Abstract:The lipid class and fatty acid compositions of the viscera of Haliotis discus hannai Ino were analyzed by gas chromatography/mass spestrometry (GC/MS). The results indicated that the lipid components were abundant in the viscera of Haliotis discus hannai Ino, and were primarily composed of phospholipids and triglycerides, while the total cholesterol content was low. The fatty acid compositions of total lipids were based on polyunsaturated fatty acids (PU-FA), especially C20:4n-3 and C20:5n-3, and were also rich in plas-lipids, indicating that the viscera of Haliotis discus hannai Ino had a high nutritional value in the lipids and had a development potential in the functional lipids. Meanwhile, significant differences were demonstrated among the fatty acid compositions of neutral lipids, polar lipids, phosphatidylcholine (PC) and phosphatidylethanolamine(PE) prepared from the the viscera of Haliotis discus hannai Ino. Neutral lipids were easily combined with saturated fatty acids (SFA) and monounsaturated fatty acids (MUFA), while polar lipids with polyunsaturated fatty acids (PUFA) and plas-lipids. As the major components of polar lipids, PC was apt to enrich PUFA, especially C20-PUFA and C22-PUFA, whereas more than 60% of PE was existed in plas-PE.
