Granular properties of Pteridium aquilinum starch

Abstract:The granular properties of Pteridium aquilinum starch have been studied using polarization microscope, scan electron microscope (SEM) and X-ray analytical diffractometer. These data showed that Pteridium aquilinum starch granules were uneven, spherical, nephroid or polygonal in shape. The surface was smooth and a navel dot was located at one side. There was an evident polarizing cross. The granular diameter was between 4.6 μ and 24.3 μm, with 11.9 μm as the average. The gelatinization temperature was 57-64-74°C. The x-ray diffraction pattern was C and similar to that of a potato's. The crystallinity was 38.71% and it swelled as temperature enhancement. These indicate that Pteridium aquilinum starches had weaker bonding forces within the granules compared to maize starches.
