Abstract:Objective To make survey and analysis on food safety confidence of the 1613 urban resi-dents in Zhejiang Province. Methods Questionnaire survey of urban residents in Zhejiang Province on food safety knowledge, information sources and other aspects of handling the problem on 1613 residents had been investigated, which explored the consumers’ attentions, perceptions and confidence level of the current food safety issues, then analyzed the reasons for these problems, proposed of substantive measures. Results The ratio of the people focused on food safety was 67.95%, of which 26~50 years old, high school and above accounted for the majority. When meeting food quality problems, 50.34% of consumers hold it’s better to save trouble attitude and 39.99%consumers said they were not confident of China’s food safety. Conclusion Government departments, enterprises, individual consumers improved food security, established the correct view of consumption and consumer rights awareness was a feasible way to rebuild confidence in the safety of food.

Abstract:Objective To find out the containing of salt,high-sodium condiments,sugar,fats and oils in domestic prepackaged food in the market in Hangzhou.Methods We copy out the first three ingredients of food in a supermarket with prepared questionnaire and identify the containing of salt,high-sodium condiments,sugar,fats and oils among all ingredients of the food.Results 5 877 kinds of domestic prepackaged food with known ingredients were investigated.Among all ingredients of the food,3 059(56.4%)contained salt or high-sodium condiments,4 215(72.0%)contain sugar,2 486(43.2%)contained fats and oils.Among the first three ingredients of the food,1 243(22.9%)contained salt or high-sodium condiments,3 069(52.4%)contained sugar,1 540(26.8%)contained fats and oils.1 131(21.4%)didn't contain any salt,high-sodium condiments,sugar,fats and oils among the first three ingredients.Accordingly,only 521(9.9%)didn't contain any salt,high-sodium condiments,sugar,fats and oils among all the ingredients.Conclusion The proportion of foods containing salt or high-sodium condiments,sugar,fats and oils in food market was high,but the prevalence of prepackaged food with nutrition labeling was low.The food in the market is not consistent with achieving the dietary goal of reducing intake of salt,sugar and fat,it's necessary to improve the food nutrition status through the aspect of producing,processing and labeling of prepackaged food.

Abstract:Objective To investigate the status of nutritional labeling of common food and consumers' knowledge of nutritional labeling in Hangzhou.Method The status of nutritional labeling of 262 kinds of food packages from 7 categories in a large supermarket was investigated,and 280 consumers were randomly selected interviewed with a questionnaire.The data were analyzed in EXCEL.Results The overall labeling rate of food nutrition was 57.6%,and a lot of food only marked one kind of nutrition,of which percentage was 26.0%.There was a comparatively great difference on nutritional labeling rate among different kinds of food,and names and units of nutriments labeled were not uniform.15.0% consumers regarded food nutritional information as the most important factor while purchasing food,and 88.9% consumers argued that the government should take measures to uniform nutritional information printed on food packages.Conclusions The current food labeling in the supermarket is not normative,and the government should take steps in the legislation of food nutritional labeling.The knowledge of consumers to food nutritional labeling is poor,and the government and media should enhance relative propaganda and education to consumers.

Abstract:Based on a survey of 1,225 consumers in 10 cities of five representative provinces, this study was designed to understand the low use rate of food nutrition information in China after a mandatory label policy was instituted in 2013. We found that consumers always neglect nutrition information at point-of-purchase. But they refer to simplified front-of-pack labels more frequently than detailed back-of-pack labels. Fat information is most concerned especially by females; whereas sodium information attracts the least concern. Ignorance, a belief that the information is un-useful are the main cause of the low use rate of nutritional information. Thus, simplified and striking tag formats should be used to capture consumers' attention and convince them of the importance of nutrition information. The findings can also be used as a guide in the design of food marketing programs directing at different consumer groups for food processors targeting the Chinese market.

Abstract:Objective To survey the prevalence of the nutrition labeling of prepackaged food in the supermarket in Hangzhou.Methods We copy out the nutrition facts label,nutrition claims and nutrient function claim of prepacked food in a supermarket with prepared questionnaire and finish normative judgment.Results 5?390 kinds of domestic prepackaged food were investigated.The prepacked food which labeled respectively with nutrition facts label,nutrition claims and nutrient function claim were 1?407(26.1%),653(12.1%)and 94(1.7%).The nutrition facts label which labeled energy,protein,fat,carbohydrate and sodium was 605(43.2%),only 557(39.7%)of which labeled nutrition reference value proportion.7(7.2%)kinds of prepacked food had a nutrient function claim that hinted or expressed the role of treating some illness.Conclusion The prevalence of the prepackaged food which was appropriately labeled with nutrition labeling was low.Therefore,the administration of nutrition labeling need to be strengthened to build a healthy nutrition environment for the population.

Abstract:OBJECTIVE:To study the prevalence rates of knowledge, attitudes and use of the nutrition labeling and related influential factors in Hangzhou supermarket consumers. METHODS:Using a self-developed survey questionnaire, randomly selected customers were conducted a face-to-face interview program in a large supermarket of Hangzhou city. RESULTS:586 people were interviewed, including 202 males and 384 females, with the mean age as 41.6 ± 17.23 years. The accuracy rates of 6 questions related to the 'ability of choosing healthier food by using the Nutrition Facts Labels' were as follows: dietary fiber (71.84%), fat (70.99%), calcium (60.75%), salt (58.36%), energy (50.85%) and sugar (39.42%). The support rates of the three attitudes indicators were "support marking the Nutrition Facts Label" (90.44%), "support marking the nutrition claims" (87.03%) and "want to know more relative knowledge" (77.13%). There were 58.36% and 80.03% first-time buyers who would read the Nutrition Facts Food Labels and the Nutrition Claims. Through logistic model analysis, male, youth, low-educated people were found to be the risk factors related to the nutrition label reading behavior. CONCLUSION:The capacity of the reading, understanding and correct application of nutrition labeling among consumers was not satisfactory. Improvement on the readability and the authority of nutrition labeling and the development of the national nutrition knowledge and health education programs were in urgent needs.

Abstract:Background and Objectives: The Chinese government officially enacted the Regulation on the Management of Food Nutrition Labelling in 2007 and the General Rules for Nutrition Labelling of Pre-packaged Foods in 2011. Our investigation examined the presence and accuracy of nutrition labelling of pre-packaged foods in Shanghai and provides baseline data for future studies. Methods and Study Design: Nutrition labels on pre-packaged foods were recorded by photograph, transcription, or purchase in four supermarkets in Shanghai. We compared the observed labelling rate with results from a survey conducted in 2008. To assess labelling accuracy, we sent randomly selected foods to an analytical laboratory to test food energy and nutrient content. Results: The overall labelling rate was 54.8%, representing a great improvement over the rate measured prior to implementation of the Regulation (35.4%). The labelling rate for energy content and core nutrients were all above 98%, whereas the rates for saturated fat, trans-fatty acids, and iron were 11.5%, 7.0%, and 10.7%, respectively. Pre-packaged foods manufactured by domestic Chinese companies were labelled less frequently (45.8%) than foods manufactured by companies from Taiwan/Hong Kong (67.0%) or overseas (65.7%). The accuracy of carbohydrate content on labels was as high as 100%, while the accuracy of protein and fat content were 94.4% and 96.0%, respectively. Conclusion: Pre-packaged food manufacturers and government agencies should collaborate to improve the management of nutrition labelling. Mandatory regulations may be the best way to ensure that nutrition labelling facilitates informed consumer decision-making.

Abstract:Objective: The present study aimed to scrutinize the food nutrition labelling practice in China before the Chinese Food Nutrition Labeling Regulation (CFNLR) era.Design: Nutrition information of pre-packaged foods collected from a supermarket between December 2007 and January 2008 was analysed and compared with findings from a survey conducted in Beijing. Setting Information collected from a supermarket in Shanghai.Subjects: A total of 850 pre-packaged foods.Results: In the Shanghai survey, the overall labelling rate was 30.9%, similar to that found in the Beijing study (29.7%). While only 20.5% of the snacks in Shanghai had nutrition labelling, the percentage of food items labelled with SFA (8.6%), trans fatty acid (4.7%) or fibre (12.1%) was very low. Of those food items with nutrition labels, a considerable proportion (7.15%) did not label energy, fat, carbohydrate or protein. Food products manufactured by Taiwan and Hong Kong companies had a lower labelling rate (13.6%) than those manufactured by domestic (31.6%) or international manufacturers (33.8%).Conclusions: The very low food nutrition labelling rate among products sold in large chain supermarkets in major cities of China before CFNLR emphasizes the need for such critical regulations to be implemented in order to reinforce industrial compliance with accurate nutrition labelling.

Abstract:Objective: The aim of this study was to investigate the understanding, attitude and use of nutrition label among consumers in china. Methods: A cross-sectional survey with a self-structured questionnaire was conducted among 1153 consumers, who were recruited from different supermarkets during March to May 2014 in Wuhu city of china. Results: The result shows that the subjective understanding of nutrition labels was moderate (62.8% of respondents) but the objective understanding was varied. The attitudes toward nutrition label was positive in participates who had a higher confidence and satisfaction of nutrition label. 59.2% of the respondents indicated 'sometimes' and 28.7% 'always' reading nutrition label. The most frequently reading of nutrition label food was milk (57.5%), followed by infant food (33.3%), and nutrient was protein 51.5%, vitamin (49.8%) and fat (29.4%). None of demographic characteristics was associated with the understanding, attitude and use of nutrition label except education. Conclusions: Participates of our study had a moderate understanding, positive attitude and higher frequent using nutrition label. Although the code of nutrition label became mandatory, more additional strategies for nutrition label are still needed, so as to improve consumers' the cognition of nutrition label.
Nutrition labeling of infant and toddler food in Hangzhou city

Abstract:Objective To investigate the nutrition labeling status of infant and toddler foods sold in Hangzhou city.Methods A survey on nutrition label and the normative judgment of infant and toddler food was carried out in one big supermarket in Hangzhou using a pre-designed questionnaire.Results A total of 253 kinds of infant and toddler food were investigated.The number of food with nutrition labeling for nutrition facts,nutrition claim and nutrition function claim were 250(98.8%),241(95.3%),and 113(44.7%),respectively.The nutrition element with relative higher claim rate were energy(100%),carbonhydrate(65.2%),protein(89.2%),fat(96.8%),vitamin B1(84.8%),vitamin A(83.6%),iorn(88.8%),and zinc(85.2%),respectively,for 250 food lables surveyed.There were 739 nutrition claims and 339 function claims.The normative judgement showed claims with inconsistent words.Conclusion The nutrition labeling rate of infant and toddler food was high,but the normalization was poor.It's necessary to strengthen the normative part for consumers to choose healthy infant and toddler food more conveniently.

Abstract:Increasing consumption of pre-packaged foods is likely an important driver of diet-related diseases in China. From January 2013 it became mandatory to provide a standardised nutrient declaration on pre-packaged foods in China. We collected data on pre-packaged foods from large chain supermarkets in Beijing in 2013, examined the completeness of the nutrient declaration of core required nutrients and summarised the average nutritional composition of 14 different major food groups. We also illustrated the potential use of the data by comparing sodium levels. Photos of 14,279 pre-packaged foods were collected from 16 chain supermarkets in Beijing. Data for 11,489 products were included in the evaluation of nutrient declarations and data for 10,048 in the summary analysis of average nutritional composition. Compliant nutrient declarations were displayed by 87% of products with 88% of foods displaying data for each of energy, protein, total fat, carbohydrate and sodium. Nutrients not required by the Chinese regulation were infrequently reported: saturated fat (12%), trans fat (17%) and sugars (11%). Mean sodium levels were higher in Chinese products compared to UK products for 8 of 11 major food categories, often markedly so (e.g. 1417mg/100g vs. 304mg/100g for convenience foods). There has been substantial uptake of the recently introduced Chinese nutrition labelling regulation which should help consumers to choose healthier foods. As the comparison against corresponding data about sodium from the United Kingdom shows, the nutrient data can also be used to identify broader opportunities for improvement of the food supply.

Abstract:OBJECTIVE:To explore the possibility of applying the concept of various stages of dietary behavior changes in Hangzhou residents.METHODS:The dietary behavior was surveyed and analyzed in 1 388 Hangzhou residents with 18 year-old and older using the various dietary behavior change model model and stages of change.RESULTS:The proportion of Hangzhou residents with unhealthy dietary behavior was high and associated with gender and education level. The changes of dietary behavior could be divided into 5 stages, i.e. preintention, intention, preparation, action and maintenance. These stages of change happen consecutively. The changes of unhealthy dietary behavior do not match the improvement of health knowledge. Although a significant proportion of the residents understand that it is unhealthy to eat too much fat, pickles and high salt food, there are only a few of them really take action to reduce the consumption of these foods and to consume more milk, fruit and vegetable.CONCLUSIONS:There are multiple factors that affect the changes of dietary behavior in people. The changes of dietary behavior occur in various consecutive stages. Different intervention measures should be applied to people in different dietary behavior changes.

Abstract:Objective: To understand the changes of the nutrition labeling of packaged food in China two years after the promulgation of the Regulation for Food Nutrition Labeling, which encourages food manufacturers to identify nutrition labeling.Methods: Investigators copied out the nutrition information panel, nutrition claim and nutrient function claim of packaged food in a supermarket with prepared questionnaire and finished normative judgment in 2008 and 2010.Results: 4693 and 5526 kinds of packaged food were investigated separately. Nutrition information panel, nutrition claim and nutrient function claim were found on the food label of 27.6%, 13.0% and 1.9% of packaged food respectively in 2008, while 35.1%, 7.7% and 2.3% in 2010. The nutrition information panel which labeled energy, protein, fat, carbohydrate and sodium was 597(43.8%) and 1661(85.9%) in 2008 and 2010, only 134(9.8%) and 985(51.0%) nutrition information panel were totally normalized. Nutrition claim and nutrient function claim focused on vitamin, mineral and dietary fiber. The total qualified proportions for nutrition claim were increased significantly for most of the nutrients, except for cholesterol. There were 6 (6.4%) and 5 (3.9%) nutrient function claims with hinting of therapeutic effects on diseases separately.Conclusion: Although the voluntary regulation remarkably improved the level of normalization for nutrition labeling, its role on the prevalence was minus. Abstract:Regional diets and associated cuisines and their contribution to overall regional nutrition are increasingly being scrutinized by scientists for their relationships to human health. The Hangzhou region in China has lower mortality rates associated with cardiovascular disease, lower incidences of diabetes mellitus and better blood pressure in the local population and the links between these lower rates of disease and the traditional regional cuisine are a source of interest. Zhejiang is located on the East Coast of China. The Northern part is well known for the extensive network of channels that produce a vast array of aquatic foods. The South West region and its extensive foothills are known for the production of rare and expensive venison and many types of fungi. The region is also known for the production of over ten different types of edible bamboos. The cuisine also involves many different types of green vegetables that accompany every meal. The best way to describe Hangzhou cuisine is the wide use of southern ingredients cooked in the typical northern manner. This combination leads to a unique taste combining the dainty and the smooth, the crisp and the tender, the simple and the elegant, the small and the exquisite. Overall the cuisine is known for it's low saturated fat and high PUFA, particularly long-chain omega-3 PUFA and fibre. There is extensive use of plant based foods high in complex phytochemicals and trace elements. This combination leads to a balanced nutrition that contributes to the community health in Hangzhou.

Abstract:Background: With the rapid development of Shanghai’s economy, diet habits have undergone great changes. The study aimed to examine the situation of out-of-home (OH) eating in Shanghai adults and the nutrition characteristics of eating in different dining places, and to assess the social demographic determinants of eating OH. Method: Data was sourced from the Shanghai Diet and Health Survey (SDHS) involving people aged 18 years or older in 2012–2013. The food frequency questionnaire (FFQ) and three-day 24-h dietary recall (24-HDR) were used to collect dietary intake data on how people eat out in a cross-sectional study of 1689 adults. OH food refers to the food prepared or consumed away from home. We define that people who eat at least one meal prepared away from home in each survey have a habit of eating outside. The multiple linear and logistic regression methods were used for statistical analysis. Results: The prevalence of eating OH and at restaurants was only 55.1% and 31.8%, respectively. There was an increase in energy, protein, carbohydrate, fat, and iron intake while eating OH. Restaurant and company/school canteen consumption were both associated with an increase in daily total energy intake of 140 kcal and 91 kcal, and fat intake of 6.0 g and 4.3 g, respectively. However, eating at restaurants was associated with higher intake of 548 mg of sodium. However, no significant association was observed between eating at canteens and higher sodium intake. Conclusions: Eating OH related to a poor diet quality, and the diet quality was different between restaurant and canteen food. There may be a need for interventions to target residents’ overall dining-out behavior, particularly focusing on the consumption of restaurant food.

Abstract:Objective: To investigate the health and nutrition status of children in rural area of Lishui District, Nanjing City. Methods: Cluster random sampling and the stratified sampling methods were used to recruit participants. Refer to the WHO child growth standards, Z score method was used to evaluate physical growth of the group. Dietary research was conducted by the food frequency questionnaire(FFQ), and referring to the 2002 food composition tables of China to evaluate the daily dietary intakes. Results: BAZ scores showed 0 - 17 years old children obesity prevalence rate was 9. 0%, overweight was 18. 2%, angular and malnutrition were co-existed with the prevalence rates were 9. 1%, 1. 9% respectively. The average cooking oil was (27 ± 7. 3) g, and children daily intakes of vitamin A, vitamin B1, vitamin B2, vitamin C and calcium suitable rates were less than 50% according to the recommendation of Chinese DRIs. Conclusion: Rural children suffered from the problems of obesity and emaciated dietary structure is irrational and dietary nutrients intakes do not reached the demands of Chinese DRIs.
Be aware of the sodium intake outside student canteens: development and validation of a sodium food frequency questionnaire in Chinese undergraduates

Abstract:Background: Chinese college students used to eat in student canteens, making dietary consumption outside the cafeterias the main reason for the difference in sodium intake. This study aims to develop and validate a food frequency questionnaire (Sodium-FFQ) targeting dietary sodium intake outside the canteens among undergraduates in China. Methods: This cross-sectional study included 124 and 81 college students from comprehensive universities in the development and validation stage. A 24 h dietary recall and a food frequency questionnaire were used to develop the Sodium-FFQ. Food items were selected according to the foods that contributed more to the total sodium intake. Test-retest correlation coefficients with an interval of 14 days were employed to evaluate reproducibility. Validity was assessed against a single 24 h urine collection and a 3-day dietary record using correlation coefficients, Bland-Altman analyses, and cross-classification analysis of Kappa coefficients. Results: The Sodium-FFQ consists of 12 groups of foods with 48 items. The Spearman correlation coefficient of test-retest on sodium intake was 0.654 (p < 0.05), and that between the Sodium-FFQ, 3 × 24 h dietary record, and 24-h urinary sodium were 0.393 (p < 0.05) and 0.342 (p < 0.05), respectively. The Sodium-FFQ was correlated to 24 h urinary sodium-to-potassium ratio, with a Spearman coefficient of 0.370 (p < 0.05). The classification agreement of the Sodium-FFQ and 24 h urinary sodium was 68.4%, and the Kappa coefficient was 0.371 (p < 0.001). Conclusion: The Sodium-FFQ developed in this study presented an acceptable reproducibility, validity, and classification agreement. It indicates that the Sodium-FFQ could be a potential tool for promoting sodium restriction in college students.
Awareness, Understanding and Use of Sodium Information Labelled on Pre-Packaged Food in Beijing:a Cross-Sectional Study.

Abstract:BACKGROUND:Nutrition labelling has been mandatory for pre-packaged foods since 2013 in China, and sodium is one of the nutrients required for display on the nutritional information panel (NIP). This study aimed to estimate the awareness, understanding of, and use of sodium labelling information among the population in China.METHODS:A cross-sectional survey was carried out in urban Beijing in 2016 on pre-packaged foods. The researchers randomly selected 380 residents from four convenient but disconnected communities and 370 shoppers from four supermarkets owned by different companies and conducted face-to-face interviews. Questions on nutritional knowledge, health attitude, understanding and use of nutritional labels as well as other related factors were assessed.RESULTS:All of the 380 community residents and 308 of the 370 supermarket shoppers successfully completed the survey. Of those 688 respondents, 91.3% understood that excessive salt intake was harmful, 19.5% were aware that sodium content is listed on the NIP, 5.5% understood the meaning of NRV% (Percentage of Nutrient Reference Values), 47.7% did not know the relationship between sodium and salt, and 12.6% reported they frequently read the label when shopping. Factors for why people were more likely to choose a product because of its low level of salt shown on the label include income level and their level of awareness of the link between salt and diet.CONCLUSIONS:Although the participants had a good understanding of the harmful effects of salt, the awareness, understanding and use of sodium labels was very low in Beijing, and even worse nationwide. Efforts should be taken to educate the public to understand and use the NIP better and design clearer ways of displaying such information, such as front-of pack (FoP) labelling or health-related smartphone applications to improve health and help people make better food choices.
