Abstract:Ultrasound is an advanced non-thermal food-processing technology that has received increasing amounts of interest as an alternative to, or an adjuvant method for, conventional processing techniques. This review explores the sono-physical and sono-chemical effects of ultrasound on food processing as it reviews two typical food-processing applications that are predominantly driven by sono-physical effects, namely ultrasound-assisted extraction (UAE) and ultrasound-assisted freezing (UAF), and the components modifications to food matrices that can be triggered by sono-chemical effects. Efficiency enhancements and quality improvements in products (and extracts) using ultrasound are discussed in terms of mechanism and principles for a range of food-matrix categories, while efforts to improve existing ultrasound-assist patterns was also seen. Furthermore, the progress of experimental ultrasonic equipments for UAE and UAF as food-processing technologies, the core of the development in food-processing techniques is considered. Moreover, sono-chemical reactions that are usually overlooked, such as degradation, oxidation and other particular chemical modifications that occur in common food components under specific conditions, and the influence on bioactivity, which was also affected by food processing to varying degrees, are also summarised. Further trends as well as some challenges for, and limitations of, ultrasound technology for food processing, with UAE and UAF used as examples herein, are also taken into consideration and possible future recommendations were made.

Abstract:Application of ultrasound to extract a variety of biologically active compounds from plant materials has been widely investigated. However, there are few reports on the local effect of ultrasonic irradiation on the yields of these compounds. In the present article, the local effect of ultrasonic treatment on total phenolic content (TPC) and antioxidant activities (ATT) of extracts from citrus peels was investigated. To optimize the extraction process, a response surface methodology (RSM) was used to evaluate the effects of ultrasonic variables including ultrasonic power, ultrasonic time, and extraction temperature on extracts from penggan (Citrus reticulata) peel. The results showed that TPC and ATT increased on increasing ultrasonic time and temperature. The maximum of TPC and ATT by ultrasonic treatment was observed in near ultrasonic irradiation surface, in which ultrasonic power appeared to be positive effect. Furthermore, when the effect of the 3 independent variables was evaluated simultaneously using RSM, the optimal ultrasonic conditions for responses were determined as: 42 to 45 W, 23 to 25 min, 31 to 34 degrees C. The results presented here emphasized that application of ultrasound should be considered both the optimization of ultrasonic variables and available ultrasonic device.
Effect of Ultrasonic Treatment on Phenolic Acid Content and Antioxidant Capacity of Guanxi Pomelo Peel Extract

Abstract:Ultrasound technology was applied to extract phenolic components from Guanxi pomelo peels.Effects of ultrasonic treatment parameters including ultrasonic treatment time,ultrasonic treatment temperature and ultrasonic treatment power on the content and antioxidant capacity of phenolic acids were explored.Totally 7 phenolic acids were determined by HPLC-PDA.Folin-Ciocalteu method and ferric reducing antioxidant power(FRAP) assay were adopted to evaluate the antioxidant capacity of the extracts obtained by ultrasonic treatment.The results showed that sinapic acid content was the highest in Guanxi pomelo peels,and the contents of seven phenolic acids were increased with the increase of treatment time and temperature.However,the contents of phenolic acids exhibited a decrease after ultrasonic treatment at 40 ℃ for 60 min.Ultrasonic treatment power revealed a positive effect on the contents of phenolic acids.Furthermore,ultrasonic treatment parameters had significantly effect on the content of total phenolic acids.A linear relationship was observed between Trolox-equivalent antioxidant capacity(TEAC) value and the content of total phenolic acids after ultrasonic treatments with correlation coefficients of 0.8832 at 30 ℃,0.8874 at 40 ℃(the length of treatment time varied from 10,20,30,45 to 60 min at both temperature levels),and 0.9397 at four ultrasonic power levels,respectively.Therefore,the antioxidant activity of Guanxi pomelo peel extract was correlated with the content of total phenolic acids,and obviously improved by ultrasonic treatment.

Abstract:Ultrasonic homogenization is a promising method of emulsion formation. Linseed oil containing polyunsaturated fatty acids in the optimal ratio was used as a control sample and the fat base of the emulsions. The effect of ultrasonic treatment can lead to a change in the percentage of fatty acids due to the acceleration and initiation of several chemical reactions. To assess the feasibility of using ultrasound in food production, the fatty acid composition of natural linseed oil and emulsions obtained from it, treated by ultrasound with different durations were studied. The study monitored the formation of radicals since increasing temperature and pressure during the collapse of cavitation bubbles initiates the formation of free hydrogen H- and hydroxyl OH- radicals within and next to them. These may initiate the oxidation of bioorganic compounds in the food product. The research results show that emulsions exposure to the ultrasound at a frequency of 20 kHz for 10, 20 and 30 minutes are capable to maintain the ratio of fatty acids while obtaining a homogeneous, finely dispersed and stable food emulsion. Deviations in the values characterizing the fatty acids content in the emulsions treated by ultrasound for 10, 20 and 30 minutes as compared with the control sample – linseed oil are insignificant (0.02±0.015% to 0.83±0.015). Using the method of electron paramagnetic resonance, the absence of free radicals was established both in the control sample – flax oil, and in emulsions obtained on its basis, homogenized using ultrasonic exposure.

Abstract:The current study aimed to investigate the effects of ultrasound-assisted emulsification on the emulsifying and rheological properties of myofibrillar protein (MP) pork fat emulsions under different protein/fat ratios. Changes in emulsion profile, confocal laser scanning microscope images, cryo-scanning microscope images, particle size, protein solubility, surface hydrophobicity and free sulfhydryl groups were determined. Ultrasound significantly increased the emulsifying activity, the emulsifying stability and the flow index for all emulsions, while it decreased the viscosity coefficient of emulsions except for the treatment of protein/fat ratio of 1:15. The results showed that sonication reduced the particle size of the fat particles and evenly distributed the emulsion droplets. Sonication moved the distribution curve of droplet size to the smaller particle size direction and decreased the D3,2 and D4,3 values of emulsion. Sonication resulted in increased bindings between protein hydrophobic groups and fat particles. After ultrasound treatment, more sulfhydryl groups were exposed to aqueous solution, which might decrease the protein solubility in aqueous solution. Ultrasound-assisted emulsification could directly enhance the emulsifying and rheological properties of MP-stabilized pork fat emulsions at different protein/fat ratios, in particular at the ratio of 1:10.

Abstract:Background: Ultrasound is widely used as a novel non-thermal processing technique to improve protein properties. In recent decades, applying ultrasound-assisted emulsification (UAE) to produce protein-stabilized emulsion has attracted people's attention. Instead of applying ultrasound to treat a single protein solution, UAE treatment refers to the use of sonication to a mixture of protein and oil. The purpose of this study was to compare the different effects of ultrasound treatment on the properties of myofibrillar protein (MP) in the presence or absence of soybean oil. A suitable sonication power was selected based on the change in emulsion properties. Results: 300 W sonication power was selected because of its most effectively decreased emulsion droplet size and increased absolute zeta potential. Sonication more significantly increased the protein carbonyl content and disulfide bonds of the MP-soybean oil sample compared with the MP sample. Due to the presence of oil, ultrasound could unfold more protein molecules, illustrated by a lower α-helix content and intrinsic fluorescence intensity, and a higher surface hydrophobicity. Results of liquid chromatography-tandem mass spectrometry illustrated that sonication enhanced the myosin heavy chain and actin content at the soybean oil interface as well as accelerated the myosin light chain to separate from myosin in the MP-soybean oil system. Conclusion: Ultrasound treatment could lead to a higher level of protein oxidation and greater protein molecule exposure in the MP in the presence of oil system than in the oil-free MP system. © 2023 Society of Chemical Industry.

Abstract:Ultrasonic technology is a non-isothermal processing technology that can be used to modify the physicochemical properties of food ingredients. This study investigated the effects of ultrasonic time (5 min, 10 min, 15 min) and power (150 W,300 W,500 W) on the structural properties of three types of phospholipids composed of different fatty acids (milk fat globule membrane phospholipid (MPL), egg yolk lecithin (EYL), soybean lecithin (SL)) and milk fat globule membrane protein (MFGMP). We found that the ultrasound treatment changed the conformation of the protein, and the emulsions prepared by the pretreatment showed better emulsification and stability, the lipid droplets were also more evenly distributed. Meanwhile, the flocculation phenomenon of the lipid droplets was significantly improved compared with the non-ultrasonic emulsions. Compared with the three complexes, it was found that ultrasound had the most significant effect on the properties of MPL-MFGMP, and its emulsion state was the most stable. When the ultrasonic condition was 300 W, the particle size of the emulsion decreased significantly (from 441.50 ± 4.79 nm to 321.77 ± 9.91 nm) at 15 min, and the physical stability constants KE decreased from 14.49 ± 0.702 % to 9.4 ± 0.261 %. It can be seen that proper ultrasonic pretreatment can effectively improve the stability of the system. At the same time, the emulsification performance of the emulsion had also been significantly improved. While the accumulation phenomenon occurred when the ultrasonic power was 150 W and 500 W. These results showed that ultrasonic pretreatment had great potential to improve the properties of emulsions, and this study would provide a theoretical basis for the application of emulsifier in the emulsions.

Abstract:The aim of this study was to optimize extracion of flaxseed oil process by ultrasonic treatment and determination of its effect on ω-3 fatty acid. The extraction of flaxseed oil was optimized by using different solvents like methanol, acetone, petroleum ether, ethanol, hexane and dichloromethane. The ultrasonication treatment was optimized with respect to amplitude (20–80 kHz), temperature (25–40 °C), sonication time (20–80 min) and solid to solvent ratio (1:5, 1:10 and 1:15) for extraction of flaxseed oil. The extracted oil was subjected to GC analysis to determine ω-3 fatty acid. The recovery of flaxseed oil was higher with hexane followed by dichloromethane. The ultrasonic treatment at frequency of 40 kHz, temperature of 30 °C, extraction time of 40 min and solid to solvent ratio: 1:10 gave best results for extraction. The ultrasonic assisted extraction improves the extraction yield by 11.5% with similar amount of solvent. The chromatograph showed that there were no significant effects on α-Linolenic acid (ω-3) by the ultrasonic assisted extraction. This will beneficial to the oil extractor to recover higher amount of oil from same amount of the raw materials.
Effects of ultrasonic waves of different powers on the physicochemical properties, functional characteristics, and ultrastructure of bovine liver peptides

Abstract:In recent years, ultrasound has emerged as a widely used technology for modifying proteins/peptides. In this study, we focused on the intrinsic mechanism of ultrasound-induced modification of bovine liver peptides, which were treated with ultrasound power of 0, 100, 200, 300, 400, and 500 W, and their physicochemical and functional properties, as well as ultrastructures, were investigated. The results show that ultrasound mainly affects hydrogen bonding and hydrophobic interactions to change the conformation of proteins and unfolds proteins through a cavitation effect, leading to an increase in biological activity. Fourier infrared spectroscopy showed that ultrasound inhibited the formation of hydrogen bonds and reduced intermolecular cross-linking. Molecular weight distribution showed that the antioxidant components of bovine liver polypeptides were mainly concentrated in fractions of 500-1,000 Da. Maximum values of ABTS (82.66 %), DPPH (76.02 %), chelated iron (62.18 %), and reducing power (1.2447) were obtained by treating bovine liver polypeptides with 500 W ultrasound. Combined with the scanning electron microscopy results, with the intervention of ultrasound, the impact force generated by ultrasonication may lead to the loosening of the protein structure, which further promotes the release of antioxidant peptides, and these findings provide new insights into the application of ultrasound in the release of antioxidant peptides from bovine liver.

Abstract:This article reviews the influence of ultrasonic treatment on protein extraction, modification (structure and function) and application. Summary The advancement of the modern food industry has prompted a shift away from traditional protein extraction methods due to their inherent limitations. As a result, there is a growing interest in exploring alternative methods for protein extraction and modification such as ultrasonic (US) treatment. This shift towards more sustainable and efficient protein extraction methods is a key research focus in obtaining safe proteins in an environmentally friendly manner. Furthermore, enhancing the functional properties of proteins through modification can expand their application. This paper reviews recent research progress and applications of US treatment on protein extraction and modification as well as the impact on protein structure and functional properties. In addition, the latest applications of ultrasound‐modified‐proteins, including nano‐proteins, 3D printing and interactions between proteins and other food components, are reviewed. This review may provide some inspiration for the potential application of US technologies in food fields.

Abstract:Lipids are increasingly attractive in the food industry, resulting in an increasing demand for lipids from edible and non-edible sources. Conventional solvent extraction has drawbacks of low efficiency, long time, and large solvent consumption, and it can negatively impact the lipid quality such as oxidation due to long extraction time and high temperature. Ultrasound-assisted extraction (UAE) can overcome these shortcomings and has received more attention. Whereas, a comprehensive evaluation of ultrasound-assisted lipid extraction is not yet available. This review focuses on an in-depth understanding of ultrasound-assisted lipid extraction, including mechanisms, solvent systems, feedstocks, the impacts of ultrasound on lipid quality (constituents, antioxidant, stability and antibacterial properties), and ultrasound coupled extraction technologies (enzyme, hydrodistillation, microwave and supercritical fluid). The mechanisms of UAE involve cavitation effects, which can destroy cells and enhance mass transfer. Solvent plays a vital role in the extraction process. Different levels of ultrasonic energy release capabilities may occur in various solvents. UAE has good compatibility and is suitable for the treatment of materials from various origins including plants, microalgae, animals and fungi. UAE can improve extraction efficiency and lipid quality. Ultrasonic treatment has a positive influence on the composition, anti-oxidation, stability and antimicrobial properties. Ultrasonic coupled extraction technologies normally extract lipids more efficiently due to the synergistic effect. Therefore, according to current literature, UAE can occupy a very important position in the lipid extraction industry.
Investigation of the effect of ultrasonication on starch-fatty acid complexes and the stabilization mechanism

Abstract:The complexation of physically modified starch with fatty acids is favorable for the production of resistant starch. However, there is a lack of information on the effect of ultrasonication (UC) on the structure and properties of starch complexes and the molecular mechanism of the stabilization. Here, the multi-scale structure and in vitro digestive properties of starch-fatty acid complexes before and after UC were investigated, and the stabilization mechanisms of starch and fatty acids were explored. The results showed that the physicochemical properties and multi-scale structure of the starch-fatty acid complexes significantly changed with the type of fatty acids. The solubility and swelling power of the starch-fatty acid complexes were significantly decreased after UC (P < 0.05), which facilitated the binding of starch with fatty acids. The XRD results revealed that after the addition of fatty acids, the starch-fatty acid complexes showed typical V-shaped complexes. In addition, the starch-fatty acid complexes showed a significant increase in complexing index, improved short-range ordering and enhanced thermal stability. However, the differences in the structure and properties of the fatty acids themselves resulted in no significant improvement in the multi-scale structure of maize starch-palmitic acid by UC. In terms of digestibility, especially the complexes after UC were more compact in structure, which increased the difficulty of enzymatic digestion and thus slowed down the digestion process. DFT calculations and combined with FT-IR analysis showed that non-covalent interactions such as hydrogen bonding and hydrophobic interactions were the main driving force for the formation of the complexes, with binding energies (lauric acid, myristic acid and palmitic acid) of -30.50, -22.14 and -14.10 kcal/mol, respectively. Molecular dynamics simulations further confirmed the molecular mechanism of inclusion complex formation and stabilization. This study is important for the regulation of starchy foods by controlling processing conditions, and provides important information on the role of fatty acids in the regulation of starch complexes and the binding mechanism.

Abstract:This study evaluated the behavior changes of two types of phospholipid emulsions under ultrasonic treatment. The phosphatidylcholine (PC) contents for PC 50 and PC 90 were 58 and 90%, respectively. The results showed that acid value and fatty acid compositions of the two phospholipids showed no significant differences (p > .05) before and after ultrasonic treatment. The peroxide value and volatile compounds revealed that PC 50 had stronger oxidative stability than PC 90, which indicated that the synergistic effect of PC and other phospholipids components could enhance the oxidative stability of individual phospholipids. This work suggests that appropriate ultrasonic treatment could make phospholipids finely dispersed in aqueous system and promote their contact efficiency with 2,2-diphenyl-1-picrylhydrazyl, resulting in the increase in antioxidant ability of the phospholipid emulsions. However, prolonged ultrasonic treatment could induce the self-oxidation of phospholipids, and more attention should be paid to the self-oxidation of these phospholipids when ultrasound was applied in food processing. Practical Applications This study evaluated the behavior changes of two types of phospholipids under ultrasonic treatment. The findings of this study could be useful for guiding the future usage of phospholipids and ultrasound in the food industry.
Study on the influences of ultrasound on the flavor profile of unsmoked bacon and its underlying metabolic mechanism by using HS-GC-IMS

Abstract:For exploring the influence of ultrasound on the flavor characteristic of unsmoked bacon, sensory evaluation combined with E-nose and headspace-gas chromatography-ion mobility spectrometry (HS-GC-IMS) were performed to analyze the overall flavor profile and specific volatile flavor compounds (VFCs), respectively. Furthermore, the metabolic pathway of VFCs affected by ultrasound was also investigated. Results demonstrated that ultrasound improved the flavor characteristic of unsmoked bacon by raising the levels of nonanal, heptanal, octanal, 3-methylbutanal n-hexyl acetate and n-propyl acetate. Enzymatic oxidation was found to be an important metabolic pathway responsible for the development of flavor characteristic after ultrasound treatment, which could be attributed to the increased activities of lipases and lipoxygenase and the higher concentration of polyunsaturated free fatty acids. Abstract:Background Aquatic proteins (APs) are becoming innovative and fast-growing ingredients owing to their health benefits, unique flavor, and religious preferences over the terrestrial animal counterparts. However, their structural complexity and limited functionality have constrained their widespread use. Recently, ultrasound technology has garnered considerable interest in enhancing the APs applications. Scope and approach This review describes examples of ultrasound-assisted treatment for enhancing the APs extraction efficiency, discusses the relationship between protein structure and functionality, and outlines the positive effects on reducing protein oxidation in freeze/thaw. Additionally, the existing challenges and future trends of ultrasound applications have also been elucidated. Key findings and conclusions Ultrasound can be used to extract proteins from different aquatic materials, with the merits of high extraction rate, chemical-free, and low energy consumption. Ultrasonication can increase the molecular flexibility and mobility of APs with a significant decrease in particle size and surface tension, which contributes to improving their functional and nutritional properties. Ultrasound cavitation provides excellent synergistic effects with other methods due to the partial unfolding of protein. Moreover, multi-frequency ultrasound is beneficial for reducing freezing and thawing-induced protein oxidation. This review provides a real-time reference for applying ultrasound to develop functional foods based on APs.

Effects of ultrasonic pre-treatment on the production of VFAs from food waste

Abstract:The study aims at improving the efficiency producing volatile fatty acids (VFAs) by ultrasonic pre-treatment and meanwhile overcomes the disadvantages such as the complexity of components and inequality of particles. Under the condition of treatment time of 15min, and ultrasonic intensity of 720W/L, the SCOD dissolution significantly increased, which was twice as the results of original samples. Among the SCOD dissolved, carbohydrate had the highest dissolution, which was increased from 8.2g/L to 43.5g/L. Under the condition of pH of 6and temperature of 35℃, the maximum values of VFAs from untreated and ultrasonic-treated food waste with solid content ration of around 12% were 33.4, 42.5g/L, separately. VFAs from food waste after ultrasonic treatment were increased by 27.2%.
