing to the stability of emulsions for at least 433 days; no reverse inversion occurred after 2.3 years of storage. This study provided a new approach to prepare stable Pickering W/O emulsions from GECPs. This strategy might open interesting avenues in solving the dilemma where Pickering stabilization using edible particles is required.

Abstract:In recent years, Pickering emulsions have emerged as a new method and have attracted much attention in the fields of food sciences. Unlike conventional emulsions, Pickering emulsions are stabilized by solid particles, which can irreversibly adsorb on the oil-water interface to form a dense film to prevent the aggregation of droplets. The research and development of food-grade solid particles are increasingly favored by scientific researchers. Compared with conventional emulsions, Pickering emulsions have many advantages, such as fewer using amounts of emulsifiers, biocompatibility and higher safety, which may offer feasibility to have broad application prospects in a wide range of fields. In this article, we review the preparation methods, stabilization mechanism, degradation of Pickering emulsions. We also summarize its applications in food sciences in recent years and discuss its future prospects and challenges in this work.

W/O/W Pickering emulsions stabilized by complex modified phycocyanin

Abstract:Background: A water-in-oil-in-water (W/O/W) double emulsion can simultaneously load hydrophilic and hydrophobic substances due to its unique two-membrane, three-phase structure. However, thermodynamic instability greatly limits the application of double emulsions in food processing. Further development of Pickering emulsions based on proteins, etc., can improve the stability and loading capacity. It is of great significance to promote their practical application. Results: Herein, we prepared ultrasound pretreatment complex glycation-modified phycocyanin (UMPC) to stabilize a W/O/W Pickering emulsion for the codelivery of vitamin B12 (VB12) and vitamin E (VE). First, an inner water phase and oil phase containing polyglycerin polyricinoleate were homogenized to prepare a W/O emulsion. Subsequently, the W/O emulsion was homogenized with an outer water phase containing UMPC to obtain a W/O/W Pickering emulsion. A gel-like inner phase emulsion with excellent storage and thermal stabilities was obtained under the condition that the W/O emulsion volume ratio was 80% and the UMPC was stabilized by 10 g kg-1. The double emulsion after loading VB12 and VE showed good encapsulation effect during the storage period, the encapsulation rate could reach more than 90%, it also showed excellent protection effect under long-time storage and UV irradiation and the retention rate increased by more than 65%. In addition, the bioavailability of VB12 and VE significantly increased during simulated gastrointestinal digestion and reached 46.02% and 52.43%, respectively. Conclusion: These results indicate that the UMPC-stabilized W/O/W Pickering emulsion is an effective carrier for the codelivery of hydrophilic and hydrophobic bioactive molecules and also provides a means for useful exploration of an efficient and stable emulsion system stabilized by biological macromolecules. © 2024 Society of Chemical Industry.

Abstract:We report on high-internal-phase, oil-in-water Pickering emulsions that are stable against coalescence during storage. Viscous, edible oil (sunflower) was emulsified by combining naturally derived cellulose nanocrystals (CNCs) and a food-grade, biobased cationic surfactant obtained from lauric acid and L-arginine (ethyl lauroyl arginate, LAE). The interactions between CNC and LAE were elucidated by isothermal titration calorimetry (ITC) and supplementary techniques. LAE adsorption on CNC surfaces and its effect on nanoparticle electrostatic stabilization, aggregation state, and emulsifying ability was studied and related to the properties of resultant oil-in-water emulsions. Pickering systems with tunable droplet diameter and stability against oil coalescence during long-term storage were controllably achieved depending on LAE loading. The underlying stabilization mechanism was found to depend on the type of complex formed, the LAE structures adsorbed on the cellulose nanoparticles (as unimer or as adsorbed admicelles), the presence of free LAE in the aqueous phase, and the equivalent alkane number of the oil phase (sunflower and dodecane oils were compared). The results extend the potential of CNC in the formulation of high-quality and edible Pickering emulsions. The functional properties imparted by LAE, a highly effective molecule against food pathogens and spoilage organisms, open new opportunities in food, cosmetics, and pharmaceutical applications, where the presence of CNC plays a critical role in achieving synergistic effects with LAE.
Fabrication and Characterization of Novel Pickering Emulsions and Pickering High Internal Emulsions Stabilized by Gliadin Colloidal Particles

Abstract:In this paper, we demonstrate for the first time the use of gliadin colloid particles (GCPs) as an effective particulate stabilizer of oil-in-water emulsions of natural oils and water. For this purpose, we fabricated GCPs through a facile anti-solvent precipitation procedure and demonstrated their uses in the formation of Pickering emulsions as well as Pickering high internal phase emulsions (HIPEs). We found that unmodified GCPs can produce stable, surfactant-free o/w emulsions with microscale droplet sizes under experimental mixing conditions at pH 4 and above. In contrast, the emulsions were not stable against coalescence at similar to pH 3.0. The microstructures, e.g., interfacial framework, GCPs partition between the continuous phase and interfacial region, and state of the droplets, of Pickering emulsions as a function of pH were visualized by optical microscopy and confocal laser scanning microscopy (CLSM), confirming that in addition to Pickering stabilization, the GCPs-based network and/or dispersed droplets-based network also contributed to the stabilization of the emulsions, in a pH-dependent manner. Clear correlations exist between colloid properties of the GCPs dispersions and the emulsion characteristics. Interestingly, stable surfactant-free Pickering HIPEs were fabricated by a facile shearing emulsification. This study opens a promising route based on Pickering HIPEs to transform liquid oils into viscoelastic emulsion gels with zero trans-fat and less saturated fat. The Pickering HIPEs possess promising potentials to replace solid fat in food formulations, which outline new directions for future fundamental research. (C) 2016 Elsevier Ltd. All rights reserved.

Abstract:Poly(ethylene glycol)-b-poly(ε-caprolactone) diblock copolymers (PEG-b-PCL) with predesigned hydrophilic/hydrophobic block length ratios have been synthesized and self-assembled to form micelles, then used to emulsify medium-chain triglycerides with an aqueous phase. The morphologies and sizes of PEG-b-PCL copolymer micelles have been characterized by transmission electron microscopy and dynamic light scattering. Interfacial tension testing between micellar dispersions and oil, combined with water contact angle measurements, have been performed to assess the ability of these micelles to adjust interfacial tension and micellar hydrophobicity, respectively. Relationship between the wettability of PEG-b-PCL copolymer micelles and their emulsification properties has been proved through phase diagram, optical microscopic observation, droplet sizes evolution and phase separation behavior of Pickering emulsion samples. Results show that both oil-in-water and water-in-oil Pickering emulsions, as well as water-in-oil-in-water (W/O/W) double-Pickering emulsions, may be controllably prepared through one-step homogenization. Double microstructure of W/O/W Pickering emulsion has proved to be extremely stable during long-term storage.
